Zinc Bistro’s popular wild boar ($46), native to the French island of Corsica, is a perfect marriage of heartiness and refined detail. A cross between pork and beef, the citrus-brined boar is grilled and mesquite-smoked then paired with pee wee potatoes and saffron – among the world’s most expensive spices, which complements the rich meat with a subtle creaminess – as well as salt-roasted beets and a pistachio oregano gremolata.
