L

Like many holidays, July arrives replete with recollections sparked by a specific person, place or pastime. In the midst of family picnics, pool parties and copious celebrations to sing “Happy Birthday, America,” I’m planning to belt the same tune to my niece, my nephew and my maternal grandmother who turns 90 years old on July 3. Fueled by a firecracker personality, my grandmother has been strong willed, easy to ignite and fiercely independent for as long as I can remember. She has also, without fail, always believed I would be successful any time I put my heart into something. When I caught up with Melanie Wade, a local entrepreneur who named her kombucha company after her spry 94-year-old grandmother, I couldn’t help but smile. I pictured her grandmother doing the same. After all, realizing you have influenced another person’s life for the better deserves recognition. The past three years, Points North Atlanta has done exactly that. We’ve asked readers to nominate women in their lives — family, work or community — that have inspired them. We’re back at it, lighting a spark in search of this year’s potential honorees. If you know several women who should be acknowledged, nominate all of them! a Fresh Craze Melanie Wade on brewing Atlanta’s first and only kombucha

Forget the hooch. It’s all about the “booch” now. I say that, in part, because my early attempts to name the beverage were botched beyond recognition, calling into question whether I had sneezed or simply misspoken. Let’s go ahead and get the awkwardness out of the way… the correct pronunciation for kombucha is “comb-boo-cha.” As Atlanta’s only commercial kombucha brewer bottled in Roswell, Melanie Wade understands that sharing her craft requires a fair amount of education, even for those of us that already love the healthy concoction. Curious to learn the proper pronunciation, a smidgen of science and the story behind the brand, I sat down with Wade to talk tea.

TAPPING INTO A NEW MARKET

Yes, kombucha is tea, but with a twist. While many brewers use black or green tea for kombucha, Wade uses oolong, which she said is a nice middle ground. “The great thing about kombucha is that you can do a lot with it,” Wade said of creating her go-to flavors. “You can add herbs, spices and flavorings. [Many] commercial brewers make a fruit juice and then add a certain percentage to the tea. I don’t like to do that because I like the kombucha to be low in sugar. I infuse the fruit and herbs.” “[Some] people that have tried commercial kombucha say they aren’t a fan, but they try mine, and like it a lot better,” she added. “I attribute that to the oak age, which adds a lot of mellowness and a woodsy flavor. That and the familiar flavors we’re used to in the South.” As fun as creating complex flavors sounds, the science side of kombucha does not. Enter the SCOBY, a word I didn’t understand until Wade explained it to be an acronym for symbiotic colony of bacteria and yeast. No SCOBY — also known as “The Mother” — no kombucha. “SCOBY started in Manchuria, China and has been passed down from generations of family, friends and communities for more than 2,000 years,” Wade said. “It can last a really long time, but you have to feed it – it eats the sugar and the caffeine and the tannins in the tea. Wade must have noticed the look on my face as I internally debated the merits of digesting something that old. She quickly added, “It looks odd, but it’s actually very good for you. I like to relate it to a jellyfish pancake because it forms on top of whatever you’re brewing it in. Most of the time, that circumference is round and since [SCOBY] has a simple root system, it hangs beneath.” Science experiments and I don’t occupy the same space for long, so I opted out of the lesson in lieu of a good story.

AS GOOD AS GOLD I could also say, “as good as Golda.” The namesake lining local shelves is Wade’s 94-year-old maternal grandmother who taught her how to brew kombucha and, more importantly, continues to confirm its “Elixir of Life” nickname. “[Grandma Golda] has been making it for more than 20 years,” Wade said, smiling. “She’s a little, widowed mountain lady who lives in southwest Virginia, still mows her own yard and plants tomatoes.” “When I was a kid, she always had these weird vats of tea. Grandma brings mason jars [of kombucha] to people in her community. That’s what she’s known for.” Grandma Golda, as Wade describes her, is a “spry, holistic health nut,” who discovered how healthy her tea was during a routine doctor visit. “She had low platelets in her blood count for a long time and right about that time she started drinking the tea every day,” Wade said. “After a few months, her count had [improved] and her blood work looked great. Grandma told the doctor, ‘I know what I’m doing. I have a secret tea.’” Not such a secret anymore, the benefits of kombucha are widely accepted and continue to garner attention from healthy shoppers of all ages. Packed with probiotics, it’s similar to the live and active cultures found in yogurt, kimchi or kefir. As Wade explained, “It’s actually a little bit more than what you would get in yogurt. Kombucha has thousands and millions of probiotics and unlike pills [that have live cultures but are actually dormant because they are encapsulated], these are all living.” It has a high content of probiotics, [making it] great for digestion as well as immune system support. It alkalizes your body so it’s a full body elixir,” she added. Grandma Golda was onto something, and Wade made it her personal mission to share.

The 27-year-old visionary has come a long way since the fall of 2012 when she graduated from Georgia State University with a degree in journalism, a concentration in public relations, certification in event management and a minor in art. “I was good at [my job] and I loved it, but it wasn’t my passion,” she said. “I really wanted to be an entrepreneur. Every night, I was going to my commercial kitchen working on recipes, bottling and getting product on the shelves. On the weekends, I was doing all sorts of festivals. I was selling out, but I couldn’t keep up. [By spring,] I could see it really taking off, so I decided to leave my career to give it a shot.” Although Whole Foods contacted Wade only two months into production, she chose to continue brewing in micro batches. She currently produces about 60 gallons a week and delivers products herself to local purveyors. In June, she celebrated her first year as a commercial brewer in the market, complete with a commercial kitchen and a kombucha tea growler station — the first of its kind — installed inside The Mercantile in Decatur. Ever the go-getter, Wade is now looking to build Atlanta’s first kombuchery with a little tasting room, a place to fill growlers and room to enjoy a pint onsite. To help reach this goal, she has launched a Kickstarter campaign running through Aug. 2. What does Grandma Golda think about that? “She supports me 100 percent. I call her almost every day with updates on the business and I always remind her to drink the tea,” Wade said. “I want her to live a long time. I want her to see the results of this … that I made it.” We’ll be keeping an eye on Wade and her booming booch, too. PN

In search of a refreshing change, we recently dove into the pool of local drink options to find what’s worth stocking the beverage cart with this season. GET JUICED After journeying for 15 years across six continents, Kelley Sibley, founder and CEO of Bamboo Juice, has invaluable insight into the eating habits of other cultures. Yalla was a vision shared by Todd Ginsberg, Shelley Sweet and Jennifer and Ben Johnson — the minds behind restaurants Fred’s Meat & Bread in the Old Fourth Ward and The General Muir in Druid Hills. Though Yalla’s food offering is mouthwatering, the all-natural, low-sugar sodas have stimulated their own buzz. (No, not that kind of buzz — all of these beverages are non-alcoholic.) They say there’s a connection between memory and the senses. While you’re enjoying the refreshing taste of one of Fitzgerald’s potions, you’ll also enjoy the aroma. favorite song. However these wonderful sodas affect you, one thing is for sure: they truly are enchanting. For Ginsberg, the sodas bring back memories of a trip to Israel, where the 2014 James Beard Foundation semifinalist first got the idea. They didn’t have soda fountains like the ones here. Instead, they used fresh pressed juices and created handmade sodas. The markets were set up beautifully with lots of colors, spices and many different drinks in big ice bins, and he wanted to capture the same ambiance. Fitzgerald, previously a bartender and manager, was just the gal for the job. The key to her stimulating beverages, besides the time and passion she puts into them, is that she grew up on a big piece of property near Stone Mountain and understands the importance of sourcing locally. She and her father still maintain a garden on that property, as well as work with local farmers and foragers. Examples of the invigorating brews you might see at Yalla include Rosemary Huckleberry and Lemon, Pearson Peach for Life ((Pearson peaches, tarragon and floral forage), The Big Red, Burge Organics Strawberry and Mint and yes, even Popcorn Soda. For the latter, Fitzgerald bought a case of Peaches & Cream corn from Cordele, cooked it down in a pressure cooker, strained it, mixed in sugar and then clarified five sticks of butter. When I took the first sip of her Burge Organics Strawberry and Mint soda, my taste buds began to salsa. As each sip slipped away, I immediately yearned for another. BEERMOSAS Whether you’ve seen a beermosa on a menu and wondered why anyone would want to swap Champagne for beer or you’ve actually tried it yourself, this drink is making the rounds. Staying true to the idea of a classic mimosa, you need a juice and something with fizz to go with it. Michael Searles, president of the Atlanta Chapter of the United States Bartending Guild and beverage director for a collection of restaurants including The Blind Pig Parlour Bar, Smoke Belly, Gypsy Kitchen and The Southern Gentleman, advised using 20 ounces of grapefruit juice topped with your favorite Indian Pale Ale (IPA) if you're going for complementary flavors. For something a little funkier, try a tart lemonade topped with a nut brown ale. For the full effect, pour your masterpiece into a beer flute — a European-style glass traditionally shaped for pilsner — and garnish with a lemon peel or an orange wheel. What it takes to make one of the world’s most prized Champagnes

The Champagne Krug Grande Cuvée is praised for its richness, depth and vivid notes of brioche, dried fruits, orange zest and hazelnut. It’s a bottle we open for the big moments — or even the small ones if we are living life the right way — but there is much more to a glass of Krug than zest and brioche.

CENTURIES OF CHAMPAGNE Indeed, the first real Krug Champagne was born of frustration. The founder, Joseph Krug, who started his career in Champagnes, France in 1834 with the House of Jacquesson, agonized over the fact that the wines of the region were often inconsistent (due to the vagaries of climate). He felt there had to be a better way to protect against a bad year. After years in the business, he concluded that the

best way to ensure quality Champagne annually was to build a serious reserve of quality grapes from various plots throughout the region. Each separate plot, Krug determined, must be chosen for its unique and special characteristics. By blending each of these separate plots, like adding colors to fully finish a painting, one can build the perfect wine each and every year no matter what Mother Nature has in store. In 1843, at the ripe age of 42, he put his research into action and officially opened the House of Krug. Then, he took things a step further. Not satisfied with simply using separate grapes from different terroirs, Krug also insisted fermenting each plot separately and storing the finished wines separately as well — no small feat when one considers the space implications. This way, when the time came to blend, he could call upon


the specific notes from each plot to assemble a rich, vivid expression, regardless of the harvest that year.

WIDER APPEAL DULY NOTED Today, Krug Champagne remains one of the finest producers in the region, largely because of a “notebook.” To ensure he passed along his legacy of winemaking, Krug kept a special notebook full of everything from precise instructions to philosophical insights, such as: “You cannot make good wine without starting with good elements.” The notebook has been carefully preserved and passed down for generations, and is now in the hands of the effusive and warm Olivier Krug, president of the house. Olivier keeps Joseph Krug’s notebook in a special wood box — it’s as treasured as a museum piece, and likely as valuable. As the sixth generation, it’s Olivier’s job to ensure that the Krug Champagnes stay true to the founder’s intentions while also staying relevant to today’s consumer. That’s just a wee bit of pressure, but he manages it well. Olivier keeps his focus on the experience, making sure that consumers are as satisfied and thrilled as they were back in the mid-1800s when Krug made the first bottle. Yet, it’s a different landscape for Olivier today to keep up with Instagram postings, wine auctions and other events. He fully appreciates the scope and breadth of what goes into making a bottle of Krug, but he has learned that most people prefer to talk about their Krug experiences rather than the complicated efforts that go into each bottle. “Every day I hear about people’s ‘Krug Stories’ — where they were and what they were doing when they had their first bottle; those stories are really the best part of being a Krug,” Olivier added. “People don’t care how many wines were tasted and if they had a hint of hazelnut or brioche. What people want is an

While Olivier juggles the public face, Krug Cellar Master Eric Lebel is charged with ensuring each year’s Grande Cuvée is as good as the previous year’s, delivering the experience that Olivier talks about and justifying the hefty $150 price tag. During an average year, Lebel must taste and select 350 to 400 wines, sorting through thousands (typically 5,000 in a given year) of tasting notes and hundreds of wines from various years. He does not just taste wine; his notes go as far back as the beginning of the growing season when he tastes individual grapes. All of this tasting, documenting and blending might seem obsessive, but it’s the very heart of what makes Krug special. Not surprisingly, Olivier has partnered with Riedel Crystal to craft the perfect glass for drinking Krug, aptly named The Joseph Glass. Olivier feels so strongly about the glass that he confessed he finds it heartbreaking when he sees images of people drinking his eponymous wine out of flutes. “When I see people enjoying Krug Grande Cuvée on Instagram, I just cringe if they are using a flute because they are missing all of the beauty in the wine this way,” Olivier said. Lebel explained that the flute's narrow opening restricts a significant amount of the taste experience. A multi-vintage expression crafted from more than 200 to 250 separate plots of grapes, Krug is indeed something unique. All of that exact blending is exactly why a sip of this Champagne hits every note on your palate—fresh, rich, playful and complex. It’s perfect, and I am sure Joseph Krug would agree. PN

January of this year, Marilyn Margolis was named the new CEO of Emory Johns Creek. In March, Emory Johns Creek hosted several dozen cancer survivors training to become CanCare volunteers. Nervous exhilaration. That was the feeling coursing through my body as I held onto my paddle and pushed away from the safety of the landing at Waterstone Resort & Marina and into vast Lake Boca. Okay, so maybe Lake Boca isn’t all that vast — you can see the other side from the landing at the resort. However, when you are a kayaking virgin who isn’t very nimble with a paddle, it seems as intimidating as heading into the Atlantic. It was a beautiful Sunday morning, and I wanted to try something new on this visit to South Florida. So, I clumsily started to drag my paddle through the water and said a little prayer that I wouldn’t be run over by one of the million-dollar yachts making a beeline for the Boca Inlet.

A ROOM WITH A VIEW From the moment I saw the tranquil turquoise waters of Lake Boca and the Atlantic Ocean stretching beyond the sliding glass doors of my room’s balcony, I knew Waterstone was going to be a happy place for me. Located in Boca Raton, Fla., Waterstone is a piece of cake to get to for a long weekend.

(Delta offers a two-hour direct flight into Fort Lauderdale International Airport, which is about a 25-minute drive from the resort.) Because the property is situated on a corner that touches both Lake Boca and the Boca Inlet (which leads to the Atlantic),

each of the 139 guest rooms and suites feature balconies with waterfront views. In addition to the breathtaking view, I loved the modern décor and the cool whites, gray and blues that decorated my cozy room. Since the resort is a Doubletree by Hilton property, you’ll find all of the amenities and goodies you’d expect from the brand — including the signature Sweet Dreams bedding and those famous chocolate chip welcome cookies. Another neat amenity offered is that the hotel encourages guests to use the ALICE app (think service on demand) on their electronic devices. I loved the ease of ordering room service, requesting housekeeping and making dinner reservations with my phone, regardless of my whereabouts.

BITES AND BOATS Speaking of snacks, let’s get to one of the most important aspects of this resort (at least for me): the food. Given my goal for this getaway was rest and relaxation, I didn’t want to leave the property. I had high hopes for the hotel’s dining options, and thankfully, I wasn’t disappointed. If you enjoy al fresco dining by the water, then you have come to the right place. Whether you choose the casual Waterstone Bar and Grill or the finer dining option, Boca Landing, you’ll be able to enjoy ocean breezes and listen to the water lapping against the hotel’s dock as boats pass. In the mornings, I typically enjoyed my tea and waffles by the water, courtesy of the bar and grill. Although one morning, I opted to enjoy the million-dollar view from my room and ordered room service. Lunches were spent poolside, sampling the restaurant’s daily menu, which included tastes such as the spicy jerk chicken sandwich or rock shrimp ceviche — always paired with a refreshing frozen watermelon margarita. If you’re looking for a nice just-off-theboat inspired dinner, treat yourself to Boca Landing. My appetite was more than satisfied with the restaurant’s signature dishes of tuna tartare and grilled swordfish.

IN AND OUT OF WATER So when you’re not sleeping or eating, what is there to do at Waterstone? Plenty. Then again, if doing nothing is your idea of a good 68 | POINTS NORTH | July 2015


time, the resort’s pool faces the inlet and the ocean. It’s easy to set up camp in a lounge chair with an umbrella and not leave until sunset. The beach is only a few minutes away, and the hotel provides shuttle service, beach chairs and umbrellas. Since I was looking to balance my R&R with a little calorie burning, I signed up for a beach yoga session. The hotel arranged everything with an area instructor. Given my preference of an afternoon time slot, I can safely say that if you’re a fan of hot yoga, doing a class in the South Florida sun is about as authentic as it gets. If you’d rather enjoy a little air conditioning with your workout, the hotel provides a 24-hour fitness center that overlooks the pool. You can also rent a bicycle to cruise around Boca; sign up for one of several water activities including surfing lessons, fishing charters and reef snorkel trips; or rent jet skis, boats, standup paddle boards and those

sea kayaks … which brings me back to my kayaking experience. There I was fumbling with that paddle. I went in a few circles before I realized how to make myself move forward instead of backward. Thankfully, I accomplished this just in time to scoot out of the way of one of those mega yachts headed for the inlet. Once I was in the middle of Lake Boca, the waters smoothed out; I could easily weave in and out of the boats that had dropped anchor and were occupied by boaters looking to enjoy a day in the sun. As I heard the familiar chorus of Bob Marley’s “Jammin’” coming from a boat in the distance, I knew I’d found the peace and pleasure I was looking for on this Boca trip. PN

Meating of the Minds

After 16 years as a sales representative for two wine distribution companies, one in North Carolina and one here, Roswell’s Brian Keenan has taken a new road, following his favorite avocation and creating a business. Well noted for his great palate and unobtrusive way with people, Keenan is utilizing those traits as owner and CSO (Chief Smoker Operator) of Meating Street BBQ, which provides multi-regional barbecue for an array of clients. In the back of his modest home, the Big Pig Rig and the new Pig Rig Trailer are ready to warm to the task for smoking large quantities of St. Louis-cut pork ribs, brisket, pork shoulder, Boston butt, beef ribs, chicken or sausage for corporate or nonprofit events, neighborhood gatherings, restaurant visits, family reunions and once a month at Roswell’s “Alive After 5” in front of Founder’s Hall (appearing July 16). Accompanied by homemade and hand-cut redskin potato salad, cole slaw, baked beans (with five varieties of beans), pickled onions and pickles, the Keenan arsenal is well-stocked to create wide smiles of satisfaction. Until Keenan opens his planned bricks-and-mortar Northside location in the near future, he will continue to rely upon the purred of mouth from those who have enjoyed his barbecue. I found out about Keenan from one of his former wine suppliers, Steve Pignatiello, who included in his e-mail to me the following: “The slab of ribs was exceptional — some of the best I’ve ever had — and his brisket was out-ofthis-world delicious. I know you like to eat, Carl.” OK, Steve, let go of my arm. I’ll be the judge of that.

PERSONALITY IN EVERY BITE While preparing for May’s “Alive After 5” event, Keenan began pulling meats off the Big Pig Rig and invited me to sample the ribs, sausage and the magnificent sides. As he described the process of how he smokes the meats and prepares the sides, I was slobbering between bites like my 6-year-old bloodhound. The ribs didn’t fall off the bone (a sure sign of overcooking) nor did they take much coaxing. In essence, they were perfectly prepared and the applewood he uses (rather than the masking hickory or oak that is commonplace in the Southeast) seasons the meat with a slightly sweet, well-balanced flavor, something Keenan learned in the wine trade. “There are a million ways to cook barbecue, but I want to do it as naturally as I can,” Keenan said. “I use hardwood lump charcoal that has been burned down from hardwoods in South America. I use applewood from organic apple orchards in northern Missouri. Elements like those end up providing the flavors in the meat. It

doesn’t taste like everyone else’s barbecue. I think people seek things that are unique, and I think constantly honing in on things that are an expression of you is important.” Keenan uses 60-percent hardwood lump charcoal and 40-percent applewood when smoking his meats. Tough cuts can take up to 18 to 20 hours on his indirect heat smoker, and the combination for his heat source provides the right amount of smoke and the right amount of sweetness. How does he figure out the right ratio? “I am not saying that I am perfecting what I am doing, but I am always focused on making things a little bit better. Working on a fire is a craft on its own. That’s something big that is happening today with barbecue. People are paying more attention to the fire and not closing down all of the vents to create a lot of smoke. It’s managing the airflow to enable you to balance the amount of smoke to create the clean flavors of the meat. If you use too much wood, sometimes the meat can get a

bit of a petroleum taste,” he added. All of his rubs, sauces and recipes are 100 percent his own, and he uses allnatural ingredients. The only item that has gluten is his barbecue sauce, which has a small amount of soy sauce, but those with celiac disease can enjoy these meats without sauce, which Keenan actually prefers. “The way I cook is very basic, very simple and is done the way I believe it should be done. It’s meat. It should taste like meat. My personality is in every bite you take. A little sweet, salty, spicy, smoky … my friends have said that the meat truly resembles my personality,” he said.

FUELING THE FIRE Keenan’s wife, Joanna, said she was a bit apprehensive initially with her husband’s entrepreneurial move, but knowing just how good of a cook he was made it more comforting. “Initially, I was scared because we

were going from a two-income household to maybe a one-and-a-quarter one,” she related. “My job [was] unsettled during the last few months of last year, but once that became settled in December, we began thinking that we could take this endeavor more seriously.” Not only a cheerleader, Joanna has been a recipe taster and a source of inspiration. After all, it was Joanna’s birthday celebration several years ago that first fired up Keenan’s passion for ribs. The challenge of making her a great birthday meal, combined with his quest for perfection, has spawned a new career. “I told him that if I didn’t believe in what he is doing, it would be really hard for me to be supportive,” she shared. “His food is excellent! I have never had anything that he has made for me — barbecue or beef Stroganoff, any veal dish like Osso Bucco — that hasn’t been top notch. Even breakfast … his omelets are wonderful.” She said she knows he’ll be successful

naturally smoked barbecue and sides, the recipes and techniques for which have been developed through trial and error. “At this point, I am cooking the best barbecue I ever have, but in my mind, I also know where I would like to be,” Keenan said. “It’s going to take time, patience and learning to get there. A lot of people say what I am making is great and not to change a thing. While my recipes should not change, the evolution of my techniques should, which will hopefully enable me to perfect the craft.” One taste of Keenan’s brisket might lead you to think that he already has. PN because of his skills and passion. “It has been an adjustment for us, but he seems so much happier …” “A million times happier!” Keenan interjected. “The stress level was off the charts. Now, I don’t have a guy calling me on a Thursday afternoon cursing me out

We will, however, provide some insight from Meating Street BBQ’s Brian Keenan to help you create your best Fourth of July barbecue ever.

“Everyone is in love with the Big Green Egg, but it’s a very tiny space for cooking things that take a long time,” Keenan said. “The offset cooker system, a very simple one that you can get from Academy Sports in Cumming, for example, does a great job for less than it will cost to purchase a Big Green Egg.” Instead, Keenan suggests learning about the basic principles of your heat source, the convection flow throughout the unit and “how all of that stuff works together to help you cook a great piece of meat.” When you are cooking large pieces of meat for extended periods of time, cook ribs at 210 to 225 degrees and beef brisket or pork shoulder at 250 to 275 degrees. “When I only had my Weber, that thing was fired up four or five times a week, particularly in the summer. There was always something on [it]. I still use it all the time when I am cooking for my wife and [myself], or for small groups at home. If you want to be good at it, you have to do it often. And, don’t be afraid to put your own spin on whatever you’re making,” Keenan offered.
