Delicious Dishes with Helen Kingscott

Rhubarb and vanilla tart A fresh tangy tart topped with tasty hazelnuts Ingredients: 500g rhubarb, cut into 11cm lengths; 75g caster sugar; 1tsp vanilla paste or seeds from 1 pod. For the pastry: 100g cold butter; 200g flour; 2tbsp caster sugar; 1 large egg, lightly whisked. For the filling: 1tbsp cornflour; 120g golden caster sugar; 300ml crème fraiche; 2 large eggs plus 1 yolk, beaten; tsp vanilla paste or seeds from 1 pod; 50g roasted hazelnuts, roughly chopped (optional).. Method: 1 Preheat the oven to 180°C. Place the rhubarb on to a baking tray, sprinkle with sugar and dot with vanilla. Mix then arrange in a single layer and cover with foil. Bake for 12-15 minutes until just cooked, but holding its shape. Set aside. Why not visit Primrose Vale Farm Shop & PYO and make your tart with their delicious raspberry red rhubarb?

2 To make the pastry, rub the butter into the flour until the mixture resembles fine breadcrumbs then add the sugar. Stir in the egg, then knead until the dough just comes together. Wrap in cling film and rest in the fridge for 30 minutes. 3 Roll the pastry out on a lightly floured worktop to about 5mm thick and a size slightly larger than a 12cm x 30cm fluted tart tin. Use to line the tin, pressing the pastry into the flutes. Trim the pastry then push the sides up about 3mm proud of the tin. 4 Chill for an hour then bake blind – cover with greaseproof paper, fill with baking beans and bake for 12 minutes. Remove the beans and bake for five more minutes until you get a pale biscuit colour. Turn the oven down to 150°C. 5 In a bowl, mix together the cornflour and the sugar so it doesn’t clump. Add the crème fraiche, eggs and vanilla, then mix. Pour into the tart tin then bake for 30 minutes or until the custard is just set with a slight wobble. 6 Turn the oven off and leave the door ajar for 15 minutes, then remove and cool on a wire rack. Top with rhubarb, reserving the syrup. Chill until ready to serve, sprinkle over the hazelnuts (if using) and serve with syrup.

For the last couple of months I’ve been writing about wild plants that wouldn’t look out of place on your dining table at meal times. Even though the petals of the Wild Rose – or Dog Rose – do make a refreshing cup of tea, which is supposed to aid digestion, I thought I might try something different this time. Historically, the use for Dog Rose petals has been mostly medicinal. But since you will no doubt be spotting this plant on your countryside dog walk and, like myself, wondering if you can eat it – the answer is yes, but I’ve yet to find a suitable culinary use to suit my taste buds. If you experiment and stumble upon something delicious, be sure to let me know via Twitter – @PottyWhite. To make home-made rose water, ideal for restoring your skin’s PH balance after a thorough cleanse, put enough distilled water to cover your harvest into a saucepan and bring to the boil. Place the rose petals into the boiling water and lightly simmer for a good 15 minutes – don’t be afraid to cram the petals in! Strain them from the boiling liquid into warm, sterilised, airtight jars and quickly close the lid to create an airtight seal as it cools. If you use cold jars they might crack from the sudden heat, so slowly warm them in the oven first to acclimatise them. If you’re the frugal sort, portion the liquid between small jars such as those which might have once contained salmon paste. Once cool, store in the fridge and they should keep for up to a month. Each jar should be enough for a good body massage. That being said, I hope the better half doesn’t read this otherwise I will have locked myself into servitude for the foreseeable future! If you’re not 100% sure that the plant you’re picking is safe for human consumption, don’t pick it. If you’re prone to food allergies, or pregnant, always seek medical advice before consuming anything foraged in the wild.

Sangria Sangria is a typical beverage from Spain and Portugal, which usually consists of wine, chopped fruit, a sweetener, and a small amount of brandy. The fruit can include orange, lemon, lime, apple, peach, melon, berries, pineapple, grape, kiwifruit and mango. A sweetener such as honey, sugar, syrup or orange juice is often added to take any bitterness away from sour fruit or the brandy. Ice cubes Method: 1 Wash and chop the orange and lemon, including skins, and add to a pitcher. 2 Add the orange juice and sugar to the pitcher and stir with a wooden spoon to dissolve the sugar. 3 Add the ginger ale, red wine and brandy to the pitcher and stir. 4 Add ice cubes and serve. Garnish with a sprig of mint if preferred.

When the Rugby World Cup comes to Gloucester in September and October this year, one of the nations we will be hosting is the USA. They face Japan in the final game at Kingsholm on October 11th. Press reports that President Obama could be attending are probably wide of the mark (and we’d have to shut most of the city down for security reasons!), but there are plenty of links between Gloucester and the USA that could tempt some special American guests. The CEO of the USA Eagles (America’s national rugby side) is the former Gloucester Director of Rugby Nigel Melville, who led the Gloucester team through its most successful period in recent times. Rugby is the fastest growing sport in the USA. Gloucester in Massachusetts takes its name from our city – perhaps because many of its new occupants originated here, but more likely because Gloucester was a Parliamentarian stronghold in the English Civil War. John Stafford Smith (1750-1836) is best known for writing the music for the US national anthem, “The Star Spangled Banner”. Smith was baptised in Gloucester Cathedral, was the son of the Cathedral organist and attended what we know today as the King’s School. The evangelist George Whitefield (1714-1770) was born at the Old Bell in Southgate Street and preached his first sermon at St Mary de Crypt. He was one of the founders of Methodism and in 1740, Whitefield travelled to America where he preached a series of revivals that came to be known as the “Great Awakening”. Perhaps lesser-known is the fact that Button Gwinnett (1735-1777), the second signatory to the US Declaration of Independence, was born in Down Hatherley (the son of the Vicar of Down Hatherley Church) and attended the Gloucester Cathedral school.

The Gloucestershire Regiment was awarded the US Presidential Unit Citation following the Battle of Imjin River in the Korean War in April 1951. So, rugby aside, we have a lot to attract our American friends. I hope they will come here in great numbers – not just for the World Cup, but time and time again. t: 01452 384051

A hidden gem with breathtaking views Approaching the 1st Tee, our clubs had been dusted off after six months of hibernation, apprehension kicked in and the pressure felt as though we were on the opening hole of The Masters. With the loser of this round on tea duty in the office for a week, there was everything to play for! Gloucester Golf Course can be found tucked away in the centre of Matson, situated up a winding driveway where you’ll reach the car park with ample car parking spaces. There is a new two-tier floodlit driving range, which runs parallel with the first hole, and a practice putting green in front of the clubhouse. The 18 hole, par 72 course is located on a steep hillside, which has been utilised to create a testing and attractive golfing experience. Established in 1976, the mature 6170 yard course has been maintained with great care to ensure that the fairways and greens are fast, wellkept and in immaculate condition. The opening par 4 hole gives you a great idea of what is to follow for the front 9. Situated at the lower section of the course you will negotiate your way around streams, bunkers and other natural hazards – allowing

your game to warm up before taking on the steep, technical back 9. The 12th hole – known as cardiac hill – is an uphill par 3, which gives an insight to the breathtaking views the course has to offer. This is followed by the long par 5 13th hole where the course really comes into its own. With views of Gloucester Cathedral, the Malvern Hills and beautiful surrounding countryside, we were able to forget about the last woeful shot for a moment and really appreciate the course. Last but by no means least – the 18th hole. You’ll experience a 400ft drop in elevation to the green, which we had been promised can be reached with a long drive – we are yet to experience reaching this ourselves! After your round you have the opportunity to have a relaxing refreshment in the bar, make full use of the facilities the clubhouse has to offer or browse the Pro Shop for additional equipment. We must thank the club Manager Vic Tofts (below left) for the wonderful guided experience and would highly recommend Gloucester Golf Course to anybody. And as for the tea making – that’s down to Andy!

CHESS THE MUSICAL COMES TO CHELTENHAM

The ‘Pick Your Own’ season gets well under way in June and Primrose Vale has an abundance of delicious berries, currants and beans for all the family to enjoy collecting – a fantastic way to entertain the children and encourage them to eat healthily. You’ll probably end up doing most of the picking yourself, but tasting fruit and veg fresh from the fields is a delightful and positive experience for everyone. Primrose Vale Farm Shop & PYO has been developed over the years by owners Charlotte and Paul Keene to become a wonderful source of locally grown or reared produce – keeping food miles to a minimum and supporting nearby farmers simultaneously. There is a large selection of delicious food all year round. There’s also a great variety of crops for you to gather. The most popular fruits with customers at this time of year are strawberries and raspberries prominent towards the end of the month. You don’t have to damage your back in the process of picking them – raspberry bushes are tall and the strawberries are now grown on raised platforms, so there’s no slugs, bugs or mud either! To the side of the shop a recreational area has been created for customers to use during opening hours. Whether you need a sit down or your children want to use the sandpit, ride the vintage tractor, play on the swings and slides or see the rabbits, you are encouraged to use the facilities. Every garden should have roses The weather should now be milder and more settled (perhaps!), so you can transplant courgettes, marrows, pumpkins and squashes that have been sown inside, or if you haven’t got any, sow directly into a prepared piece of ground. Outdoor tomato plants can be put out now as well. This month the roses come into their own and – in my opinion – every garden should have roses in it. My favourite no nonsense rose for climbing is the ‘Blush Noisette’, as it is really healthy with lovely small pale pink scented flowers that carry on from May till October and needs virtually no pruning. I also love Rosa ‘Gertrude Jekyll’ which is smothered with the most deliciously scented pink flowers. The pink colour is a wonderful foil for bright blue and, as my door is that colour, I have a climbing ‘Gertrude Jekyll’ outside. I would say however that it needs a boost after its first flush of flowers, so give it some more rose food in late June to keep it going. ‘Morning Glory’ (Ipomoea), which is a climbing annual, looks lovely growing through it with glorious blue flowers.

This is a good time to sort out your long-term pots in the garden. Repot into slightly larger pots (don’t put directly into a huge pot from a small one, as the plants don’t grow well). Don’t use pots that curve inwards at the top either for these long-term plantings, as they are next to impossible to remove the rootball without breaking the pot. can scrape off 10cm or so of soil and top up with fresh soil, something like John Innes No.3. Use slow release plant food pellets to make sure the plant is being fed (refer to the instructions on the packets as to the number needed). It is also a good idea to thin out some of the stems of plants such as delphiniums or phlox at this time. Take out about a quarter of the weakest ones at the base – this will ensure the remaining stems will be stronger. Any newly planted shrub or perennial will need watering in the first few weeks to keep it healthy until the roots grow. Don’t spray water on every day – use a can and give the surrounding ground a good soaking once a week. If the ground is dry use a whole can for each plant. Water in the early morning or mid-evening – not in the heat of the day. Look at your downpipes from the guttering and see if there is any way you can fit in a water butt to help conserve the water from your tap. Wiggly worms are a winner There’s a worm at the bottom of my garden and his name is, well, I don’t quite rightly know. Because actually, there are thousands of worms at the bottom of my garden, but they’re not just any common or garden worms – they’re tiger worms and they’re living in my compost heap. While we may not ever be on first name terms, I’m pretty fond of my worms. They’re part of a wonderful world of natural recyclers, quietly helping me to convert my veg peelings and garden waste into a wonderful free resource for my garden. According to Wrap (the Waste and Resources Action Programme) just one compost bin can turn an average of 150kg of food and garden waste per household per year into wonderful compost. It doesn’t sound much on it’s own, I suppose, but when you consider there are around 275,000 households across Gloucestershire – many of them with the space to compost – that’s a whole lot of food and garden waste we could all deal with sustainably ourselves. During 2013/14 the County Council spent around £11 million landfilling waste, but around 30% of the average bin can easily be composted at home. Some people get a little worried about composting at home, having heard

murmerings that it needs “the right combination of greens and browns” or dark rumours that “it encourages vermin”. But with the right information it’s easy, and in Gloucestershire we have a team of dedicated volunteer Master Composters who spread the word about the benefits of home composting. The Master Composter initiative is led by UK charity Garden Organic and supported by the Gloucestershire Joint Waste Team, and it aims to encourage more of us to consider home composting by providing hands-on advice and practical help. Composting is not only a cost-effective way for householders to manage their garden waste, but is ultimately the most environmentally-friendly way to dispose of this and other suitable biodegradable materials, such as food, transforming them into a nutrient-rich soil improver. Let the sunshine in Although the UK experiences more than its fair share of rain and temperatures not exactly favouring short sleeves, it’s still one of the biggest markets for convertible cars. Maybe it’s the clichéd wind-in-the-hair feeling that driving an open-top car provides and, if we’re brutally honest, the ‘showy’ nature of such cars that many find appealing, but with the recent advancements in car design it’s perhaps surprising that not many more people opt for top-down motoring. From a financial point of view they’ll always carry a premium over their closed roof counterparts, but the shortcomings of convertibles are now nothing compared to what they used to be. Gone are the days of a convertible having majorly compromised handling due to the loss of rigidity from having no roof, while draughty, ill-fitting hoods and the often

resulting damp interior are a thing of the past too. Buy a new convertible and it will be just as comfortable as its tin-top brethren, especially as a good deal of the open-top models now use a metal folding roof. The only downside is that when lowered, the roofs of such cars can take a healthy chunk out of boot space. However, if you like the idea of letting the sunshine in without compromising load-carrying ability or breaking the bank, there are a couple of worthwhile options. Trawl the internet for the most affordable new, fourseat, open-top models and it’ll throw up the Citroën DS3 and Fiat 500 – although strictly speaking, they’re not ‘full’ convertibles but have full-length fabric roofs. Of the two, it’s the Fiat that’s cheapest, coming in at circa £13,700 for the 500C

Pop Cabrio. It’s reasonably well equipped, with features including a CD/MP3 player, air conditioning, electric front windows and central locking, but it’s only a 1.2-litre 69hp petrol engine under the bonnet and alloy wheels are extra. Opt for the Citroën DS3 Cabrio and it’ll set you back at least £15,295. In return for their hard-earned cash, customers benefit from a decent specification that includes LED Daytime Running Lights, rear parking sensors and 16 inch black diamond alloy wheels. Like the Fiat, the most affordable DS3 Cabrio comes with a 1.2-litre engine. Neither car could be considered fast but what they lack in outright speed, they make up for in efficiency and low running costs. The Fiat for example returning nearly 60mpg on the combined fuel economy cycle. There are pros and cons for each but both are a safe bet – the Fiat having rocksolid residual values and the Citroën being voted ‘What Car?’ Magazine’s best opentop car for under £25,000 in 2014. So if you want a new convertible but are worried what a relatively limited budget will buy, don’t be – the outlook’s as sunny as it could be for affordable top-down motoring.

Any Currency Yes OK, it’s the name of one of my favourite, locallytrained racehorses, but this month ‘Money Matters’ is not off in search of gambling winnings. Well, maybe it is when I come to think about it, but not in the conventional sense of our four-legged friends at Prestbury Park. This month ‘Money Matters’ examines the risks attached to dealings in foreign currency. I have just returned from a busy trip to the US and in my normal style I left currency buying until the very last minute. Well, at the airport actually!

Plan early or be lucky! The dollar/sterling exchange rate had already moved against me in the short time that the currency market in the UK has had to react to the result of the General Election. But I had to be picked up from the floor when I was told the going rate at the airport was over 1.80. I waited and sorted it out when I got there. It set me thinking – how much money is made or lost simply by the timing of a foreign currency transaction? Anyone going on holiday is affected, as are all of our businesses that trade abroad. It’s that important to some of them that they employ full-time staff to manage their exposure. They’re not always right, mind you – the markets didn’t predict the election result any better than the pollsters did. So what to do? Plan early (do as I say not as I do obviously!) and make sure that there is a good cushion available to you should the movement be adverse. Or maybe simply be lucky!
