Chicken Caesar Salad Pita

Makes - 1

• 1 wholemeal pita

• 80-100g shredded cooked chicken breast

• Fresh chives or 1 spring onion

• 2 anchovies

• 10g grated Parmesan

• 1 heaped tbsp thick yoghurt

• 1 lemon

• Worcestershire sauce

• Parma ham

• Little gem lettuce

ONE In an air fryer or dry frying pan, crisp up the ham until golden (around 3-4 minutes) Allow to cool on kitchen towel then roughly chop.

ONE Sweat the shallot, diced basil stems, chilli and garlic in a little olive oil and a pinch of salt for 3 minutes until softened. Add in diced sun dried tomatoes and 1 heaped tbsp tomato puree.

TWO Add in the tomatoes and a little splash of water and cook for 5 minutes until the tomatoes start to soften. Press carefully with the back of a spoon to release their juices, add in 150ml water, 1/2 a chicken stock cube, bring to a simmer then add a handful of fresh chopped basil, 15g grated parmesan and 1 tbsp balsamic vinegar.

THREE Cook the gnocchi to packet instructions or air fry for 6 minutes at 200c

FOUR Add a little more water IF your sauce has reduced too much and add in the prawns and a large handful of spinach into the sauce and gently cook until the prawns are just done. Add in the cooked gnocchi and fold through. Serve with an extra grating of parmesan.

TWO Shred the chicken. Mix with 1 tbsp yoghurt, 1 tbsp chopped chives, 2 finely chopped anchovies, 1 tbsp lemon juice, some lemon zest, grated parmesan and some black pepper. Taste and adjust to your preference.

THREE Toast the pita, cut in 1/2 and open. Add in some little gem lettuce and spoon the filling into the pita. Top with any leftover crispy ham and some extra chives.
