Exotic Apricots

If the apricots are not in season or are too ripe, choose frozen apricots. They will have as good nutritional qualities as fresh apricots.

METHOD 1. Gently wash the apricots, cut them in half and remove the stone. Cut into 1cm cubes 2. If you have a Babycook, place them in the steamer basket. Pour water into the tank (level 2) and start cooking. Alternatively cook the fruit until soft in a saucepan or regular steamer.

3. Peel the banana and mash without cooking. Place the banana and apricots in a blender. After cooking remove the fruit juice and keep it in a small glass. Mix by adding a part of the cooking liquid until the desired consistency. Add vanilla and mix again.

FOR THE NUTRITION CONSCIOUS The apricot contains very soft fibres which facilitate baby’s intestinal transit. Its delicate, slightly acidy taste, is highlighted by the banana which adds a sugary taste. Never add

sugar to a hot compote as in general the sweet taste is more pronounced when the dessert is at room temperature. If needed, more can be added at the time.
