Water Air Sediment Heat Remember W.A.S.H. Here are four tips to minimize oil breakdown... Don’t fill fryer baskets with frozen product while they’re hanging over the oil – ice crystals (i.e., water) will fall in. Cover the fryer at night to minimize air exposure. Remove sediment from the frypot regularly. Don’t turn fryers on first thing in the morning if you don’t need them until noon – the additional hours of heat will degrade the oil and waste energy.
