ovember is always a month of celebration for us at Indonesia Tatler, because it’s our birthday! Yes, this year we turn 17, and as always in this month leading up to the festive season, we bring you a very special issue of the magazine to celebrate. However, this year our celebrations are muted and our hearts a little sad: a few months ago, our beloved Bureau Chief, and my dearest mum, Maria Lukito passed away, leaving her work in this world to be taken up by her children and her grandchildren, and her work in the next to begin. So this issue, we feature a memorial montage from her memorial service and funeral, which was attended by all the many people she called friends. However, Ibu Maria would not have wanted us to wallow—this most definitely wasn’t her style— so instead, let me introduce you to this month’s delightful cover girl. Any description of Luna Maya is going to read a little like a shopping list: actress, model, socialite, online entrepreneur and now bricks-and-mortar businesswoman. What you may not know about this bubbly, happy-go-lucky charmer is that she grew up in the wilds of Bali and is very much a nature girl at heart. Her story, then, is naturally entitled “Au Naturel” and I hope you enjoy it.

Elsewhere, with the year’s end approaching, we have rounded up some great gift ideas, both for him and for her. Having been a freelance fashion photographer for years, Hakim has now developed his own style of photography. At first, he loved to try different approaches, playing with angles, lighting, fashion styling, and editing, while at the same time making sure that he would discover a selfidentity through constant practices. Samsung research and Development indonesia’s Alfred Boediman tells us how indonesia will contribute to the technologies of tomorrow, writes Mariel Grazella lfred boediman is not your typical researcher or corporate boffin. Skin etched with dragon tattoos, the Netherlandsborn engineer is looking to disrupting global technology from within Indonesia. “We believe in glocalization: from Indonesia and for Indonesia with a global reach,” he says. The Porsche lover is well positioned to put the country on the international innovation map. As Vice President of Samsung Research and Development Indonesia (SRIN), Alfred directly reports to Samsung’s leaders sitting in the South Korean tech giant’s headquarters. “As part of Samsung’s global research and development family, SRIN is one of the 20+ Samsung R&D centres around the world that strives to support the company’s cutting-edge technologies through unique and specialised core competencies,” he says. He adds that technologies that the local centre has worked on have included data analytical software found in Samsung’s smart consumer appliances, such as televisions and refrigerators. The team of roughly 150 people is also supporting Bixby, an artificial intelligence (AI) software embedded in the Galaxy S8, S8+, and Note 8 smart phones and tablets. “I believe that AI will remain as one of the championing global trends of next year,” he says, noting that the advancement of AI will lead to the birth of technologies that will transform smartphones beyond just tools for communication. “AI is making every interface

both simple and smart, setting a high bar for how future experiences will work,” he says. To drive innovation onwards and outwards, a company must first be innovative from within. Alfred points out that he has put a lot of effort into building a culture that nurtures innovation, such as through open management practices. “What I have learned so far based on personal experience is to break conventional leadership models,” he says. “Being a visionary goes beyond communicating the ‘what’ and should reflect on the ‘why’ also.” Furthermore, he believes in not allowing setbacks to dampen his zest for keeping on learning and trying. “It is immensely satisfying to eventually shed old uncertainties and begin learning again,” he says. Establishing a more open culture is critical, he adds, especially when convincing Indonesians overseas to return and work in the country, and in the recruitment and retention of millennials who now form the majority of his team. “The number-one challenge for us is still people. Trying to get experienced staff is not easy,” he says, pointing out that once trained, some people inevitably chose to leave and set up their own companies. However, when it’s time to take a break from breaking convention, the 946 Emporio Armani Vespa fan who enjoys riding across Bali hits the kitchen to test his culinary chops. “I just love going over to the stove and cooking something that will not only take my stress away, but also give me something to eat as well,” he shares.

Core is the focused strategy for who wants to preserve wealth—protecting the main assets while supplying some passive income. What are the potential risks that UOB is analysing for its Privilege Banking customers? Market risk, for sure, is the main thing that we assess. The other risk comes from discrepancies between a customer’s risk profile and the product selections. Oftentimes, we ask clients about their ideal potential return and they may say 11 to 12 per cent a year, according to their own calculations. Bonded by mutual boredom with their 9-to-5 jobs, Italian friends Loris Messina, 29, and Simone Rizzo, 28, started Sunnei in 2014. The duo came up with their brand name after listening to a song that had the word “sunny” as a refrain, and the joyful adjective has come to define much of their design aesthetic. Sunnei’s clothes are youthful and classic but laidback—the perfect embodiment of “Sprezzatura,” an Italian word meaning “studied carelessness” when applied to describing art and literature, and “effortlessly cool” in the context of fashion. In Rizzo and Messina’s collections, this translates into fuss-free silhouettes, experimental fabrics and playful lines, all of which feel right at home in the modern gentleman’s wardrobe. This isn’t merely trendy fashion, mind: the designers have become known for using traditional Italian craftsmanship and manufacturers, paired with high-quality materials and some seriously sharp tailoring. BuLGARI OCTO MASERATI GRANSPORT & GRANLuSSO Maserati has based its reputation, particularly in recent years, on building luxurious sports cars that don’t sacrifice comfort for speed—automobiles as equally at home in a refined, leisurely setting as they are when pushed to the limits of their performance. It is this adaptable quality that Bulgari sought to replicate with the latest in its series of timepiece collaborations with the storied Italian carmaker: the Octo Retro Maserati GranSport and GrandLusso. The monochromatic, DLC-treated steel GranSport is available with either red or blue highlights, while the more formal GranLusso is presented in a sophisticated pink-gold case.

ROGER DuBuIS LAMBORGHINI EXCALIBuR AVENTADOR S On the heels of Roger Dubuis’ recent Pirelli Double Flying Tourbillon (a timepiece affixed to the wrist with a strap made from the tyres of the 2016 Monaco Grand Prix winner), comes another race-bred collaboration, this time with Lamborghini Squadra Corse. IWC INGENIEuR CHRONOGRAPH SPORT EDITION 50TH ANNIVERSARY OF MERCEDES-AMG This fabulously light 44.3mm titanium timepiece, which resembles IWC Ingenieurs of the mid-20th century, was created to celebrate the 50th anniversary of Mercedes-Benz’s high-performance AMG division. The 250-piece edition is powered by an automatic manufacture chronograph movement with flyback function protected by the range’s excellent anti-magnetic casing. With its luminescence and water resistance to 120 metres, it very nearly qualifies as a diver’s watch, too.

It’s not often a watch made in collaboration with a carmaker is priced at more than the automobile whose badge it carries. But that’s the situation with Richard Mille’s multimillion-dollar RM 50-03. Produced in cooperation with the brand’s longtime Formula 1 partner, McLaren, the 40g watch is the lightest mechanical chronograph ever made, according to the maker, thanks to a carbon case hewn from cutting-edge nano-material, graphene, and weight savings courtesy of the hand-wound skeletonised tourbillon movement being constructed of titanium and carbon. Many of the 75 pieces were pre-sold to collectors at SIHH, making it an exceedingly exclusive, elusive collectible.

Menswear designer Ralph Lauren, one of America’s most discerning car collectors, continues to assert his horological bona fides with the release of two outstanding timepieces, one a single tourbillon and the other a double. The design is inspired by Lauren’s 1938 Bugatti Type 57SC Atlantic Coupe, which has won multiple awards. The 45mm watches, which are both cased in shot-blasted stainless steel with a black finish reminiscent of the Bugatti, feature a bezel in amboyna burl, recalling the handsome finish of the Atlantic Coupe’s polished wood interior. A look into Hublot’s enticing Big Bang Sugar Skull Fluo collection rightening up for spring 2017, Hublot chose to deviate from its classic trademark pieces and come out bold with the Big Bang Sugar Skull Fluo collection, which comes in variations of Cobalt Blue, Sunflower, Hot Pink and Malachite Green. The stark contrast between the black material and the neon details easily draws attention towards the watch. Opting to embrace Swiss traditions, Hublot has decided to embellish its timepiece with only the finest custom Bischoff embroidery from St Gallen. The dial bears the Bischoff embroidery skull design on the carbon fibre and black silk organza, which is then sheathed in a 41mm case. Similarly, the skilled artisans used the same embroidery on the straps and seamlessly merged the flower patterns with the skull. Not only is the dial adorned with the stunning embroidery, each hour is identified by 12 delicate gemstones. Depending on the watch colour, Hublot has assigned either coloured sapphires or tsavorites for each watch. To top it all off, 36 additional gemstones have been aesthetically placed on the bezel to encircle the dial. French Finesse Richard Mille brings glamour, luxury, and power to the French countryside rt and automobiles recently came together in the most glamorous and luxurious way possible in the countryside of France. Chantilly played host to Richard Mille’s annual “Arts et Elégance Richard Mille”. Artists, performers and connoisseurs gathered at the Château de Chantilly to appreciate vintage supercars and art flown in especially from the Museum of Modern Art in New York. The weekend kicked off with the inauguration of an exhibition dedicated to

Poussin’s world-renowned painting Le Massacre des Innocents. Guests made their way to the exhibition while being serenaded with performances of Chantilly’s most talented singers and dancers. A stunning mise en scène of Dali’s Metamorphosis of Narcissus was performed at the front of the estate, while a moving rendition of “Hallelujah” was performed in the museum in front of Picasso’s Charnier. Elegance was found in abundance at the fourth edition of the automobile contest. Ninety classic cars competed in the Concours d’Etat rally, while close to 800 competed in indonesia tatler . november 2017


the Grand Prix des Club. The two rallies of the day saw rare and sporty supercars race against the clock. McLaren showed all in attendance the brand’s impressive range on the challenging Mortefontaine circuit. There was also a display of the most famous electric cars throughout automobile history, including the Jamais-Contente 1899, and the avant-garde Porsche Mission E, which boasted 600hp and a 500km range. This year’s “Arts et Elégance Richard Mille” was even more special as it coincided with Ferrari’s 70th anniversary. Ferrari displayed 30 of its most gorgeous creations, all of which have participated in the 24 Hours of the Le Mans race, the world’s oldest active sports car race in endurance racing. the legendary Ferrari 250 Testa Rossa and 250 GTO. The lawn upon which the cars were displayed was designed by Le Nôtre himself. A slew of Richard Mille’s most eminent partners and friends was spotted among the crowd over the weekend. Felipe Massa, Romain Grosjean, Alain Prost, Jessica von Bredow-Werndl, Didier Drogba, and Frédéric Sausset were some of the big names spotted mingling at the Richard Mille lounge. Guests were treated to soothing French music from the Belle Epoque On Sunday, Mario Lurashi and his team put on a stunning equestrian set to cap off an amazing weekend. Jean Todt, FIA President, then bestowed honours and prizes upon those with the best showing on the weekend. The incredibly rare Bugatti 57 S Atlantic and Ferarri 250 Testa Rossa took home the Best of Show awards in their respective categories. Once again, Richard Mille has seamlessly combined art and elegance with an unforgettable event. The bar was set high, and excitement builds as we look forward to the next edition.

Back in Black Audemars Piguet’s newest Royal Oak timepiece is going to be an instant classic n 1955, audemars piguet crafted and manufactured the world’s first-ever perpetual calendar wristwatch with leap year indication. The perpetual calendar is a reminder that all of time measurement derives from astronomy and naturally occurring cycles. There were nine timepieces crafted at the time, all in 18ct gold. The Perpetual Calendar has since become a core part of Audemars Piguet’s identity.

Audemars Piguet has since launched several perpetual calendar wristwatches, among which was the 2016 Royal Oak Perpetual Calendar. Combining yellow gold and the iconic design of Gérald Genta, it was an inimitably complex and beautiful watch. Today, Audemars Piguet is enriching the illustrious line with yet another instant classic. More than 600 hours of research went into the development of this new wristwatch. Decked out completely in hand-finished black ceramic, the newest Royal Oak Perpetual Calendar is a sight to behold. The signature “Grande Tapisserie” pattern makes a return on a slate-grey dial. It is complemented by black counters, white gold applied to hour markers, Royal Oak hands with luminescent coating, and a black inner bezel. Day, date, month, astronomical moon, and leap year indication hold pride of place on the dial, while the week of the year is displayed on the dial’s outer chapter ring. The astronomical moon is designed to be photo realistic, contrasting it with the rest of the black components. Housed in an assertively sized 41mm case, the self-winding watch’s larger selfwinding calibre 5134 is fully visible through the glareproofed sapphire crystal caseback. The black ceramic case is water resistant to 20m. The bracelet that holds the case is black ceramic with titanium Audemars Piguet folding clasp. Black ceramic is virtually unscratchable, withstands high temperatures and thermal shocks, and is consequently resistant to ageing. Before it can be machined and handfinished, the ceramic needs to be uniform, compact, and ultra-hard. It goes through numerous operations that demand extreme patience and skill. Lunar Luxury Rolex graces its collection with the new Cellini Moonphase ver the years, rolex has long maintained its position as one of the world’s leading watchmakers. ressed in a plain white t-shirt and light blue boyfriend jeans coupled with a pair of sneakers and an oversized tote bag, the glamorous luna maya breezes into the dressing room of the city’s kalijodo skate park like an absolute natural. Currently tied up with the release of a new movie and a few business ventures—the latest being the inauguration of Rentlux Studio— Luna was born and raised on Bali and has fond memories of salt water washing in between her toes and wandering through luscious rice fields. Aside from a love of nature, Luna also spent her time indulging in Disney movies and going to the cinema. Her favourite Disney classic is still Mary Poppins, a movie that left an indelible mark on her heart and which is the reason she is where she is today. “It was Mary Poppins that gave a 7-year-old girl the dream and encouragement to be an actress. Ever since that day, I chose to dive into the entertainment industry and have not looked back since,” says Luna. With growing up among many ambitious people, Luna too was always looking for other opportunities to turn her passions into reality. Two and a half years ago, she created Luna Habit—an online clothing website that best describes her panache and personal taste. With her casual yet chic sense of style, it is no surprise that Luna is an avid Balenciaga fan. She admits to being fond of the brand’s collection and owning many of their casual and dressy pieces. Some of her notable favourites are the brand’s daily handbags and jackets. “Balenciaga bags are a must-have and the brand’s style is cool, funky and eclectic, which suits my personality extremely well,” Luna explains. Her most recent business venture, Rentlux Studio, is a one-stop destination for women who want to look fashionable at affordable prices. Rentlux rents out a variety of local and international designer-wear for those who need outfits for special occasions. “Other than renting clothes, we also

provide pre-wedding packages with an inhouse stylist and photographer. At Rentlux, our clients are well-provided-for with top notch services to suit their needs,” she says. A happy-go-lucky and bubbly character, Luna is also an avid traveller, foodie and explorer at heart. Eastern Indonesia, she admits, is her favourite part of the country. “I can’t say I have a particular favourite in Europe because each city I visit comes with its own memorable experience,” she says. Despite being the career-oriented woman she is, Luna hopes to have a family of her own in the next five to 10 years. However, the most important thing to her is an “upgrade” in all areas of life—to be happier, healthier and always striving to be in a better place. And succeed she just might. After a successful day on location, we gathered that persistence, consistency and hard work are the three most important entries in Luna’s dictionary of life. Long may she keep upgrading.

“October to November is the short season for white truffles,” Chef Gilles Marx said. “This first batch had just been hand carried to Amuz directly from Alba in Italy’s north.” As one of Maria’s favourite ingredients, truffle was the star that night starting from delicate shavings atop creamy chestnut soup to amuse the palate. Caviar was another, simply served on a bed of ice with fresh blinis, chopped herbs and other traditional accompaniments. sauce. The butler also returned with the unmistakable square-shaped tool to carefully shave more white truffles on top. Still lingering on the tastebuds after a few sparing bites, the fungi’s intense, though delicate, flavour returned yet with a more delectable pairing. Soft, white and juicy Canadian lobster brought to a slight charred-sweetness from pan roasting arrived on the table with savoury spring vegetable ragout. Eager forks and knives waited with palpable delight as the white truffle arrived in its full glory to crown the fresh crustacean in flavours unmistakably rich and rewarding. Alas, this was the last course featuring Italy’s prized fungi before the dinner took a route closer to home. One of the choicest cuts Maria loved was sirloin from Japan’s wagyu raised in the greens of Miyazaki prefecture. Simply grilled to a pink perfection before being thinly sliced to showcase the intricately dense marbling, the wagyu and a few drops of chimichurri sauce intermingling with its juice completed the heavenly experience.

Stories flowed generously and the Châteauneuf-du-Pape swilled gracefully around the table when Chef Gilles’s new Amuz signature dish arrived to delight the diners. Whimsy in mushroom shapes and colours, the Alsace-born chef revisited the beloved Forêt Noire—or Black Forest cake—and turned all its classical flavours the contemporary way. All of the creations made by Chef Gilles during Amuz Group’s seven years, and his four types of dining services in Jakarta, couldn’t be mentioned without remembering Maria’s love and support for it all. “I’ve been in Indonesia for 18 years now and Ibu Maria was always one of Amuz Group’s great supporters—also the whole French food industry here,” Chef Gilles indonesia tatler . november 2017

Out of all French’s classic confections, however, Chef Gilles said that Maria’s favourite soufflé perfectly embodied her. Although a staple dessert at Amuz, she would always call ahead to make sure its availability. One day, the team decided to tease her by saying that they ran out of ingredients for the soufflé. “What?” Maria asked, in much surprise. “That means I have no dessert tonight.” At the meal’s end, after delivering every other dessert on the table and waiting a few moments, the chef entered bearing the soufflé for Maria. “I remembered her laugh and expression in delight and amazement then,” the chef said. “The soufflé’s generous, passionate flavour combined with its strong characters inside was just like her—not to mention that it’s so very sweet.” All the freshest ingredients of the evening were generously supplied by Indonesia’s elite gourmet purveyor, Indoguna. indonesia tatler . november 2017

he two towers of Sampoerna Strategic Square stand tall amid the crowded region of Central Jakarta. Tucked away in a corner is Iseya Japanese Restaurant, a serene space in which to escape from the daily hustle and bustle while enjoying delicious Japanese fare. Founded in 2012, Iseya Japanese Restaurant is renowned for the freshest of ingredients, from vegetables to meats and seafood, flown in from different parts of Japan. As the seasons change in Japan, so does the menu at Iseya. Our guests for the afternoon were Vanessa and Claudia Ong. At the entrance, the two sisters were greeted by sting rays and arowanas—symbols of good fortune—swimming gracefully in an oversized aquarium. An attendant dressed in kimono then led the sisters to one of the private rooms for a meal especially prepared by Head Chef Moriya Hidetsugu. The first two courses of the meal showcased the range of Iseya’s offerings. The opening appetiser consisted of prawn, scallop, roasted chicken and beef tataki, each wonderfully complemented by its own sauce or puree. The broth that came next indonesia tatler . november 2017

was served in quaint, individualised kettles. As the soup was poured out, a most alluring aroma filled the room. The Dobin Mushi, a traditional seafood broth, is prepared with gindara, mushrooms and prawns giving it its sweet fragrance and powerful taste. We caught up with our guests as the plates were cleared. Vanessa and Claudia are not only sisters, but are also business partners. Choosing to go independently from their family business, the two sisters set up their own jamu enterprise. One of their biggest goals was to reintroduce jamu—herbal elixirs traditionally consisting of turmeric, ginger, and rice—to the next generation. They started with Jamu Workshop in 2014. As the name suggests, the sisters hold workshops in which participants get to learn about and mix their own bottles of jamu. Earlier this year, they expanded their business to selling and delivering packaged jamu. Their

Crossing the Ong sisters means to prepare for a world of hurt. Vanessa and Claudia are both black belts in taekwondo, having trained throughout grade school and high school. When asked if they still remember all their moves, both sisters replied with an emphatic “of course!” With their taekwondo black belts around their waists, the two sisters remain active by running regularly and taking part in marathons. Vanessa also trains in muay Thai, while Claudia is an aspiring equestrian. The conversation was interrupted as we all caught a glimpse of the next dish. It was the signature Iseya Lobster Sashimi. Fresh lobster is boiled very briefly so as to make sure each bite is filled with the freshest flavours and natural sweetness. The plate served that

day was extra-special as it came with a side of lobster eggs. Chef Moriya also prepared a special carpaccio sauce for dipping, which was a hit with the sisters. The two main courses for the afternoon then followed: Grilled Lobster and Hokkaido Tokachi Beef. The beautifully seasoned lobster was covered in a sauce that was made from the rest of the lobster. The lobster was tender, sweet, and bursting with flavour in each bite. Pan-seared scallops with seaweed sauce complete the seafood main course. Only the finest cut of beef was selected for the final course. Grade A5 Japanese beef was cooked to the perfect mediumrare temperature. The knife sliced through each juicy piece effortlessly. Teppan-grilled vegetables, with parsnips and Japanese pumpkin puree, balanced the meaty dish. It was a fitting and filling end to a most exquisite meal. Up high on the 46th floor of Plaza Tower, Momozen pampers diners with views of the Jakarta skyline and sumptuous Japanese menus. Truffles are one of the main stars here, from being paired with silky somen served cold, with rice and dashi broth mixed table-side, or with rice and truffle butter stuffed in a grilled baby chicken. The small bites are also headily addictive, from fresh Hokkaido scallops to squid jerky and frogs’ legs.

The first Kaum opened in Hong Kong last year and entered Hong Kong and Macau’s Michelin Guide this year. Up in Smoke With two big smokers and one parilla grill faithfully labouring in the back, Up in Smoke serves the rare (here, anyway) Western-style barbeques for all dedicated meat-lovers in Jakarta. Located on the ground floor of the RDTX Tower in Mega Kuningan, the simple and cosy atmosphere is perfect to breathe in the smokiness of brisket, rib-eye steak, wild boar sausage, or chicken. Desserts and drinks are also available from banana cream pie and s’mores to beers and wines.

ALBERT MANN PINOT NOIR ALSACE GRAND H 2015 Dark, powerful and ripe with plenty of dry tannins. This wine carries all that rather well and the finish is long and balanced in spite of the massive tannic structure. This has so much that isn’t yet showing properly. Try to be patient, because this will be better from 2019 through to 2030. 97 points

DOMAINE VALENTIN ZUSSLIN RIESLING ALSACE GRAND CRU PFINGSTBERG VENDANGES TARDIVES 2015 This is quite sweet, but don’t imagine there’s anything simple or superficial about this wine at all. In fact, it has great mirabelle fruit, enormous structure and a minerality that just won’t let you go at the very long finish. Better from 2020 when the sweetness is less obvious. Will age for decades. Made from biodynamic grapes. Ecocert-certified. 96 points

DOMAINE WEINBACH RIESLING ALSACE GRAND CRU SCHLOSSBERG VENDANGES TARDIVES 2015 The freshness and concentration of this superelegant riesling literally take your breath away. Diamond-like brilliance and superfine peach, citrus and tropical flower aromas. Some sweetness, though you barely notice it, and at the finish there is stunning mineral freshness. You could drink it now, but in five, 10, 20 and more years it will also be spectacular. 97 points

ALBERT MANN PINOT NOIR ALSACE LES SAINTES CLAIRES 2015 If you haven’t realised what Alsace is doing with pinot noir, then this would be a great place to start. Fragrant and refined, with great fruit and very elegant tannins. This is the real thing. The finish is very long and elegant. Beautiful now but will keep for 20 years. 97 points

F E TRIMBACH RIESLING ALSACE CLOS SAINTE HUNE 2011 This is really deep and dense with a long, long finish. It’s full-bodied plus has mineral, salt and dried fruits. Variety Show This September, foodies from all over Southeast Asia treated their palates to a weekend of delicious delicacies at The Great Food Festival, held at Resorts World Sentosa in Singapore ore than thirty celebrity and awardwinning chefs were present to grace the arena of The Great Food Festival at Resorts World Sentosa in Singapore on September 21-24. The launch of the country’s biggest gourmet and lifestyle event welcomed a variety of food enthusiasts, couples, families, and bloggers as well as those who simply wanted to indulge in Michelin-starred dishes at affordable prices. The Great Food Festival, Singapore’s inaugural event of its type, was a collaboration

Lane, Rollin’ Sweet Times, Feast of Kings and Connoisseur Collection, The Great Food Festival was segmented into the different flavours and experiences each category represented. The Star Chef Arena was bustling with Michelin-starred and award-wining chefs such as brothers Enrico and Roberto Cerea, who are behind Resorts World Sentosa’s Fratelli, and Cat Cora, the first and only female Iron Chef who fronts Resorts World Sentosa’s Ocean Restaurant by Cat Cora. Also on site were Australian-born Scott Webster, who runs the Michelin-starred Osia Steak and Seafood Grill at Resorts World Sentosa and Hal Yamashita, who is known for his nouvelle Japanese creations and who oversees Resorts World Sentosa’s Syun. Moving along the food-filled arena, guests were drawn to the fragrance of spices from The Heritage Lane, which was home to exotic dishes from Spain, Thailand, Indonesia, Mexico, and Italy, among others. Fifty heritage-inspired dishes welcomed guests as they carefully selected the next meal to try for the day. indonesia tatler . november 2017

After half a day of sampling savouries, guests were then immersed in Asia’s largest consumer dessert and pastry showcase at Rollin’ Sweet Times. From just SGD$4, the arena had more than 300 varieties to choose from, as well as a glow-in-the-dark room for some of the bakers’ glowing desserts and some of the most Instagram-worthy cake slices. Connoisseur Collection was a sensational collaboration that saw award-winning chefs and the accomplished resident chefs of Resorts World Sentosa coming together in a rare teamup to produce a four-hands seated dinner. Some of the most outstanding collaborations were between two outstanding American female chefs, Cat Cora, the only female Iron Chef on Iron Chef America and Kristen Kish, winner of Top Chef Season 10 and Munichborn Benjamin Halat of CURATE x Ben Spalding – one of London’s most exciting young chefs and alumnus of The Fat Duck. highest point of Santorini, and offers incredible panoramic views of the whole island. On to the north-western tip of Santorini is the coastal town Oia. For lunch, head to Ammoudi Fish Tavern, an iconic seafood restaurant at Ammoudi Bay and sail around the famous Red, White and Black Beach taking a dip in the green sulphur waters of the hot springs. And one thing you mustn’t miss in Oia is the stunning sunset views in Santorini, best enjoyed while having a scrumptious barbecue on the boat. From Santorini, head to Mykonos, Greece’s most famous cosmopolitan island. Depending on your schedule, you can take either the 150-minute ferry ride or the 30-minute helicopter ride. I

t’s not uncommon for diners at nearby tables in restaurants, or new arrivals on the way to their seats, to appraise your selection as the waiter places it before you, but it’s quite something else to have your perfectly cooked fish surveyed by its own brethren from the flood-lit waters encompassing your intimate perch on the bed of a lagoon. This is 5.8 Undersea Restaurant, the signature eatery of the latest luxury retreat in the Maldives, Hurawalhi, and the dining experience is as captivating as the vibrant congregation ducking and weaving beyond the glass.

As the name suggests, we’re dining nearly six metres under the shimmering surface of Lhaviyani Atoll’s pristine lagoon, a 40-minute flight in the resort’s own seaplane from the archipelago’s international airport on the main island of Malé. While underwater dining is not a new experience in the Maldives, a destination that counts a brunch hot spot, a jazz club and even a spa among its underwater venues, 5.8 trumps them with the imaginative, eclectic cuisine of shy German chef de cuisine Bjoern van den Oever, a veteran of Michelinstarred kitchens. His degustation menu, packed with flavour and innovation and paired with excellent wines, is served to no more than 10 couples in the intimate setting per sitting. It’s all very sophisticated, but that’s what you’d expect from an unapologetically adultsonly, all-inclusive retreat. With its world-class dining and crisp, intelligent service, Hurawalhi Maldives Resort sets itself apart from many of the sun-kissed settings of the sprawling Indian Ocean nation. But most important for me is the resort’s ability to keep other people’s little darlings out of the picture. The banishing of children under 15 leaves beaches free of sand castles, mealtimes undisturbed by temper tantrums, and long, lazy mornings to savour uninterrupted by ear-piercing squeals. You’d be forgiven for rarely venturing from your villa. Hurawalhi has 90 of them— the Beach Villas nestled on white sand and shrouded by lush foliage, the Ocean Villas perched above a reef that meanders through the lagoon. Some have private plunge pools, but that’s the only difference. All are bright, spacious and airy, with splashes of bold colours calmed by polished timber floors. The

bathrooms, big enough for tae-bo sessions, open onto a sweeping sundecks with versatile shading. There’s high-speed internet, 48-inch flatscreen televisions, heavenly king-sized beds facing the ocean, minibars and wine fridges packed with all-inclusive goodies, and diligent villa attendants to ensure you enjoy niggle-free hibernation. When you feel like being active, there’s plenty outside the villas to keep you occupied: a tennis court, games room, a water sports centre with Hobie Cats, wake boards and jet skis, a resident marine biologist, and an outpost of Pro Dive offering courses and experiences for those who like to explore below the waves. Early one morning I head out with Dutch dive master Morton. At Hurawalhi—unlike at some of the Maldives’ bigname resorts, built on manmade islands a long boat ride from decent coral gardens— you simply step off the end of one of the resort’s two piers to immerse yourself in the captivating colours of the vibrant house reef. We trace our way along mesmerising coral walls that are home to blennies, coral hawkfish, hawksbill sea turtles, blacktip reef sharks and squadrons of eagle rays. If you time your visit right, you can also see manta rays just metres from the resort. Later that afternoon, my wife and I join a clutch of the resort’s rather gorgeous guests and take to the house reef again for the guided snorkelling excursion included with our packages. Within waiter-hailing distance of the main bar, we’re joined by curious Moorish idols, Napoleon wrasse and elegant eagle rays, which show off in the shallows before diving deep. It’s a great way to build up an appetite to sate at any of the resort’s culinary

destinations—where there isn’t a bib, high chair or kids menu in sight. Above Van den Oever’s temple of underwater dining is the Aquarium Restaurant, which serves a contemporary menu of delectable Asian-inspired bites laced with organic ingredients. Its intimate teppanyaki bar is popular with couples soaking up the night air. At the other end of the resort, the Champagne Pavilion is the perfect spot for enjoying breathtaking sunsets with a selection from the romantic bar’s extensive list of vintage champagnes (it’s also the best location for dolphin spotting). But the heart of this toddler-free utopia is Coco Bar, which is adjacent to the resort’s infinity pool. Here, sharing-style snacks and tiki-esque cocktails are served to the nightly accompaniment of live music and DJs. indonesia tatler . november 2017

Just steps away, a multinational culinary team led by dynamic young Kiwi executive chef Shannon Batten cooks up a storm at the live stations of the stunning Canneli Restaurant, a shrine to great global cuisine. Hurawalhi’s blissful isolation seems to have little impact on the freshness and diversity of ingredients. One night we’re feasting on Maldivian and southern Indian curries, the next we’re whisked away to Italy, complete with caviar-topped pasta dishes, and jetfresh oysters and lobster. To make the most of your escape from the coalface, be sure to book a candlelit dinner on Dream Island, a picturesque sandbank peeking above the water, and make a beeline for Duniye Spa, an intimate, elegant wellness enclave that boasts an extensive menu of Asian-inspired treatments using Healing Earth organic products.

ith more than 17,000 islands, Indonesia is indeed the world’s largest archipelago. While Bali or Komodo are usually the destinations most familiar or well-known for tourists or foreign visitors, there are many more equally gorgeous and fascinating islands to visit in Indonesia. Even though lesser-known and generally uninhabited, these idyllic and remote destinations have a lot of treasures, from an

amazing variety of volcanic scenery, marine life, vibrant cultures, and sailing and diving adventures, all waiting to be experienced. And there is simply no better way to explore, snorkel or dive the remote islands of Indonesia and beyond other than through booking or chartering a yacht, especially if you love discovering the beauty of our country’s hidden tropical and marine paradises. a new luxury yacht that was launched in August. Yessi Maya Sari and her husband Kevin M. Corcoran manage the boat under Coral Triangle Safaris (CTS). Both are passionate about sharing with other people their love of the sea, nature, sailing, diving, and culture. As such, the boat sails to a wide range of destinations within Eastern Indonesia, including Lesser Sunda Islands, Maluku and West Papua, with the price starting from US$5,000 all-inclusive while onboard. In September, Indonesia Tatler boarded the Sequoia’s expansive 26-by-6.65-metre area and spent six days cruising along 460 kilometres from Maumere Bay to Alor Island in East Nusa Tenggara province. Once we set foot on the Sequoia, it was clear to see that this boat is Indonesia-themed, with all the wood sourced locally and fashioned by Indonesian carpenters from Tana Beru in Sulawesi. This is added to with the textiles and custom-crafted Indonesian accessories that adorn the interior. advanced American marine technology. On our first day, we had not yet started sailing, but our trip started with exploring Maumere and we got a glimpse of the city’s major points of interest, like Alok Market and Tanjung Beach. The next morning, we didn’t forget to take time to enjoy the breathtaking sunrise at Kelimutu National Park and visit the oldest church in Flores Island located at Sikka village, as well as witnessing the ancient handicraft production of ikat weaving. Afterwards, we began sailing, moving and passing through from Babi Island to Pangabatang Island to Watupeni Island to Keroko Island, then Konawe Island, Adonara Island, Pura Island, Reta Island, and Alor Island. You may never have heard of these remote locations, but they have their own immense beauty. And among the sailing and island hopping, we enjoyed everything from water activities to island exploration.

Yes, the Sequoia is well-equipped for divers who want to enjoy underwater encounters with vibrant coral reefs and playful fish, with a dive instructor and master on board and all the necessary equipment. But other than diving, there are also snorkelling, kayaking, water-skiing, tubing, paddle-boarding, deepsea fishing to picnics on the beach. Even if you only want to laze, there’s nothing like being on undiscovered stunning beaches with no other people. Chilling out in total privacy: it is truly a luxury. Doing a bit of island exploration is also never dull, interacting with local tribespeople and learning about their traditional cultures and daily lives. Among memorable events for us was when the children of local villages sweetly welcomed and sang to us with enthusiasm and a group of local women, selling their incredible ikat, were excited to board the ship and kindly taught us to weave various handcrafts. The experience was made complete with exquisite dining options that are available on board to enjoy. dishes of Indonesian, Asian and Western to tantalise all taste buds; it emphasised fresh, local ingredients, and we could even ask the chef to cook what we just bought from the market. After we tired of water activities and island exploration, we returned for relaxation in a cabin, in which there are two chic deluxe cabins (Master Suite and Guest Suite) with attached bathrooms, electrical power, hot water, AC, and satellite TV, making the Sequoia fit for a family charter or a small group of friends. We could also relax at the galley, or on an open-air sky deck or bow deck while enjoying the sunset. Luckily, we also spotted whales that suddenly appeared, as well as migrating bats in the dawn as they headed for their roosts. Yessi believes that Indonesia has been reborn and is on the move in many ways; it is now changing as the world wakes up to discover the limitless potential of the fourth most populous country in the world. With her safari cruise to Indonesia’s beautiful and remote regions, and the willingness to encourage more improvements to Indonesia’s tourism potential, she hopes that both guests and local island inhabitants can benefit from the new opportunities in Eastern Indonesia. LIFE | travel swiss flag, bold with its red and white, flaps happily from the stern of the cruise ship, as if waving goodbye to riverbanks lined with dapper mansions and hotels. As the ship gently slips further into Lake Lucerne, the vista swells to display the grandeur of the lake. The peaks of snowcapped craggy mountains veiled by mists form contrasting backdrops to emerald valleys dotted with clusters of homesteads. Days like this are perfect for a lunch of wine and roasted Swiss veal schnitzel from the open-air deck of the ship. Water vessels are essential for the flow of daily life on Lake Lucerne as they carry people to the five cantons of Lucerne, Uri, Schwyz, Obwalden and Nidwalden which border the lake, locally called Vierwaldstättersee, or literally The Lake of Four Settlements. Docks are conveniently located, such as the one across the Lucerne train station. The station is a good point to start a sightseeing tour of the city. Abutting the station is the Kultur- und Kongresszentrum Luzern, or KKL Luzerne, a multifunctional venue noted for its clean and contemporary aesthetics by celebrated French architect, Jean Nouvel. Less than 10 minutes from the station is the commercial centre of Lucerne, with Bucherer being the unbeatable destination for watch lovers. Stocked with roughly 12,000 time and jewellery pieces, the store offers watches from at least 30 big brands, including Rolex.

Hotels line the roads nearby Bucherer, with Grand Hotel National Lucerne strategically situated by the waterside. If resorts with a private feel are more preferred, the Palace Hotel at the Büergenstock Resort grants an elegant escape. The historic belle époque hotel, once visited by Hollywood icons such as Audrey Hepburn, is now run by the stylish Büergenstock Resort and is designed to provide guests with breathtaking views from all corners. For adventure seekers, Lucerne is an access point to two majestic mountains, the first being Mount Pilatus. Going up Mount Pilatus

is a whimsical adventure because travellers can hop on the steepest cogwheel railway, commissioned in 1889, to head up to the summit. As the cars scale the sharp inclines of the mountain, the scene changes from green, alpine meadows to jagged rock formations speckled with snow. But for a more intense experience, Mount Titlis prepares myriad wintry wonders. Travellers will feel the thrills building up upon stepping into the Titlis Rotair, a gondola that rotates 360 degrees as it takes travellers to the summit. Once on the summit, snow surrounds travellers hiking the Titlis glacier and Titlis Cliff Walk, Europe’s highest suspension bridge, which leads to the Ice Flyer. This ride is not for the faint-hearted given that the chairlift will sweep above the deep crevices of the frosty mountain below. To feel warm again, the Titlis Panorama Restaurant serves regional specialties, with the rÜsti topped with melted cheese, fried egg, and bacon being a befitting choice. For even more warmth, travellers could head to Vitznau, a picturesque bay at the foot of Mount Rigi, where the sun shines tenderly. Here, travellers can unwind tired muscles at Park Hotel Vitznau equipped with a luxurious Finnish sauna and heated outdoor infinity pool. Before bidding farewell to the aweinspiring Lucerne, take a horse-carriage tour around Weggis, Vitznau’s neighbouring commune. The carriage will take travellers uphill and down, across streets that cut into neighbourhoods and viewing points that will once again display the serene lakes, verdant vales, and wintry mountaintops that merits Lucerne as part of a lake in the clouds.

Glenn: A rich chocolate bar may be my guiltiest pleasure. But, then again, it’s only guilty if you think of it that way. I like to call it a treat. George: Taking a weekend off would be mine. We are workaholics.

She’s one of our favourite artists. We have one of her pumpkins in our Toronto studio. We originally wanted it in our New York apartment but couldn’t fit it in the elevator. We had to beg her gallery for it. It sits next to an Anish Kapoor— we collect quite a bit of art.

We love this New York restaurant. It’s an offshoot of ABC Kitchen by Jean-Georges Vongerichten. The food is all vegetarian and it’s amazing, with influences from around the world. The flavours are so clear and transparent. A perfect spot for lunch or dinner.

lOng Island BeaCh hOuse It’s our favourite place in the world. It’s on the East End of Long Island, between East Hampton and Montauk, and faces the ocean. When you live in New York—or any big city, really—you need to be able to escape to somewhere you can switch off, both physically and mentally.

5 TOYKO It’s hands-on the best place to shop. People are doing really interesting things in terms of design and lifestyle products. There’s an artful attention to detail that’s inspiring—from the cafe making the perfect cup of coffee to the leather shoe specialist bringing the craft to new heights. They do it so well.
