Creamy Cucumber Salad
•2 English cucumbers •½ medium red onion-finely sliced •¾ teaspoon salt •½ cup sour cream •¼ cup mayonnaise •2 tablespoons white wine vinegar •⅓ cup chopped fresh dill •¾ teaspoon sugar •½ teaspoon freshly ground black pepper
Cut the cucumbers in half and then slice each half down the middle lengthwise.
Use the tip of a teaspoon to scoop out the center seeds. Cut each half into thin slices and place in a colander along with the red onion slices. Toss with the salt and let sit in the sink for at least 30 minutes, until the water drains out.
Meanwhile, make the dressing: In a medium bowl, combine the sour cream, mayonnaise, white wine vinegar, dill, sugar, and black pepper and mix well.
When the cucumbers and onions are ready, release any excess water by tapping the colander several times on the base of the sink, then use a large wad of paper towels or clean dish towel to pat the vegetables dry. Add the vegetables to the dressing and toss well. Cover and chill until ready to serve.
Make-Ahead Instructions: The salad can be made and stored in an airtight container in the refrigerator up to 1 day ahead of serving.
Peach Cobbler
•½ cup unsalted butter •1 cup all-purpose flour •2 cups sugar, divided •1 tablespoon baking powder •Pinch of salt •1 cup milk •4 cups fresh peach slices •1 tablespoon lemon juice •Ground Cinnamon
Melt butter in a 13x9-inch baking dish
In a separate bowl, combine flour, 1 cup sugar, baking powder, and salt; add milk, stirring just until dry ingredients are moistened. Pour batter over butter (do not stir).
In a saucepan bring remaining sugar, peach slices, and lemon juice to a boil over high heat, stirring constantly; poru over batter (do not stir). Sprinkle with cinnamon(optional). Bake at 375º for 40 to 45 minutes or until golden brown. Serve the cobbler warm or cool.
Apple Cider Bellini
For 1 Cocktail: For a Pitcher: •1 ounce apple cider •1 ounce apple vodka •Champagne
•Apple Slices for garnish •1 cup 8 ounces apple cider •1 cup 8 ounces apple vodka •1 750ml bottle of Champagne •Apple slices for garnish
To make one cocktail: Add cider and vodka to a champagne flute, then top off with champagne and an apple slice.
To make a pitcher: Add cider and vodka to a pitcher, then fill with a bottle of champagne and apple slices.
