BRIOCHE PERDU (FRENCH TOAST) & CARAMELISED APPLE Ingredients: Brioche: 500 g flour, 50 g sugar, 7 eggs, 400 g butter, 13 g yeast, 2 level spoonfuls of sea salt. French toast mixture : 3eggs, 10 fl.oz milk, 10 fl.oz cream, 50 g sugar. buy your brioche from your baker or make a traditional brioche yourself: Blend the four, sugar and eggs using a small electric whisk with a foil (indispensable for makiing brioche). Blend at the 2nd fastest speed for 10 to 15 minutes until the dough is no longer sticky. Then add the butter heated to room temperature, together with the yeast, then the salt. Blend again at the same speed until the dough is no longer sticky. When finished, allow the dough to rise then leave overnight fridg Rolle the dough, in the fridge,

Whole-istic healing An introduction to Alternative Wellbeing In the 24 hour working world we live in, a two week holiday in the sun once a year just doesn’t cut it. Natalie Wallace explores holistic therapies in the first of our special features on wellbeing for the body and mind.

It’s getting harder and harder to wind down, switch off, relax and recuperate, which probably explains the beauty industries notable curve into the alternative therapy arena. Conditions such as back and neck pain, sports injuries, headaches, IBS, hay fever, psoriasis, arthritis and even the biggie – stress, could all be improved with a holistic approach. Japanese holistic face massage This treatment is based on the idea that the head, face, shoulders and neck have energy lines and pressure points which can be manipulated using a unique massage technique. The massage technique uses the principles of Tao which means to live in harmony with the pathway. The Tao system focussing on releasing tensions, tension stress and blocked energy which in turn leads to better physical and mental health and leaves a radiant complexion which, according to Japanese tradition, is a sign of inner peace.

Zone therapy More commonly known as reflexology, zone therapy involves applying pressure to the feet, hands and ears. The idea is there are ten areas on the feet that correspond to the body’s organs, glands, bones, body systems and parts and that by manipulating these areas using a hand massage technique, the therapist is able to unblock energy, tension, improve a circulation, release pain and stress and improve the overall wellness of the body. Ultimately, the goal is to balance the energy in the body which will allow it to heal naturally. Zone therapy is increasingly used alongside other treatments (whether medical or holistic) to alleviate illnesses such as anxiety, stress, asthma, sinusitis or even cardiovascular conditions. si

Acupressure This one works along the same lines, literally long energy lines in this case, as Reflexology. While both treatments work with areas of the body which affect the corresponding body part of function, acupressure uses over 800 points compared to reflexologies meagre 10. Reiki Reiki is a fairly new treatment compared to other holistic treatments rooted in ancient concepts. Massage While massage is expected to be on every treatment list belonging to a spa or beauty salon, it may be worth noting that these treatments are one of the oldest and most significant methods of ancient healing in alternative therapy. With a myriad of physical and mental health benefits, explore some of the most ancient but effective techniques on offer. Hot stone massage: Designed to manipulate muscles at the very deepest level, hot stone massage is said to be one of the most relaxing treatments on the market. Heated volcanic rocks He are used by the therapist to perform the massage or, the stones are placed on the chakras or energy points of the client to re-balance natural energy flow. This treatment is great for toxin drainage, improving circulation as well as arthritic problems, and relieves aches, muscular tension pro and symptoms of stress and anxiety. and improve the skin often relieving conditions such as eczema, acne, psoriasis, scar tissue and cellulite. With treatments like these focussing on the clients body, mind and lifestyle as a whole, an hour or so at the spa becomes less of an optional indulgent expense and more of a compulsory step to maintain a balanced, healthy lifestyle which enables the client to better cope with the strains of modern living.

Thermal Auricular Therapy (aka Hopi Ear Candles) These specially designed hollow ear candles are inserted into the ear, lit and the gentle suction gently massages the ear drum while removing any impurities. The overall effect is calming, soothing and is said to offer relief for problems associated with the ear, nose and throat areas. This treatment is often used by practitioners around the world as an alternative to syringing and grommets. This is another alternative therapy rooted in ancient traditions. One of my staff regularly arrives at 8.55 and I want to now take disciplinary action. Is there any reason I shouldn’t? I fully appreciate the reasons for the instruction and I am sure equally most staff want to arrive a little early to su prepare themselves for the day ahead .In the workplace rules I produce for salons I typically use the words “should be at their work station in time for the first client arriving” Most staff happily comply as in reality they can equally often get away a little early a the end of the day if it is quiet. However unless you pay the staff from 8.50 strictly speaking it is their time and you shouldn’t take disciplinary action against them. Equally though the employee can’t expect to have the benefits of an early finish. Interestingly an employer who paid the minimum wage recently lost a similar case and received a fine. The staff had to report 15 minutes early and weren’t paid. That meant that in a week they “worked “1 hour and 15 minutes unpaid and their hourly rate fell below the National minimum wage!! I know some salon owners issue a new contract when they increase pay rates. Is this a legal requirement? It isn’t really necessary. If the only change is the hourly rate it is sufficient to write to staff to confirm the new hourly rate and the date it is payable. Of course ideally get the employee to sign and return one copy for your retention. empl IF A QUESTION HAS TO BE SACRIFICED TO MAKE SPACE THEN SACRIFICE THIS ONE My staff work on “commission only” and are paid weekly. Sometimes if they have a quiet week they might earn less than the minimum wage but over the year it evens out and their annual pay is more than the NMW. Is this ok? I am afraid it isn’t. If staff work on commission only then they might not earn the NMW for every hour of every day. However they must receive the minimum hourly rate for the pay period. So as you pay weekly your pay period is a week. Assuming the staff work 40 hours then they must be paid 40x £6.19 gross ie £247.60 every week. Therefore to answer the question YES you do have to pay the new rate from 1st October. My apprentice has qualified but isn’t ready for the shop floor. She has agreed in writing to accept £1 an hour less than the minimum wage for the first 6 months, are there any risks in this? Yes there are a number of risks. Firstly at any time she can claim she is being paid under the NMW and recover the arrears. More importantly she can report you to the NMW wage body, or a third party can or they can inspect you. Over 700 employers were prosecuted in 2012/13 and the fine is up to £5,000. Over 26,000 employees recovered back pay in the same year having been paid below bel the NMW rate. This isn’t just a risk to large employers it affects all employers. Indeed the NMW body are naming and shaming employers and the first prosecution was a salon owner. I want all my staff to come in for training on a Sunday on a quarterly basis. It will be unpaid as it is for their benefit but one of the team has queried whether I can force them to attend? I am sure the staff will benefit from the training but it would be unusual for the salon not to derive any benefit! Legally the staff can refuse to attend if it is in their own time. If you have some clause in your rules or Contract that they must attend periodic training days then this will be different but you must offer either pay or time back in lieu. Indeed one of the prosecutions in p 2012 was for an employer who did exactly what you are doing ie required staff to attend a days training unpaid. It was clearly work and they were paid less than the NMW ie they received nothing.

The Copyright, Designs and Patents Act 1988 states that you need to get permission from the copyright holder to ‘perform’ music in public and a music licence grants you this permission. The money collected from these licences is paid back to members of PRS for Music; the songwriters, composers and publishers of the music. PRS for Music tariffs and the terms and conditions of its licences are subject to referral to and scrutiny by the Copyright Tribunal. How can the use of music help a salon? A recent study by Music Works revealed that 6 out of 10 hairdresser clients (61%) are more likely to return on a regular basis to an environment that they find welcoming and relaxing, so it goes without saying that return visits are crucial in establishing a successful salon. Playing music in hair and beauty salons can relax customers and create more of a welcoming atmosphere. If customers enjoy the music, they have a more pleasant experience, thus they are more likely to return and recommend the business to others. What about actual income, how can music boost this for salons? Background music in salons can actually increase productivity, productivit acting as a dominant motivator for employees. Music Works revealed in their study that 85% of salon staff say that listening to good music at work makes them much happier and 1 in 3 would be less likely to take time off sick if good music is being played at work. Sarah Cross, Hairdressers Journal resident customer loyalty expert, claims that “it is five times cheaper to retain clients that it is to acquire new ones”, and furthermore “20% of loyalty programme members will account for 80% of your profits”. Trade opinion Are you an advocate of an exceptional client experience? If you are, then you must surely be heart and soul for good consultation practice. Regardless of time of year or season, customers expect safe and effective treatments. Customers also request useful, practical skin care advice. But if I am honest about the consultation skills demonstrated by many therapists who walk through the doors of The International Dermal Institute, I would have to say that most lack the confidence, h knowledge and communication skills to carry out the process with the client effectively. And only a handful will adapt treatments or recommendations appropriately. Creating customized treatments following an in-depth discussion with a client is a skill that must be learnt and practiced. Many business owners believe that client experience Ma is primarily influenced by costly extras from unique tea blends to expensive décor. Whilst these are enhancing and will certainly add to the experience, the client’s rather demanding expectations are based on much simpler ideals – prioritize me and value me. The cornerstone of meeting these demands is a thorough consultation. It puts the client at the centre of consult their own experience and builds around them. Great treatments or helpful advice is dependent on knowing who is in the skin. What are the critical inclusions? How do you assess whether your current protocol is meeting the needs of the twenty first century customer? Compare these six essential questions with your current consultation to evaluate effectiveness. These are not exhaustive but capture the central information that ensures safe practice. They also get to the root of how the client feels right now. Each allows you an opportunity to probe further about diet and lifestyle as appropriate. 1. Do you have any current health or medical conditions? 2. Are you taking any medications or supplements? 3. Are you pregnant or trying to become pregnant? Or due for your menstrual period?

4. Do you have any known allergies? Have you experienced any reactions or rashes before? 5. Can you rate you stress level on a scale of 1-5? 1 being low and 5 being high. 6. How do you feel today? Do you have pain anywhere? If you are intending to perform a skin treatment or offer advice about skin add these four questions. 1. What are you currently using at home to look after your skin? 2. What concerns you most about your skin? 3. Have you had a skin treatment before? 4. What would you like me to prioritize or leave out of o the treatment today? Now take your protocol and experience it like a client. The repercussions of allowing vague cursory consultations are significant; the rise of sensitivity and allergies demand that we take client safety seriously. Although there is no guarantee against skin responses, it is entirely possible to be fully informed about individual customers, provide a truly in client-centric experience, and avoid costly service recovery in the majority of cases. The strategy of booking therapists back to back every hour on the hour - makes no business sense if offering a professional, customer-focused service is a priority. To avoid customers feeling short-changed by swallowing up treatment time, request they come in 15 minutes prior to their appointment to fill out a consultation card and have time to discuss requirements with the therapist. Don’t forget verbal consultation with walk in clients wishing to buy products. Just because they are not having a treatment should not mean less professionalism on your part. pro Without the humble consultation, you cannot cement client return and build the essential reputation that will differentiate you from your competitors. The best experiences are personalized ones based on accurate information and not assumption.

NINE OUT OF TEN dental patients would like to be checked for oral cancer during their check ups. When considering the staggering facts about oran cancer, it is of little surprise - the new cases and deaths in the UK caused by oran cancer more than double those of cervical cancer per annum. Early detection is one of the keys to upping survival rates. When ea the five year survival rate is 80-90%, instead of the diagnosed early, 52% that the 65% of the country who are diagnosed later face. The earlier the detection, the more likely it will be that the cancer can be treated in a far less invasive way. Given that the mortality rate of oral cancer has not decreased in three decades and that there has been a close to fivefold increase in oral cancer patients under the age of 40 without any traditional risk facto factors, the importance of undergoing oral examinations on a regular basis cannot be overstressed. Whilst an examination with the naked eye can detect some abnormalities, thanks to the revolutionary hand-held VELscope device, far fewer cases are missed, as it has a far higher success rate at detecting abnormal tissues, pre-malignant dysplasia and even oral cancer. During clinical tests, of the 620 patients screened, 28 lesions and 5 dysplasias were missed by the naked eye. The Velscope, however, missed one.
