hello Modern classic Blue and white is one of my favourite colour palettes and I adore this fresh take on it in sky, cornflower and white. To see more of this room, turn to page 108.
IF YOU HAD TO DECORATE A ROOM from scratch, would it excite or terrify you? Maybe both. For this issue, I tasked three of my lovely teammates to create their dream office spaces (p89), and let me tell you that when faced with an empty set and all the furniture and homewares in Australia available to borrow, defining your own look is hard! Doing it for other people is much easier, but for yourself? Even the professionals are prone to design paralysis. The key is to start with one thing – such as a piece of furniture, an artwork or a rug – and build the look from there. Then, look at each item and ask, does this go with that? Add one item at a time and check back to see if it works with what you’ve already chosen. Be your own style editor. The most important thing about decorating any space is that you choose what makes you happy. But there are other elements to consider: whether the scale of pieces goes together and with the size of the room, if the colours, shapes, materials and finishes are complementary or contrasting in a good way, and if the overall scheme is comfortable, both visually and physically. After all, there’s no point in having a pretty room you can’t actually live in. Just keep adding and subtracting, layering and adjusting and eventually your room will evolve and your style will emerge. The good thing about doing it in your own home is that there’s no time limit – unlike a magazine shoot! Have fun decorating this month. At luxury French house Louis Vuitton, the art of travel lives on with limitlessly innovative and imaginative new trunk designs TRAVEL WAS A RAREFIED PURSUIT when Louis Vuitton first conceived the trunks that would become icons of his eponymous design house. It was the 1850s and travellers were embarking on journeys on steamships and trains with their most treasured possessions in tow – packing lightly wasn’t the done thing. Louis, an entrepreneur and skilled trunk-maker with a business in Paris, recognised the need for luggage that befitted the city’s well-dressed denizens and be stacked with ease in a baggage car. His proposal? A flat-topped trunk covered in lightweight, water-resistant canvas. Always one step ahead of his competitors, Louis created increasingly elegant exteriors such as the Damier check and when Louis’ son Georges launched the iconic monogram branding with his late father’s initials, the design not only distinguished Louis Vuitton as a paragon of luxury, it predicted our modern obsession with monogramming. If innovation is the head of this house, craftsmanship is the heart. Since 1859, Louis Vuitton’s leather luggage and special orders have been made at the atelier in Asnières, a village north-west of Paris. While time stands still in the family home upstairs, preserved in the French Art Nouveau style, the workshop is alive with the sound of tools and the aromas of wood and leather. Though many of the artisans’ expert trunk-making techniques have not changed, new technologies are required to meet the demand for bespoke creations including portable whiskey bars and metre-high beauty trunks. As the world re-evaluates the future of travel, for Louis Vuitton it will always be an artform. R

Amid times of isolation, this sensorial retail space offers new ways to connect
LIKE ALL GREAT ROMANTIC AFFAIRS, the latest sartorial love child of Australian fashion house Camilla And Marc was born in the absence of intimacy. On the cusp of a global pandemic lock-down and social distancing, the brand worked alongside long-time collaborator Kelvin Ho of Akin Atelier to create a new Neighbourhood Flagship store in Armadale, Victoria, a thoughtfully-designed space where touch knows no borders and meaningful interactions are nurtured. Occupying an original terrace on Armadale’s High Street, the flagship features residential-style architecture and tactile materials. “We designed [the store] as an ode to community and a celebration of the human touch,” Kelvin says of the store’s organic spatial intimacy. “The boutique is intended to be experienced as a tactile environment shaped by handcrafted finishes and singular materials that evoke wonder and awe.” The raw, primordial tone is set from the moment you enter, with textural two-tone travertine checkerboard floors and earthy custom colour marmorino render walls that instill instant calm. As visitors move about the store, from the statement pearl wave onyx-clad counter to the cosy fitting room swathed in pumpkin-hued Kvdarat ‘Helia’ bouclé by Raf Simons, they’re sensorially transported to a place that moves at a slower pace and reminds us of what it means to feel. WHEN HE WAS A BOY, interior designer Robert McKinley’s family would take trips to Montauk to escape the frenetic pace of Manhattan. “I’ve always been drawn to the wild beauty of the coastline and to the remote feeling of the area,” Robert says. So, when he decided to add a new property to the Studio Robert McKinley portfolio of holiday rentals in the United States, he went looking in Montauk, which sits at the tip of Long Island, east of New York. One house stood out: a low-slung concrete beach bunker that reminded Robert of architecture he had seen in Sicily. He quickly got to work. SENSE OF PLACE “I used the surrounding landscape to inform the colour palette, materials, and even the layout, so that guests can experience the beauty of Montauk both outside and inside the home,” Robert says. For the interior palette, that meant rich, sandy neutrals, sun-bleached blues and warm, terracotta reds. “The exterior colour – a dark, volcanic, earthen hue – was just as important,” he adds. “The house was originally bright white, but we re-stuccoed the outside to create this blackish-brown colour that complements the polished concrete on the inside.” HUMAN NATURE Robert was determined to design a house that felt far removed from the city and served as a bolthole for harried visitors. Part of his method was to bring nature indoors by positioning plants throughout the living space. “We strive to look at a space not just from a visual perspective, but also in the sense of what makes you feel good when you’re there, and plant life offers just that,” he says. “Plants can soften corners that might otherwise feel dark and cold.” ROOM TO RELAX To heighten the holiday vibe, Robert incorporated treasured furniture and objects from a variety of locations and eras. There’s precious glassware from Murano, Italy; rugs from Northern Africa; and salvaged shells and rocks. The result feels lived-in and not overly ‘designed’, but it’s still visually coherent. In Robert’s words: “I wanted to create a space that allows you to decompress, exhale and say ‘Wow, I’m home’ – a space where you can truly relax.” R
High contrast Robert’s knack for pairing rustic finds and shinier items is on display in the kitchen, which features bar stools from a secondhand market in New York alongside slabs of polished Smoke of London marble from ABC Stone. The joinery throughout is natural oak, including the veneer Reform ‘Basis’ cabinets. Globe-trotting Robert says the dining room (opposite) was inspired by the ‘collected’ aesthetic of travellers who bring home eclectic souvenirs. The vintage chairs are in the style of Pierre Chapo, the ceiling lamp is by Isamu Noguchi and the Sommer table is from Design Within Reach. Robert purchased all of the rugs from Tuareg craftspeople during his travels through the Sahara Desert.

He also turned to the Internet to help furnish the bungalow, picking up the 1970s cone-shaped Italian lamp from 1stDibs. A

Second life Several pieces in this bedroom – including the animal mask and the mid-century bedside table – were vintage finds. A Hay ‘Matin’ table lamp adds a contemporary accent. “We love mixing things we make in-house, things we find and things we buy brand new,” Robert says. Variety show The bathroom features terracotta wall and shower tiles from Californian company Heath Ceramics, a marble vanity topped with a Duravit sink, and brass tapware from California Faucets.

HAVING SPENT HIS CHILDHOOD SUMMERS holidaying in Sorrento, Italian architect Massimo Adario felt a special affinity with this crumbling villa on the Sorrentine Peninsula. Perched on a hill overlooking the Gulf of Naples and the volcanic island of Ischia, it was home to a sprawling lemon grove, and Massimo couldn’t imagine a more idyllic place for a weekender. NATURAL INSPIRATION Informed by his architectural background and flair for design, Massimo gave the house a respectful yet much-needed cosmetic renovation that pays homage to the home’s location and history. Ancient load-bearing walls and vaulted ceilings of varying thicknesses have been resolved and unified with the addition of what Massimo calls “a band” of two-metre-high panelling that wraps around the rooms. In some places it’s painted shades of marine blue, while in the kitchen and bedroom, these panelled walls feature a fresco of custom ceramic tiles designed by Massimo. “The design references the panorama of the Gulf of Naples,” he explains. “The green of the trees, the yellow of the lemons and sun, the deep blue of the sea and light blue of the sky.” VACATION VIBE To enhance the holiday ambience, Massimo furnished the villa with bamboo chairs, tables, beds and decor from the ’60s. “It’s the kind of furniture that reminds me of my childhood summers by the sea,” he says, while vintage lights and original bathroom fittings from the same period continue the theme. The indoors and outdoors enjoy a harmonious connection, with many of the interior materials repeated in the alfresco terrace that runs the length of the villa. “I love the fact that all the inside rooms face directly onto this outdoor terrace,” Massimo says. Two long masonry benches are covered in the same blue graphic tiles as the interior, while Carrara marble stairs and floor inlays echo the internal flooring. Brass-framed tables with tiled tops and iron chairs painted white ramp up the summer atmosphere. It’s here on this terrace that you’ll most often find Massimo, enjoying a sunrise or sunset over the valley and sea, surrounded by his lemon trees, which have incidentally flourished since he took ownership. R

IN SEARCH OF A FAMILY HOME, Owen Ow and Elaine Chew came across this former bed and breakfast in Sydney’s inner-city suburb of Forest Lodge and were smitten. “We loved the fact it was walking distance to our boys’ school and the opportunity it presented of creating a home that would consist of both modern and historic elements,” Owen says. NECESSARY CHANGE The grand Victorian terrace certainly had its charms, including a large backyard with room for a pool, but in true B&B style, there were plenty of compartmentalised bedrooms and not a lot of cohesive living spaces. The couple asked Shaun Carter and Julie Niass from Carter Williamson Architects to reimagine the floorplan in a more meaningful way. “We wanted to keep the original features in the front half of the house and walk through into a modern open plan space,” Owen explains. Julie adds, “With very few structural changes, we could really focus on the quality and connection of the spaces.” The removal of numerous walls and a redundant staircase made their open plan dreams a reality, with exquisitely handcrafted joinery used to define each of the three areas that make-up the kitchen, dining and living. A steel-clad archway and brick step mark the entry to this new space. “The change of materials makes for a really meaningful moment,” Julie explains. “You feel like you’ve arrived in the heart of the home.” NATURAL SELECTION Throughout, the palette is kept warm and neutral. “I prefer things minimalistic, while Elaine likes to have ornamental pieces around the house,” Owen tells. “So our home is a happy compromise of both!” Terrazzo floors anchor the new living area with wood, brass and marble features creating contrast with the couple’s collection of colourful artworks, soft furnishings and plants. “Each piece in our house has a story or memory that’s personal to us,” Elaine says. EASY LIVING While the Carter Williamson team has created a spacious and functional home that suits the family’s needs year round, the house really comes to life in the warmer months. “With the doors open and some chill-out lounge music playing, it truly feels like we are at a beach club in Bali!” Elaine says. “We cook, eat, swim and repeat.” R Central space “We’ve always felt the kitchen is the heart of the home and loved the idea of this being connected to the living and dining area,” Elaine tells. Tonal texture Terrazzo flooring informed the rest of the home’s timber, marble and brass palette (opposite). A Soapstone dish from Asili, Jardan ‘Rosie’ mortar and pestle and Fogia ‘Supper’ dining table and ‘Figurine’ stool from Fred International suit the scheme perfectly. A

FROM FAR LEFT Hue change The dining wall has been painted Dulux ‘Kangaroo Pouch’ – but it wasn’t a quick decision. “We tried about six different shades of camel, which I am certain drove our builders crazy!” Elaine says. Let there be light “Our bedroom gets beautiful light and the view looking over our backyard and surrounding trees is wonderful,” Owen says. The bed is made with Sheridan linen, and a framed Rachel Castle print leans against the wall above. A Just Adele stone side table displays a Deborah Sweeney bud vase from Makers’ Mrkt. Tile love The couple’s bathroom features a Flos ‘S1’ suspension light from Living Edge and Ming green fishscale tiles. “They create such a feeling of calm and serenity,” Elaine says of the tiles. A

LECCE IS A BAROQUE CITY in Italy’s breathtaking Puglia region, an architectural oasis bordered by natural beauty. In the historic centre of the town you’ll find Letizia Seracca Guerrieri’s home, a two-storey house, which is quite a rare find in the inner-city area. Letizia and her husband Piero moved here three years ago, when life called them to head south of Rome. “We decided to temporarily leave the big city and build our family in a more cosy and less chaotic environment,” Letizia explains. “We couldn’t resist to take over the place and bring different colours and perspectives into a pretty uniform landscape.” UPON A TIME The house had previously been in Piero’s family and by the time the couple arrived it required a structural and aesthetic restoration. Letizia says this created an opportunity to incorporate energy-efficient design solutions, but they weren’t expecting to find evidence of historic technologies and building techniques. “During the restoration we found traces of an ancient past, including water tanks underneath what is now our kitchen, bricked-up windows with evident arches and typical walls structures called ‘sack walls’ from the medieval period,” she tells. Inevitably, these discoveries inspired Letizia’s fascination with the city. “I get lost collecting books about local history, the city’s changes and the environment’s evolution.” ART HISTORY While Letizia says they’ve always been passionate about modern and contemporary art, living in such a storied area has broadened their interior style. “Living in Puglia surrounded by baroque buildings, we’re influenced by the stones and colours and wanted to fill our collection with pieces produced by local artisans, as well as antique Lecce stone columns and typical materials such as papier-mâché,” she says of their home’s evolving aesthetic. “The only constant aspect is the fact we want to create a place where we can feel comfortable and safe and where our children can grow.” The result is a curated yet unexpected mix of colours, shapes and finishes, which Letizia says reflects her personality. Her style is also informed by Italy in the 1930s and ’60s, a particularly experimental period, and she credits Gio Ponti as an enduring design influence. COURT STYLE If the interiors are a celebration of Italian design, the courtyard is a slice of la dolce vita. “We love to dine here during our six months of summer in the south of Italy. Before Covid we’d invite friends over and light up the space with candles,” Letizia tells. “My style is continuously evolving, even during the current Covid restrictions, which in part is influenced by the area in which I live.” R
Designer decor The iconic black and white Snoopy lamp in the living room was designed by Achille and Pier Giacomo Castiglioni and is produced by Flos. In her element “I like to mix colours, shapes and materials together to get to a vivid and multi-form result,” says Letizia, pictured here in her home’s internal courtyard. Into the groove The offbeat silhouettes of the sideboard, chair and objects work perfectly with the angular recessed wall (opposite). The blue sideboard is Letizia’s own design, which a local artisan custom made. On top are Chinese vases from Letizia’s family’s private collection and an oval-shape lamp that she also designed and had made locally. Stop and stair The emerald green paint chosen for the staircase was an instinctual decision. The bold shade against the white walls turns this passageway into a functional work of art. Appetite for art The dining room is a feast of Italian design (opposite). The table is by MDF Italia, the chairs are by Willy Rizzo, the Portofino lamp is by Servomuto and on the table is a decorative banana leaf by a local artisan. On the wall is an artwork by Mario Schifano from the ’70s. Letizia says it’s part of her family’s art collection. A

THERE ARE MANY TREASURES behind the minimalist facade of this Blairgowrie Beach home on the Mornington Peninsula, which was a collaboration between Jay Earles, director of Planned Living Architects, interior designers Robbie Peirce and Alicia Freeman of Studio Tom, and Made builders. “The home was to provide for the client and their family, but also lend itself to a potential future as a multi-generational holiday home,” Jay says. “The exposed location was the catalyst for the design and the focus was to capture the stunning views while providing protection from the elements.” The floorplan features three bedrooms, two bathrooms, living room, laundry and garage on the ground floor and a master bedroom with ensuite, powder room, study, open plan kitchen, living and dining on the first floor, but connecting the two levels was a challenge. “A lift was installed for easy access from the garage to the upper and lower levels. A concealed dummy waiter links the main kitchen to the outdoor kitchen, a laundry chute is hidden adjacent to the master bedroom and connects to an integrated hamper in the laundry,” Robbie tells. “The kitchen, living and dining areas connect to the alfresco entertaining space on the balcony, and on the ground floor a second living space links to another outdoor entertaining zone and pool; the utility rooms are focused around the garage.” With passive heating and cooling methods, sustainable design and clever custom cabinetry, the home is a clutter-free, easy space to live in. A restrained palette of warm timber and white tones was chosen to offset the cold of the concrete, and plush fabrics and furniture were selected for comfort. “The texture between the concrete, timber and the linear battens offers a refined, harmonious and natural scheme. The hidden storage and concealed technology really assist with the minimal nature of the aesthetic,” Robbie says. “We wanted the home to cater to the elements of everyday life, with the ability to conceal it, and draw attention to the mind-blowing ocean views.” R @reallivingmag

But thanks to the brilliant shades of pink and boldly minimalist form laid out by Luis Barragán when he designed the home in 1968, the unrelated octet of Frida, Boris, Chich, Kuma, Carlota, Solovino, Chuleta and Yrrol lives in complete harmony. Their curious amicability is seen as a testament to the architect’s poetic intentions of silence, serenity and solitude. What may seem even more surprising is how such an aesthetically striking concept can lend itself to a sympathetic environment. As evidenced by this untroubled pack, the quietude of nature sings a song of beauty, an expansion of space offers meditative proportions, and in colour there is comfort. At its core, Cuadra San Cristóbal is unassuming, with horse stables and verdant gardens. For the dogs, it’s nearly 32,000 square metres of area in which to explore what makes them happy. Some of the younger pups like to run across the field and help out with the ranch work, others enjoy warming their tummies in the sun or posing for the students who’ve come to study Barragán’s seminal, Pritzer-prize winning style. Once the night draws near they join together for a long walk around the grounds with their humans, but always make it home in time to settle into their favourite spots inside the private house to enjoy the evening news. The sensory experience starts at the entrance with the course finish on a large-scale nautilus sculpture, then travels into the living room, where artisanal paper adorns the walls and a creamy crepe fabric upholsters a low-slung Tobia Scarpa sofa, continuing into the kitchen with tactile joinery cut to expose the end-grain pattern of Douglas fir. The tactile surfaces mingle with a natural colour palette to hint at a modern castaway vibe, while hand-knotted rugs, perfectly-worn leather lounge chairs and an oceanfront view beg for someone to sit down. Luckily, rescue pup Willie is there to do just that. His own fluffy physique slides right into the scene, and if it weren’t for Willie’s handsome human-like eyes shining back, he might be mistaken for part of the interiors. When he ventures outside, Willie’s favourite spot for warming his belly and listening to the waves roll in is on the sundeck. He’s not one for swimming, but he loves to sprint along the shoreline below, chasing after a ball with his brother-in-fur, Javier, a rescue from Mexico. The pair have a penchant for frolicking through the sand and, once back inside, sneaking upstairs to roll around on the beds, shaking tiny granules onto the duvet. They’re naughty to do it, but it would be difficult for a dog not to revel in every fabric they come across in this free and easy California seaside home.

The residence of Monty and William Breed Chihuahua Architect John Lautner Location Los Angeles, CA, USA CHIHUAHUAS WILLIAM AND MONTY are quintessential Angelenos. Spending most of their days at the office with their human, on the weekends they like to lounge around Harpel House, their home in the Hollywood Hills. The 1956 John Lautner design, located off Mulholland Drive, is a historically significant example of mid-century modernism by one of the style’s most revered architects. Its sun-seeking dogs see it simply as home, a great place to have grown up in. Metal-framed glass walls, a raised hexagonal skylight and an ‘L’ shaped concept perched at the perfect angle afford the tiny twosome endless amounts of California light to laze in as it cascades across the rooms throughout the day. However, Lautner’s specific vision for the abode, particularly how to organically integrate nature with the built environment, was nearly ruined after previous residents made incongruous alterations, including the addition of a second storey extension, a deck that blocked the panoramic view and white stucco walls instead of local stone. In a city that loves a comeback, Harpel House was returned to its unconventional glory once William and Monty’s human, a renowned restorer, bought it a half-century later. After two years of meticulous renovations using the original blueprints, archival photos and expert understanding of interiors of that time, it looks – and perhaps more importantly, feels – like Lautner intended: architecture that is alive and best experienced with time.

RAW ZUCCHINI PINE NUT AND MISO SALAD Serves 4 Prep + cooking time 40 mins (plus infusing) “This is a great summer salad,” says chef Matt Stone of Yarra Valley restaurant Oakridge Estate. “At home we mostly eat vegan. It’s a great way to keep a balanced diet and do our bit for the environment.” ¼ cup pepitas 1 zucchini, finely sliced on a mandoline 2 round golden squash, finely sliced on a mandoline 4 baby zucchini with flowers, halved lengthways, stamens removed 3-4 preserved artichokes with stems, halved Calendula or marigold flowers and sunflower sprouts to serve
DRESSING 1 tsp coriander seeds 1 small golden shallot, finely diced 1 long green chilli, finely diced ½ preserved lemon, flesh removed, finely diced 1 tbsp chardonnay vinegar 50ml olive oil PINE NUT MISO 100g pine nuts 2 tbsp chickpea miso
FOR DRESSING 1 Dry-roast coriander seeds in a frying pan over medium heat until fragrant (1-2 mins). Lightly crush with a mortar and pestle, then whisk with remaining dressing ingredients and season to taste. Leave to infuse for at least 30 minutes. PINE NUT MISO 2 Preheat oven to 180°C. Roast pine nuts on an oven tray, shaking tray occasionally, until light golden (4-6 mins). Cool, then grind with a mortar and pestle until smooth. Add miso and grind until smooth, adding warm water if needed, to make a spreadable paste. 3 Roast pepitas in a frying pan over medium heat, stirring constantly, until puffed and lightly toasted (3-4 mins). 4 Spread pine nut miso on serving plates, arrange zucchini, squash, baby zucchini and artichoke, building some height as you arrange. Add flower petals and sprouts. Generously spoon over dressing, season to taste and serve.
NOTE Calendula and marigolds are available from select nurseries. Ensure they are unsprayed. Sunflower sprouts and chickpea miso are available from select health-food stores. If chickpea miso is unavailable, substitute with white (shiro) miso. A

“We created this dish in the early days after Yellow converted to a fully plant-based menu,” says chef Brent Savage of Sydney vegetarian restaurant, Yellow. “The thinking behind it was to create an alternative to pork belly, using eggplant.” This dish has been simplified slightly from the original for home cooks.
COAL-ROASTED EGGPLANT WITH BLACK GARLIC Serves 6 Prep + cooking time 60 mins (plus infusing, cooling, drying and marinating) 3 eggplants (about 360gm each), halved length-ways 2 tsp vegetable oil Sliced black garlic to serve EGGPLANT SAUCE 1½ tbsp vegetable oil 1 long green chilli, seeds removed, finely sliced 1 long red chilli, seeds removed, finely sliced 2 garlic cloves, coarsely chopped 15g ginger (about 3cm), coarsely chopped ¼ cup red wine vinegar 25g caster sugar ½ cup white soy sauce
BLACK GARLIC SEASONING 1 tsp (firmly packed) dried black garlic skins (from 1 bulb) tsp horseradish powder tsp almond meal ROASTED ALMOND PURÉE 100g crustless sourdough bread 150g blanched almonds, roasted 1 cup vegetable oil 25ml lemon juice ALMOND DUKKAH 1½ tbsp coriander seeds 2 tsp cumin seeds ½ tsp crushed black pepper ¼ tsp chilli flakes 100g blanched almonds, roasted, coarsely chopped
NOTE Black garlic and horseradish powder are available from The Essential Ingredient (essentialingredient.com.au). White soy sauce (shiro shoyu) is available from select Japanese supermarkets. Dry garlic skins in a low oven for 2-3 hours or leave in a warm place to dry over a few days. Alternatively, use a dehydrator.
FOR EGGPLANT SAUCE 1 Bring ingredients and 250ml water to the boil over high heat in a saucepan, then reduce heat to low until sauce reaches 75°C (10 mins). Set aside to infuse for 2 hours. Strain through a fine sieve and top up with water to make 350ml. Cool. 30 minutes before steaming, marinate eggplant in 100ml sauce in a deep tray, turning occasionally. BLACK GARLIC SEASONING 2 Combine ingredients with a pinch of salt and grind with a mortar and pestle to a fine powder. ROASTED ALMOND PURÉE 3 Add bread and 250ml water to a blender and leave to soak (1 min). Add almonds and blend until smooth. With motor running, add oil in a thin, steady stream until mixture is thick. Season with lemon juice and 1 tsp salt, adding extra water if needed. Cover and set aside. ALMOND DUKKAH 4 Dry-roast all the spices in a frying pan over medium heat, stirring occasionally, until fragrant (2 mins). Coarsely grind with a mortar and pestle, then combine with remaining ingredients and ½ tsp salt. 5 Preheat a charcoal barbecue to medium-high and preheat a steamer over high heat. Steam the eggplant in a steamer basket until almost tender (10 mins). Transfer to barbecue and grill, cut-side down, until tender and lightly charred (4-6 mins). 6 Warm remaining sauce over low heat in a small saucepan. Spoon almond purée over eggplant and top with dukkah. Pour sauce around, sprinkle with black garlic seasoning and top with sliced black garlic. A

CARROT SCHNITZEL Serves 4 Prep + cooking time 2c hours (plus fermenting and brining) “Wiener schnitzels were cooked by my Austrian grandmother and mother once a week at home,” says chef Adam Wolfers of Brisbane restaurant Gerard’s Bistro. “This next-generation twist comes from my love for vegetables. Since my time at Ételek, I’ve tried turning every vegetable I could think of into a schnitzel. The best vegetables to use are root vegetables because they have natural sweetness and hold their shape.” Start this recipe 5-7 days ahead to make the zhoug. 2 Lebanese cucumbers, halved length-ways and sliced diagonally 6 large carrots, halved length-ways 50ml extra-virgin olive oil 3 garlic cloves, crushed 3 thyme sprigs 150g panko crumbs 1 tbsp smoked paprika 1 tbsp nutritional yeast flakes ½ cup plain flour 2 cups soy milk Canola oil, for shallow-frying Lemon cheeks and fennel flowers, to serve ZHOUG 100g long red chillies, chopped
2½ tbsp vegetable oil 1¼ tbsp brown rice vinegar 20g glucose 1 small garlic clove 1 large (or 2 small) coriander roots, washed ¼ tsp carob molasses SUNFLOWER HUMMUS 110gm sunflower seeds, lightly roasted ½ garlic clove, chopped 1¼ tbsp chickpea miso 2½ tsp lemon juice 2 tsp sherry vinegar ½ tsp ground cumin 100ml vegetable oil

FOR ZHOUG 1 Blend chillies with 1 tsp salt in a small blender to a coarse paste. Transfer to a small sterilised jar, cover and leave at room temperature until fermented (5-7 days). Seal and refrigerate until needed. Blend 1¼ tbsp fermented chilli (reserve remainder for another use) with oil, half the vinegar, glucose, garlic, coriander root, ¼ tsp salt and 50ml water in blender until smooth. Transfer to a small saucepan and gently simmer over very low heat until fragrant and oil splits (20-25 mins). Stir through molasses and remaining vinegar, then strain through a fine sieve. 2 Combine 2 tsp fine salt with 500ml water in a container and stir until dissolved. Add cucumber, cover and set aside for 2 hours until infused with the brine. 3 Preheat oven to 180°C and line a large roasting pan with aluminium foil. Combine carrots, olive oil, garlic and thyme on prepared baking tray, season to taste, then fold over the foil to enclose, rolling edges to seal. Roast until carrots are tender when tested with a skewer, about an hour and fifteen minutes. Remove from foil and set aside to cool. FOR SUNFLOWER HUMMUS 4 For sunflower hummus, blend sunflower seeds in a blender until fine but not too oily. Add garlic, chickpea miso, lemon juice, sherry vinegar, cumin, oil, 110ml water and ¼ tsp salt flakes. Blend on high speed, scraping down sides when needed, until smooth (2-3 mins). Pass through a fine strainer if you prefer a very smooth finish. 5 Combine panko, paprika, yeast flakes and ½ tsp salt on a shallow tray. Place flour and milk in 2 separate trays. Coat carrots in flour, then milk, shaking off excess, then lightly press carrots into crumbs, ensuring they’re completely coated. Set aside on a tray. 6 Add 1cm oil to a frying pan and heat to 180°C. Fry carrots in batches, turning once, until golden brown (1-2 mins each side; be careful, hot oil may spit). Drain on paper towel and season to taste with a pinch of salt. 7 Serve carrots with salted cucumber, sunflower hummus, lemon cheeks and fennel flowers, and drizzle with zhoug to taste. R

NESTLED AMONG 80 ACRES OF ROLLING HILLS at the top of Victoria’s Anglesea River, in a little pocket called Wensleydale, sits an unassuming timber house. Given the rural setting you’d be forgiven for thinking the structure is a shed (albeit an impressive one), but that was always the intention of owners Michael and Fran. The couple found the property back in 2011 and in 2015 – inspired by Australian shed-like homes as well as American ski chalets and barns – they set about building an architectural house under the expert guidance of Byrne Architects and Lisa Buxton Interiors. The idea was to create a house and shed that link together to frame the spectacular view through the valley, which is almost as impressive as the finished building, a natural beauty made entirely out of recycled timber, inside and out, now known as The Wensley. Juxtaposing the rustic, rugged exterior, a soft and gentle centre lies within. The successful combination of Fran and Lisa’s vision for the interiors manifests as an elegant yet inviting aesthetic that creates a feeling of casual luxury, offering a peaceful sanctuary for staying guests.
