Blackened Red Snapper: needed; iron skillet, spatula, Red Snapper filets, ( I prefer fresh, but any will do.), good olive oil, butter, salt and Cavender's Greek seasoning. Wash and pat dry filets. In pan heat about a Tbl. Of evoo and Tbl of butter till HOT. Should be a little smoke coming off skillet. Liberally coat both sides of fish with seasoning and a dash of salt. Place two filets (carefully) in pan, make sure it's really hot. Cook approx. 3 to 4 minutes on each side, depending on the thickness of the filets. Each side should have a nice crust.
