Sloppy Joe Grilled Cheese
• 1 pound lean ground beef • 1 tablespoon unsalted butter • 1/2 yellow onion , chopped • 1/2 green bell pepper , chopped • 1 clove garlic , minced • 2 teaspoons yellow mustard • 3/4 cup ketchup • 2 tablespoons brown sugar • 1/2 teaspoon Kosher salt • 1/4 teaspoon ground black pepper • 12 slices American Cheese • 12 slices white bread • 4 tablespoons unsalted butter
Add the ground beef to a large skillet (this browns very well) on high heat and brown until a deep brown crust appears before breaking the beef apart. Stir the ground beef and brown until a deep crust appears on about 50 or so percent of the beef, and it is cooked through, then remove the beef, drain the fat and add the butter, onions and bell pepper to the pan. Let brown for 1-2 minutes before stirring, then let brown for another 1-2 minutes before stirring again and add the beef back into the pan. Add the garlic, mustard, ketchup, brown sugar, salt, black pepper, to the pan and cook until most of the liquid has evaporated, 3-5 minutes. Spread the butter on one side of each of the 12 slices of bread. Butter side down on the cutting board. Add a slice of American Cheese to each of the slices. Top six slices with the meat mixture and close the sandwiches pressing down lightly. In a cast iron pan or griddle on medium high add the sandwiches and cook for 3-5 minutes on each side.
Blueberry and Lemon Scones
• 2 ½ cups all-purpose flour • ½ cup sugar • 2 tsp baking powder • ½ tsp baking soda • ¼ tsp salt • ½ cup butter, cold cut into
small pieces • 2 cups fresh blueberries, coarsely chopped • ½ cup milk • 1 tsp fresh lemon juice Lemon Drizzle: • ½ cup powdered sugar • 2 tsp milk • 1 tsp fresh lemon juice
Preheat oven to 425°. In a large mixing bowl, whisk flour, sugar, baking powder, baking soda, and salt together. Add cold butter into the flour mixture and using a pastry blender or a fork, mix until crumbly. Add chopped blueberries, lemon juice and lemon zest, stir. Pour in milk and stir until incorporated. Remove from the bowl and place on a flour covered surface and knead about 8 times. Form a rectangle then cut into 8 diagonal pieces. Place on a prepared baking sheet. Pop in the oven and bake for about 21-23 minutes or until browned.
For The Topping:
Mix lemon juice and milk into powdered sugar to make a glaze, then drizzle over each scone.
Dirty Shirley
• 2 ounces of Vodka • 1 ounce grenadine • 8 ounces of lemon-lime soda • Ice • Maraschino Cherries
Fill a glass with ice, add Vodka, soda and grenadine. Give it a swirl. Garnish with a maraschino cherry or two. MMM…refreshing!
