he other day, I absentmindedly grabbed a bottle of wine from my cabinet to share with friends who were visiting from Vancouver. As I unscrewed the cap, I realized that it was the bottle of 2015 Pinot Noir Reserve that I had brought home from Stoneboat Vineyards following a summer trip to Oliver, B.C. I had planned to shelve the bottle for a while, but I’m so glad I didn’t. As the wine flowed, I shared stories of my trip and struggled to settle on just one highlight. Was it running the Half Corked Marathon in a refreshing May rain shower dressed-up as my hero, Holly Golightly? Possibly. The 19-kilometre route was certainly made easier with each wine-tasting stop along the way. But spending leisurely afternoons sipping wine with local winemaking legends, dining on stellar Indian cuisine at Kismet Estate Winery’s Masala Bistro or waking up to sweeping views of the morning sun bouncing off the vines at Burrowing Owl Estate Winery, also jostled in my mind for first place. I share all my highlights, from the characters I met to the unique vintages I enjoyed, starting on page 24.

While wine is a perfectly good excuse to travel, there are many more reasons to get out and explore. DAY 1 Morning Start your day by admiring the statues and buildings at the vast Place Bellecour (shown), one of Europe’s largest public squares. Then, cross the Saône River and head into the historic Vieux Lyon district to discover its hidden passageways, quirky shops and the Saint Jean Cathedral. Afternoon Ride the funicular railway up to the summit of Fourvière hill for sweeping views of the city. On a clear day, the Alps are visible in the far distance. Explore the iconic NotreDame de Fourvière basilica before making the short walk to the well-preserved ruins of the ancient Roman Theatres of Lyon. Evening Bars and restaurants spill out on to the busy, cobbled streets of Vieux Lyon at night. Settle into a table on the outdoor terrace of the Venetian-inspired Bar Le Florian, order a Negroni and watch the world go by as you sip.
DAY 2 Morning Explore the winding streets and colourful public art of the hillside neighbourhood of CroixRousse. Stop by Café Mokxa for a caffeine boost and one of its generously sized pastries before heading west across the Rhône River to the Parc de la Tête d’Or. Afternoon Spanning almost 300 acres, France’s largest urban park is an oasis of calm in the heart of bustling Lyon. It features a boating lake, botanical gardens and
a zoo containing almost 400 different animals divided into 80 different species. Evening Walk 20 minutes south to Les Halles de Lyon – Paul Bocuse, a renowned indoor food market. There are about 50 vendors packed in here selling everything from produce and meat to cheese and pastries. Sample as much as possible, especially classic Lyonnais fare such as quenelle de brochet and tarte aux pralines.

2 Lyon Beer Festival April 11 to 12 If you know your IPA from your saison, this festival is for you. Now in its fifth edition, the Lyon Beer Festival features hoppy creations from international, national and local breweries.
Afternoon No trip to France would be complete without visiting an outdoor market. The bustling Marché Saint-Antoine runs along the banks of the Saône and is the perfect place to spend a morning getting lost among the assortment of meats, vegetables and cheeses. Afternoon Head 10 minutes east on Metro Line D to see where modern cinema began. The elegant Musée Lumière pays homage to brothers Louis and Auguste Lumière, celebrated motion picture pioneers. Learn about their story and their inventions, including the famous cinematograph. Evening Dine at a traditional Lyonnais bouchon. With their checked tablecloths, wood panelling and traditional fare, these unpretentious restaurants are all about great food. How does scent marketing actually work? We start by understanding the brand’s DNA. Casinos want the guest to be alert but comfortable, so they stay longer to gamble or enjoy food and beverages. We develop a brief for the master perfumer, who creates the aromas.

She says scent marketing works because our sense of smell is hardwired into our limbic system, the part of our brain where memory is stored and instinctual responses, like fight-or-flight, are decided. We spoke with Fabrigas to learn how casinos and hotels are using scents to build unforgettable experiences for their guests. Why are businesses using aromas? When people go out, they seek an emotional experience. When communicating a brand, you want to hear it, see it, but you need to be able to smell it, as well. The guest will remember an experience longer because of its smell.

Which scents do you frequently use? Vanilla is an aroma historically known to give a sense of comfort. Also, the lavender family. But, when it comes to a hotel or casino, what we’re doing is creating a signature scent, a blend that expresses the values of the brand. This could include mint for focus, lavender for relaxation, vanilla for comfort and citrus for sustained energy.

Is there such a thing as a scent of the year? In the 1980s, spicy fragrances were all the rage. Then, it moved into floral aromas. Now you have this huge wellness trend—organic, earthy, green, herbaceous aromas. —Scott McKinney

aroline Fabrigas didn’t plan to work with aromas. In her previous career, she rose up the ranks to become a senior executive for Clarins. It was her husband, Harald Vogt, who was the early pioneer in scent marketing. “Harald was fascinated by the idea that fragrances could be another form of branding,” Fabrigas says. “When he unexpectedly died in 2010, I needed to figure out what to do with the business he’d started, Scent Marketing Inc. In the course of learning the business, I fell in love and decided to grow it.” There’s an art and science to a successful scent program, Fabrigas says. The art is in the creation of a signature scent that aligns to a brand’s identity, while the science is in how many scent diffusers to use, where to place them and how

WINE AND BREAD Former accountant Murray Jones and his wife, Fiona Duncan, retired to Oliver from Winnipeg, in 2011 to try their hand at winemaking. “There’s no place like this anywhere else in Canada,” says Jones. “It’s magical.” The couple spent two years searching for a property where they could grow and produce “big reds,” before deciding on a plot of land on the east side of the Black Sage Bench south of Oliver. Helping them was Richard (Dick) Cleave, one of the most celebrated viticulturalists in Canada, who quickly became their friend and mentor. They called their new winery Platinum Bench, a name that Jones credits to Cleave. It is a nod to the Golden Mile Bench, located across the valley from their vineyard. Benches are long, narrow strips of level land edged—above and below—by steeper slopes formed through different geological processes, such as retreating glaciers. They are also great places to grow grapes. “Dick joked, ‘If that’s the Golden Mile Bench, then this is the Platinum Bench,’” says Jones. While Jones takes charge of the wine side of the business, overseeing the production of varietals such as Merlot, Cabernet Franc, Malbec and Gamay, Duncan’s domain is the creation of artisanal breads that compliment Platinum Bench’s vintages. It’s a passion she discovered as part of a stress-management program she took while working as the vice president of design for a women’s sportswear company. Daily tastings at Platinum Bench see its

wines expertly paired with Duncan’s fresh loaves. The gorgonzola and fig is accompanied by the Meritage, its complex bouquet of ripe plums, blackcurrants, blackberries and cherries accentuating the loaf’s light, blue cheese flavour. The sharpness and saltiness of her asiago cheese bread pairs nicely with the Gamay Noir’s notes of raspberry and light pepper.

Served slightly chilled, the wine pairs well with tomato-based dishes. Gamay is most commonly found in France’s Beaujolais region and Loire Valley, but thrives in the sandy soil of the Black Sage Bench.
A LOCAL PIONEER Bill Eggert honed his winemaking skills working on his uncle’s vineyard in Ontario’s Niagara Peninsula before moving to B.C. in 1983 armed with a University of Guelph diploma in agriculture. In 1989, he bought Fairview Cellars—a 10-acre property located next to the first green of the Fairview Mountain Golf Course—and harvested his first grapes four years later. “When I planted my Cabernet Sauvignon in 1993, there were just 10 acres of it in the Okanagan,” he says. “But, that year, hundreds
of acres were planted, and the wine that hit the shops in 1996/97 was dynamite. We’d always made great aromatic white wines here, but we realized that we could do really nice reds, too.” Arriving at Fairview Cellars’ tasting room, housed in a rustic log cabin, you’ll likely be greeted by one of the winery’s two dogs, Marty and Honey. After your tasting, take a glass of your favourite wine outside to one of the picnic tables or stand at one of the reused oak barrels on the patio located over the wine cellar’s flat roof. The barrels are recycled after four or five vintages. Eggert shies away from the term “pioneer,” but he is something of a legend in the valley, with a reputation as an exceptionally good grower. He enjoys talking to visitors about the region and the wine it produces. “It’s so much fun being in this valley. The diversity of the wine is our strength,” he says.

Half Corked Marathon (May 29 to 31) Almost 1,500 participants take part in this celebrated annual event. Don a costume, or not, and run or jog the 18-km route that passes some of the area’s best wineries. Stopping for sips during the race is encouraged (pace yourself), and the party at the finish line features tastings, food trucks and live music. Tickets are issued via a lottery system and, although the event is sold out for 2020, you can still cheer on the runners.

TA S T I N G T H E T E R R O I R Located on the southern edge of the Golden Mile Bench, Rust Wine Co.’s main vineyard features some of the oldest vines in the valley—the rows of Gewürztraminer you pass on your way to the tasting room were planted in the 1960s. Most of the Golden Mile faces due east, so the vines get plenty of morning sunlight, but here the grapes receive a more southern exposure, resulting in a beautiful distribution of heat. The stony soil also helps. “There’s a cooling effect from the sun going down behind the mountains, but the rocks continue to heat up the vines from underneath,” says hospitality manager Kane Morgan. “You get ripe fruit, but the preservation of acidity, as well.” Start by sampling the Gewürztraminer—it bursts with flavours of guava, ginger, rose petal and all-spice—before moving on to a blind tasting of the winery’s three Merlots. While its grapes are cultivated in virtually the same manner, the differences in taste is due to where the grapes were grown. In addition to Rust’s Golden Mile property, the winery has vineyards in West Osoyoos and the Similkameen Valley. “It’s all about creating an identity and a sense of purpose in this region. The wines are fantastic, the food is great and the people are super-friendly. Life here is very laid-back,” says Morgan. After sampling its vintages, settle into the winery’s patio to enjoy chef Natasha Schooten’s small-bite dishes, like the build-your-own Duck Confit Tacos served with Mexican cabbage Pico

Established: 2017 Location: 12 acres on the Golden Mile Bench Varietals: Gewürztraminer, Cabernet Sauvignon, Merlot and Zinfandel Must try: In all of B.C., there are only about 23 acres planted with Zinfandel, so one of the gems of this property is its 20-year-old Zinfandel vines. The wine is savoury, spicy and earthy, and similar to something you’d find from Italy.
APPLES TO GRAPES George and Winnifred Covert moved to the valley from California after George learned apricots grew in the Okanagan Valley, and, astounded that you could grow fruit in Canada, wanted to see for himself. He purchased an undeveloped parcel of land north of Oliver in 1959 and started growing onions and tomatoes. Later he planted 80 acres of Gala and Ambrosia apples, making Covert Farms one of the area’s leading apple producers. In 2004, George and Winnifred’s grandson, Gene, and other family members, took over the farm from his parents and soon converted part of the apple orchard into an organic vineyard. Gene now leases out much of the land so he can focus on his 30 acres of organic grapes. They are planted at the southeast of the prop-
erty overlooked by McIntyre Bluff—the narrowest part of the valley—and also at a cooler section in the northwest. The northwest mountain provides shade in the afternoon, protecting the Pinot Noir and Chardonnay grapes from the intense afternoon heat, while a cool breeze keeps them dry. The farm grows mostly Merlot and Cabernet Franc and Sauvignon, but also a number of other varieties, including a light, sparkling Zinfandel. “We make the most of the Zinfandel yield, with both a fantastic table wine but also a very interesting sparkling,” says Gene. Along with organic farming philosophies, Gene has also introduced biodynamic and regenerative practices that go beyond sustainability to give back to the land for future generations. He describes himself as a “bug farmer” when referring to the microbial element of maintaining the soil.

TWO INTERESTING VINTAGES Stoneboat Vineyards Lanny Martiniuk moved to the valley from Vancouver about 40 years ago. He and his wife, Julie, bought the farm on a handshake and began growing fruit, but switched to grapes in 1983. Today, Stoneboat has nearly 50 acres of vineyards across three sites. It’s a special area known as the Black Sage Gravelbar. “There’s solid gravel under here for 150 feet,” says Martiniuk. “We hit water at 11 feet, and it goes to 60 feet. The water draws minerality from the calcium-coated rocks. It’s the type of soil that is perfect for growing Pinot Noir.”

Kismet Estate Winery For a hearty meal, head to Kismet Estate Winery’s Masala Bistro for Indian food made from family recipes. Sukhwinder and Balwinder Dhaliwal immigrated to Canada in the 1990s. They managed various vineyards in the valley before buying a parcel of land to grow grapes to sell. Over the years, they expanded their vineyards to 400 acres. In 2013, they began making their own wine under the Kismet label, Sanskrit for “destiny” or “luck.” About 10 per cent of the grapes they grow—such as Grenache and Mourvedre—are used for their wines, enough for about 6,000 cases. D U PA I N E T D U V I N L’ancien comptable Murray Jones et sa femme, Fiona Duncan, de Winnipeg, se sont installés à Oliver en 2011 pour tenter leur chance en vinification. « Il n’y a aucun lieu tel qu’ici ailleurs au Canada », dit Jones. « C’est magique. » Le couple a passé deux ans à chercher une propriété où il pourrait cultiver des vins de fruits noirs avant de choisir un terrain à l’est de Black Sage Bench, au sud de Oliver. Ils ont pu compter sur l’aide de Richard (Dick) Cleave, l’un des viticulteurs les plus célèbres du Canada, qui devint rapidement leur ami et mentor. Ils appelèrent leur nouvelle vinerie Platinum Bench. Leur nom, que Jones attribue à Cleave, est un clin d’œil à Golden Mile Bench, situé de l’autre côté de la vallée. Les replats (bench) sont de longues bandes étroites de terrain plat dans un versant de pente plus accusée formées par différents processus géologiques, dont le retrait des glaciers. Ils sont parfaits pour faire pousser la vigne. « Dick disait : “si le replat de Golden Mile est en or, le nôtre est en platine” », se souvient Jones. Jones s’occupe du côté vin et supervise la production des cépages tels que Merlot, Cabernet Franc, Malbec et Gamay, tandis que Duncan est dans le domaine de la fabrication de pain artisanal, qui accompagne bien les millésimes de Platinum Bench. Le gorgonzola et figues accompagne le Meritage, au bouquet complexe de prunes mûres, de cassis, de mûres et de cerises, accentuant la saveur de fromage bleu de la miche. L’arôme prononcé et salé de son pain au fromage asiago accompagne bien les notes de framboise et de poivre du Gamay Noir. COM M E NTA I R ES DE DÉGUSTATI ON Platinum Bench Estate Winery & Artisan Bread Co. Fondé en : 2012 Emplacement : 15 acres à Black Sage Bench Cépages : Cabernet Sauvignon, Merlot, Cabernet Franc, Petit Verdot, Malbec, Syrah et Gamay Incontournable : Le Gamay est léger et sa finale est éclatante. Servi légèrement froid, ce vin accompagne bien les plats à base de tomate. Le Gamay est plus commun en France, dans la région du Beaujolais et la vallée de la Loire, mais le sol sableux de Black Sage Bench lui convient bien.
UN PIONNIER LOCAL Bill Eggert a perfectionné ses techniques de vinification dans le vignoble de son oncle, sur la péninsule du Niagara, en Ontario avant de déménager en C.-B. en 1983, armé d’un diplôme en agriculture de l’Université de Guelph. En 1989, il achète Fairview Cellars, une propriété de 10 acres près du premier vert du terrain de golf Fairview Mountain, et fait les premières vendanges quatre ans plus tard. « Quand j’ai planté mon Cabernet Sauvignon en 1993, il y en avait seulement 10 acres dans
l’Okanagan », dit-il. « Mais cette année-là, on en a planté des centaines d’acres, et le vin commercialisé en 1997-1996 était extraordinaire. Notre production de vin blanc aromatique a toujours été fabuleuse, mais on a compris qu’on pouvait faire des rouges très intéressants. Dans le salon de dégustation en bois rond de Fairview Cellars, vous serez accueilli par l’un des chiens de la vinerie, Marty et Honey. Après la dégustation, prenez un verre de votre vin favori à une des tables de pique-nique ou debout près des fûts de chêne revalorisés sur la terrasse sur le toit de la cave à vins. Eggert recycle les fûts après les avoir utilisés pour quatre ou cinq millésimés. Eggert évite l’adjectif « pionnier », mais il est un peu une légende dans la vallée, et a la réputation d’être un vigneron exceptionnel. Il aime parler aux visiteurs de la région et des vins produits ici. « C’est tellement agréable dans la vallée. La diversité de nos vins est notre force », dit-il. DÉGUSTER LE TERROIR Au sud de Golden Mile Bench, le vignoble principal de Rust Wine Co. possède certains des vins les plus âgés de la vallée : les rangées de Gewurztraminer sur le chemin du salon de dégustation furent plantées dans les années 60. La plupart des vignes de Golden Mile sont orientées vers l’est, et sont bien exposées au soleil matinal, mais ici, les vignes sont orientées vers le sud, où la chaleur est bien répartie. Le sol rocailleux aide aussi. « Le soleil qui se couche derrière les montagnes entraîne un refroidissement, mais la roche continue de chauffer les vignes par en dessous », explique Kane Morgan, responsable de l’accueil. « Le fruit est mûr, mais l’acide est aussi préservé. » Commencez par une dégustation de Gewurztraminer, aux saveurs éclatantes de goyave, gingembre, pétales de rose et piment de la Jamaïque, avant une dégustation à l’aveugle des trois Merlots de la vinerie. Même si les méthodes de culture sont les mêmes, l’emplacement des vignes entraîne nécessairement des différences de saveur. Outre la propriété Rust à Golden Mile, la vinerie possède des vignobles à West Osoyoos et dans la vallée de Similkameen. « Il s’agit de créer une identité et de faire œuvre utile dans la région. Les vins et la nourriture sont fantastiques, et les gens sont si gentils. La vie est simple ici », commente Morgan. Les montagnes du nord-ouest font de l’ombre en après-midi, protégeant les vignes de Pinot Noir et de Chardonnay de la chaleur intense, et la brise fraîche les garde au sec. La ferme fait pousser principalement du Merlot, du Carbenet Franc et Sauvignon, mais aussi d’autres cépages, notamment un Zinfadel léger et mousseux. « Nous en tirons le maximum. Il produit un excellent vin de table et un mousseux fantastique », dit Gene. Suivant les principes de l’agriculture biologique, Gene a introduit des pratiques biodynamiques et régénératrices qui sont durables et redonnent à la terre et aux générations futures. Il se décrit lui-même comme un « fermier microbien », faisant référence aux bactéries qui nourrissent le sol. Miami

Just north of Miami, Fort Lauderdale ranks high on culture and history but with a more low-key, laid-back vibe than its glitzy neighbour. And though it offers nearly 40 kilometres of gorgeous shoreline, step away from the sea to discover Fort Lauderdale’s artsy charms. First stop: Las Olas Boulevard, a historic street lined with galleries and boutiques full of local art, fashion and other creations. Or, for a more cuttingedge scene, visit FATVillage, an emerging arts and culture district in downtown with a trail of public art installations that stretches for 3 km. If timeless grandeur is what you’re after, Fort Lauderdale’s historic mansions are a must-do. Among the standouts is Bonnet House Museum and Gardens, the 1920s-era oceanfront estate of artist Frederic Clay Bartlett and his wife, Evelyn Fortune Lilly. Open to the public, it features 35 acres of landscaped gardens and the owners’ private art collection.

As a gateway to tranquil Sanibel, Captiva and Marco Islands, the city of Fort Myers, situated along Florida’s southwest coast, puts some of the state’s most pristine and beautiful attractions within easy reach. Here you’ll find spectacular beaches, hidden mangroves and countless ways to get up close to all kinds of exotic wildlife. Florida’s massive manatees — water-based mammals that weigh about 450 kilograms and graze on seagrass and other marine plants — are among the fauna you’ll want to try to spot. One of the largest mangrove ecosystems in the U.S., the park is home to more than 245 species of birds, including its own “Big 5”: American white pelicans, mangrove cuckoos, reddish egrets, roseate spoonbills and yellow-crowned night herons.
You’ll probably run out of time before you run out of things to do in Orlando. With dozens of large-scale attractions, waterparks and theme parks, this central-Florida city offers more than its share of entertainment. Perhaps the best known, Walt Disney World actually consists of four theme parks: Magic Kingdom, Animal Kingdom, Epcot and Hollywood Studios. And while you could easily dedicate days to Disney alone, you’ll want to pace yourself, because there’s plenty more to do. Universal Studios Florida has two theme parks of its own — Harry Potter fans will want to spend time at Universal’s Island of Adventure, home to The Wizarding World of Harry Potter. And kids of all ages will love the 150-acre Legoland (with its own separate waterpark), and numerous others.
Tampa Tampa’s best beaches may be outside of its centre, but there’s so much going on you might have a hard time trading city for sand. With 15 stops through downtown, the hop-on, hop-off Pirate Water Taxi is a fun and scenic way to get to sites like the Tampa Museum of Art and Sparkman Wharf — an outdoor shopping and dining complex that features live music or outdoor movies most nights, as well as a Florida-centric biergarten with 24 taps and, of course, stellar waterfront views. hielding spectators from the desert heat with its retractable roof, the air-conditioned home of the Arizona Diamondbacks has a reputation for being fan-focused. “Chase Field was one of the first ballparks that resonated for me,” says Wagner about the downtown Phoenix stadium that opened in 1998. “You need to have a good time, and the Arizona Diamondbacks struck that chord very, very early.” Look no further than its swimming pool near right centre field. “People can hit home runs into the pool,” says Tiffin. “It’s something that you don’t really see in other stadiums.” From the chance to take a mid-game dip to snapping pics with the D-backs Legends Racers—four mascot-like caricatures of iconic team players—a visit goes beyond nine innings. “It’s an absolutely inclusive experience,” says Wagner.

he Toronto Blue Jays, Canada’s only MLB team, have called Rogers Centre home since 1989, when it opened as the SkyDome. Its downtown location, along with its retractable roof, makes it instantly recognizable. “It definitely adds a lot,” says Tiffin. “Having the roof open gives it the feel of a true baseball experience.” Given the opportunity, Tiffin suggests visiting on a sunny day, as the open roof transforms the feel of the place— thanks to an equally iconic structure. “The CN Tower is right there,” says Tiffin. “You don’t see a giant monument like that in every stadium. It shadows over the whole playing area.” While downtown stadiums have become the norm, Selter says the Rogers Centre’s location in the city’s Entertainment District is a relatively new phenomenon. “Before, ballparks were built wherever they could get the land,” he says.

On le reconnaît tout de suite à son toit rétractable et son emplacement au centreville. « C’est un très bel ajout », dit Tiffin. « On a vraiment l’expérience d’une partie de baseball quand le toit est ouvert. » Il suggère de visiter le stade quand il fait beau pour profiter du plein air et de la vue d’une structure aussi emblématique. « La tour du CN est juste à côté. Il n’y a pas de monument aussi géant dans tous les stades. Il jette son ombre sur tout le terrain. » C’est devenu la norme de bâtir un stade au centre-ville, mais Selter précise que le Rogers Centre, situé dans le quartier des spectacles, représente un phénomène relativement nouveau. « Avant, on construisait les terrains de baseball là où il y avait de la place. » The name SkyDome was the result of a competition in 1987. racle Park made a splash—pun intended—when it debuted in 2000 as Pacific Bell Park. Situated next to San Francisco Bay, the home of the San Francisco Giants has waterfront views. “Nowhere do you find a backdrop, or a venue, like you do in San Francisco,” says Wagner. “If you elevate yourself within the ballpark, you get one of the more spectacular views—not just from a baseball-fan perspective, but also from a tourist perspective.” The bay also plays a role in the game. Named after legendary slugger Willie McCovey, the unofficially titled McCovey Cove is located just beyond the right field wall. Paddlers take to the cove during games in hopes of retrieving a rare Splash Hit—a homer slammed out of the park and into the bay. “Having kayakers trying to catch the ball, is a big draw to that stadium,” says Tiffin. “It’s in a perfect spot.”

pened in 2009 just a block from the team’s original stadium, the home of the New York Yankees is a tribute to its legendary predecessor, which stood for more than 85 years. “Yankee Stadium is a modern attempt to recreate the look of the old Yankee Stadium from 1923,” says Selter. From the frieze that adorns the top of the upper deck to the exterior of towering arches and columns of white limestone, its design evokes memories of the earlier structure. Inside, the New York Yankees Museum displays memorabilia from Bronx Bomber greats and Yankee’s history. “Once you’re there, you know exactly where you are,” said Wagner of the iconic design of Yankee Stadium. “They did such a great job of tying in the classic look with every modern amenity from a player and fan perspective.”

he league’s latest build hit a home run with baseball fans thanks to its design, which incorporates elements from classic and modern ballparks. Debuting in 2017, the home of the Atlanta Braves heightens the fan experience for die-hard game-goers and casual attendees alike. “It’s definitely one of my favourite stadiums,” says Tiffin. “They really built it as a great experience.” That experience is due in part to Truist being an anchor for the newly developed Battery Atlanta neighbourhood, with shops, restaurants and a hotel just steps from the stadium. Game watching is also elevated thanks to meticulously designed seating tiers that ensure ideal sightlines, and fans are treated to southern hospitality with food options in the concourse ranging from barbecue to catfish po’ boy tacos. “You won’t find that in every part of the country,” says Wagner.

history. Aptly named Ireland’s Ancient East, this area offers spectacular itineraries for the history-loving traveller. The options for exploring are endless, but if you venture

inned between dense forest and a vertigo-inducing drop, walkers carefully pick their way along the Spinc in Glendalough. The undulating cliff path follows the line of the mountain ridge, a narrow wooden boardwalk straddling bog and grass, stream
and rock. Here, about 50 kilometres south of Dublin, you’ll find neither car nor building, road nor powerline. Below, a long, deep lake runs the length of the valley, which has an-
other, small rounder lake at the eastern end. Together, these inky blue mirrors appear like one giant liquid exclamation mark, a trick of topographical punctuation that perfectly expresses the wonder of this magical place. And it’s difficult not to feel wonder. Glendalough—Irish for Valley of the Two Lakes—doesn’t just impress with its pristine panoramas, but also with its illustrious history. The isolated valley, carved by glaciers some 20,000 years ago, is home to one of Ireland’s most remarkable monastic sites. Long before the day-trippers came, long before the British built the Military Road—one of the country’s first purpose-built roads, designed to flush out early 19th-century Irish rebels hiding in the mountains—and long before marauding Vikings came over the hills, Glendalough was a haven for pilgrims. This spectacular valley’s first recorded inhabitant, a hermit named Kevin, left quite a legacy for a man who slept in a cave and wore animal skins. Canonized in 1903, Saint Kevin was a simple man who sought solace here in the sixth century. His nature-loving way of life soon attracted other followers, and he founded a monastic settlement. As the community grew, so too did the site’s importance. A mainstay of Christianity and learning, Glendalough became one of Europe’s most important ecclesiastical centres, thriving for more than 500 years. At its peak, the beautiful monastic city had seven churches. It’s a thrill to stand in Glendalough now and imagine what this industrious community would have looked like; praying and farming, crafting and carving. The surviving buildings date from the 10th to 12th centuries, with St. Kevin’s Church still impressively intact amongst the amber-

oincés entre les forêts denses et les falaises vertigineuses, les randonneurs suivent prudemment le sentier Spinc de Glendalough. La promenade étroite de bois suit les courbes de la crête de la montagne, au-dessus des marais, des herbes, des ruisseaux et des rochers. Ici, à 50 km au sud de Dublin, vous ne trouverez aucune voiture, ni bâtiment, route ou ligne électrique. Plus bas, un long lac profond remplit la vallée, et à l’est, il y a un lac plus petit et plus rond. Ces deux miroirs bleus ressemblent à un point d’exclamation
liquide géant, qui exprime parfaitement notre émerveillement face à la magie de l’endroit. Il est difficile de ne pas être émerveillé. Glendalough, qui signifie « la vallée des deux lacs » en gaélique, impressionne autant par la pureté de son panorama que par son histoire glorieuse. Cette vallée isolée, façonnée par des glaciers, dont certains datent de 20 000 ans, abrite l’un des sites monastiques les plus remarquables en Irlande. Bien avant l’arrivée des excursionnistes, le pillage des Vikings et la construction de la route militaire par les Britanniques (une des premières voies construites pour se débarrasser des rebelles irlandais cachés dans les montagnes au 19e siècle), Glendalough était le paradis des pèlerins. Le premier habitant constaté fut un ermite nommé Kevin; il a laissé tout un héritage pour un homme qui dormait dans une grotte et se vêtait de peaux d’animaux. Canonisé en 1903, saint Kevin était un homme simple qui trouva son réconfort ici, au 6e siècle. Son style de vie respectant la nature a bientôt attiré des disciples et il fonda une colonie monastique. Le site prenait de l’ampleur à mesure que la communauté grandissait. Pilier du christianisme et de l’apprentissage, Glendalough fut l’un des centres ecclésiastiques les plus importants de l’Europe, et ce pendant plus de 500 ans. Au sommet de sa popularité, la jolie ville monastique comptait sept églises. Comme il est excitant d’être à Glendalough et d’imaginer cette communauté à l’œuvre, priant ou pratiquant l’agriculture, l’artisanat et la sculpture. Les bâtiments ayant survécu datent du 10e et 12e siècles, et l’église St. Kevin est toujours étonnamment intacte parmi la végétation et les croix celtiques. Mais c’est la tour ronde de 33 mètres qui attire les plus grosses foules. Servant à l’époque de clocher et de point de repère pour les moines, sa taille évoquant Raiponce rappelle son rôle fascinant de refuge et de tour de guet contre les pilleurs. Mais les Vikings n’ont pas mis de temps à entrer par les monts Wicklow, à la recherche d’or et d’argent à rapporter à leur forteresse de Dublin. Il est peu probable que les Vikings se soient arrêtés pour s’émerveiller devant la beauté de la vallée, pas plus que les Normands venus d’Angleterre trois siècles plus tard. Entre les prises de territoire et la construction de villes, les Normands se mirent à réorganiser l’église, ce qui a finalement mené au déclin de Glendalough en 1214. nce you’ve been enchanted by Glendalough’s beauty, head southwest to Kilkenny—a quick dash by motorway—to uncover the next chapter in Ireland’s history. The country’s medieval capital seems
somewhat diminutive in size, but it is more than a match for any metropolis. Travellers would be remiss not to settle into Kilkenny for an extended stay to fully appreciate its perfect blend of ancient relics and modern amenities. Founded by monks, the city’s importance was solidified over the centuries by a succession of Irish and Norman lords
who made it their home, and, thanks to its cathedrals and a royal charter from 1609, Kilkenny earned its stripes—the city’s beauty owes much to its medieval architecture. that Ireland wasn’t always a hospitable place, with 1.5 million people fleeing its shores during the Great Famine (1845 to 1849), and another
1 million perishing from starvation. This story is far more recent than that of Glendalough or Kilkenny but, none the less, it is a defining period in Ireland’s history. A trip southeast from Kilkenny, toward the town of New
Ross in County Wexford, will reveal the Dunbrody famine ship and a glimpse back in time to famine-stricken Ireland. One of eight cargo vessels built in Quebec for a wealthy merchant family from Wexford, it was launched in 1845, the year Ireland’s potato crop failed. Refitted hastily to carry emigrants, the Dunbrody ended up making many passenger trips between Quebec and Ireland. The replica ship, moored on the River Barrow, can be explored at the fascinating Dunbrody Famine Ship Experience, revealing the conditions of these uncomfortable journeys that so many endured on their way to better lives. A short drive further south to Hook Head—where the Dunbrody once entered open waters—will reveal far more than Wexford’s dramatic coastline. On the headland, you’ll see one of the world’s oldest working lighthouses. Built 800 years ago by a Norman lord, it served as a coastal landmark and offered protection to ships bringing supplies. The lighthouse overlooks the estuary where Vikings likely once sailed on their way to establishing Vadra Fiord (Waterford) in the ninth century. As you gaze out to sea from Hook Lighthouse, you may find yourself daydreaming of the monks and marauders, migrants and merchants who all stepped on this island and played a part in shaping Ireland’s Ancient East.

Penticton’s close proximity to an international airport, mild climate and well-maintained trails and roads have made it one of Canada’s top cycling destinations. Cyclists of all stripes routinely flock to the city in July for the Prospera Granfondo Axel Merckx Okanagan road race. Founded by retired Belgian cyclist Axel Merckx—an Olympic medalist and son of five-time Tour de France champ Eddy Merckx—the event, now in its 10th year, attracts recreational, elite and pro cyclists from around the world. Competitive and casual cyclists alike can choose between 160-km, 126-km, 92-km and 55km distances, all of which start and finish alongside Okanagan Lake in downtown Penticton. The main race takes place on July 12, but family-friendly festivities, such as the Kids’ Piccolofondo Race and more, run all weekend long.

The next must-stop destinations in the interior are twin waterfront cities Kelowna and West Kelowna. Get outside and experience some of the top-rated natural attractions in the province like Myra Canyon Park, Knox Mountain Park and Lake Okanagan. Must-Try Dish Stone crab claws Southern Florida is the biggest producer of stone crabs in the world. This crab has a natural ability to regenerate its claws, so only that part is harvested and the rest of the crustacean is returned to the water. While you’ll find this treat on almost every menu when they are in season—from Oct. 15 to May 15— you won’t find them much fresher than at Captain & Krewe Seafood Market & Raw Bar. COOL AS ICE The most essential ingredient in your cocktail is usually the easiest to overlook. n the mixology world, ice is trending. No longer considered an afterthought, this ingredient is taking centre stage as top-tier cocktail bars invest in pricey technology and tools to create premium cubes. Almost every cocktail calls for some type of chilling, and ice really can make or break a drink. Sweating cubes can dilute a drink—wiping out the flavour profile of a spirit or the nuances of a garnish—so bartenders prefer premium ice that’s relatively dry. Size also matters: the larger the surface area, the slower the ice melts. Rus Yessenov, director of mixology at the Fairmont Royal York Hotel in Toronto, points to a Collins ice spear—a long piece of ice usually used in highballs—as an example of what works. “Spear ice takes awhile to melt, so your cocktail will stay cold, but won’t over-dilute,” he says. “One of the worst things is a watery drink.” Clarity is critical, too. Many bars achieve crystal-clear cubes that are free of impurities—such as air bubbles or dust—by using an industrial-strength Clinebell machine. “It was originally used for ice sculpting,” says Yessenov. “After three days, it makes a massive 300-pound block of ice by constantly rotating water in an ice bath. Then, it slowly freezes with the water circulating, so you only get the clear ice without the air trapped inside it—which is what makes ice cloudy.” Typically, this block is then carved into different shapes and sizes. At the Royal York, a massive freezer is reserved just for ice, and each of the hotel’s bars has a storage unit set to slightly below 0˚C, an ideal temperature that prevents ice from cracking when liquid is poured into a glass. The hotel consumes 600 to 1,000 of these cubes per week, but that’s just the tip of the iceberg. They also have a crushed ice machine for slushy-style cocktails, and a Hoshizaki ice machine that produces one-inch cubes that are great for shaking or stirring. Beyond simply perfecting the styles, bartenders like Yessenov are also experimenting with ice by testing out monograms, freezing edible objects inside of cubes and making flavoured ice—helping to solidify ice as a well-crafted cocktail’s star ingredient. —Lisa Jackson

CACIO E PEPE Serves 4 INGREDIENTS • 8 oz (250 g) long, dry pasta, such as spaghetti, bucatini or linguine • 2 Tbsp extra virgin olive oil • 2 Tbsp butter • 1 to 2 tsp freshly ground black pepper • 1 to 1 ½ Cups finely grated pecorino Romano or Parmesan cheese, plus extra for serving

Bring a pot of salted water to a boil and cook the pasta according to the directions on the package, or until al dente. Before draining, set aside about a cup of the starchy cooking water. As the pasta cooks, heat the oil in a large skillet (one that will accommodate your pasta) over medium heat. Grind in a generous amount of pepper and allow it to toast for about a minute. Add the butter and about quarter cup of the water and whisk it together.

Drain the pasta and add it to the skillet (or transfer it using tongs). Add the cheese and toss it all together, adding a splash more of the cooking water until it emulsifies and turns into a creamy sauce. Serve immediately.
Tip: Grate the cheese as finely as you can to help it melt more smoothly.

There’s so much to love about London: it’s quaint, exciting and beautiful and there’s so much romance in the air. What advice would you give to a new WestJetter? Your best allies are the folks standing on either side of you. Your team really does become your family. What’s one of your favourite things about your role? It’s the people I meet. It makes me emotional because I get to see all the happiness. People are going to a wedding, or they’re on vacation, or they just woke their kids up and they thought they were going to school and instead they’re going to Walt Disney World.
