Cold milk makes for proper sleep ROY Willan admits having sleepless nights when milk was entering the vat at 21˚C two years ago. Because milk was collected from the Waharoa farm in the night, the milk temperature had dropped by the time the Fonterra tanker turned up. BANKING ON ICE BANKS PACKO ICE banks come in different models to suit farms from 100 to 1500 cows. The ice bank principle is simple: inside the stainless tank is a coil of copper tube and around the tube ice is built up during the refrigeration process, this ice is known as a thermal mass energy store. This thermal store produces ice water; when milking cows, a farmer turns on the pump and the aerator to get ice water circulating at 0.5˚C through the plate heat exchanger.

This brings the milk temperature down from 36˚to below 6˚C. A condensing unit is attached to the ice bank; farmers can opt
for a new unit or use the existing unit attached to the milk vat, if compatible. The aerator is to blow air up through
the tank and over the ice; melting the ice evenly and maintaining water temperature at 0.5˚C throughout milking.
