In many ways the recession was the catalyst for change in this city’s restaurant scene, which saw many long-serving eateries closing with new restaurants inspired by New York, London and Copenhagen taking their place. W

hat did you find were the main differences between opening Bon Appetit in 2006 and opening Cleaver East last year?

I’ll put it simply; back then our world was a different place, it was booming. We all thought we were invincible. Bon Appetit is one of the most expensive stand-alone restaurants that has ever opened in Ireland, in terms of set up cost, building and its interior. The preparation and the budget were huge, there was no expense spared. For example, the chairs in the restaurant are custom-made Italian, worth €860 each. The set-up of Bon Appetit was in the millions! So what was the difference between then and now? The difference is huge! Has marketing a restaurant changed since then too, with the advent of Facebook, Twitter and the likes? I think social media is fine, because it relatively free and it’s a good tool to get your name out, but I also think sometimes that it’s a load of nonsense! Marketers nowadays have a tendency to put all their eggs in the social media basket, but I think the majority of us just flick through social media and it just blends into obscurity. Don’t get me wrong it has it benefits, however there’s far too much emphasis on it these days. Yourself and your brother Graham manage both of your restaurants. Was it always planned that he would be general manager in Cleaver East too?

When we first opened Cleaver East, I had a manager in place, who I hired for the prelaunch and the official opening. However it didn’t work out. I have a philosophy in business that once you recognise a problem, no matter what or who it is; you need to address it head on, because in the end it will damage your bottom line. As with me, the running of both restaurants is not just a job for him it’s a major part of his life. Would it be fair to say you might be a harsh taskmaster? Very much so, I admit that. When I interview someone for a job my exact words are the managers should lead by example, I firmly believe that and it’s something I adhere to. If there’s a job to be done, I like to think I’ll do it quicker and better than anyone else and that’s the attitude I expect my staff, and especially a manger, to have too.

Do you think you’re equal parts an entrepreneur and a chef?

restaurants can survive; the real question is, can the old ones survive? If a restaurant has rested on its laurels too long, become stagnant and haven’t reinvested into their business, then as cruel as this may sound, so be it, a business has to move with the times otherwise they’ll be left behind. My attitude has always been, if people deserve to succeed then there will be people who deserve to fail. It’s vital in this industry to be constantly evolving.

It’s sort of evolved like that naturally. With each passing year, I always look back at the year before and think “I didn’t have a clue”, which is very progressive. In the past I always felt that wherever I worked my main job was to make my employer money, the food was a by-product of that. I don’t know why I think like that. I look out for little things to help a business and some people think I’m mad because of it.

You worked in London in some top restaurants; do you think it’s necessary for ambitious chefs to work abroad?

I always say to my staff that when you walk in here (Cleaver East) and you think it’s 99% perfect, it’s not your job to pat yourself on the back, it’s your job to find out the 1% that’s wrong.

Do you have a favourite moment since opening Cleaver East? I’d like to say I have one, but I don’t and maybe that says something about me, it’s certainly not a reflection on the restaurant. I find it hard to live in one particular moment. You would think that after we opened Cleaver East that I would have been overjoyed, but in reality that’s not what I’m like. I tend to look at the negative instead of the positive, but in many ways I think that attitude helps me get my business to a standard I want them to be. I always say to my staff that when you walk in here (Cleaver East) and you think it’s 99% perfect, it’s not your job to pat yourself on the back, it’s your job to find out the 1% that’s wrong. You’ve had a lot of famous faces here in Cleaver East…

It’s not a necessity, but it certainly helps. The main difference is that the level of ambition from your colleagues is higher when you’re working in a Michelin Star restaurant in London. Those kitchens can be such a huge learning curve as everyone is driving for the same goal, sharing ideas about food, reading books, working together. You find yourself constantly immersed in a cocoon of food. The people you work with there have purposely targeted restaurants they want to work for whether it be Gordon Ramsey’s or The Fat Duck, not just because it’s in close proximity to their house. What are your aspirations for the future? I’m hoping to obviously keep the focus on Bon App and Cleaver East and I’m hoping to open a new restaurant in Malahide which is going to be something different to what people are used to. It’s a project I’m really excited about and very confident of. It’s a concept that’s been on my mind for a long time and it’s something Ireland doesn’t have. It will have the same mantra as Cleaver East, a super cool place that people can go to eat amazing food and enjoy themselves.

Yeah we’ve had loads. Russell Brand was here earlier in the year with a big crew, all the U2 guys obviously, and every other Irish celebrity you can think of. Robert Plant from Led Zeppelin was here too, which was cool. There’s been an influx of new restaurants opening across the country, especially in Dublin, can they all survive? Absolutely, because when a new restaurant opens people just stop going to the older ones. The new

Had gorgeous wine at only €22 a bottle. I had the Crisp Belly of Lamb which was to DIE for, really tender and it had this gorgeous sauce that suited it so well too! inning the Good Food Ireland ‘Best Grow it Yourself’ award last year sealed Toscana’s reputation as one of the finest Italian restaurants in the city. This Italian restaurant is always busy, but despite this the waiters are efficient, attentive and very friendly. But talking about the most important thing... the food is impeccable from starter to desserts!

ade Street Social incorporates two restaurants under one roof; The Gastro Bar and The Restaurant, along with a relaxed Wintergarden. It celebrates Irish food and character. Its approach is another departure from the formality of fine dining, while trying to capture the unique sense of humour of the Irish. It seems that the main beneficiary in the current economic climate is the diner, as restaurateurs have been forced to sharpen their offerings. As a result, people can enjoy superbly high standards at affordable prices, and one of the most creative menus currently on offer in the city centre.

Could not fault this restaurant in any way. Food, staff and atmosphere were all of a standard I have rarely encountered in Irish restaurants. Will be back but realise I need to plan ahead to get a booking and understand why.

Had dinner with friends here and one word, WOW! We tried the pork belly starter, breads, scallops to start, each were amazing. You must try... Mini Lobster Hotdog In this dish, the premium lobster meat is shaped and bound with a homemade béarnaise and melted hazelnut butter and served in a fresh brioche roll. The lobster in the hotdog is meat from the claw, so that it is sweet, fresh and light. This is perfectly complimented by the creamy béarnaise and hazelnut butter. This dish is ideal as a snack during the day or as an accompaniment to any of their tapas dishes, and goes down surprisingly well with one of the freshly mixed white wine spritzers on a Sunday afternoon.

lfie’s of South William St is a hip, vibrant restaurant located in the centre of Dublin, only a few steps from Grafton Street. They serve delicious Irish and international cuisine, alongside excellent wines, a fine choice of beers and a selection of delicious cocktails made by expert mixologists. Friendly, informative service, modern decor and a vibrant atmosphere will make your dining experience one to remember. If you’re heading on a big night out, be sure to check out this establishment. This is a particularly good spot if you fancy some light bites follwed by a night on the tiles.

The Verdict

Dined here with a friend at around 2 p.m. and the place was buzzing. Such a great atmosphere to walk in to and we were greeted by friendly staff, each member of the team we walked by said hello! We ate off the set lunch menu which is unreal value a €10 for 3 dishes and a soft drink.

I dined here last night with 3 friends. We all had something different and all the food was gorgeous. Wine was delicious too. The staff were very attentive, friendly and very helpful. Would definitely recommend this to friends and I hope to be back soon. Great value for money.

Its rich taste makes this dish a perfect example of classic French cuisine. Perfect for those cold Autumn nights when you want to try something a little different.

Kettyle Meat Chicken This cut of Irish free range chicken is marinated in an array of organic spices, courtesy of Brooklodge. It is accompanied by Irish potato wedges covered in parmesan flakes, and fine beans which are drizzled in a Sun dried tomato and cream sauce. This is all then tossed together with pancetta and pine nuts to add a little extra distinction to the already enticing taste.

I return to this wine bar again and again and have yet to be disappointed. Great location, and it is fantastic value for great quality food. Amazing!

We season local Irish meat with traditional Spanish spices to produce a dish which encompasses traditional Spanish cuisine in the heart of Dublin City

Patata Rellena Patatas bravas are a tapas staple but the Patatas Rellena are a delightful twist on this. Beginning with an outer shell of potato skins, these are then filled with deliciously crispy bacon. Caramelized onions are mixed in amongst the bacon to draw out a honey taste. Brie is then cooked over it, faultlessly uniting all the elements of the dish.

Nice cosy place with lots of little alcoves and seperate areas to sit, relax and dine. The waitstaff were very nice.

Modern interiors and trendy but super friendly staff are always on hand to help you make the best food and wine choices.

The Verdict

Had a wonderful lunch here. Salmon to start which was scrumptious. Beef rolls on the stone with lovely salad. My friend had the baby macaroni which I tasted. It was lovely. Followed by wonderful coffee. Excellent coffee. Very good value.

The menu is seasonal, so you’ll find exactly what you yearn for, whether that’s a hearty meal in the dead of winter, or a fresh salad in the summer heat. Make a night of it and arrive a little earlier and soak up the ambiance with the beautiful piano and guitar duo.

The Verdict

Our first time in and on this experience we will definitely come back. Service was outstanding and we were really made feel very welcome and were greatly helped in our choices by great explanations. Starters...crab, duck and soup for the three of us were excellent- duck and crab salad were especially good.

This place is amazing. Easily the nicest dining room in Dublin, and that together with the warm welcome we received, the exceptional food and the live music provided by a great piano and guitar duo led to a wonderful dining experience that will be difficult to match.

The Verdict

I was there with a group of 10 people as a celebratory meal. We were given a nice space to ourselves so we could enjoy the evening without disrupting other diners. We had an utterly fabulous evening. Our waiter made the whole evening very special for us. He had such a brilliant sense of humour and had us all laughing!

My wife and I had the 8-course tasting menu, and the food was absolutely delicious. The sommelier recommended a wine that would be suitable for the variety of dishes we were tasting, and he got it absolutely right. he first thing one notices about Blackboard Bistro is the interior. Seamlessly mixing classic with quirk, the interior here is pleasantly sparse, only interrupted by eye catching pieces that are a delight to the eye. But enough about the interior design, it is the food at Blackboard Bistro that is truly memorable. This French cuisine will leave you feeling as if you’ve just dined in Paris, such is the authenticity. The chef is Pierre Heyraud, who fuses unusual combinations to draw out unexpected and delightful flavours. Take their wine suggestions on board, they are, quite literally never wrong!

The Verdict

This is truly a proper French bistro that you would expect to find on any of the little side streets of Paris. It offers great value menus for both lunch and dinner and its wine list is well priced. The kitchen in this restaurant is tiny and the chefs produce great plates of food packed with flavour all the dishes reflect the skill and passion of this chef.

Had a lovely dinner here recently with a friend. Both ate the same, pear, blue cheese & walnut salad to start - excellent portion size and fabulous taste, followed by Rib Eye Steak, baked potato with chives cream - both plates cleared! Atmosphere in the restaurant was lovely, staff very friendly.

You must try... Fillet Roast of Pork The Roast Fillet of Pork. Served on a bed of baby boiled potatoes, it is accompanied by sautéed Chorizo. This dish is brought alive by the touch of smoked paprika and fresh herb dressing drizzled over it. The pork belly is a tender cut which is cooked to perfection. The Verdict

A brilliant little restaurant. Have been here a few times, the food is consistent and live music from 7 o clock on weekends is a huge plus. The value for money is also good and with a varied wine list I shall be returning soon!

Had a lovely meal in the Pearl Brasserie last Friday.We sat in one of the alcoves which had a lovely atmosphere. The staff were so warm and welcoming and went above and byeond to make us feel comfortable.We went for an early bird. The main course (the lamb rump) was absolutely delicious. And even though we did not order desserts, it was a birthday, and they brought out a small chocloate cake and candles, very very nice touch.

You must try... Marinated Japanese Tuna Fresh Irish tuna served with ponzu dressing. This is complimented by an Apple wasabi sorbet to balance the saltiness of the ponzu. Really enjoyed our night, food was delicious, excellent service. Very happy to see small portions as there were 4 courses, plenty to eat but not too much, didn’t feel over stuffed. Wine was well recommended too, & lovely cocktail to start. Overall, highly recommended.

Top 5 Most Haunted Places in Dublin

Jervis Shopping Centre, 125 Upper Abbey Street, It might seem like an odd location for a haunting manifestation but the shopping centre was formally the site of the old Jervis Street Hospital. Staff in the centre have reported seeing a nurse in period uniform, “people” disappearing before their eyes, children crying, voices and a general sense of not being welcome in storerooms. Shoppers have reported feeling uneasy, light headed and hot while fruit has been known to mysteriously leap away from a smoothie shop located on the level at night and caught on CCTV.

St. Audoen’s Church, 14 High Street, Dublin 8 One of the oldest surviving medieval churches left in Ireland, St Audoen’s Church is said to be haunted by the “Green Lady”, regularly spotted around the church grounds. The ghost is said to be Darky Kelly, a lady of the night who was executed for the murder of her unborn child by the Sheriff of Dublin, Simon Luttrell. Luttrell was supposedly the child’s father and a member of a group of Satanists known as the Hellfire Club. Green orbs commonly show up on photos taken in the grounds if you dare to visit after dark. Appropriately enough, the church is located in an area formally known as “Hell”.

Hendrick Street, Dublin 7

Demolished in the 1960s, numbers 7 and 8 Hendrick Street were said to be the most haunted residences in Ireland. Inhabitants were born here, lived here, raised families here and died here. While 7 and 8 are known as the most haunted areas, the whole street has an air of unease, from the funeral home at the corner to the long abandoned Edmunson Electrical building, where security guards and a young girl have been spotted before vanishing. Definitely not one to visit on your own at night, even in a group this is one of the spookiest places in Dublin.

Olympia Theatre, 72 Dame Street, Dublin 2 One of the most beautiful theatres in the city and also one of the most haunted. The dressing rooms of the historic theatre are said to be roamed by a poltergeist that was apparently responsible for almost destroying a dressing room. Footsteps are also often heard in corridors while doors and windows have been known to rattle.

1 Shelbourne Hotel, 27 St Stephen’s Green, Dublin 2 A certain room on the sixth floor of Dublin’s exquisite Shelbourne Hotel is said to be haunted by a young girl known as Mary Masters. Mary’s former family home is believed to have been on the site of the hotel when the young girl died of a cholera outbreak in 1846. Mary has been heard crying in the room and asking for her sister but also playing and laughing in corridors.

hidden gem if there ever was one, Isabel’s is tucked away downstairs on Baggot Street Lower. Having only opened in 2012, Isabel’s has already garnered a reputation for excellence. The stunning interiors are only enhanced by the extensive wine cellar which dominates the space. While this is a spot for anyone who enjoys a tipple of wine, the food doesn’t fall by the wayside. The menu is resplendent with choice, offering an alluring mix of modern dishes, which cater for all palates from the novice to the more adventurous foodie.

The Verdict

Externally Isabel’s gives no hint of what awaits within. The steps down to this basement venue are steep and slightly unnerving, but the journey is well worth it. We arrived a little early for our lunch booking and there was only one other table occupied, but by the time we left the restaurant was entirely full and this was not surprising. Definitely due for a re-visit!

Said we would come back and we did. Again superb food, all courses beautifully presented and served with a smile. We were made feel welcome and had a most relaxing lunch. Relaxed, professional service, crisp linen, good wine...what more could you want!

Boned Aromatic Peking Duck The duck is marinated in sherry, ginger, soya, honey & spices, then is steamed, which softens and renders most of the fat while keeping the flesh moist and tender. We served the dish with a star anise and orange jus to accentuate the natural flavours of the duck.

I went here on Friday night for a date night with my Fiance to celebrate our engagement and the staff couldn’t have been nicer. I had the famous Fillet Steak for mains and a huge glass of vino can’t remember the name but it was recommended by the staff and was gorgeous! Can’t wait for our Anniversary dinner.

Portion size is important to me and my wife and I went here last Saturday to sample their ware. I started with the oysters, followed by the 26 oz Rib Eye- Not for the faint hearted absolutely mouth-watering though I couldn’t finish it all! We will be back. Service was top class and couldn’t recommend it enough.

Very enjoyable. Lovely décor, attentive and unassuming service (best I have experienced in a long time replace water, topped up wine, like having own waiter for nigth), new twist & well thought through menu. All well presented, good portions and everyone enjoyed the meal!

The Verdict

Don’t let the narrow entrance put you off this restaurant, once you enter you are in restaurant Heaven. The restaurant itself is beautifully fitted out, but the highlights, the food and service, are second to none in Dublin.

Char-grilled Haunch of Wicklow Venison Served with sautéed mushrooms, parsnip purée and a game jus, venison is low in fat and high in protein with lots of flavour so it makes a great alternative to beef. Their venison is the highest quality cut of meat so is tender and is seared on a hot pan to seal in the wonderful flavour. They serve this dish with seasonal vegetables sourced locally and a game jus which is homemade by their chefs.

The staff are affable and ensure guests feel at home in this little spot. The cuisine is delicately and meticulously prepared so that the taste is not only fantastic, but creatively displayed. A great spot for post dinner cocktails when the DJ arrives and turns up the decibels!

The Verdict

Have had lunch a few times here since it opened and keep going back for their Beef Randang. Fabulous succulent ‘melt in your mouth meat’ that I would be happy if this was my last ever meal! Service is very good, I don’t go out to lunch during the week for atmosphere, I go out to get substantial food and Opium has plenty of it.

The Verdict

The food was delicious I had haloumi cheese salad for starter and vegetarian option for main, my fiancee had meatballs and we loved it, and the best thing is they serve fresh squeezed orange juice. Loads of options for ‘us’ vegetarians. Loved it!

Johnnie Fox’s is renowned for being the highest pub in Ireland. Its location amongst the Dublin mountains accounts for this accolade. A mere glimpse out the window will capture your imagination, as you are immersed in the stunning view. During the 1916 Rising, Rebellion leaders are rumoured to have used Johnnie Foxes as a meeting point to discuss strategy. It’s rare to find a spot outside of the city centre associated with the Rising, and yet this Glencullen pub harboured some of Ireland’s greatest heroes. Ireland’s Great Liberator Daniel O’Connell is alleged to have been a great patron of Johnnie Fox’s. O’Connell lived in Glencullen, and so would regularly frequent the hugely popular pub.

Johnnie Fox’s Hooley Show is known throughout the country. Patrons are invited to have a meal before they are wowed by a live music session, with Irish acts belting out well loved traditional and folk tunes. This is followed by a dazzling performance by some incredibly talented Irish dancers. The Hooley Show has been hailed as one of the best cultural shows in Ireland! Such is Johnnie Fox’s renown as an Irish music hub, there were storytelling and music programme recorded there in the 1950’s. What a super restaurant. Went there last Friday and had the early bird. Even at that stage of the evening the place was almost packed! We each had a different starter and everyone was pleased. The food was delicious, it’s great value for money and there’s always a great buzz. Highly recommended.

Roly’s for lunch -we thoroughly enjoyed a 3 course lunch menu that was full of choice which is rare these days. From the starter to the dessert this menu was packed full of flavour and presented beautifully. The service was attentive and not over fussy. You simply can not beat the standards delivered here.

I eat here very regularly at lunchtime and it is by far my favourite Thai restaurant, potentially my favourite restaurant overall. The quality and freshness of the food is always excellent, the service is really good and quick. Would hugely recommend for and excellent Thai experience!

Had a voucher for 3 courses plus wine and I couldn’t of been more impressed with the place. Everything we ordered was mouth watering, the atmosphere was relaxed and the service fantastic. I would highly recommend this place and will return for sure.

La Reserve have mastered this delicacy to such an extent that it is without a doubt the finest dish on their menu. The fillet of chicken is braised in red wine, and cooked to perfection. This is decorated with celery and mushrooms, to add to the already tantalising taste. The bacon is done deliciously crispy, while the creamy potatoes perfectly compliment the red wine flavour. he Hot Stove is found in Dublin’s Georgian Square. Hidden away in the basement of Numbers 38 and 39, you could miss this hidden gem. The menu is focused around local Irish produce, utilised in enticing ways to create unique and delicious dishes. These range from old favourites to originals, which have to be tried! The space itself is incredibly welcoming, with an inherent warmth and elegance that will draw you in. There is a private courtyard which is idyllic come summer time, with the area bathed in light.

The Verdict

Stunning food and great service, was expecting to pay a LOT more for such fine dining. Our group of 8 tried as many different dishes as we could and no one was disappointed. Lovely service and nothing was too much trouble. Chef was so friendly and charming when she visited our table to welcome us. Can’t wait to return.

Lovely atmospheric restaurant. We arrived at 5.30 pm, the staff were very attentive and pre-theatre menu was very innovative. Four of us enjoyed every mouthful of the various dishes. We thought it was great value for money. Marvellously situated for the Gate Theatre.

You must try... Turf Smoked Venison The Venison is one of the Hot Stove’s finest dishes. The meat itself is already deliciously supple and a speciality as it is. Turf smoking venison, however, introduces a delicious smoky flavour that fuses perfectly with the meat to create a trace of oakiness that lingers in the best way. It is then done with a pear and celeriac remoulade to infuse the dish with a lovely sweetness. This is accompanied by divine roast chestnuts, and a hint of vanilla dressing. The entire dish intertwines savoury and sweet to create a distinctive and incredibly flavourful meal.

I have been going to the 101 Talbot for over 20 years on and off and through change of management etc. it has never lost its appeal. Nothing fancy or pretentious, just consistently good food served by excellent staff in a lovely atmosphere.

You must try... Chargrilled Chicken The most unpretentious of meats, this free range chicken has been chargrilled, imbuing it with a delicious aroma that is both smoky and enticing. It is then stuffed with black pudding and apple, two flavours that contend with each other delightfully so that each bite is a little bit different. There are roast root vegetables surrounding the meat, to add a little colour to the dish. Uniting all of these elements is a cider cream sauce which is drizzled over everything, and is moreish and fantastic.

Slow Cooked Pork Belly Having cooked for hours, the meat is absolutely sensational. The cuts are sourced from the best butchers in Ireland so the meat is of excellent quality. It is served with seared scallops, fennel and sesame crackling tuille. The sauce is a fantastic apple and liquorice puree that infuses the dish with just the right amount of sweetness to balance the savoury.

The Beaufield Mews was superb in all area: welcome, service, food,and atmosphere. The price was great value as the meal was excellent, cannot wait to go back!

Absolutely beautiful! We had the six course tasting menu, staff were attentive and food was outstanding. Will return again and would recommend to anyone who appreciates really good food!

We were excited about the tasting menu and it certainly lived up to its billing. It was a surprise menu but a really pleasant one at that. Without giving too much away the Trout was stunning and the Lamb...the best we’d ever tasted. Excellent service especially when we ordered the Portuguese wine and discovered the Maitre D was from where we had first had the wine.

Great place really cool setting but most importantly the food was amazing. It was also excellent value due to the high quality. could not recommend this place more. I brought my wife there for her birthday and it was very romantic but would be just as good with a group.
