Now that the weather is cooling down, we all want comfort food. But that doesn’t mean we should sacrifice health. We love the recipes from Mayver’s because they are tasty and healthy, like this RED CURRY LAKSA. All you need to do is heat a tablespoon of oil in a large pot, then add two minced garlic cloves and a tablespoon of grated ginger. Cook for two minutes before adding a couple of tablespoons of red curry paste. Cook that for another minute. Next, add a cup of sweet potato that you’ve chopped into small cubes and a cup of sliced mushrooms and saute for five minutes. Then stir in half a cup of coconut milk, four cups of stock, two tablespoons of soy sauce, the juice of half a lime, a quarter of a cup of Mayver’s almond spread and a tablespoon of coconut sugar. Bring to the boil, turn down the heat and simmer until the sweet potatoes have just softened. Add more stock if needed. Then add 100 grams of rice noodles, following the cooking time on the packet.
