EDITORIAL Ovidio Guaita, International Editor-in-Chief

n an ever-changing touristic panorama, there are few destinations which “hang-on” without jolts. The Caribbean is surely one of them, along with the Mediterranean – if we exclude the coasts of North Africa and the Middle East. We offer you several proposals in this issue. On a number of occasions our thoughts have been directed to the tour operators who see their proposed destinations dwindle daily. Fortunately, terror attacks in cities like Paris and Brussels in the end have not dissuaded visitors.

The good news is that nowadays changes come and go frenetically, and the summer season is enjoying a slight come -back in reservations, even in the destinations which were ignored last summer. Take Egypt, for example. All said and done, the desire to travel wins over fear.

The fascination of Anguilla is consuming, a Caribbean atmosphere made of colour, hospitality and euphoria. It is a mix splendidly interpreted in the music of Bob Marley, which is always very popular here. Music is the real bonding agent in Anguilla ‌ as in the rest of the Caribbean.

DESTINATION | WEST INDIES

Music reflects the fascination, colour of nature and the ocean of these excolonies. It also transmits the relaxed and festive atmosphere of these European and African jewels spread across the ocean. The ocean, the real fascination of Anguilla is found here, along with gleaming light, a brilliance which delves into the penumbra, pervading every corner, even the most remote, saturating it with colour. The colour of the houses, nature, fruit, people, the sea and the beaches.

Accelyn, our marvelous local guide, represents his people well. First of all, he is reserved and then welcoming, warm and fascinating. Little by little he led us into a rhythm nowadays forgotten, one dictated by nature and the climate. It was like following a musical score which, once again, reminded us of the mythical Bob, ambassador par excellence of these settings.

lue. Exclusively blue, interspersed with the blinding white of the walls. The arrival is indeed spectacular, the quintessence of the Caribbean. From the lobby, the eye runs from the sea to the sky with infinite hues from blue to cobalt, to cyan, to turquoise, to aquamarine, up to sky-blue. A palate which does not allow other chromatic inclusions – the only exception being the green of the lawns and the palms in the garden. Then there is the silence, the real luxury of the CuisinArt, along with the space and service. Thanks to the ample dimensions of the property, tranquility is absolute, just slightly interrupted by the slow breaking of the waves on the strand. However, the pride of the Resort is its hydroponic crops. They are a type of cultivation first seen in the 30s of the last century. It, of course, requires the roots of the plants to be immersed in water instead of soil. This is a type of cultivation that takes us back in time to the hanging gardens of Babylon or the Chinampas, the floating gardens of the Aztecs. Howard Resh is the

director of the Hydroponic Farm of the CuisinArt, and he accompanies us on our visit around this unusual and fascinating world. Here we find the products used by the American chef, Jasper Schneider, who wisely exploits the freshness and the nutritional values of the vegetables produced on the farm to make a flavourful symphony of strictly organic delights. Be it an elaborate dish or a simple Creole Salad, taste and health are always the benefits. With a final look into the infinite blue from the lobby, we get into the limo headed for the airport, not without a feeling of respect for the farm that nourished us with its vegetables‌and water. Perhaps, it is just an impression or the silence‌or the experience on the whole, but we already feel lighter.

Where colours dominate: the cobalt blue of the sky, the radiant white of the beach, the emerald green of the vegetation, the ochre yellow of the soil burnt by the sun’s rays, the pastel colours of the colonial houses made entirely of wood, a detail which renders the traditional architecture unique.

The Eternal City has timeless charm. Celebrated in cinematography, loved by tourists, destination for religious pilgrimages, scholars and artists, it is ever able to amaze. New cuisines, new social graces, new rooms with views lead us to the Italian capital.

Entering the scenography of Piazza di Spagna means entering the legend of Rome. Climbing the eighteenth-century stairway which, with the Barcaccia Fountain at its foot, leads to the church of the TrinitĂ dei Monti, then permits one to fully discover this Roman corner rife with enormous fascination. pleiad of experiences awaits guests who place their bags in the dreamy tableau represented by Hotel Hassler. In fact, Rome, Trinità dei Monti and Piazza di Spagna continue to be an exceptional situation for an exceptional hotel. A pathway through the history of high-level hospitality begun by Franz-Josef Bucher which is carried on by his son-in-law, Heinrich Wirth, and his son, Oscar. The latter, in the 1930s, almost entirely rebuilt Albergo Hassler, founded in 1892. Right from the entrance guests are seduced by history and the warm welcome of Hotel Hassler. Enthusiasm and imagination characterise the ambience: a perfect synthesis of past and present. The rooms and suites, on the other hand – all furnished and decorated in different styles - offer unique panoramas of Rome. Common areas of refined elegance are epitomised in the Salone Eva, the exclusive Hassler Bar and the tranquil Palm Court oasis, the interior garden where guests can enjoy traditional Italian dishes, among which the “Mezzi rigatoni all’amatriciana”. The impressive, elegant and luxurious frame of Hotel Hassler makes it a high-level home, capable of exalting both classical seriousness and attention to detail without forgetting continuous innovation. This is all maintained with a passion for the art of hospitality and noteworthy competence by Roberto E. Wirth, Oscar’s eldest son. The President & General Manager is, in fact, careful to personalise the rapport with guests who are thus aware of always being welcome in an independent hotel of grand tradition.

màgo is a unique space created in the 50s from the transformation of the panoramic terrace. This was the intuition of Oscar Wirth, which today permits the eye to look out over Rome. The award-winning Chef Francesco Apreda, taking inspiration for the Orient, Japan and India, proposes innovative dishes firmly tied to Italian tradition. To his technical expertise and vast knowledge of the products, the Chef unites original blends of herbs and spices that characterise his proposals. The menu is an interpretation of a variety of flavours which give origin to a trip that includes balanced and harmonious dishes superbly enhanced by extremely attentive service. Dishes that can be enjoyed with a crescendo of surprises that range from“Polpo e alghe, blend Uma-Mia” to “Cappellotti di parmigiano in brodo freddo di tonno e 7 spezie” and including “Piccione al curry, madorle siciliane e carciofi alla brace” only to reach the sublime with “Dolce mozzarella di bufala, grattachecca di frutta rossa e balsamico”.

Couples, on the other hand, and those who are in search of quiet, can choose La Pineta for its refined ambience inserted in the greenery. Otherwise, there is La Villa del Parco, affiliated with Leading Hotels of the World, still immersed in greenery and renowned for its unparalleled ser vice. If, instead, guests prefer a sea view, the choice will be Il Castello. All suites have been recently renovated, included those on the upper two floors of Il Castello that offer a ser vice and a view, which are truly exceptional. At Il Forte it is difficult to be lazy with so many activities on hand. Tennis courts, paddle and basketball await along with soccer, a gym and a golf course which is one of the most technical in the Mediterranean area. Also available are cycling, diving, and other aquatic sports. However, if guests are determined to just relax, the silence of Il Castello, Le Dune, La Villa del Parco or the new villas will accommodate‌even with a butler.

Besides the thalassotherapy pathway, the Parco Ayurvedico, where activities and treatments inspired by the homonymous Indian medicine, and a Medical Spa are also available. The latter is where Dr. Angelo Cerina studies and experiments with the benefits of thalassotherapy but also where Dr. Amira Bodareva applies avant-garde treatments such ultrasound, oxygen therapy carboxy therapy, radiofrequency, microdermabrasion and needling in addition to the more traditional and “gentle” beauty treatments. Furthermore, in the new sports medicine centre muscletendon conditions will be treated with laser therapies under the watchful eye of Professor Pier Francesco Parra, pioneer of these therapies. mong the various detox and weight-loss programs proposed by the Acquaforte Spa this summer, we find a program of controlled physical activities in the new Performance Center directed by Prof. Giampiero Ventrone, a star from Italian soccer. How can we forget his long stay with Juventus, where he led the team to so many victories. We tried his sessions and were very impressed. If you are thinking only of a commercial product, think again. His professionalism and experience is clear from the preliminary examinations (medical exams, electrocardiagrams and spirometry) and from the first exercises Ventrone and his assistant perform. No one in the various spas and wellness centres visited had ever dared with physical test so‌simple, uncustomary and efficient to come up with a diagnosis. Indubitably, experience makes the difference. Years in the field taking care of distortions and strains help to prevent and heal. Once our weak points, habitually-incorrrect posture and false movements have been identified, a program of contrastive exercises with machines and without guided by Ventrone is created. Whether our aim is to simply move about with greater harmony and better posture or to train better, without traumas and with more visible results, we are for sure in the right hands.

Air France haut cuisine on board

Haute cuisine by name and for real. Air France continues its role of ambassador for French cuisine around the world with its new

onboard menu created by renowned award-winning chefs. After Joël Robuchon to Guy Martin, Michel Roth, Thibaut Ruggeri, Régis

Marcon, Anne-Sophie Pic and François Adamski, it is now the turn of Daniel Boulud, Ives Camdebord and Jean Imbert.

he new dishes for Business and First Class passengers are a mosaic of colours and forms. On long distance flights everybody knows it’s the space, silence and cuisine that make the difference. On Air France flights, the latter has always represented the jewel in the crown. Perfect even in the smallest detail, it is today served with Christofle silverware and on porcelain plates designed by Jean-Marie Massaud. Outstanding in their own role as ambassadors for the French culinary tradition around the world, the company chefs have often re-elaborated tradition, adapting it to the altitude (we all know that in flight the perception of flavours is not the same) and to international taste.

Today three new award-winning chefs have been added to all those who have contributed to making Air France a gourmet company. Daniel Boulud, one of the best chefs in the US, created the dishes served in First and Business classes on the flights from the United States. Ives Camdeborde, from April to September this year prepares the Business dishes on the long distance flights out of Paris. Then we have Paul Pairet, who created the dishes served in Business and First Class on the flights out of China for Paris. Next the young Jean Imbert, who proposes his Le marché – an on-demand menu created by this eclectic emerging chef. 21 euros or 7,000 miles Fly Blue and the designer menu is served in Economy, a rare but not negligible detail.
