English Chocolate Biscuits
Ingredients 3 oz unsalted butter 2 oz granulated sugar 4 oz plain flour 1 oz unsweetened cocoa powder
Cream the butter and sugar together until light and fluffy. Gradually sift the flour and cocoa into the butter and sugar. Combine well with a wooden spoon. Form the dough into a ball, wrap in plastic wrap, then refrigerate for 1 to 2 hours. Preheat the oven to 350 degrees F. Line a baking tray with wax paper. Take the dough out of the fridge, and form into balls roughly ž inch in diameter. Line the balls up on your baking tray, then either press each down with a fork or your hands. Bake the biscuits for 15 to 20 minutes in the preheated oven. They should be hard at the edges and slightly soft in the center when you take them out. Leave to cool on a cooling rack before enjoying. Serves 8.
