HAVE YOURSELF A SUSTAINABLE LITTLE CHRISTMAS With Christmas in close proximity, it is all too easy to forget the positive eco-friendly advances we have made and switch to panic buying mode. It is time to slow down the Christmas shopping experience and think greener.

I

think we can all agree that when it comes to Christmas, the excitement and the pressure gets to us all and a little bit of panic buying comes in to play. The pressure built up to ensure Christmas goes smoothly and nobody gets disappointed is getting bigger and bigger each year. I personally think that if we put less pressure on ourselves during this period, we would have more time to enjoy it. Christmas was never about the gifts and the money; it was always about spreading love and joy to all and spending the holiday with friends and family. The amount of waste that comes after the Christmas period is largely fuelled by the sheer panic and excitement from shops and social media to make it the ‘best Christmas ever’. The more the merrier is the general thought process and who can blame us for thinking this way with the growing pressures of social media. We are here to prove that you don’t need to miss out when it comes to making your Christmas more sustainable. In some areas, you can even save money by doing a bit of DIY! Eco-friendly products tend to cost more than un-sustainable, plastic items, however, they will last a lot longer which means you are saving yourself money in the long term.

Minimising your carbon footprint by sourcing products locally is the first step. We have an editorial in the OM Magazine all about how to spend locally in Plymouth this Christmas. Although wrapping paper has got the word ‘paper’ in it, most wrapping paper is not recyclable as it contains foil, glitter or plastic. Brown paper packaging tied up with string is the way forward! Actually, I think it looks a lot prettier and you can add your own personalised touch to it with some foliage, dried orange, and maybe even a stamp using ecofriendly vegetable ink! If you want some more colour to your packages, we recommend www.re-wrapped. co.uk, they have a wide range of Christmassy designs all made from vegetable ink! When Christmas shopping- remember to take your bags for life with you to avoid having to take any unnecessary plastic bags home with you. Christmas is the time for all things sparkly; glitter, sequins, tinsel, baubles, fairy lights and everything in-between. Unfortunately, all of those lovely sparkly items are made from plastic and are non-recyclable and often get washed down the sink and end up in our oceans. On a positive note, eco-friendly glitter exists! Try to refrain from using tinsel and make your own paper chains or homemade garlands that can have longer-lasting properties and are less harmful to the environment. Baubles should be a family heirloom and stored with care so that they can come out of hiding each year and look spectacular. If you are in need of an extra bauble or two, avoid ones with glitter or that are made from plastic. Head to the high-end stores that offer quality baubles that are less likely to break over the years. Or, make your own Christmas decorations! Have a forage in your local woodland and pick some

beautiful pinecones to hang on the tree. And if you are feeling peckish, make some Christmas biscuits, punch a hole through them, tie with string and you’ve got an adorable decoration that won’t go to waste! By now, you may have planned your Christmas card recipient list but before you buy the cards, give them a little something extra this year. www.earthbits.com are a UK based company that produce all sorts of eco-friendly products as well as Christmas cards! The unique thing about these cards is that when you are ready to throw them away, you can take them out of the bin and in your back garden as these cards have seeds in! By buying these cards, you are essentially giving them a card and a gift that keeps on giving! Most Christmas trees are green, but not all Christmas trees are green for the planet. When it comes to buying your Christmas tree this year, make sure you are sourcing it as local as possible. And when January comes, make sure you contact www.recycledevon.org/recycle-your-christmas-trees as they can collect your tree and recycle it! Renting a Christmas tree is the new trend this year! If you are local to a farm that grows and sells Christmas trees, depending on the farm, you can rent it from them and come January, they will come and collect it from you and then re-plant it for next year! Did you know- It takes 20 years for an artificial tree to become ‘greener’ than a real one. However, if you do prefer the ease of an artificial tree, or perhaps you need it for allergy reasons, you can still be mindful about the tree you choose. Some artificial trees are recyclable or made from biodegradable materials. With all of these sustainable Christmas ideas, we hope this has inspired you to think outside the box and adopt an eco-friendly Christmas this year without compromising out on a thing!

How KF Kitchens created Kim’s ‘forever’ kitchen

A

sk Kim Bamford what she loves most about her new kitchen, and she reels off a long list which covers just about everything, and that includes never having to upgrade her kitchen ever again: “I wanted a forever kitchen, and now I’ve got one,” she says.

Kim booked an appointment to visit the KF Kitchens showroom at Faraday Mill, where she was given a tour by designer, Nathan Damarell. Nathan outlined the ballpark figure of each element of the kitchen and a rough overall cost, which gave Kim an immediate understanding of what was possible. The second step was for Nathan to visit Kim’s home in Torpoint, to discuss and create a design: “I’d drawn a sketch of what I wanted, and I knew what I definitely didn’t want,” said Kim. “When Nathan visited, he made some great suggestions about how we could best use the space, which we hadn’t thought of. Between us, we decided where things should go, and it was then just a case of choosing the finer details, like the colour. It was a nice, simple process.” One of Nathan’s suggestions was to move the patio doors to where they are now, creating a natural thoroughfare from the dining area to the garden: “That was a brilliant idea, so we got someone in to do that before we had the kitchen fitted,” said Kim. Another conundrum to solve was the rear of the stairwell, which backs onto one corner of the kitchen. Nathan’s solution? To install an open shelf unit in rustic wild oak, complete with lighting. Following her tour of the KF Kitchens showroom and Nathan’s visit, Kim chose a kitchen by the German company, Nolte. The tall units alongside the ovens are in deep blue soft matt, with the base and wall cupboards offering a contrast in platinum grey matt. The worktop is 20mm in Ethereal Noctis Quartz by Silestone , and there’s a second eye-catching open shelf unit with lighting. The flooring is Karndean, and all the appliances are by Neff – including the two oven combination, which has an integrated microwave and an oven with a slide-andhide door. And you’d never guess there was a central heating boiler on the wall, as it’s now concealed in one of the cabinets.

expectations: “It’s a total transformation. I wanted a double oven in a block with tall cupboards in a dark colour, and it looks absolutely fantastic, it really stands out as a feature. The discreet handles in brushed steel are classy, and the worktop is beautiful. When the flooring was put down at the end, it just brought the whole kitchen together.” The kitchen is the same size as before and the design retains the previous peninsula style kitchen: “But I’ve got double the storage space now,” said Kim. “And there’s more room to move around as well because the space is being used better. It’s much lighter and brighter than the kitchen I had before. It looks bigger, even though it’s not.” The kitchen took around three weeks to fit, and that includes ripping out and replacing the ceiling. All the work was done by KF Kitchens – the electrics, plumbing, plastering, decorating, and fitting: “They were absolutely fantastic workmen, and all very respectful,” said Kim. “They communicate with each other so that everyone’s ready when it’s their turn to come in. It was like clockwork.” For Kim, investing in her beautiful kitchen with highend integrated appliances has given her everything she wanted: “We’re going to be staying here for the foreseeable future, so we wanted a kitchen that was stunning to look at, practical to use, and a lovely quality that would be a kitchen for life. And KF Kitchens have delivered us just that.” KF Kitchens is an ambitious, local, family business that is pushing the boundaries of what is possible in a kitchen. From the moment you walk through the door of their studio, everything becomes possible and available to you, to achieve your dream kitchen. How is this possible? For a quick look, check out their website (www.kfkitchens.co.uk), social media on Instagram (@kfkitchens) or Facebook. Neil Hurst, a landscape gardener by trade and Ashley Ward from Swaye Electrical come together to help improve the community one garden at a time.

N

eil Hurst moved into his flat in Paynter Walk 2 years ago, almost to the day. As a landscape gardener by trade, owning and running his own business, Plymouth Decking and Landscaping, he was keen to tidy up the grassy areas around his flat. He cut his neighbours grass, whilst he was cutting his own. Then another neighbour’s grass, then another. Soon enough, all the gardens in the area were cut to the same beautiful standard, but that isn’t the end of the story. Right outside Neil’s flat; a forgotten and depressing sight lingered. Built up of wild weeds, boisterous bamboo, and soggy stinging nettles. However, this was about to change.

Neil took to the jungle and cut back at least 2 feet, clearing the space for an array of flowers, shrubs, and small trees. Before long, Neil had planted over 300 daffodils, 80 primroses and 80 shrubs, all at his own cost. However, an infestation of rats was then found to live under the out-of-control bamboo that Neil had been cutting back. This meant more bamboo needed to be removed to rid the area of the rats. This inadvertently led to the area increasing in size dramatically and allowing for more artistic flare to evolve and grow.

Walkers-by would stop and listen to the birds and take pictures. Young mothers with their small children would stop and point and smile at the flowers and bees and birds. Neil hopes that this show of beauty would light up the imagination of young minds, which would, in turn, create gardeners of the future. ‘That is what gardening is all about’, Neil said ‘If this creates 1 gardener, I will be very happy’. Neil explains that it is easier than people think and wanted to share his knowledge and expertise to help people realise this in their own gardens. Picking up a box of seeds and shaking it, Neil confessed, ‘You can get a pack of 100 assorted flower seeds for £2.00! And with a little groundwork, you can create wonderful flower arrangements just like this, in your own garden.’ Neil had countless interactions with local people, most of all dog walkers. It soon became apparent that the dog walkers all had the same burning issue, the playing fields’ long grass. People in their 50’s, 60’s, 70’s would despair about the condition the playing field were in, reminiscing about grass cuts every two weeks, which was the norm in years gone by. So, to help the dog walkers, piece by piece, Neil began to mow! He started to cut pathways around the perimeter of the bottom field, up and down and down and up, creating large pathways wide enough for two people

People soon began to admire the flowery vegetation.

and a dog! He then noticed the football field was overgrown, so, of course, he cut that too! However, the grass was so long and thick with weeds, in Neils own words, ‘I had no choice but to massacre it’. Despite the massacre, children were playing on the football field the very next day! Over the course of a few months Neil has now cut the football field 7 times. This has enabled the grass to strengthen and thicken up. Some say, Home Park standard! Neil advised, ‘If grass isn’t cut regularly, it gets coarser and rougher, making it more difficult to cut. What kills most things is lack of oxygen, so sodden and compacted grass struggles, which is why getting air around the roots is paramount to helping the grass grow and thrive.’ This is about the time Ashley Ward, who grew up in Chaddlewood, saw a video of Neil on social media showing him tending to the football pitch. ‘I loved what I saw. Plympton and the whole City has been suffering from ‘No Mow May’ for about 6 months and I was certainly fed up with the way my community was starting to look. Seeing Neil cutting the fields off his own back got me fired up and ready to help. The next day I grabbed my petrol lawnmower and started cutting grass!’ Ashley and Neil have said to be inundated with passers-by; dog walkers, young families and local kids thanking them for what they were doing, to help improve their community. Ashley even had someone who lives in Bellingham Crescent leave his house and head down to the field, especially just to say thank you. The community seems to have got behind Neils efforts and are expressing their thanks over social media and in person. Neil isn’t happy to stand still though. ‘A couple of weeks ago, some kids started playing football by the flower arrangement, outside my flat. Knowhere in Plympton does the grass looks like this, this is the best grass around and I suppose that’s why they wanted to play on it. They told me that they were playing there, because they couldn’t play on the 5 a side football pitch, as there were already lads playing on it. So l thought to myself, I’ll cut them a second pitch.’ Mowing on… Neil says ‘I am happy to carry on with cutting the dog walking areas and football pitches, which needs about 2 hours, once a week. If I must do it in the dark, then

Ashley Ward and Neil Hurst

so be it. Straight after school the kids are on it and during day I should be working, so in the dark it is!’ Ashley has been taking tips from Neil and helps cut the grass once a week, when he can. He keeps his lawn mower in his van just in case he has a spare couple of hours in between electrical jobs and when the weather is dry enough. Ashley says ‘I love being involved, I love helping people and the area I grew up in. I played football under these same old rusty goalposts when I was a child, and it fills me with joy that I can be part of enabling the next generation to continue to have fun in these areas.’ Neil finished off with a humble account of how this all began and where it’s going in the future. Neil says ‘I was so embarrassed when I the saw the first video of me on Facebook cutting the grass. I am not interested in the attention, I am in my own little world, happy doing what I am doing, keeping busy and improving the area. As I said before, if the work I have done has created one gardener or has intrigued people enough to grow their own, then I am happy.’ Final Note Neil has his eyes on the patches of grass between the road and the pavement just down from his flat. He wants to create another mixed flower arrangement, both sides of the grass, creating a captivating entrance way of colour. What a way to cap off what is a beautiful display of selflessness, hard work, dedication and community spirit.

Winter

Warmers It’s officially sweater weather (jumper season) and time to stoke that log burner. Let’s warm our cockles with some comforting dishes.

Bangers & Mash Serves - 24 Ingredients FOR MASH • 1 tbsp sunflower oil • 1 kg potatoes, • 8 pork/ veggie sausages peeled and cut • small knob of butter • 3 small onions, finely sliced into large chunks • 100ml whole milk • 1 thyme sprig • 50g cold butter, • 1 bay leaf diced • pinch of sugar • grating of nutmeg • 1 heaped tsp plain flour • 1 tbsp red wine vinegar • 1 glass red wine • 1 tsp soy sauce • 400ml 1 stock shot or cube

3 32

1

Heat the oven to 200C/180C fan/gas 6. Heat the oil in an ovenproof frying pan and gently sizzle the sausages over a medium-high heat for 8-10 mins, turning them, until browned on all sides. Transfer to a plate, then put the butter in the pan and heat until sizzling. Scatter in the onions, stirring them into the butter, then add the thyme sprig, bay and sugar. Give everything a final stir, then put the sausages on top and drizzle over any juices from the plate. Roast everything for 20 mins, turning the sausages halfway through.

2

When the sausages are cooked, remove from the oven, turn the oven off and lift the sausages onto a tray. Return them to the oven to keep warm. Put the pan back on the heat and give the roasted onions a stir, they should be sticky and slightly burnt around the edges. Sizzle for a minute or two more to caramelise, then stir in the flour and cook for another minute. Splash in the vinegar, simmer for a minute, then pour over the red wine and soy, and bubble down to a gloopy paste. Pour over the stock and boil for 3-4 mins, or until you have a rich gravy. If you prefer, scoop out the thyme and bay, or just leave it in. Tip into a bowl or gravy jug with a serving spoon for the onions. Bring everything to the table and scoop a big mound of mash onto the middle of each plate, then top with the sausages and gravy.

Meanwhile, make the mash. Tip the potatoes into a pan of cold salted water and bring to the boil, then turn down and simmer for 10-12 mins or until just cooked all the way through (the tip of a knife should slide in easily). Drain in a colander and leave for a minute. Tip the milk into the pan and bring to a simmer, then pass the potatoes through a ricer into the hot milk and mash thoroughly. Once mashed, beat with a wooden spoon or spatula over very low heat, then beat in the butter a few bits at a time. You should have extra-fluffy, smooth mash. Keep it warm.

Rice Pudding Serves - 4 - 6 Ingredients • butter, for the dish • 130g pudding rice • 70g caster sugar • 2 tsp vanilla bean paste or pod seeds scraped out • 800ml whole milk • 170ml double cream • grating of nutmeg • fruit jam of your choice, to serve

1 2

Heat the oven to 160C/140C fan/gas 3 and butter a 1.5-litre baking dish. Put the pudding rice, sugar, vanilla, milk and cream in a bowl and stir to combine. Pour the mixture into the prepared dish and grate over a generous layer of nutmeg. Bake for 1 hr 30 mins until a brown skin has formed on top and the rice is cooked and tender.

Leave to cool slightly, then scoop the warm pudding into bowls and serve with a dollop of jam on top.

Lentil Soup Serves - 4 Ingredients • 2l vegetable or ham stock • 150g red lentils • 6 carrots, finely chopped • 2 medium leeks, sliced (about 300g) • small handful of chopped parsley, to serve

1 2

Heat the stock in a large pan and add the lentils. Bring to the boil and allow the lentils to soften for a few minutes.

Add the carrots and leeks and season (don’t add salt if you use ham stock as it will make it too salty). Bring to the boil, then reduce the heat, cover and simmer for 45-60 mins until the lentils have broken down. Scatter over the parsley and serve with buttered bread, if you like.
