Marshall White conducted just over 100 auctions on Saturday, 25 October, and our strong clearance rate tracked broadly in line with year-todate averages. While the day’s auction list appeared sizeable for a single day, overall spring stock remains lower than in recent years, including past Super Saturdays, so demand concentrated meaningfully on quality, well-presented homes.

Enquiries in the lead-up were consistent, inspections were well attended, and on the day, most campaigns attracted multiple bidders. Well-targeted, transparent campaigns encouraged decisive bidding once reserves were within reach. Where properties were buyer-aligned in their guides and professionally presented, competition pushed results to the upper end of the range, reinforcing that pricing discipline and presentation excellence remain decisive.

The key takeaway is balance. Underlying supply remains constrained compared to previous springs, and this scarcity continues to support well-priced, well-located listings. For vendors considering a late-spring or early-summer sale, the message is clear: establish an evidence-based price strategy, invest in presentation, and leverage Marshall White’s datadriven campaigns to tap into active buyer depth. For buyers, pre-approval and readiness remain advantages — there are opportunities to act quickly and with confidence on quality listings. Overall, Super Saturday served as a healthy litmus test for the final stretch of 2025, with strong attendance, solid competition, evidence-based pricing, and excellent conversion rates where price and presentation aligned.

VIN’S WHITE CHOCOLATE TIRAMISU

From the kitchen of Mr Vincenzo’s restaurant and wine bar in Mornington, comes a no-coffee tiramisu — a contemporary, white-chocolate classic to recreate at home.

INGREDIENTS

Ladyfingers:

3 large packets Savoiardi biscuits

Frangelico Syrup:

500 ml water

500 g caster sugar

½ vanilla bean

75 g Frangelico liqueur

White Chocolate Ganache:

625 g cream

160 g Belgian white chocolate

½ vanilla bean

Frangelico Sabayon:

170 g egg yolks

25 g caster sugar

35 g water

35 g Frangelico

Mascarpone Cream:

750 g mascarpone, room temperature

750 g chilled white-chocolate ganache

250 g sabayon, room temperature

Roast Pistachio & Caramelised White Chocolate Crumble:

100 g white chocolate

100 g shelled pistachios

METHOD

Frangelico Syrup:

1. Bring all ingredients to a simmer in a small saucepan, stirring until the sugar has dissolved.

2. Set aside to cool.

White Chocolate Ganache:

1. Gently heat all ingredients in a small saucepan, stirring until combined and the chocolate is melted.

2. Transfer to a heatproof container and refrigerate, covered with cling film touching the surface to prevent a skin, for 2–4 hours.

Frangelico Sabayon:

1. Create a double boiler: half-fill a medium saucepan with water and bring to a gentle simmer.

2. Place a tea towel over the rim (suspended above the water) and set a medium bowl on top.

3. Whisk all ingredients together in the bowl, then cook over the simmering water, whisking constantly, until the mixture reaches 72 °C (this pasteurises the eggs and stabilises the sabayon).

4. The mixture should be light and fluffy and hold a figure-eight ribbon when drizzled back into the bowl.

5. Remove from the heat and cool to room temperature.

Mascarpone Cream:

1. Using a whisk attachment on a stand mixer (or by hand), whisk the ganache to soft peaks (about 3 minutes).

2. Gently fold the mascarpone through the ganache with a spatula until combined.

3. Add the sabayon and fold until about 95% combined — it should be very smooth and voluminous.

Roast Pistachio & Caramelised White Chocolate Crumble:

1. Preheat oven to 140 °C fan-forced.

2. Line a baking tray with baking paper and spread the white chocolate in a thin, even layer.

3. Bake for about 10 minutes, or until the edges begin to caramelise; cool completely.

4. Roast the pistachios at the same time, leaving them in for an extra 4 minutes; cool completely.

5. Blitz both in a food processor to a coarse crumb (or use a mortar and pestle).

Assembling the Tiramisu:

1. Remove the Savoiardi from their packets.

2. Warm the Frangelico syrup until just above body temperature.

3. Choose a serving dish about 30 × 25 cm with sides at least 7 cm high (to allow three biscuit layers).

4. Spread a thin layer of mascarpone cream over the base.

5. Dip 2–3 biscuits at a time into the warm syrup for 2 seconds and arrange neatly and tightly in the dish.

6. Repeat to complete one full layer, then cover with another layer of cream.

7. Continue layering, finishing with a layer of cream.

8. Cover with cling film and refrigerate overnight to set.

9. Before serving, scatter generously with the pistachio–caramelised white-chocolate crumb.

Can you tell us about the inspiration behind the new Spring Collection?

Spring at Great Dane is about renewal — welcoming light and reimagining how our homes feel. This year we’ve drawn from nature’s palette: the greens of new growth, the deep blue of the handcrafted Ebba Pot, and the warmth of natural timbers in Studio Pneuma’s sculptural Curvy Stool. We’ve also explored the role of light outdoors with Örsjö’s new collection by Jonas Bohlin and Hans-Agne Jakobsson. Crafted to age gracefully in the open air, these fixtures marry robust materials with refined design, casting a soft glow that turns terraces and gardens into true extensions of the home.

Are there any new collaborations or makers you’re proud to showcase this season?

We’re delighted to introduce new additions that highlight the breadth of Scandinavian design. From Sweden, we welcome Källemo with the striking Botero Chair — sculptural yet inviting,

embodying designers Peter Andersson and Matti Klenell’s artistic ethos. We’re also showcasing delicate new glassworks from heritage houses Reijmyre and Skruf, whose craftsmanship continues to define Swedish design excellence.

In lighting, the Örsjö Outdoor Collection is a highlight. Designed to withstand the elements while elevating everyday rituals, these pieces extend the living space beyond the home with a refined, welcoming glow. Each maker reflects what we value most: craftsmanship, enduring design, and beauty with integrity.

How do you imagine people incorporating pieces from the new collection into their homes?

Spring is the season to pare back and create room for new energy. Even the smallest accents can shift a room — a vase like the Ebba Pot filled with blooms, catching the changing light. These details bring nature indoors and remind us of renewal. Whether a single accent or statement piece, the collection encourages thoughtful, joyful living — qualities spring embodies beautifully.

Beyond Spring, what’s next for Great Dane?

This year marks a new chapter with the opening of a dedicated Hästens showroom on Collins Street, Melbourne. What began as a store-within-a-store in Fitzroy has grown into its own destination, allowing us to share the full Hästens experience.

We spoke with Sophia Petridis, General Manager of The Beautiful Bunch, about their recently launched BB Botanics initiative. This inspiring new venture brings meaningful employment to young women from refugee backgrounds through the power of plant care.

What was the vision behind launching BB Botanics, and how does it continue the mission of The Beautiful Bunch?

BB Botanics was created to grow the impact of our social enterprise by offering a new stream of meaningful employment for young women from refugee backgrounds. While The Beautiful Bunch has long supported these young women through floristry, we saw an opportunity to expand into plant styling and maintenance, fields that offer ongoing, reliable work and a chance to contribute meaningfully to beautiful environments. At its core, BB Botanics shares the same values as The Beautiful Bunch: creating beauty, fostering belonging, and offering pathways to long-term change.

How does BB Botanics create pathways for young women from refugee backgrounds?

Through hands-on training and supported employment in indoor plant care, BB Botanics gives participants practical skills, structure, and confidence. Our team works with businesses across Melbourne, styling, maintaining, and enhancing green spaces while building workplace confidence and connection. These roles don’t just provide income; they offer real-world experience, responsibility, and a sense of pride.

In what ways has working with plants and nurturing green spaces become a tool for healing and empowerment within the BB Botanics team?

Plants offer something truly special. They require care, patience, and attention — qualities that are healing in themselves. For our team, tending to plants becomes a daily practice of connection, regulation, and growth. Some of our trainees who’ve accompanied Bea, our Head Horticulturist, have reflected on how calming it is to be out on-site and

surrounded by greenery, away from the pace of the studio bench and immersed in something slower and more grounding. There’s also something incredibly empowering about walking into a space and knowing you’ve played a role in making it thrive. That quiet pride can build confidence and transform how someone sees themselves.

How do you hope BB Botanics influences the way businesses think about inclusion, purpose-led partnerships, and the role of social enterprise?

We hope BB Botanics demonstrates that social impact and excellence can coexist — and that by working with a values-led supplier, businesses can help create real change. We’d love to see more businesses like Marshall White embrace social procurement not just as a good deed, but as a way to create more beautiful, meaningful spaces, with purpose at the centre.

Looking ahead, what are your hopes for the future of BB Botanics and the women it supports?

Our dream is to grow our client base and, with it, the number of women we can support into meaningful employment. We want BB Botanics to become a recognised leader in plant care and a case study in what’s possible when social enterprise is done well. Ultimately, we want every young woman who comes through our doors to leave with a stronger sense of who she is and what she’s capable of. ■
