BEEF WELLINGTON For 6 portions INGREDIENTS

500g ready made puff pastry 1 beaten egg to glaze FOR THE FILLING:

Medium size onion, finely chopped 200g button mushrooms, finely chopped A clove of garlic finely chopped

Recipe of the Week

1/3 cup of parsley, washed andw finely chopped 150g good, smooth liver pate 25g olive oil 750g beef fillet steak, sinew removed Sea salt & freshly ground black pepper

METHOD Heat the olive oil in a heavy based frying pan. Sauté the onion until it becomes transparent. Add garlic, mushrooms, parsley and continue to cook for a further 5 minutes until soft and creamy. Season with a little sea salt and freshly ground black pepper. Set aside to allow to cool. Once cooled, mix with the pate. Roll the pastry out onto a lightly floured board large enough to enclose the beef.

Brush the parcel with the beaten egg and place in the refrigerator to chill for 15 minutes.

Brush all the edges of the pastry with the beaten egg and fold the pastry over to completely enclose the meat. Place the parcel on a baking sheet with the seam side down. If you wish to make any decorative pieces of pastry for the top now cut them out and place them on top of the pastry.

Place in a pre-heated oven at 200° and bake for 40-45 minutes or until the pastry is golden brown and puffed up. Remove from the oven and transfer to a serving dish and allow to stand for 10 minutes.

Cut into thick slices and serve alongside your favourite vegetables and sauce.
