pending the last decade in Mérida has been such a rewarding time of my life, I thought I would retire; however, my work has always driven me, so I knew there was something more. The Yucatán is a special place, and Mérida’s alluring charm got a hold of me, as it does for many.
asar la última década en Mérida ha sido un tiempo tan gratificante en mi vida. Pensé que iba a retirarme a la playa en alguna parte, sin embargo, esta ciudad me atrajo. Mi trabajo siempre me ha guiado, así que sabía que había algo más. Yucatán es un lugar especial, y el encanto seductor que tiene Mérida me enganchó, como le sucede a muchos, preservar y compartir su patrimonio ha sido una de mis pasiones desde el principio.
Before I knew it, I opened a now, landmark boutique hotel, and became an advocate for tourism. I have watched this place transform and become a destination. Preserving and sharing its heritage has been a passion of mine from the beginning, and for that, it is my pleasure to present to you the inaugural issue of Rosas & Xocolate Magazine. It’s the perfect blend of culture, history, attractions, architecture, and passion that make up the best of the Yucatán.
Antes de darme cuenta, había abierto un hotel, referente ahora, y me he convertido en un promotor de turismo. He observado la transformación de este lugar a un destino y por eso, es mi placer presentarles el primer número de esta revista. Es la mezcla perfecta de cultura, historia, lugares de interés, arquitectura, y la pasión que conforman lo mejor de Yucatán.
I could see the vision for Mérida from the beginning, embracing the moment, and since I have devoted my energy and time in this project and collectively to promote Mérida forward.
Siguiendo nuestra historia, Rosas & Xocolate brinda una perspectiva y apreciación de todo Yucatán. Como reflejo de las personas, los lugares y las pláticas en los numerosos patios escondidos de Mérida, así como de las cosas detrás de escena, las que debes conocer fuera de las típicas rutas. CENOTE DISCOVERED BELOW CHICHEN ITZA A group of scientists from National Autonomous University of Mexico discovered a cenoté beneath the Pyramid of Kukulcan in Chichen Itza in August 2015. This cenoté, approximately 20 meters below the pyramid, is an addition to the historical underground waters connecting the Yucatán. Cenotes mythological meaning represent a philosophy of life and entrance to the Mayan underworld or ‘xibalba’.
CENOTE DESCUBIERTO DEBAJO DE CHICHEN ITZÁ Un grupo de científicos de la Universidad Nacional Autónoma de México descubrió un cenote debajo de la pirámide de Kukulcán en Chichén Itzá en agosto de 2015. Este cenote, a unos 20 metros debajo de la pirámide, se suma a las aguas subterráneas históricas que se conectan en Yucatán. Los cenotes tienen un significado mitológico que representa una filosofía de vida y la entrada al inframundo maya o “Xibalba”.

here is a pink building that stands elegantly on prominent and emblematic avenue of Paseo de Montejo in Mérida. It’s grace, almost poetic, and when you step inside the Boutique Hotel Rosas & Xocolate, it takes your heart with one breath. Embracing with warmth of fresh-cut roses, you feel the need to explore. Behind the lobby you discover a courtyard paving the way to an intimate swimming pool, and of course the award-winning spa. The tequila bar and sitting lounge awaits conversation and stillness. The dining room, the patio, the rooftop Moon Lounge, all inviting, and perfect. And of course, we cannot forget the romance kissed upon the rooms and suites. The rope at the entrance reminds of Mérida’s Mansions past.

ay un edificio color rosa que destaca elegantemente en la prominente y emblemática avenida Paseo de Montejo en Mérida. Su gracia es casi poética, cuando entras al Hotel Boutique Rosas & Xocolate te enamora con tan solo mirarlo. Percibes la frescura de rosas recién cortadas y sientes la necesidad de explorarlo. Detrás del vestíbulo descubres un patio que te dirige por un camino hacia una piscina íntima, y por supuesto, al galardonado spa. El bar de tequila y la sala de espera inspiran interesantes charlas y quietud. El comedor, el patio, la terraza Moon Lounge… todos los espacios resultan acogedores y perfectos. Y, por supuesto, no podemos olvidar las habitaciones y suites que besan romance. La cuerda (Obra Marcela Díaz) en la entrada rememora del origen de las mansiones de mérida.

EPOCH OF TWO MANSIONS... As a lover of old architecture, hotel owner, Carol Kolozs, fell in love with two rundown historic mansions on Merida’s Paseo de Montejo. Recently retired, Carol purchased the property, and the pipe dream of a boutique hotel began. A new life for the avenue, and a blank canvas to work with, Carol began working on this masterpiece in 2007. A team of dedicated professionals, artists, and craftsmen were assembled, where no single detail was overlooked. When asked about the project, Carol stated, “It was a decisive touch of creativity, romance, and imagination that managed to make the concept I had in mind possible.” The image in mind, to merge traditional style using elements and distinctive materials of the Yucatecan colonial culture of the early twentieth century with European influence, without neglecting its Mayan roots. The result, a contemporary design, trendsetting with timeless classics bringing all the senses to life, while raising the bar in the harmonious standards of a luxury boutique hotel.
ÉPOCA DE DOS MANSIONES ... Como amante de la arquitectura antigua, Carol Kolozs, propietario del hotel, se enamoró de dos mansiones históricas deshabitadas en Paseo de Montejo. Recientemente retirado, Carol compró la propiedad y el sueño de un hotel boutique comenzó. Una nueva vida para la avenida y un lienzo en blanco para trabajar, Carol inició los trabajos de esta obra maestra en 2007. Un equipo de dedicados profesionales, artistas y artesanos fueron reunidos, ningun detalle se pasó por alto. Cuando le preguntaron sobre el proyecto, Carol dijo, “Fue un toque decisivo de creatividad, romance e imaginación que lograron hacer que el concepto que tenía en mente fuera posible.” La imagen en mente fusiona el estilo tradicional con elementos y materiales distintivos de la cultura colonial yucateca de principios del siglo XX con la influencia europea, sin dejar de lado sus raíces mayas. El resultado, un diseño contemporáneo que marca tendencia al resumir lo clásico atemporal con todos los sentidos de la vida, mientras que aumenta el nivel en la armonía de un hotel boutique de lujo.

IDENTITY OF STRUCTURE... Awarded, “Best Architectural Restoration in Mexico” (Icono del diseño 2011) by Architectural Digest Magazine, Rosas & Xocolate had impressed a standard for unique and total restoration of the two French mansions from conceptualization. Working with award winning Architect Salvador Reyes Rios and his partner, Josefina Larrain, the vision of the hautepublic building was brought to life. The architectural firm of Reyes-Rios-Larrain is perhaps the most prestigious in the restoration of historic and cultural homes/buildings in Mexico.
IDENTIDAD DE LA ESTRUCTURA ... Premiado con la “Mejor restauración arquitectónica en México” (Ícono del diseño 2011) por la revista especializada Architectural Digest, Rosas & Xocolate ha establecido un nuevo estándar para la restauración única y total de dos mansiones de estilo francés desde su conceptualización. Trabajar con el galardonado arquitecto Salvador Reyes Ríos y su compañera, Josefina Larraín, para traer a la vida la visión de un edificio dirigido a un público selecto. El despacho Reyes Rios-Larrain es quizás el más prestigioso despacho de arquitectos dedicado a la restauración de casas y edificios históricos y culturales en México.
ESSENCE OF SIGNATURE... The inspiration behind the name is both cultural and from the heart. Carol knew it needed to be special, and one day he had an “aha” moment. Rose, was Carol’s mother’s name. Chocolate, was discovered by the Mayans. The cacao bean was used as a form of currency exchange for the Mayans, and today the delicacy of chocolate cradles the senses at the hotel. Combining Rose, and Chocolate, the hotel was named so eloquently, Rosas & Xocolate.
ESENCIA DE LA FIRMA ... La inspiración detrás del nombre es a la vez cultural y desde el corazón. Carol sabía que tenía que ser especial y un día tuvo un momento de “ajá”. Rose, era el nombre de la madre de Carol. El chocolate fue descubierto por los mayas. El grano de cacao se utilizó como una moneda de intercambo para los mayas, y hoy en día la delicadeza del chocolate estimula los sentidos en el hotel. Combinando el nombre de Rosa y el chocolate, el hotel fue nombrado de una manera tan elocuente, Rosas & Xocolate.

FALLING FOR CHOCOLATE... Native cocoa bean, Criollo, is the passion behind chocolate factory, Ki’Xocolatl. Mathieu Brees and Stephanie Verbugge, both trained in gastronomy in Belgium, developed this premium brand chocolate with 100% Mexican cocoa and ingredients. As one of the few facilities in the world that work directly with the bean, the plant in Mérida selects, roasts, husks, and refines onsite.
ENAMORADO DEL CHOCOLATE ... Criollo, grano de cacao nativo, es la pasión detrás de la fábrica de chocolate, Ki’Xocolatl. Ki’Xocolatl is derived from Maya word ‘Ki’ meaning delicious, and Nahuatl word, Xocolate, which means chocolate. The delicious chocolate bars, soaps, and lotions can be purchased in the Rosas & Xocolate boutique at the hotel, and products can be found in the guest rooms/suites and spa of the hotel.

ANTHOLOGY OF A COLOUR.. Hours, days, and months went into selecting the perfect color of pink for the boutique hotel. It is not everyday you see a pink building. In making the color selection, the team behind Rosas & Xocolate, studied various shades of pink. Painting patches on the building and mixing samples until perfection was reached. It could not be just any hue of pink, and Rosa Mexicana will stand timelessly as the iconic color. ANTOLOGÍA DE UN COLOR .. Horas, días y meses pasaron para lograr la selección perfecta de color de rosa para el hotel boutique. No todos los días se ve un edificio color rosa. Al hacer la selección de color, el equipo detrás de Rosas & Xocolate estudió varios tonos de rosa. Se aplicaron varios tonos en el edificio y mezclas de muestras hasta que se alcanzó la perfección. No podía ser de cualquier tonalidad de color rosa, y este Rosa Mexicano se mantendrá eternamente como un color icónico.

a Bici Ruta. The bicycle route is a Sunday family tradition in Mérida. Feeling the breeze as husbands, wives, sisters, brothers, kids, aunts, uncles, girlfriends, boyfriends, friends, mothers, fathers… (you get the idea!), pedal down the street of Paseo de Montejo.. Cycling through Mérida is the perfect way to see the centro (the downtown historic area) in one of the bicycles offered free to the guests. Bicycle rentals are easy to come by all along Paseo de Montejo. A morning through Centro should include a stop at the Mérida Cathedral (dating back to 1542), located in the main town square, or zocalo in Spanish. The park is filled with street vendors, offering food, hammocks, and local Mayan flare. It’s the perfect blend of heritage and fun. We recommend getting some churros, they are amazing! Parque Santiago (Santiago park) is a beautiful stop, and a park you want to remember when planning your Tuesday evenings. Traditional Yucatecan dance entertains, and you can learn to dance with a local expert. We recommend ending your bicycle excursion at Santa Lucia park, desirable place of interest in Mérida. Home to several restaurants, including Rosa Sur 32°. Each Thursday night, guests of Santa Lucia Park can enjoy the traditional Yucatán serenade, a must if you have never seen the traditional dance. It’s the perfect location for lunch with the family, friends, or a significant other. Take a photo in the unique lover’s chairs, what we like to refer to as kissing chairs. The historic square dates back to 1542, and is the oldest town square in Mérida along with the main square. Originally a park destined for service workers of Spaniards who were not of the same descent, Santa Lucia Park was considered repulsive. exico has been the largest producer of limes since the 1950’s. Producing two separate types of limes, the Mexican lime (also known as the key lime) and the Persian lime (also known as the Tahiti lime).
Native to Mexico, the limón (lime) has a tart sweet flavor, high in acidity, strong aroma, and a thinner rind than more common limes. This Mexican lime has a longer shelf life than other limes. This tree species was introduced to Mexico by Spaniards after 1520. Persian limes are larger and contain more juice, and referred to as a hybrid between a lime and a lemon. The Mexican lime has few or no seeds and a popular pairing for tequila, mezcal, and of course our featured Rosa Margarita.

What do you love cooking the most? What I like most are cooking savory dishes. I cook proteins at low temperature for long periods and generally respect very much the product and ingredients. What are your dogs names? I have 3 Labradors . “Muñeca”, “Sanson” and “Muñeco”. Where is your favorite thing to do in Mérida? My favorite pastime after cooking, take my dogs to the beach.

Tengo 3 perros labradores: Muñeca, Sansón y Muñeco. ¿Cuál es tu actividad favorita en Mérida? Mi pasatiempo favorito, después de cocinar, es llevar a mis perros a la playa.

What started you becoming a Chef? My parents who had a taco restaurant when I was a little boy inspired me and those began my road to becoming a Chef.
¿Cuándo comenzaste a convertirte en chef? Una influencia importante y principal en mi carrera es porque mis padres tenían un restaurante de tacos cuando era pequeño y de ahí comenzó mi gusto por la cocina y la comida.

Marcela’s talent has been employed throughout Mexico, Cuban, United States, Italy, and France. Her techniques soften the rough material, creating majestic and elegant craftsmanship in the lobby. A touch of personality is seen in each of her pieces with colors vivid but natural; resulting in objects appealing to the mystery of its origin.

ransportation had picked us up from Rosas & Xocolate, to deliver us to this undiscovered paradise only thirty minutes to the small fishing village of Sisal, Yucatán, Mexico. The bamboo oar navigating our chalana (Yucatecan Gondola) through the waters of the petén, or what some may call an inlet, added an extra sound to nature. Sluuupppp as it entered the water, followed by swiiisssshhhh…swahhhhhh….slewwww. White pelicans floated effortlessly as morning sun rays kissed the left behind splashes of pink flamingos taking flight. It could only be described as magic. As we glided across the water, we approached a canopied entrance, with a pure natural beauty, where pink flamingos painted the sky and songs of birds were mesmerizing. The chalana followed the water path until it reached a living tree, rooted deep into the center of a “Cenote” (underwater swimming hole). The colors reflecting from the water beckoned us to jump in and live the moment. It felt surreal, and nature could not have been more intoxicating.
On the way back we watched crabs crawl along the sand below us, and dragonflies and butterflies dance in the air, made it feel as though I were chosen to be the princess of the most perfect fairytale. The experience moved me. Lunch at Mon’s Place, a beach home converted into a restaurant/bar for daily guests, exceeded my expectations for satisfying my taste buds with fresh and recently caught ingredients. A walk on the beach to sink my toes in the sand, this quiet atmosphere rejuvenates you with a cocktail and siesta. If only I could bottle the sensations of this magnificent place where palm trees sway in whisper breezes along miles of pristine coastline. A seashell jewelry collection sold by a young local boy, Angel... His charisma had us all buying the inexpensive pieces of art that receive comments each time I wear them. l transporte nos había recogido de Rosas & Xocolate para entregarnos a este paraíso por descubrir a tan solo treinta minutos de viaje en el pequeño pueblo de pescadores de Sisal, Yucatán, México.
El remo de bambú que navega nuestra chalana (góndola yucateca) a través de las aguas del Petén, o lo que algunos llaman una entrada, añade sonidos adicionales a la naturaleza. Sluuupppp una vez que entra en el agua, seguido de swiiisssshhhh ... swahhhhhh ... slewwww. Pelícanos blancos flotan sin hacer esfuerzo mientras los rayos del sol de la mañana acarician a los flamencos rosados que han tomado vuelo detrás de nosotros... esto sólo puede ser descrito como magia. A medida que nos deslizábamos a través del agua, nos acercamos a una entrada con dosel con una belleza natural pura, en el que los flamencos rosas pintaban el cielo y los cantos de los pájaros eran impresionantes. La chalana siguió el camino en el agua hasta que alcanzó un árbol de vida, enraizado profundamente en el centro de un cenote (poza subterránea). Los colores que reflejaba el agua nos invitaron a que saltemos a ella vivíamos el momento. Se sentía irreal y la naturaleza no podría haber sido más envolvente. Al regreso, admirábamos a cangrejos que se arrastran por la arena debajo de nosotros y libélulas y mariposas que bailan en el aire, me hizo sentir como si fuera elegida para ser la princesa del cuento más perfecto. La experiencia me movió profundamente. El almuerzo en el restaurante de Mon, una casa de playa convertida en un restaurante bar para los visitantes diarios, superó mis expectativas al satisfacer mis papilas gustativas con ingredientes frescos y recién capturados. Un paseo por la playa para hundir mis dedos de los pies en la arena, esta atmósfera tranquila te rejuvenece con un cóctel y una siesta. Si tan sólo pudiera embotellar las sensaciones de este lugar magnifico donde las palmeras se mecen en la brisa y susurran a lo largo de la costa virgen. Sisal was unexpected, and spectacular. A day in Sisal serenaded my heart and upon my return to the boutique hotel, Rosas & Xocolate I completed with a chocolate soufflé with crystalized rose petals and Champagne. uan Carlos Lomónaco trusted the compilation of the musicians and himself when accepting Chief Conductor of the Yucatán Symphony Orchestra (YSO) in 2009. First visiting Mérida in 2004 as a guest conductor, Lomónaco’s heart strings were already attached to the emerging symphony and beauty of the theater, making the decision to make the move easy.

uan Carlos Lomónaco confiaba en el repertorio de los músicos y en él mismo al aceptar ser el Director Titular de la Orquesta Sinfónica de Yucatán (OSY) en 2009. Desde su primera visita a Mérida en 2004 como Director invitado, las cuerdas de su corazón se sintieron unidas a la Sinfónica y de la belleza del teatro, así que tomar la decisión de trasladarse fue fácil.

For Lomónaco, risk = reward. Faith and passion led him to Mérida, and in the year after accepting the baton as Chief Conductor (2010), he earned the YSO national recognition. In eleven years, the Yucatan Symphony Orchestra has established itself as one of the best in Mexico. When asked what has contributed to the growth of the YSO, Lomónaco referenced pride and support, “There is pride in Mérida, in the people, and the orchestra. Our growth is stimulated by the balance between our sponsors, government, art, and the musicians technique. The Yucatecan culture is immersed in music and art, accepting the offer. Our programming allows us to work with some of the most talented musicians in the world, and our highly trained members continue to perfect their technique.” The YSO plays at the José Peón Contreras Theater, and consists of 65 musicians and an orchestra. In 2014, the Yucatan Symphony Orchestra presented in the International Cervantino Festival, playing Bicentennial Theatre and the Juarez Theater as part of their second national tour. 2015 brought one of their most prestigious performance, performing at Palace of Fine Arts and the Sala Nezahualcoyotl in Mexico City. The Yucatán Symphony Orchestra’s classic elegance can be enjoyed this spring with a program dedicated to Beethoven April 8 - June 17, 2016.
Para Lomónaco, el riesgo es igual a recompensa. La fe y la pasión lo llevaron a Mérida, y un año después de aceptar la batuta como Director de Orquesta (2010), se ganó el reconocimiento nacional por la OSY. En once años, la Orquesta Sinfónica de Yucatán se ha establecido como una de las mejores de México. Cuando se le pregunta qué ha contribuido al crecimiento de la OSY, Lomónaco hace referencia al orgullo y al apoyo. “Hay orgullo en Mérida, en la gente y en la Orquesta. Nuestro crecimiento es promovido por un balance de nuestros patrocinadores, el gobierno, el arte y la técnica de los músicos. La cultura yucateca se encuentra inmersa en la música y el arte, en la aceptación de lo que tenemos que ofrecer. Nuestra programación nos permite trabajar con algunos de los músicos más talentosos del mundo y nuestros miembros altamente capacitados continúan perfeccionando su técnica”. La OSY se presenta en el Teatro José Peón Contreras, y se compone de 65 músicos y una Orquesta. En 2014, la Orquesta Sinfónica de Yucatán se presentó en el Festival Internacional Cervantino, tocando en el Teatro Bicentenario y el Teatro Juárez como parte de su segunda gira nacional. En 2015 realizaron una de las más prestigiosas ejecuciones, presentándose en el Palacio de Bellas Artes y en la Sala Nezahualcóyotl en la Ciudad de México. La elegancia clásica de la Orquesta Sinfónica de Yucatán se puede disfrutar esta primavera con un programa dedicado a Beethoven en la temporada del 8 abril al 17 junio de 2016.
