Moringa oleifera is widely considered as the tree of miracles as its leaves, roots, flowers, pods and seeds have been consumed by people traditionally as food and medicine. Native to South Asia, it is grown as an agriculture crop in India, Ethiopia, Philippines, Sudan. It is also grown in places like east, west and South Africa, tropical Asia, Latin America, Caribbean, Florida and the Pacific Islands (FAO). This tropical monogeneric plant belongs to Moringaceae family, commonly grown on the Himalayan ranges of northern India, Pakistan, Bangladesh and Afghanistan (Fahey, 2005). The majority of Indians use Moringa oleifera, sometimes referred to as drumstick and murungai in Tamil, as a popular vegetable. They use several of its sections in curries and as side dishes for main courses. It is well recognized for its high nutritional content and wide range of applications as food and medicine; the leaves are also used as fodder, the trunk is used to make gums, the flower nectar is turned into honey, and the powdered seeds are used to purify water (Fuglie, 1999).

High levels of micronutrients found in Moringa oleifera leaves enhance human health by promoting better physiological and metabolic processes. The fact that drumstick leaves contain seven times the vitamin C in oranges, ten times the vitamin A in carrots, 17 times the calcium in milk, nine times the protein in yoghurt, 15 times the potassium in bananas, and 25 times the iron in spinach indicates that they have an impressive nutritional value when compared to other foods (Gopalan et al., 1998). Phytochemicals such as ascorbic acid, tocopherols, and carotenoids are also rather abundant in the leaves (Saini et al., 2014). Additionally, because of their abundance of natural antioxidants, fatty foods have a longer shelf life. The demand for value-added Moringa products is rising globally. By 2030, the estimated $8 billion global market for moringa products is projected to grow to $20 billion. Moringa oleifera is a member of the Moringaceae family. Other names for it include Miracle Tee, horseradish tree, Ben oil tree, and drumstick tree.

Preparation of value-added products

To create instant value-added products, dehydrated Moringa leaf powder (MLP) was combined with the right amount of salt and spice powders to create Moringa peanut chutney powder, Moringa chutney powder, Moringa rice powder, Moringa sambar powder, Moringa plain spread, and Moringa spread with seasoning. We purchased additional ingredients from the local market to use in the value-added products. By adjusting the amounts of prepared leaf powder and other additives in different combinations to produce appealing products, the formula used to manufacture these value-added products was standardized over the course of multiple experiments.
