“Give It a Second Thought” An American Indian tells about a brave who found an eagle’s egg and put it into the nest of a prairie chicken. The eaglet hatched with the brood of chicks and grew up with them. All its life, the changeling eagle, thinking it was a prairie chicken, did what the prairie chickens did. It scratched in the dirt for seeds and insects to eat. It clucked and cackled. And it flew in a brief thrashing of wings and flurry of feathers no more than a few feet off the ground. You could never be like him.” So the changeling eagle never gave it a second thought and it died thinking it was a prairie chicken.

Preparation:

Mix flour with salt and pepper in shallow dish. Coat chicken pieces in this mixture. Shake off excess and brown in butter in a nonstick skillet over medium high heat for 2-3 minutes. Remove chicken and place on top of onion, carrots, and garlic in a 3-4 quart crockpot. Add the oregano, lemon juice, brown sugar, and chicken broth to the skillet. Cook and stir, scraping to remove browned bits, until mixture comes to a boil. Pour sauce over chicken in crockpot. Cover and cook on low for 7-8 hours or on high for 3-4 hours. When ready to serve, combine cornstarch and water in small bowl, mix well and stir into the sauce. Cook on HIGH for 2030 minutes until thickened. Serve with hot rice.
