A WORD FROM THE CLUB SECRETARY As ever, much goes on in the last quarter of the year, culminating in the Christmas and New Year celebrations. Details of the key events from October through until January are set out in these pages, including the Club Christmas carols and the New Year’s Eve celebrations. My recommendation to Members in last year’s edition was to attend the King’s Singers concert in October, and that went very well, so for this October I commend to you the Talk and Dinner on Admiral Lord Nelson’s victory at the Battle of Trafalgar in this its 210th anniversary year. John Redwood MP is our erudite speaker, Thursday 22nd is our date! The major projects for 2015 have

been the installation of new jetties on the River Front, new security gates at the Finlay Drive, and the refurbishment of the Reception area. All these add to the general feeling of well-being in the Club and are the tangible benefits derived from the re-investment of surpluses back into the Club each year. The major opportunity for the future is the development of new facilities to meet the needs of Members to pursue their chosen sporting pursuits and exercise regimes. Potential proposals have been put before Members in recent weeks and the hopes and expectations are high for an outcome which will give the Club continued relevance and appeal in the years to come. The Open Meeting will be taking place at the Club on Thursday 12th November to report to Members the Club’s situation six

months on from the 2015 AGM. Looking into 2016, the Proposers’ Dinner will be held on Friday 29th January. This occasion is to celebrate Members who have acted as Proposers for new Members joining in 2015, and the prize draw of their names allows re-imbursement of the winner’s 2016 subscription! I also need to alert you to the period 4th – 10th February 2016 when necessary work takes place on renewing the hygienic cladding on the interior walls of the Club kitchen. Whilst the work will not necessitate a complete closure of the Club house, the catering service will be limited over that seven day period. We will keep Members abreast of the progress on this unavoidable project through In Touch and, indeed, the weekly e-mail bulletins from In Touch will keep Members informed of progress on all fronts.

Outside of work I like to… Play sport particularly badminton and I try to watch Reading FC whenever possible. However my

The Thames Room because it is perfect for small functions and family gatherings which I love to run and look after.

In 2012 I worked at Eton Dorney assisting with the river events for the Olympics as a Games Maker. This was one of the best experiences of my life and I would love to learn another language and work at another Olympics in my lifetime.

If you were stranded on a boat on the River what 3 items would you like to have with you? A multipack of Ripple chocolate bars, a nice glass of wine (large) and a pair of armbands just in case!

Previously I have worked at… An automotive company in Poland called ‘Hutchinson’ so not much in common with banqueting!

Outside of work I like to… Barbecue if weather permits and build model kits of trucks and trailers.

GURKHA 200 CELEBRATIONS The wet weather didn’t dampen the spirits of those attending the August Bank Holiday Gurkha Celebrations in aid of the Nepal Earthquake Trust. 296 Members and Guests enjoyed Pipers and Dancers from the Queen’s Gurkha Signals as well as Pipes and Drums of the Royal Gurkha Rifles. Military Wives Choir performed an array of songs whilst those who held Ballroom lunch tickets enjoyed an informative talk by Brigadier JA Anderson OBE (Chairman of the Gurkha Brigade Association). NEWS FROM THE CHAIRMAN In Spring I was appointed as Chairman of Council and since I have been extremely delighted with the willingness of so many of our talented Members who have given endless hours of support to ensure a successful future for our Club. Members must be aware that our numbers are falling and consequently so has Members’ spend. Council and its Committees are putting in place strategies and initiatives to reverse this trend by promoting, improving and enhancing the offering to current Members and to attract new Members. In May, twenty five Members, together with staff from Management and Marketing, attended a workshop to construct a Marketing Strategy with the aim to retain current Members and recruit new Members, in order to increase income and cover the Club’s costs. The scope of this strategy includes what we are marketing, to whom and how. The group identified our ‘unique selling points’ as being: • Private Members’ Club offering a wide range of leisure activities and interest groups, something for everyone. • Has a stunning location by the River Thames with elegant buildings both classic and modern, parkland gardens, and proximity to Henley town centre, London and Heathrow. • A Lifestyle – fun, friendship, belonging. Home from Home, relaxing, safe and sociable. • Food and drink, from fine dining to bistro and snacks . • Events—Henley Royal Regatta, Henley Festival, celebratory

occasions, corporate functions and weddings. Hotel rooms. Conference and meeting rooms. Visitors from Reciprocal Clubs and the ability for our Members to visit over 110 Clubs across the world.

The marketing strategy, with action plans, was adopted by Council in August, the roll out to start immediately. Gill Markham, a marketing & communications expert, was co-opted onto Council to drive this initiative forward. A major focus of the Marketing Strategy is based on communication with Members. A quarterly communications plan for August to November 2015 has been developed and implementation has begun. Members should see a marked improvement so watch this space.... The catering review undertaken in early 2015 and reported on at the May 2015 AGM has started to bed down under the watchful eye of the House Committee. Many positive comments have been received from Members and the proof of the pudding has been an increase in Members dining and the take up of themed dining such as Fish and Fizz, which sold out in 3 days. Watch out for a Winter Warming pudding evening and Halloween.

(Property Services Manager) and his team are beginning to build the guide’s recommendations into their maintenance schedule. For example, to bring some recommendations to fruition, your memorial donations can now be made to the Phyllis Court Foundation, these donations will be acknowledged in a Memorial Book that is available and can be viewed in the Club House. The Sports and Fitness Pavilion Working Group, led by Member Stan Ainsley, is working flat out to bring a financially viable proposal to Council, who will then arrange a Special Meeting for Members to vote on the future of this facility. The sporting Interest Groups met recently and their comments have been fed into the architect’s brief. The Working Group is arranging two forums when Members can discuss the consolidated plans for the Sports and Fitness Pavilion with the Working Group and Council - please do look out for the dates of these sessions and come along to see the latest information. As I am still working I am relying on the support of our Deputy Chairman, Barry Jackson, who will step forward whilst I am away and I thank Barry and his wife Jane for allowing me (as she puts it) to be his other woman. To further enhance communications with fellow Members, Barry and I will be undertaking sessions to hear Members’ views so we can work out how to further enhance the facilities for all Members to enjoy and to provide a wide range of activities that will cater for everyone.

A Design Guide produced for the Club grounds led by Member Moira Hankinson has also been adopted by Council. Moira has led Members on eye-opening tours of the grounds to demonstrate the visual aspects that can be enhanced. Barry Foster

UNDERSTANDING YOUR INTEREST GROUPS Classic Motoring Our programme includes a series of meetings, talks and lunches at the Club and local hotels. Our external activities include visits to motor collections, stately homes or beautiful riverside locations and villages. On all such trips we normally arrange lunch at a good pub or restaurant. Each year we have also arranged an ‘away trip’ which includes an overnight stay with a pre-arranged programme of interesting activities. As an example, our events during 2015 have included a factory visit to Rolls Royce, a treasure hunt in Stockbridge and a guided tour and lunch at Hatfield House. The highlight of the year is probably our annual car display on the lawns of PCC with lunch for Members in the Ballroom. This year it was a joint event with the Gurkhas but in 2016 this will once again be a unique CMS day at PCC.

The Society meets monthly over dinner – either at the Club or an outside venue - where a variety of real ales are enjoyed. Occasional additional activities are arranged, including brewery trips and, most recently, a walking tour (pub crawl!) in London. The section also provides information about real ales and events, and supports existing and new local brewers. Members’ partners join many of the events, including the annual BBQ and Christmas party. Other attractions include quizzes, bingo and entertainment. 2016 will see the group’s 5th anniversary and a suitable party will be arranged to celebrate. The next major event will be the ‘sold-out’ voyage on paddle steamer WAVERLEY from London out to Southend on Saturday September 26. Finally, our end-of season function is in planning!

Real Ale Appreciation Society The Real Ale Appreciation Society was initiated in early 2011 with the prime objectives to bring together Members who enjoy traditional beers and to introduce real ales to the Club bar. The Society grew rapidly and now has over 90 Members (including 30 ladies).

The River and Boating Group has had a very successful season of Club and water-based events as well as informal gatherings in the bar. The season started with a film evening, Three Men in a Boat. This was the 1950s version of the story which had, of course, been made at various locations along the Thames, all now so different! This was followed by a highly successful early season Boat Bimble up to the Great House at Sonning for a pub lunch and, in May, the Group organised a well-

Christmas Fair Saturday 14th November 10am - 3pm FUND RAISING FOR HELEN & DOUGLAS HOUSE AND SOUTH & VALE CARERS CENTRE So far this year the CAG has raised £19,500. A very pleasing sum of money for the charities and it is hoped that the total will exceed that of 2014.


MEMBER PROFILE: LAURIE BILLSON Tell us about yourself….

Originally moving from Nottingham – via Hong Kong, I’m a relative newcomer to Henley but it already feels like home to me. I work with a wine importers in Oxford, so the town is well placed between the office and London. It’s a relaxed place but the streets have a great buzz – especially during the summer music festivals. I play the saxophone and enjoy photography.

Tell us about your involvement with the subcommittee working groups at the Club…

What made you decide to join Phyllis Court Club? Living in the centre of Henley is great for being close to the river and shops – and joining Phyllis Court gives access to a fantastic outside green space. It’s like having the keys to share a large and ‘hidden’ garden on the riverbank. It is so well-hidden that it took a flight overhead in a hot air balloon two years ago to accidentally discover it existed before then venturing down Phyllis Court Drive to find out more.

What Interest Groups are you a Member of at the Club and what do you get out of them? I primarily use the Club socially - it’s great for entertaining friends and colleagues. The Interest Groups are a good place for discovering new hobbies – last year I joined Croquet which I’ve enjoyed learning over the summer. Phyllis Court has such a rich and diverse membership it makes

people.

The Finlay Club was established this year for young Members with the aim of forging links with Reciprocal Clubs and creating an environment for events and socialising. I contribute through driving membership and we’ve showcased PCC to a new demographic who are getting involved in the Club and becoming Members. I think it’s important that we start to introduce the Club to the next generation of Members to be part of the spirit that has been established. I’m also part of the Sports & Fitness Pavilion working group as I am passionate that it would be an asset to Phyllis Court Club Members. I travel extensively and have stayed with our reciprocal clubs which have all offered facilities to their memberships – it feels like we are missing out among our peers. Health and Fitness is something we can all benefit from regardless of age or current health, and an appropriate facility would benefit us today and further entice potential Members to joining PCC strengthening the Club for the future.

As a younger Member, please give 3 reasons for a Prospective Member to join the Club. Everyone has different reasons for liking Phyllis Court. The Club’s diversity is its strong point. Firstly, for me the outside space in the middle of the town is key and enjoyed by visiting London-based friends for a weekend on the riverside. It’s a great place to be. Secondly, having places like the Riverside Pavilion are wonderful for functions and parties. We have a unique spot, and good food and service from the restaurant makes for enjoyable evenings. Henley has a wealth of eating and drinking places but none have the interest and exclusive riverside ambience of Phyllis Court. Finally, being part of PCC welcomes you to a community. I’ve been introduced to personal and professional friends through the Club – we have some very talented, interesting and friendly Members.

What has been your favourite Club event to date and why? Regatta is clearly the highlight of the Club calendar. This year I reserved a picnic space on the riverbank and hosted a group of university friends for a fantastic day in the sun. I’m looking forward to the Finlay

Ballet Theatre UK’s renowned company of international dancers, beautiful costumes and glittering stage sets combine to create a magnificent spectacle, all set to a glorious and magical score.

Christmas Classics with Blake at the Kenton Theatre 6pm Supper in Ballroom followed by Christmas Classics with Blake at the Kenton Theatre with Curtain up at 7.30pm Join Brit-Award winning vocalists BLAKE for their long awaited debut Christmas show, featuring festive songs in beautiful trio harmony, video projections & the group’s famous fast-paced comedy banter. During this spectacular show, Blake perform an eclectic range of Yuletide songs, taken from their debut Christmas album, released UK wide on November 9th. Since the group formed in 2007, Blake has become a regular fixture on the UK Christmas TV schedules, including festive song performances on BBC Breakfast, This Morning, The One Show, Alan Titchmarsh Show & Songs of Praise. Chairman and Council Christmas Drinks 12pm-1.30pm in the Ballroom What better way to start the festive season than to come along to have a drink with the Chairman, Council and to get to know other Members of the Club - come and join us for the Members drinks party. The Ballroom will be dressed for Christmas and festive drinks and canapés will be served. Why not book for lunch afterwards in the Dining Room to extend your celebrations into the afternoon.

TRY THIS AT HOME Roast Duck Breast with Crushed Butternut Squash, Dried Apricots, Hazelnuts and a Port Sauce A fantastic dinner treat for this time of the year is duck breast and butternut squash. Both ingredients are much underused in the domestic kitchen as they perhaps require a little more effort to prepare: rendering the fat from the duck breasts to achieve a crispy skin and the cutting, baking and scooping of the butternut flesh. However, the effort is well worth it.

Method •

Cut the butternut squash in half and scoop out the seeds, you can make some incisions into the flesh. Scatter the brown sugar, a few knobs of butter and a pinch of mixed spice or similar over the flesh.

Wrap in foil and bake at 180c for around an hour until soft and cooked. Scoop out the flesh and keep warm.

Whilst the butternut squash cooks, score and season the duck breasts and sauté in a pan (fat side down) on a low/medium heat to render out the fat. After a few minutes drain the fat and reserve. Cook for around 3 minutes, then turn over and cook for a further 4 minutes over a gentle heat. Remove from the pan and rest for around 5

Ingredients: (serves 4) 1 Butternut Squash

4 Plump Duck Breasts, get your butcher to tidy up the sinews

30g Butter

20g Brown Sugar

Pinch of mixed spice or cinnamon if desired

1 Diced Onion

Sprig or two of Thyme

Store bought jus or gravy granules

50ml Port and Red Wine

12 Dried Apricots cut into slithers (or re-hydrated and cut)

Handful of Skinned Roasted Hazelnuts Chopped Chervil

Pour over Port Jus as artfully as possible! Sprinkle over chopped chervil for a little colour and serve with vegetables of your choosing.

Sauté the duck breast to render the fat

Place the butternut onto the centre of a plate, place on the sliced duck breast. Scatter the hazelnuts and apricot slithers.

1 oz Vodka

1 oz Cloudy Apple Juice

Sprinkle of Cinnamon & 1 oz of Whipped cream A berry to garnish

Method •

Pour a shot of vodka and apple juice in a flute.

Add cinnamon powder and then top it off with the whipped cream.


PENNY HUNTER: PCC’S IN HOUSE FLORIST Tell us about yourself… I have been a florist for 26 years and I trained at Burchetts Green College. I live in Eton, with Paul my Husband and my 3 handsome boys who are 12, 10 and 8. We also have a dog called Daisy, a cat called Lily and a hamster called Boris.

I can help you with… Happy and sad occasions but I really enjoy being involved with someone’s wedding, as it’s such a happy and exciting celebration.

What made you decide to become a florist? I always wanted to work with flowers or growing them. When I was a little girl I took over my dad’s shed and called it Penny’s Corner and had a

plastic till. I would grow seeds in old plastic pots and put stickers on them to sell them for 20p each. I used to badger anyone who visited our home to buy my plants!

What is your favourite arrangement that you have created at Phyllis Court and why?

My favourite flower is…

My favourite arrangement I made at Phyllis Court was my Moss Soldier for the Regatta last year. I had a vision in my head and it just came together.

That’s a tricky question! I love so many flowers so I don’t think I could answer that, but when I was arranging my wedding flowers I chose all the flowers that I love. Lily of the Valley, Sweet Peas, Roses, Peonies, Jasmine. I really like one type of flower ‘en masse’ so I bought lots of all of them. On the day I could not decide so I had the whole lot in a hand-tied posy. As I walked down the aisle my bouquet smelled heavenly.

On my days off you’ll find me… Normally with my family or at my allotment with my Cavalier King Charles Daisy.

Why did you want to work at Phyllis Court Club? I wanted to work at Phyllis Court... because who wouldn’t!

Don’t tell anyone but… Don’t tell anyone but I laugh at the humour of the Carry On films. Slapstick humour!!
