SEASONAL HAM HOCK SERVED WITH HOLLAH CHILLI JAM & IRISH WHEATEN BREAD You’ll need: 1 x Gammon Shank (037769) 50g Country Range Cocktail Gherkins (540695) 25g Country Range Capers (400214) 25g Country Range Wholegrain Mustard (678797) 50g finely sliced Spring Onions (226324) 1 small bunch fresh Parsley (223487) 1 small bunch Tarragon (442233) 1 small bunch fresh Chives (642631) To garnish: Hollah Chilli Jam (644819) Watercress (226413) Irwin’s Cottage Sliced Wheaten Bread (970811) Country Range Mixed Pickles (622203) Method: Poach the gammon shank for 3 hours, flake the meat and add the sliced spring onions and herbs. Add the gherkins and mustard and press into a terrine mould. Chill overnight and slice to order. Serve with Hollah Chilli Jam, watercress, wheaten bread and pickles. Serving suggestion: Instead of using a terrine mould, place the ham hock in a clay pot or ramekin for a pot style serving. Makes 8 - 10 portions

WITH RED ONION GRAVY, SERVED WITH A SPRING ONION & CHESTNUT CHAMP You’ll need: 10oz Daube of Beef (034574) 1 Carrot (226360) 1 Onion (229048) 1 Celery Stick (226356) ½ Leek (226386) ½ tsp Mixed Herbs (043231) 1ltr Country Range Red Cooking Wine (710802) 1ltr Country Range Beef Bouillon (623130) 1tbsp Hollah Caramelised Red Onion Chutney (646815) 1tbsp Country Range Tomato Puree (230350) 1 Bulb of Garlic (226381) 1 Country Range Star Anise (645458) Method: • Brown the beef in a pan and then place in a deep oven proof dish. • Add the chopped veg, wine, stock, puree and herbs and cover with lid of tin foil. • Braise in the oven until tender at low heat. Allow to cool in the liquid. • Once cold remove from the sauce and heat in the oven to order. • Heat the sauce with some red onion chutney and reduce until it is sticky. • Coat the meat with the sticky sauce and serve with the champ and veg of your choice. BLUEBERRY AND WHITE CHOCOLATE TART WITH CHRISTMAS SPICES & FRESH CREAM You’ll need: 10 Pidy Sweet Tart Cases 11cm (653427) 250ml Strathroy Double Cream (032559) 250ml milk (032936) 5 Cavanagh Free Range Eggs (008554) 1 Country Range Vanilla Pod (645459) 1/4 tsp Country Range Ground Cinnamon (052827) 50ml Irish Whiskey 100g Fresh Blueberries (226406) 100g Country Range White Chocolate Drops (234124) 100g Caster Sugar (408964) Method: • Heat the milk, split vanilla, cinnamon, cream and sugar until hot. • Pour over the beaten eggs and keep aside. • Add the blueberries and white chocolate drops evenly to the tart case and pour over the hot custard mix. o • Bake in the oven at 150 C until set but wobbly (about 25 mins) and allow to cool. • Sprinkle the top with sugar and caramelise with a blow torch. • Serve with cream and a fruit coulis. CRANBERRY AND CLEMENTINE SPICED BUTTERMILK SCONES, SERVED WITH MIXED SWEET CAKES AND VICTORIA SPONGE You’ll need: 1kg Neill’s Self Raising Flour (390918) 1tbsp Country Range Baking Powder (645484) 100g Dried Cranberries (677322) 50g Italian Mixed Peel (402758) 1tsp Country Range Mixed Spice (645451) Zest of 2 Clementine’s (226365) 400ml Dale Farm Buttermilk (032552) 125g Butter (010731) 100g Caster Sugar 1 egg to glaze Pinch salt Method: Rub the butter into the flour and baking powder. • Add the fruit, peel, zest, spice and sugar. • Add the buttermilk and bring together. • Roll into ¾ inches and cut with a scone cutter. • Glaze the top with egg and sprinkle with sugar. o • Cook at 180 C for 12/15mins. • Once cool serve with cream and cranberry sauce or jam. •

SMOKED SALMON, CRISPY BACON & POACHED EGGS ON TRADITIONAL IRISH RECIPE SODA BREAD You’ll need: Salmon Slices (984532) • Eggs (008554) • Streaky Bacon (033201) For the bread: 140g Country Range Strong Bread Flour (390855) 350g Wholemeal Flour (391290) 1 Teaspoon Salt 2 Teaspoons Country Range Bicarbonate Of Soda (645435) 2 Teaspoons Caster Sugar (Optional) (408964) 60g Butter (010731) 450ml Dale Farm Buttermilk (032552) 4 Tablespoons Vegetable Oil (456695) Method – bread: o Preheat oven to 190 C. • Lightly flour a baking tray or 23 x 12cm loaf tin. • Sift together the bread flour, wholemeal flour, salt, bicarbonate of soda, and 2 teaspoons of sugar in a bowl. • Rub the butter into the flour mixture. Make a well in the centre of the mixture and pour in the oil and buttermilk. • Stir with a spatula until dry mixture is completely moistened. • Move the dough to a lightly floured surface. Lightly knead the dough for no more than 1 minute. • Shape and place the dough on a baking tray (or into the prepared tin). • Cut a cross into the top of the loaf. Brush with milk if you like a dark colour. • Bake in the preheated oven for 25 minutes. Reduce heat to 170oC; rotate tin and bake another 10 minutes. • Allow loaf to cool on a wire rack before slicing. •
Serving: Crisp up the bacon in an oven and keep warm, poach the eggs and serve on top of the toasted soda bread. • To serve place the slices of salmon one side and the bacon on the other. •
