High Street Cafe introduces new finds in its culinary neighborhoods The restaurant brings in fresh feasts, bold flavors and a dash of familiarity

uests can enjoy a new and sumptuous spread as High Street Cafe introduces twelve new signature dishes to the menu. Entitled neighborhood finds, liven up lunch and dinner buffets by adding something new to the plate. Grounded on the philosophy of the neighborhood concept, Executive Sous Chef Ryan Dadufalza’s ultimate goal is to continue what High Street Cafe has promised in its two years of operation: to bring the community together through food. “It’s one thing when you partake of the food, but it’s a whole new story when you experience it, and my dishes incorporate both aspects.” The finds are an experience in itself, including the elusive Samui Salad,

which combines the bold Thai flavors and the showman smoke of the liquid nitrogen. Another notable dish would be the Angry Maki, which marries the concept of ice (raw) and fire (torch), and derives its fierce moniker not from the emotion, but from the taste of seared fish and spices. The Swiss favorite Raclette is also a star of its own show at the Continental station, as well as the indulgent, truffle butter goodness that is the Bikini Sandwich. When asked about the inspiration behind the dishes, Chef Ryan says,

It was more of providing the framework to be creative. Once we know the boundaries and the limitations of what we can and cannot do, then we can pour the creativity inside.

Ryan Dadufalza: Travel is an essential part of my cuisine

High Street Cafe’s newest resident chef dishes on the inspiration behind his new spread of signatures When asked about what inspires him to cook, Chef Ryan mused, “It’s pretty simple; I draw from my favorite travel stories.” High Street Cafe’s newest Executive Sous Chef is a selfconfessed traveler himself and his biggest contribution to this neighborhood restaurant is to share the world-class flavors he sampled while on his adventures. “There are these moments in your life where you’ve been traveling and eating in other restaurants where you’ve eaten something and it sticks with you. So the dishes I make for the restaurant are drawn from where I grew up to the point where I am now, and everything in between. It’s sort of like a reflection of where I’ve been and what I’ve done.” This half-Filipino born in Guam credits his vast culinary experience and knowledge to the opportunities he got moving about in the industry, beginning in his home island before transferring to Japan and Thailand, the latter being a rich source of inspiration for one of his dishes found in High Street Cafe’s spread today. “I was on an island in Thailand called Samui and I chanced upon a shack while exploring. The shack was a restaurant that served the freshest seafood salad, and the flavors it packed really stood out. So I dedicated the Samui Salad to just that, a memory of my time spent in that place.” His travels would soon lead him back to the Philippines, after a stint as Chef de Cuisine in China World Summit Wing Beijing and as Executive Sous Chef in Shangri-La Singapore. “Being half-Filipino, I have never really explored that side of me up until I arrived, and I wish to translate that into my food – that even if these dishes are found around the world, they still feel and taste like home.” He says that diners can look forward to a diverse roster of dishes, including the sustainable Atlantic cod, beef sukiyaki, crispy noodle baskets and a claypot pork dish served with black truffle and foie gras. “We like to be creative, but not too much. We have a humble approach to these things, you know? We have to make sure that you will always have a connection and to feel comfortable with whatever you’re eating. It’s important.”
