routine know how much I enjoy my morning walk. The magnificent array of gardens I pass along the way motivate me to get out into my own garden, and with this year’s rain, they have come alive, providing a magnificent canvas of brilliant colour and truly intoxicating perfumed air. In this edition of Homescape, we bring you the first interview with Shepparton’s Junior MasterChef contestant, Lucy, who cooked her way to the top eight out of 5500 children hoping for a spot on the hit show. When and where did your media career begin? I started on radio in Melbourne around 1993/94 working on Triple M, driving the Black Thunders (promotional vehicles) around and doing some weekend sports reporting in the newsroom. I also worked with Richard Stubbs doing sports updates and he used to throw comments at me which taught me very quickly to ad lib. How did you get your job at Channel Ten? After studying Human Movement in Ballarat at university I knew that I loved all my media subjects and did really well. I knew some people at Channel Ten and started sports reporting and presenting. I worked in Brisbane for four years and then moved to Sydney as host of Sports Tonight (for the last four years). I can’t believe I have been with Channel Ten for 10 years … they are great to work with – like one big happy family. What sports do you love to cover? I love covering AFL and support the greatest team in the world – Carlton. My great-uncle, Jim Clarke (from Echuca) played for the mighty Blues. I do however love meeting the people I come across in my work and not just your David Beckhams and Nelson Mandelas, but people and volunteers behind the scenes. Like the lady who cooks the teas at the North Melbourne Football Club, who I got to know well when I was working in Melbourne covering AFL. When you come from the country you love to talk to people and I am always interested in people’s stories.

What have been the highlights of your career to date? Covering the World Cup in South Africa, seeing Nelson Mandela and travelling to India for the Commonwealth Games and meeting the people.

Where can we expect to see Brad McEwan in the future? The future... I love my job. It’s the best job in Australia, if not the world, and if they let me keep hosting Sports Tonight until I’m 95 I’ll be rapt. I wouldn’t rule out coming home to the Goulburn Valley where my mother and step-dad live. Family is very important to me and you don’t forget where your roots are.

Darren and Sandra Harris, who built the home in 2008, say they have created an emphasis on outdoor living, something they and their family enjoy. Darren, who has his own painting and decorating business and has branched out into designer polished concrete floors, and business manager Sandra, have designed their home so that all living areas downstairs open onto outdoor areas through large glass doors. Their gorgeous in-ground pool is the focal point of the backyard

and is set off with rich timber decking, resort-style outdoor leisure furniture and a beautiful rock wall that cleverly incorporates an outside shower and change room. glass panelling around the pool allows the family and their guests to enjoy the view from inside the home and also while relaxing in the alfresco area. Earthy tones throughout the home bring the outdoors in, and the couple’s choice of stacked stone feature walls and large limestone tiles is superb. The magnificent highly-polished timber floor in the openplan kitchen/family area complements this earthy theme and is one of the most outstanding features of the home.

Lucy was chosen as one of the top 12 finalists on Junior MasterChef after making it through the audition round where the list was cut from 5500 to 350. She had made it to the top eight when she spoke with Homescape.

Tall palm trees and lines of roses planted in 1909 still stand today and have been tended to by five generations of the one family, beginning with John and Sarah Douglas in 1919, through to today with great-granddaughter Penni Douglasgarden and her husband Tim living in the original homestead and having raised their children there. The property was named by the Services family who lived there in the early 1900s and came from Kyneton.

bringing back much-needed water to the one-hectare garden. yes … the drought has finally broken in this part of the country. as we wander along the pebbled paths, Penni explains how she spent much of her childhood in this garden with grandparents orm and Effie Douglas. Long before Penni arrived they had planted palm tress, white cedars, desert ash, oleander, jacaranda, silky oak and crepe myrtle, to name a few. They also established the fruit tress, including apple, fig and quince, and a formal rose garden, surrounded by sturdy buffalo grass; all part of their botanical legacy. Penni’s father, Ian Douglas, grew up at Kyneton Park before settling at Brigadoon with wife Sheila and their five daughters, no more than 5km down the road. Penni and husband Tim moved to Kyneton Park in 1987 where their three children Dom, Hugh and Xanthe were born.

Many original features remain, including Penni’s grandmother’s aga (oil) stove and two original chimneys, while the old wash house, used as a residence by the original settlers while they made the bricks for the house, is still in use.

Penny says, “I always walk through the garden … every day,” as did her grandparents before her.

“My memories are of growing up in the garden, following them around … nan was the passionate gardener as was Dad at Brigadoon,” Penni remembers.

This lake system is actually the original course of the Murray river that shifted to its more southerly and current position following the ‘Cadell fault’ 30,000 years ago. The lake filled in 1989 and water remained in it until 1997. It filled again in 2000 for two years and then again in 2010. Each time the Murray floods, water is pushed up into the Thule Lagoons, filling the Kyneton Park lake and bringing back the grand lake vista as well as birdlife, wildlife and plenty of human visitors.

The couple have now given the cottage a new lease of life and transformed their own lives in the process. They’ve moved from the bustle of Sydney and the busy lifestyle of running a bookstore to a quieter life in the bush. “Why fight traffic when you don’t have to?” Lynne says. “We’d decided to move out of Sydney when we retired as both of us regarded ourselves as country people. The couple realised that before they could enjoy the serenity, there would be some challenges renovating and extending the old cottage, which was built during the late 1800s.

for many years paddle steamer captains referred to the old building as the “Captain’s Cottage” in their commentaries as they passed by. Lynne and Chris would love to receive more information however to support this.

Before the couple purchased the property, the Stevens family owned it for more than 30 years. There were just two rooms for the family’s eight children while they were growing up. Weatherboard additions were completed later. Mrs Stevens remained in the home after her children left, decorating it with dolls from around the world.

She told visitors how, when the river flooded,

isolated, needing a small boat to reach the main road.

“Being so close to the river and adjacent to a floodway, the planned new building had a number of constraints to meet. Peter Sutton (the builder) was a tremendous help through this whole period,” Chris says. “We had tenants in the cottage for about five years whilst we sold our business and worked through everything. moments but we’d bought the boat and we sandbagged,” he laughs. “In the end it was all good. The river looked spectacular and it was amazing seeing people in paddle steamers looking in at eye level through the kitchen window.”

Chris has loved returning to his birthplace. “The thing I’m most surprised about is living in a connected community. People here don’t appreciate how fortunate they are. We became accustomed to the anonymity of the city without realising it. We’ve returned here to discover what life should be. reuniting with people I haven’t seen for 40 years has been a pleasure.

“My memories are of roaming through the bush for hours without your parents,” Chris says with a smile. “In contrast our grandchildren live in the city and don’t often have the experience of an unstructured environment. We love being able to bring them here so they can now enjoy life here on the river, as I did as a child. at the heart of everything was the river … and it still is.” [hs]

Granted there are no oceans or mountains, and the town is not located on a lake or a major thoroughfare, but Kyabram is bursting with a community spirit that feeds a passion for its own prosperity, rewarded many times over with thriving business and industry and a variety of hidden gems that lure people from far and wide. With history steeped in supporting the diverse agriculture of the irrigated farming region, Kyabram was built on prosperous harvests, and became home to KY Fruits, later known as Henry Jones Foods (manufacturer of IXL Jams). Other fruit and dairy processing and packaging

In 2004, Henry Jones Foods joined with SPC Ardmona, which was then acquired by Coca Cola Amatil the following year. But it’s not just the fruit and dairy industry that has put Kyabram on the world stage – the town is renowned for its uncanny ability to have connections all over the world. Mike Sweeney is one local who can attest to the reach Kyabram has, locally, but also globally. Just back from a gruelling 6626km bike ride across the UK to raise money and awareness for prostate cancer, Mike, who is manager of the Kyabram Club and, amongst other things, chairman of the Kyabram Health Board, tells the story of his chance meeting with an ex-Kyabramite in a small café at the top end of the UK.

“We stopped to get a coffee and there was this Aussie lady who used to be the HR manager at the Kyabram Hospital. It totally blew my English companions away; they thought we were winding them up.” A bona fide resident, on and off for nearly 20 years, Mike, his wife Cheryl, and four daughters, have all been impacted by the strength of the town spirit and the opportunities on offer.

“There is an exceptionally strong community spirit. Kyabram’s tentacles go a long way, it happens at an intimate level locally, when everyone pulls together for a common cause, but at a broader level outside that too, not only in our generation but in younger generations too.” If you sense the pride in Mike’s assessment of his home town, it is one echoed over and over by residents, business and industry operators and most importantly, by visitors – of whom there are many. On the cusp of the Campaspe Shire, with a population of 6000 in the town and a further 10,000 within a 10km radius, Kyabram is lush with fresh fruit and dairy produce, and spoilt for choice when it comes to access to the nearby Murray River or the snowfields east of the town. Melbourne, 200km south, provides the best of both worlds for locals, many who are sports-mad enthusiasts who think nothing of dashing up the highway to the MCG for a footy or cricket match.

Locally, the town’s major tourist attraction, the Kyabram Fauna Park, clocks up over 30,000 visitors a year who flock to the 55 hectare park and wetlands area, with benefits flowing to local business. The park has come a long way since it first opened in 1976 with two kangaroos, an emu and a few domestic stock. It now hosts 140 species and has the second-largest collection of Australian native animals on display in Victoria, including free-range kangaroos, a reptile house featuring ‘Getcha’ the 10-yearold saltwater crocodile, Tasmanian devils, and an impressive collection of insects, small and large, dangerous and harmless. The education centre overlooking the wetlands is a constant source of information for local schools. With a break in the drought, there has been a huge increase in births at the park, with baby quolls, flying foxes, lizards and the first white dingo pups to be born at the park, all on display. “This year has been outstanding; the animals are making the most of it. We’ve got 11 or 12 different species of wattles, and plants flowering for the first time in six

Residents are looked after with a first-class health facility and nursing home, considered part of the town’s greatest asset. Kyabram and District Health Services recently celebrated a 50-year milestone in the town. The service employs more than 290 staff and provides 87 beds, including aged care and day procedure beds. The town’s proud sporting heritage at both national and international levels has been recognised through the Apex Club’s Sporting Hall of Fame at the Kyabram Club, and the Kyabram Football Netball Club offers seven competitive teams to the Goulburn Valley Football League. The performing arts are not forgotten in this culturally-rich little community. The grand old restored Plaza Theatre is home to weekend movies, but also provides the chance for students at local schools, dance and music studios to enjoy performing in an authentic environment. FLYING THE KITE

For Music LIZ DILLON KNOWS MORE THAN ANYONE THE VALUE OF MUSIC, DANCE AND PERFORMANCE TO THE HEART OF A SMALL COMMUNITY LIKE KYABRAM. Liz and partner Max McKenzie run Dillmac, a dancing, singing, performing arts business that employs 10 people, and has 400 students on the books who travel from as far as Echuca, Shepparton, Rochester, Rushworth and Tatura for lessons in singing, drama and musical instruments. “When I was in year nine I couldn’t wait to get out of here,” Liz confesses. “But as you get older, there’s something that lures you back, it’s like a big community hug.” Liz, like many locals, has immersed herself in the community, not only building confidence, learning and growth in her students through music, but jumping on board to support Redkite.

Redkite is an organisation that supports children, young people and their families through cancer, and Liz and the Dillmac team have been fundraising for the charity for seven years, through musica-thons, concerts and other activities. Music therapy is part of how Redkite therapists help children and young people communicate their feelings and manage their pain. “Music and Redkite are two of my greatest passions,” Liz says. For Success KYABRAM TICKED ALL THE BOXES WHEN BARRY AND NANCY HEWITT WERE LOOKING TO RELOCATE THEIR SPECIALTY PASTA BUSINESS IN 2005. Good transport and freight facilities, a direct route to Melbourne and Sydney with easy access to Brisbane for transport distribution, access to accredited staff training support and a town in tune with food manufacturing, helped lure Casalare Specialty Pasta Pty Ltd from South Gippsland to the factory site it now occupies in Kyabram’s Industrial Estate. Casalare’s main product line is a gluten-free pasta range, but since moving to Kyabram the business has expanded its baking premixes, with gluten-free plain four and selfraising flour, mud cake and muffin mixes and a crumb product for people who can’t have wheat-based goods. While Casalare produces both a wheatbased and gluten-free product line, Barry says the growth in the gluten-free market

has increased beyond expectations. “That’s where we see the future; providing gluten-free pasta, pre-mixes and lowallergen products, especially with the increasing number of food allergies around today.” Casalare distributes to supermarkets, wholesalers and health food outlets throughout Australia, Asia and New Zealand, with test expansion into the United States providing excellent feedback. “The move to Kyabram was definitely a good one. It is the ideal site. We love the region and from a business perspective, there are excellent services and food production training through TAFE and Innoven in Shepparton – we’ve never had that sort of support before,” Barry says. Big On Style IT ALL STARTED WITH A LITTLE IDEA. AN IDEA KAREN JAMES HAD FOR SELLING “A FEW LOLLIES” FROM THE GARAGE OF HER KYABRAM HOME.

Before long, her business, Koriella started to grow. Moving into gourmet hampers, an expanding range of giftware, and now, in a second location, there’s even her boutique Koriella Townhouse accommodation. Koriella, the home-based “garage” business, has expanded to include a quaint little shop adjoining the original lolly business. Karen produces hampers to order, but also stocks a range of unique produce, the sorts of things that can make an ordinary gift into something quite special. “I try to find things from around this area to build the hampers. There are some very clever people out there,” she says. Koriella’s hampers comprise gourmet produce such as jams, chocolates, sauces, skin care from an olive farm in Gunbower,

puddings from Castlemaine, handmade tart casings and lemon curd, and dainty meringues to name just a few. Beyond that, her little shop is beautifully decked out with picnic baskets, rugs, candles and other assorted giftware. With Christmas approaching, Karen already has 365 orders for hampers. Locals have been onto this little gem for a while, with real estate agents, the hospital and corporate firms all placing orders for custom-made hampers. The price range is appealing, as is the flexibility to pick and choose the content. With an easygoing attitude and a ready smile, Karen juggles the home-based business with her latest venture, Koriella Townhouse, a renovated three-bedroom, self-contained accommodation premises. SheppartOn’S JOCK anD maureen O’COnnOr COntinue their faSCinating tOur Of vietnam, taKing in hiStOriC SiteS anD intriguing War remnantS. after four nights in Hoi an we flew south, Danang to Ho Chi Minh City (Saigon) to continue our tour of vietnam.

the day before and this visit to the tunnels I was left wondering who was the cruellest during the war.

We checked into the lovely Continental Hotel – a tastefully renovated old-world hotel built in 1880 and which also featured in the movie The quiet american starring Michael Caine. With money burning a hole in their pockets, we took the girls down Le Loi road for our first of four visits to the Thay Bin Market. That night we walked to the Caravelle Hotel for dinner at the tenth-floor open-air restaurant which was used as a lookout over the city by journalists during the american wartime.

The following morning we assembled for a day trip to the Mekong river. our first stop was a floating-market cruise, passing many boats selling their wares. The boats hang samples of what they’re selling from poles on deck so that people on the bank and in passing boats can see. We travelled by motorised boat (the ones with the long shaft out the back to the propeller).

The next morning we did a walking tour of Ho Chi Minh City, taking in the War remnants Museum, the old post office, notre Dame Cathedral, The reunification Palace and Thay Bin Market (again). after lunch we enjoyed wandering around and taking photos. Early the next morning we took a coach to the Cu Chi tunnels, where you get the opportunity to crawl through a small part of the 200km network of very narrow tunnels (if you’re game). The average height of the nth vietnam soldier in wartime was 4½ feet (1.3m). We also saw examples of very primitive, but successful, booby-type traps set by the locals to slow up the americans. after a visit to the War remnants Museum

During our two-hour ride the captain had to jump out many times to free the propeller of plastic bags and junk; something vietnam needs to address because we ended up with a wheelbarrow-load of plastic on the deck, but people on other boats were just chucking it back into the river! We visited a small factory where pop-rice and coconut candy is made by hand. one poor lass spent all day wrapping these lollies in little squares of paper (something like bubblegum wraps). after our long day we headed back to Saigon. That night, our last in vietnam, we had a lovely dinner with the Creamer family at the base of the Saigon Business Centre in a quaint little restaurant called The Café Terrace, overlooking busy Saigon main road Le Loi – what a great way to spend our 40th wedding anniversary.

(Serves 2)

lasagnE (You can buy sheets to make it easier, but they’re inferior to homemade ones) 2 good-quality free-range eggs 2 cups of “00” flour (special pasta-making flour) good pinch of sea salt

MEthod Make a well in the flour, crack in the whole eggs and sea salt, work into a solid, heavy dough and knead for a good while (maybe 8 minutes). Wrap in cling wrap and leave to rest for an hour. using a pasta machine, start at 1 pass and fold a few times still on 1. gradually reduce the thickness, not too quickly, first 1 then 2, then 3 and so on. I roll mine to 7 because I like quite a fine pasta, but it’s up to your own discretion. Cut into 5cm x 5cm squares or whatever size you would like. Cook briefly in boiling salted water and cool immediately in iced water. reserve sheets for later.

wasaBI MoussE get 500g of firm ricotta from the deli (not the pre-packaged kind as this will be too soft). Put in a food processor with half a tube of wasabi paste and a good pinch of salt and fresh cracked pepper. Blend until smooth and add 500ml of pouring cream. Keep blending but not for too long or you’ll make wasabi butter … (equally nice I might add!)

thE yaBBIEs Get some to start off with... this is the hardest bit! Place into boiling water and boil for 4 minutes. allow to cool but not by placing in cold water or they will become waterlogged. Peel the tails and keep some washed out head sections for presentation if you wish.

garnIsh Prepare 1 bunch of watercress by washing and plucking the leaves from the thick woody stems.

assEMBly Start off with a teaspoon of mousse, then a Lasagne square, then mousse, then sliced yabby, then Lasagne, etc. finish with a garnish of watercress, the head section, a drizzle of very good extra virgin olive oil and crack of black pepper and Bob’s your uncle!

To catch them, Tim used to grab a net made from his mum’s old stockings, a bent coat-hanger, a piece of mouldy old meat and some string.

We all have yabby memories of some sort. Mine is of my dad sitting there like King Tut while all us kids sat around peeling yabbies, dipping them in brown vinegar and stuffing him full.
