Grilled Sweetpotato & Blueberry Salad

This Grilled Sweetpotato and Blueberry Salad offers all the tastes of the season with spring salad mix, fresh blueberries, walnuts and bleu cheese. Topped with homemade lemon honey vinaigrette, it’s a light yet filling meal fit for warm days, thanks in part to the superfood that takes it to new heights

ingredients Lemon Honey Vinaigrette

3 medium sweetpotatoes, peeled and sliced

2 Tbsp olive oil salt, to taste pepper, to taste

4 cups spring salad mix

1 cup fresh blueberries

1/3 cup chopped walnuts

1/4 cup bleu cheese crumbles

Find lemon wedges, for garnish

TO MAKE LEMON HONEY VINAIGRETTE: In bowl, mix olive oil, lemon juice, Dijon mustard and honey. Season with salt and pepper, to taste. Refrigerate until ready to serve.

PREHEAT GRILL TO MEDIUM HEAT. Drizzle sweetpotatoes with olive oil and season with salt and pepper, to taste. Grill sliced sweetpotatoes on each side about 5 minutes, or until sweetpotatoes are tender and slightly charred. Remove from grill and let cool.

6 Tbsp olive oil

1/4 cup lemon juice

2 Tbsp Dijon mustard

2 -1/2 Tbsp honey salt, to taste pepper, to taste

TO ARRANGE SALAD, spread spring salad mix onto large platter and top with grilled sweetpotatoes, blueberries, walnuts and bleu cheese crumbles.

IN LARGE BOWL whisk 2 cups flour, 1/2 cup powdered sugar, cornstarch and salt.

Using pastry blender, cut in butter until mixture resembles crumbs. Press mixture into bottom of baking pan. Bake 18-20 minutes.

Lemon Cheesecake with Fresh Fruit

On a hot day, there is almost nothing better than trying something new that sounds refereshingly delicious. Throw your apron on, prepare your kitchen and have some fun!

Nonstick cooking spray

2 cups, plus 3 Tbsp all-purpose flour, divided

1/2 cup powdered sugar, plus additional, for topping

2 Tbsp cornstarch

1/4 tsp salt

3/4 cup butter

4 eggs, lightly beaten

1 -1/2 cups granulated sugar

1 tsp lemon zest

3/4 cup lemon juice

1/4 cup light cream, half-and-half or milk

HEAT OVEN TO 350 DEGREES ingredients

Line 9-by-13-inch baking pan with foil; allow overhang. Grease foil with nonstick cooking spray; set aside.

MAKE FILLING: In medium bowl, whisk eggs, sugar, remaining flour, lemon zest, lemon juice and light cream.

Pour filling over hot crust. Bake 15-20 minutes. Cool completely on wire rack. Grasp foil overhang and lift from pan. Cut into bars. Sprinkle powdered sugar over bars before serving.

1 1/4 cups graham cracker crumbs

1/4 cup sugar

1/4 cup butter, melted

2 packages (8 ounces each) cream cheese, softened

1 can (14 ounces) sweetened condensed milk

3 eggs

1/4 cup fresh lemon juice

IN MEDIUM BOWL combine graham cracker crumbs, sugar and melted butter. Press firmly into 9-inch springform pan.

IN LARGE BOWL beat cream cheese until fluffy. Gradually beat in sweetened condensed milk until smooth. Add eggs, fresh lemon juice and vanilla extract; mix until combined.

POUR INTO PAN. Bake 50-55 minutes, or until center springs back when lightly pressed.

Chill in refrigerator until completely cooled. Arrange orange slices around border of cake and place raspberries in middle.

TOP WITH MINT LEAVES

1 tsp vanilla extract

1 orange, peeled and separated

8 raspberries mint leaves, for garnish
