A party to remember

The Belgravia Traders Association is holding this year’s Elizabeth Street Party on 11 June. With the party being held a day before the Queen’s official birthday, it will make for a double celebration. Keeping it in the family Capital Hotel GM Kate Levin tells the Journal about her childhood memories, the importance of experience in the workplace and keeping the family hotel empire up with the times francesca lee

A

s soon as I step in to The Capital in Knightsbridge, Kate Levin welcomes me. But unlike most general managers, Kate – daughter of The Capital Group owner David Levin – has experience unlike many others in that she grew up at the hotel. Attending nearby Francis Holland School as a child, she remembers: “I used to sit behind the concierge desk and do my homework.” Kate even received both her GCSE and A-level results in the chef ’s office at the hotel. “That was the only telephone where no one could hear my conversation,” she laughs. Indeed, some of the longest-serving staff, such as head of concierge Clive Smith who has been with the company for more than 25 years, have seen Kate grow up at the hotel. After school, Kate’s father was keen for her to study hotel management, but she had a rebellious moment and decided not to follow in her brother’s

footsteps and instead took up a position at Jo Malone on Walton Street during her gap year. “Jo taught me that as long as you work with brilliant people, it doesn’t matter what you do. I learnt so much from her and her husband and they’re still

in Soho: “It was quite random considering how unsporty I was.” A brief stint back at the family hotel followed, before Kate turned her hand to events, where she helped George Hammer (who owns Urban Retreat in Harrods) set up an events space in One Marylebone, followed by One Mayfair. “My brother then pointed out to me that I was essentially working in hospitality, so I decided to come back to the family business and have been here for six years ever since,” she says. “And although my father once said ‘If there’s not a job with us then find work elsewhere’, I’m grateful for the experience and now I get to work with him and he has more energy than anyone I know.” Having recently celebrated the hotel’s 45th birthday, Kate is keen to keep its classic feel but to “keep it moving forward with the times”. That also goes for The Levin hotel, Michelin-

starred Outlaw’s at The Capital restaurant as well as a wholesale bakery business. However, with all that on her plate, as well as taking over as chairwoman of the Pride of Britain Hotels in November from David Morgan-Hewitt, what does she do in her spare time? “My husband is also in the hospitality industry and we absolutely love cooking, so we’ll sit around our big kitchen table entertaining lots of people, or we’ll go to The Nag’s Head pub on Kinnerton Street. I also love making jam. “I also enjoy gardening and do as much as I can within the confines of our small garden. We couldn’t be happier that The Fine Cheese Co. has arrived in Belgravia, setting up shop for the first time in London. Based in Bath, the company has specialised in hand-made British and European cheese for the last 25 years and to mark the opening of the store, it has introduced a new artisan-made cheese from Somerset, called Motcomb. has it The Journal speaks to Zuma London’s newest head chef Ben Orpwood to find out the secrets behind his success emily adams

“I

wanted to be a football coach,” Ben Orpwood, head chef at Zuma London, tells me, “but obviously everyone wants to be a football coach.” Thankfully for all us foodies, Ben’s dad convinced him to train as a coach of something else and transfer the skill set later on. However, after a stint as a Real Tennis coach (the original form of tennis), he turned to the kitchen, taking on an apprenticeship as a chef in Cambridge. Now, still only 30 years old, he’s recently become the head chef at one of Knightsbridge’s most illustrious restaurants. Set up by chef-turnedrestaurateur Rainer Becker in 2002, Zuma London was the first of 10 restaurants – the 11th is due to launch at the end of the year – to open around the world serving a contemporary take on authentic Japanese cuisine and while Ben may be in charge of the kitchen now, he’s been a familiar face in Zumas worldwide from the beginning. “When I first came here, I worked on the grill straight away. I thought this place was better than anywhere else,” he tells me. “I took the job and I stayed here for two-and-a-half years, moving up from a commis chef to a chef tournant.” When Zuma Istanbul opened, 12

Ben took on the challenge, before moving to Dubai and then Sydney. Eventually it was time to come back to the UK, but after a short stint at Mayfair’s Sexy Fish, his true home from home was calling. Now he’s returned and heading up the thriving London restaurant, I’m keen to find out how he is handling life back at Zuma. On the morning I visit, the kitchen is already alive with smells and sounds hours before it opens. Coals are

being heated for the Robata grill, a traditional Japanese method of cooking, sushi is being prepped with immense speed and precision and a hearty breakfast is being served for the whole team. There’s a warm atmosphere as the whole brigade sits down and enjoys the first meal of the day together. Walk into any Zuma in the world and you’ll get that same familiar feeling, like coming home to your family. When Ben talks about his team and the four walls around him, he talks like he’s among friends. “You become very loyal to it,” he tells me. “Even after I left Zuma, I still kept in touch,” he says before adding, “I was one of the original team – I was a Zuma baby!” The restaurant itself is a work of art – split into different dining areas, and ornately decorated with exposed stonework and bamboo displays awash with light and flashes of bold colour. For those who want to watch Ben at work, you can sit

at the Robata grill where he’ll often be found talking to guests. “If a customer wants to ask me a question they can, because I’m right there,” he says. Or if you want, you can eat at the sushi counter, observe the main kitchen from a distance, or dine privately in one of two rooms separated from the main restaurant by open timberwork. Wherever you sit, you can guarantee the restaurant will be filled with hungry customers and a buzzing atmosphere. “On a Sunday there can be 650 covers,” he tells me unfazed by the number. “Ten years ago we didn’t have such high numbers,” Ben says. “It’s always been busy,” he assures

After more than a decade, the restaurant has its own classic dishes, but he tells me that he believes in seasonality – especially in London. “We have five or six items on the menu that change with the season.” But, he adds, “We can’t

His favourite dishes on the current menu include smoked scallops, sea bass with yuzu and truffle oil and the seared beef that comes with a dressing that takes two days to make, but his all-time favourite dish? “The barley miso chicken – it’s just amazing!” While the food at Zuma has been honed and refined for many years, if you turned up at Ben’s for dinner, it might be a slightly different affair. “I don’t really cook at home,” he admits, “I’ve got the worst kitchen I’ve ever had; it’s awful.” Surprisingly, Ben doesn’t have a working oven and he’s got an unused dining table, so when he’s at home, the results are much simpler – he saves his best for the restaurant. After all those years training to coach in the kitchen, I wonder if he still has plans to transfer his skills to the football field? From Venice, with love

The Journal discovers a slice of Italy in the most unlikely of places Emily Adams

I

don’t tend to gravitate towards department stores when I’m making dinner arrangements, but then again Harvey Nichols isn’t your average department store. If you manage to tear yourself away from the glitz and glamour and make it to the fifth floor, you’ll be generously rewarded with a whole host of cuisines, and the most recent addition is a quaint Venetian eatery called Polpo. It’s a well-dressed restaurant with Chesterfield-style booths and a line of elegant pendant lights above the bar, but it’s slightly faded and cosier than your average restaurant; it has an unassuming glint of Venetian charm. A dividing curtain closes off the rest of the food hall and lace-style doilies cover the lights to give a dim but warm glow to the restaurant. I can still hear the chatter of other hungry shoppers next door at Burger & Lobster and those perusing the food market, but I feel secluded and at home in my little corner of Venice. Polpo prides itself on serving simple traditional Italian food. With tasting dishes of fish, breads, meat and cicheti (small snacks), I am in my element.

It is recommended that each diner orders three to four plates for a standard meal, or more if you’ve really worked up an appetite while shopping. For two people, we order seven dishes which all arrive as and when they are ready. We tuck in to stuffed fried olives, grilled focaccia and potato and Parmesan crocchettes, before heaped servings of zucchini and Parmesan salad, Milanese chicken, flank steak with truffle cream and a mountain of roast potatoes arrive. Plates of colourful food are spread across the table and there’s an informal feel to the meal, thanks to being able to dip in and out of different dishes and share the food; there’s no risk of food envy here. It conjures up images of family life in Italy and I

can almost feel the warm Mediterranean air around me. As with all Italian food, Polpo’s efforts are packed with moreish rich flavours; it’s hearty and indulgent and everything I want from a Venetian restaurant. Thinking that I couldn’t possibly eat anything else, I am distracted by the dessert menu in front of me. Promises of panna cotta and tiramisu pots are just too tempting, but I opt for the Nutella pizzetta (a small pizza smothered in sweet Nutella) – the most decadent item on the menu. I wash it down with the cocktail of the day: a sublime chilli, rum, ginger and honey concoction. Having indulged far too much, the only option is to sit back and listen to the bustling atmosphere of the food hall and the chatter of weary shoppers. Forget that this is a department store; the constant clatter of plates and glasses from all around the food hall and the vibrant, buzzing atmosphere make me appreciate Polpo so much more, and it’s just one more excuse to spend time in Harvey Nichols. 109-125 Knightsbridge, SW1X 7RJ, 020 7201 8625, polpo.co.uk

hether it’s blowdrying, straightening, curling, or desperately trying to tame the frizz, I’m guilty of putting my hair through a lot and I’m sure I’m not alone. Sometimes you need to turn down the heat, embrace the mane and enjoy some TLC. Thankfully, Neville Hair & Beauty Salon understands this common problem and it has created a treatment for it. The Mist-ifying Treatment is designed to restore moisture and create healthy, youthful locks – and today, Dayne Dante, a stylist to the stars at the salon for the last 10 years, is the one looking after me. I’m not normally a fan of the idle small talk you’re obliged to make with your hairdresser, but Dayne is incredibly interesting. Feeling so at ease as Dayne saves my dry, heat-damaged hair, I’m suddenly taken aback by what he does next. He places a silvery bag over my hair and then attaches a hoover-like tube to my head. A switch is flicked, a machine whirrs

into action, and the bag blows up to an alarming size as steam starts to rise from it. It looks like I’m having a quarter-life crisis as my hair is subjected to 20 minutes of steaming and I’m praying I still have hair when it’s all over. I trust Dayne, but still, my appearance is a little bit startling. What is actually happening is far

There is a team of more than 40 individuals working tirelessly to make us all look our best and, beside me, three of them are dutifully tending to one customer. Her feet are being massaged, her fingernails polished and her hair blown into life all at once. Once relieved from the steam machine and after the best shampoo and conditioning my hair has ever received, Dayne masterfully blowdries my hair, giving my locks heaps of volume and body. Somehow I look unrecognisable. My hair feels like there’s a lot of product in it, but I’m reassured that I’ll see the real results in the next few days as I wash and restyle it. The Household Cavalry Foundation The Household Cavalry is made up of two of the oldest regiments in the British Army who have been protecting our Sovereign “day in, night out” for more than 350 years. The wondrous sight of the Household Cavalry on the streets of London is an enduring image that portrays the very best of Britain. Their role in the Queen’s 90th birthday celebrations this year has

Waiting four? The Journal heads to Hampshire for a little R&R, in the comfort of a Four Seasons dressing gown and slippers BETHAN REES

C

oming up the extensive driveway of the Four Seasons Hampshire hotel, I feel as if I’m having an identity crisis. Am I in fact one of five sisters from a family of landed gentry, who goes by the name of Elizabeth Bennet, waiting to be married off by my father? There’s something very Pride and Prejudiceesque about this commanding Georgian property – and I feel this journey would be more apt in a 1913 Rolls-Royce Silver Ghost than a Volkswagen Polo. This doesn’t mean, however, that there’s anything oldfashioned about the hotel – quite the opposite. The sense of aristocracy soon dissipates as I find myself flying through the countryside on a breath-taking 770-foot zip line in a velour tracksuit – but we’ll come back to this. The perfectly manicured lawns, an 18th-century walled garden and a few cows dotted around the 500-acre site, this place is quintessentially English and makes for the perfect break from London’s urban jungle. Located an hour from central London, the hotel provides a pictureperfect resting place to catch up with yourself and family. Hampshire embodies the classic countryside living lifestyle with its pastoral landscape and the small village of 26

Dogmersfield lies between Fleet and Hartley Wintney. As I enter the hotel, before I can even begin to take in my surroundings, I experience a wave of adoration – it’s the snoozing black Labrador in front of a roaring fire who goes by the name of Oliver Beckington, so named after two bishops who once resided on the Dogmersfield Estate (yes, he does actually have a surname and prefers to be called by his full name). I’m told by the doorman that he is the lord

of the manor and this resident dog represents the hotel’s commitment to being a dog-friendly destination. It will even ensure that your hound’s luxury tastes are looked after too, as it has teamed up with London pet outfitters Mungo & Maud to provide elegant dog beds, and organic treats.

I’ve visited a few Four Seasons hotels in the past and one element that remains constant is its outstanding service, which is embodied in its little details and nothing-is-toomuch attitude with seamless results. After the initial excitement of meeting Oliver, my guest and I check in at the wood-panelled and parquet-floored reception. It takes mere seconds before our bags are whisked off to our room ahead of us. The room’s interior design is characteristically country-house chic – themed with muted tones, soft furnishings such as comfy armchairs, curtained headboards and photos of the historic house. Upon our arrival in the room, there’s an ice bucket waiting with local ales, including the Four Seasons Hotel premium golden ale called 1086, which is brewed in Hampshire – a lovely touch that doesn’t go unnoticed and it accompanies me to the bathroom. A Victorian-style, freestanding, roll-top bath sits proudly in the all-marble space – potentially

slippery, but with my Four Seasons slippers on I am fine. Using Asprey bath salts and bubbles, I take the plunge and am transported to the highest echelons of happiness, before I step out and don my towel robe, which I refuse to take off for the duration of the weekend aside from begrudgingly dressing myself for dinner at the restaurant Seasons. Headed up by executive chef James Dugan – who spent an early part of his career as a demi chef de partie at the Four Seasons Park Lane in London – he really emphasises the field-to-fork concept and uses lots of locally sourced ingredients such as cheeses from Winchester, salad greens from nearby Secretts Farm and other organic produce from Laverstoke Park Farm. The menu changes with the seasons, but my guest and I dine on langoustine in a spicy squash soup with buttermilk and samphire, saddle of venison with roasted salsify and pickled walnuts and a citrus rice pudding, served with lemon curd and caramelised almonds – each course is spectacular and masterfully paired with wines selected by the charming sommelier, Akos Hervai. Seasons is also where breakfast is served, which after the meal the night before, I didn’t think I’d be able to face – but everyone knows that a buffet breakfast turns even the most demure of adults into juveniles. I feel as if I’m at a Willy Wonka extravaganza featuring hash browns and creamy scrambled egg. After an extraordinarily stressful time of overindulging and looking out at the rolling hills of the countryside, I visit the spa, which is in a converted 18th-century stable block and offers an outdoor vitality pool and a quiet relaxation

area – but I’m here for a treatment. I choose the Crystalus Body Massage (using Sodashi products), which uses healing stones and crystals to induce total relaxation and harmony between the mind and body. The 90-minute massage sends me floating through the corridors back to my room – hopefully not to be confused as a ghost haunting the hotel in my white dressing gown. Also not to be missed here is the aforementioned zip line. Hidden amid the woodland is the Highwire Adventure – an obstacle course through the trees, with high and lowrope courses, a parachute simulator and the zip line, which launches you over the beautiful countryside – in my case, while screaming. I would advise doing this before going to the spa, however, as it does put you through your paces. Live out your Jane Austen fantasy at the Four Seasons Hampshire, where children and dogs are more than welcome. Who knows, maybe you’ll even find your Mr Darcy in Bar 1086, or wobbling his way through the trees in a suspended tyre. The Journal takes a peek inside the new Kings Gate development by Land Securities, and discovers that Victoria is undergoing a monumental change for the better Commuterville, office hot-spot and a place of business – these are all images that people conjure up in their mind when they think about Victoria, with its busy roads and rushing crowds as they move from meetings to the office, from coffee shops to the tube station. Some SW1V fans have for years been crying that there’s much more to Victoria than the hustle and bustle of commuters, but it’s only recently that people outside the postcode are starting to realise that. Land Securities is investing billions of pounds into Victoria – for instance, Victoria Street has already benefited from extensive construction work, and it’s on this road that the new Kings Gate apartments sit as a 30

prime example of the company’s investment. Land Securities aims to turn Victoria into a vibrant centre of creativity, commerce and culture, a place where traditional British heritage sits alongside dynamic global businesses and retail brands. It’s a big, ambitious project, but Land Securities’ bold mission is clear and promising. Its latest building used to be one large structure next to Westminster City Hall, dominating Victoria Street’s skyline, but now it’s been split into two different buildings; one has become the Kings Gate residential build and the other is the Zig Zag building, a commercial development next door. Keen to create more of a community feel in Victoria, the idea

is to make the most of the pubs, squares, restaurants, theatres and galleries in the area. “Victoria isn’t just a few main roads,” Emma Thorne residential marketing manager at Land Securities tells me, “there are little side streets with beautiful traditional red brick buildings.” She’s right, and rather than suggesting that Victoria is about to become a residential hotspot, it could easily be argued that it always has been and Land Securities is helping to highlight that; for instance, television presenter Lorraine Kelly has been based in Victoria for about 10 years, and has praised the area’s vibrancy. The apartments at Kings Gate take inspiration from a classical Italianatestyle of architecture, with big pillarlike structures adorning the exterior and large, spacious rooms inside. There are 100 units ranging from studios to four-bedroom penthouses, and most of these benefit from underground parking and private terraces that look north to St James’s Park and Buckingham Palace, or south, towards Vincent Square and the new Nine Elms skyline. The interior design is of a high standard throughout each of the properties, and there’s also a blend of antique pieces in some of the units, and original artwork created by interior designers Spinocchia Freund in order to offer a personal touch – although telling the two apart is difficult. It was difficult to create a design for a very broad market, as the project wanted to make a space that would cater for any age, for any nationality and way of living.

What are some of your favourite design features in the apartment?

Three Savills experts tell the Journal how they’re finding the current rental and sales market francesca lee

“F

rom 2012 to 2014, half a billion pounds worth of property was sold in Eaton Square,” Richard Dalton, head of apartments sales at Savills Sloane Street, tells me. Working in prime central London for 20 years and specialising in Belgravia with a particular focus on Eaton Square, he has noticed an increase in different nationalities and new wealth coming in to the area. “It’s a traditional address with a very modern appeal. Some want the prestigious location and what it represents, whereas others are more driven by the size and specification of properties there.” Georgina Bartlett, head of residential lettings – who has also recently been appointed as the central London agent for ARLA (Association of Residential Lettings Agents) – has seen her clients maintain and continue to invest in Belgravia, although she has noticed a change in tenant demographic. “We

track employment fields, and we’ve seen a real shift with the emergence of the technology sector. This has had a direct effect on the rise of international tenants – we’ve seen an increase from 61 per cent to 82 per cent in the last two years, with big investments coming into Belgravia from companies such as Google,” she says. Georgina has also noticed that

“Even smaller properties are being bought by big money” partly due to stamp duty changes and the rise of the international market, there has been a surge in rentals. “International tenants don’t necessarily feel that they need to buy, and with the average length of tenancy being two years, they can commit to settling in Belgravia and enjoy the lifestyle that comes with it.” With 50 per cent of Belgravia

houses being second homes, according to Savills research, it means that “even smaller properties are being bought by big money,” says Richard Gutteridge, head of the Savills office. However, he is keen to point out the importance of Savills international reach. “We spend the majority of our time dealing with overseas clients and have seen a rise in the Chinese market, which differs from the last 15 years where there was a strong demand from Russian and Indian markets,” he says. Although there is demand, Richard believes that now is the time to start looking to buy as Savills has some excellent stock available.
