The story of Steinway is the tale of a family buffeted by violent political events and economic challenges and their eventual triumph through dogged determination and simple hard work. But most of all it is about an unrelenting drive for excellent craftsmanship and design, an obsession with creating the best grand and upright pianos in the world, however long it takes, whatever the cost and without making any compromises.

Henry E. Steinway was born Heinrich Engelhard Steinweg on 22nd February 1797. His early life was very different from the world of luxury and beautiful design that he was to create. His homeland was invaded repeatedly by foreign troops and eventually his father and several of his older brothers joined the army to defend their home and their village.

Many of his brothers were killed in the fighting and after the hostilities ended Heinrich and his father became foresters. Even then the tragedy continued, the hut that the family lived in was struck by lightning and collapsed, killing everyone except young Heinrich who was forced to crawl over the bodies of his father and elder brothers to safety. He was just 15 years old, an orphan and penniless. However, during his time in the Duke of Brunswick’s service, he had learned carpentry and this simple skill was to change his life. He had become intrigued by what was then called the fortepiano, an instrument that had been gaining in popularity in Europe over the last 50 years.

Built in the kitchen - the first Steinway piano Later, Heinrich’s six sons followed in their father’s footsteps. The family’s first grand piano as we would know it was built in Heinrich’s kitchen in 1836 and is currently exhibited in the Musical Instruments Museum in Phoenix, Arizona. Soon the family was producing around ten pianos a year.

The Elbphilharmonie Limited Edition Towards the end of last year Steinway & Sons unveiled eight new incredible pianos in partnership with the Elbphilharmonie, Hamburg’s iconic new concert hall.

The limited edition models capture aspects of the groundbreaking design and structure that the landmark has become renowned for. Both Steinway and the Elbphilharmonie stand for excellence in music and outstanding cultural values. Following the opening of Steinway’s SPIRIO Lounge next to the Elbphilharmonie, a thematic and geographical bridge was built between the two cultural institutions, leading to the creation of these stunning grand pianos. Limited to only eight models, the new collection reflects some of the most striking design elements of the Elbphilharmonie. The silhouette of the building shapes the music stand; an interpretation of the dot matrix on the facade elements can be found on the inside of the lid. The upholstery from the seats in the Grand Hall is used for the design of the piano bench. Available either in classical black lacquer or with oak accents, five of the models are also equipped with SPIRIO, which benefits from Steinway’s partnership with some of the greatest Steinway Artists. The innovative and extremely highquality player piano system enables the owner to experience the pianists’ performances in their own home as if it was a live performance. Following its opening in January 2017, the Elbphilharmonie has become a cult destination for music lovers. The Steinway

The Elbphilharmonie Limited Edition

& Sons Elbphilharmonie Limited Edition celebrates the new landmark by offering customers an exclusive piano with “money can’t buy” features. Each instrument sold will be represented by a selected pianist, namely Lucas & Arthur Jussen, Igor Levit, Jan Lisiecki, Brad Mehldau, Daniil Trifonov, Mitsuko Uchida, Anna Vinnitskaya and Yuja Wang, who fully support this project and will serve as the piano’s ‘Godparents‘. Future owners will receive a certificate stating the name of the selected ‘Godparent’; they will also have the rare opportunity to meet the ’Godparent’ of his/her instrument and will receive tickets for a recital in the Elbphilharmonie. SERVES 6 AS A STARTER

Pasta dough (see below) Polenta, for dusting Mushroom and Marmite Broth (see below) A little extra virgin olive oil 2 handfuls of fresh seasonal mushrooms and a handful of wild garlic, sautéed, to garnish

MUSHROOM BROTH

4 shallots, sliced 2 tbsp olive oil 2 garlic cloves, chopped 2 fresh or dried bay leaves 1 thyme sprig 1kg button mushrooms, sliced 100ml Madeira Sweat the shallots in the olive oil, then add the garlic, bay and thyme. Add the mushrooms and cook until lightly coloured. Deglaze with the Madeira. Add water to just cover the mushrooms and simmer gently for 1 hour, uncovered. Strain and chill until ready to use. MUSHROOM AND MARMITE BROTH Start the recipe as above, but after the mushrooms have coloured, add 3–4 tbsp Marmite to the pan. Cook for 5 minutes before deglazing with the Madeira and continuing with the recipe.

CHESTNUT PASTA

150g chestnut flour mixed with a pinch of salt 150g ‘00’ pasta flour10 large egg yolks

CHESTNUT AND MASCARPONE FILLING 1 banana shallot, finely chopped 1 tbsp olive oil 1 tbsp finely chopped rosemary 200g tinned sweet chestnuts, chopped 200g mascarpone cheese, plus extra to garnish 2 tbsp chopped chives Sea salt and freshly ground black pepper Making fresh pasta is simple, inexpensive and delicious. A few key points to remember: use a high-gluten flour – ‘00’ or strong white bread flour, for example – to produce the best results and an ‘al dente’ pasta. The dough can incorporate different liquids to change the flavour, richness and colour of the final product. For example, reduced red wine mixed with egg yolks produces a rich dough which would work well for a meaty ragout. On the other hand, a bright basil purée as the base of a pasta dough would match a summery, fresh tomato sauce topped with melting burrata cheese… 1. Tip 500g ‘00’ pasta flour on the work surface and make a well in the middle.

Chestnut tortellini in mushroom & Marmite broth... Make the chestnut pasta using the ingredients to the left, and following the instructions below.

To make the chestnut and mascarpone filling, sweat the banana shallot in the olive oil until translucent. Add the rosemary and cook for a few more minutes, then add the chestnuts. Season the mixture well and leave to cool. Once cold, fold in the mascarpone and chives and set aside.

Roll out the pasta on the thinnest setting of the machine and cut out about 60 circles, about 8cm in diameter. Put a teaspoon of the filling in the centre and fold up the bottom half of the pasta to make a semi-circle. Pinch the two sides together underneath the filling to make something that resembles a little hat. Transfer the shaped tortellini to a tray dusted with polenta.

Reheat the Mushroom and Marmite Broth if chilled. Meanwhile, cook the pasta in boiling, salted water for 2 minutes, then drain and toss in a bit of olive oil. Put the tortellini in a bowl, garnish with some sautéed seasonal mushrooms and wild garlic and serve with the hot mushroom and Marmite broth. Garnish with drops of mascarpone.

2. Mix together 3 whole large eggs and 6 large egg yolks, then pour into the flour well.

3. Start to mix the eggs into the flour with a fork.

4. Stir in circles, incorporating a little flour at a time.

The Skills... dough through twice on this setting, adding a light dusting of flour in between. Continue to bring the thickness down on the machine and pass the pasta until you have passed it through the thinnest setting.

5. Keep taking more flour into the egg with the fork until everything is incorporated.

6. Bring together into a dough with your hands. This makes enough pasta to serve 4.

7. Wrap the dough in cling film and leave to rest for 30 minutes.Shape the dough into a small rectangle, flat enough to put through a pasta machine on its thickest setting. Pass the

SERVES 4

1 whole partridge, plucked and innards removed (see below) 2 rashers of thin, streaky bacon Olive oil, for cooking and dressing 1 tbsp salted butter 3 Brussels sprouts, leaves separated 4 cooked chestnuts, thinly sliced Sea salt and freshly ground black pepper

CHESTNUT PURÉE 125g cooked chestnuts 1 tsp butter 250ml chicken stock

PEARS AND SAUCE 2 small Conference pears 400ml red wine Zest and juice of 1 orange 80g granulated sugar 1 cinnamon stick 4 cloves 2 cardamom pods 1 star anise 200ml brown chicken stock Knob of butter

CRUMBLE

1 tbsp crushed pistachios 1 tbsp chopped cooked chestnuts 1 tbsp crushed feuilletine biscuits

Partridge in a pear tree... Remove the legs and wings from the partridge (see below), keeping the breast on the bone. Wrap the bacon around a stainless steel baking rod or mould and cook, turning, under a hot grill until crispy; set aside.

For the chestnut purée, put the chestnuts and butter in a pan and cook until coloured, then add the stock and simmer for about 8–10 minutes. Blitz until smooth, adding extra stock if needed. Keep warm.

For the pears and sauce, peel the pears and place in a small pan with the wine, orange zest and juice, sugar, cinnamon, cloves, cardamom and star anise. Bring to the boil, then simmer until cooked through, about 20 minutes. Leave to cool in the liquid, then remove and reserve the pears. Strain 200ml of the cooking liquid into a pan and reduce to a thick consistency. Add the stock and reduce to a good sauce consistency, then remove from the heat and whisk in the butter. Set aside and keep warm.

Preheat the oven to 190°C/375°F/Gas 5. Heat a non-stick ovenproof frying pan and drizzle in a little olive oil. Place the partridge skin-side down in the pan to colour. Turn over and sear on the other side. Add a knob of butter and transfer to the oven for 5–6 minutes, then remove and leave to rest for 5 minutes before removing the breasts from the pigeon. Pour out the cooking butter from the pan, add a fresh knob of butter and heat until just bubbling. Add the crumble ingredients to the pan and stir into the butter. Spoon over the partridge breasts.

Quickly toss the sprout leaves in a little oil or butter seasoned with salt and pepper.

The Skills... Learning how to butcher game birds is especially useful during the autumn months when they are in abundance. You can apply the same techniques to many birds – pigeon, turkey, duck, pheasant, partridge, even grouse – but it’s just a little more fiddly when the birds are little. The possibilities once you know how to do this are numerous, for example leaving them whole and tied, ready to roast; removing the legs and deboning them, ready to stuff and cook.

to use in the same recipe or for another. Cut away the skin at the neck of the bird. Feel for the wishbone. Using a sharp knife, cut out the wishbone and pull it away.

2. Using the knife, or scissors, cut the wings down through the joints to remove.

3. Remove the legs by pressing them backwards and then cutting all the way through the hip joint.

SERVES 10

400g very ripe peaches, halved and pitted 175g caster sugar 2 tsp lime juice 400g whipping cream, semi whipped 50g confit ginger in syrup, chopped into small pieces 100g lime marmalade, plus extra to serve Finely grated lime zest, to decorate

ITALIAN MERINGUE 50ml water 125g caster sugar 60g egg whites (about 1½ eggs)

Iced peach, lime & ginger soufflés... Line the insides of ten 8cm chef ’s rings or cups with baking parchment to come 3–4cm above the rims and place on a flat baking tray. Blitz the peaches with the sugar and strain into a large bowl, then stir in the lime juice.

Make an Italian meringue with the water, sugar and egg whites (see The Skills below, but use all the sugar for the syrup and don’t put any directly in the egg whites).

Fold the semi-whipped cream into the peach mixture, then fold in the chopped ginger, followed by the Italian meringue. Very gently fold in the marmalade so you can see it marbled through the mixture.

Fill each lined ring or cup with the mixture and place in the freezer to set. When set, remove from the rings or cups, peel off the baking parchment. Serve with an extra spoonful of lime marmalade and some grated lime zest.

The Skills... Italian meringues are made from whisking a syrup cooked to 121°C into egg whites. It is a very versatile meringue and once you have grasped the method, you will be able to create countless masterpieces of your own. The key to getting it right is to a) to make sure you have whisked your egg whites before adding the syrup; b) to let the syrup settle a minute after reaching 121°C before pouring into the whisked egg whites; c) to whisk for 5 minutes to cool before using...

Put 60ml water, 240g caster sugar and 15g liquid glucose (optional, to make the meringue more stable) in a saucepan on a medium heat and bring slowly to the boil, brushing down any crystals forming on the sides using a wet pastry brush. Place a thermometer in the liquid, increase the heat and cook, without stirring, to 121°C.

2. Whisk 4 medium egg whites to stiff peaks. Slowly add 30g caster sugar while whisking, to help stabilise the meringue.

3. After the syrup has settled off the heat for a minute, pour it into the meringue in a steady stream, whisking constantly.

4. Continue to whisk until the mixture has cooled, then either use immediately or store in an airtight container in the fridge.

Record Breaking Fundraising

Independent residential estate agents Penny & Sinclair took part in the OX5 Run at Blenheim Palace raising money for the Oxford Hospital’s Charity supporting Oxford Children’s Hospital at the John Radcliffe. 24 employees of Penny & Sinclair (including the office pug, Dexter) came together on Sunday 24th March to run 5 miles for the charity. They have broken the corporate fundraising record for this event by raising £9,000 including gift aid (with more money coming in) to help children with serious diseases. In addition, Penny & Sinclair were in the top 5% of JustGiving fundraisers in March, out of over 40,000 fundraisers. After years of taking part in the OX5 Run event, last year Penny & Sinclair staff visited the children’s hospital to meet the staff and see where all the money raised is spent. The charity and hospital staff are fantastic; brightening the lives of children and parents effected by their illnesses and it’s apparent how important every penny raised is. The Oxford Hospitals Charity is currently building additional accommodation of 60 rooms for parents staying over to look after their child, with the money raised from this event and other local events.

Taking the staff and other companies around the hospital and wards is a fantastic way to motivate the teams to take part in more fundraising charity events within the local community and encourage other people to do so for this amazing cause.

Combining unrivalled Range Rover heritage with cutting-edge technology - designed, engineered and manufactured in Britain - it meets the needs of today’s customers. The introduction of jewel-like elements such as super-slim Matrix LED headlamps provide a more sophisticated front and rear lamp graphic. Flush door handles add to the smooth, sculpted aesthetic, while sweeping directional indicators create a purposeful signature. Optional RDynamic details and burnished copper accents add to the unique appeal. Inside, the finely crafted design integrates uncluttered surfaces and simple lines with carefully curated materials to create a luxurious, minimalist, digital cabin. Technical textiles that use recycled plastics are offered as premium alternatives to leather, such as a Kvadrat wool blend and Miko Dinamica® suedecloth, as well as Eucalyptus and Ultrafabrics™ options. The cabin is designed to be a calm and serene space, ensuring comfortable, healthy and happy occupants, with technologies such as the twin touchscreen Touch Pro Duo system, featuring new, faster software, 16-way seat controls and cabin air ionisation that complement the increased interior space. The footprint is almost identical, yet built on Land Rover’s new mixed-material Premium Transverse Architecture, there is more interior space than before. A longer wheelbase yields 20mm extra rear kneeroom and an increase in small item stowage – the larger glove box and centre cubby can now fit tablets, handbags and bottles with ease. The luggage space is 10 per cent larger (591 litres) as

well as much wider and easily fits a folded pram or set of golf clubs, with space increasing to 1,383 litres when the flexible 40:20:40 second-row seats are folded.

The new architecture has been developed for electrification, with a 48-volt mild-hybrid available at launch and a plugin hybrid model offered around 12 months afterwards. The mild hybrid powertrain is a first for Land Rover and works by harvesting energy normally lost during deceleration thanks to the engine-mounted belt-integrated starter generator, storing it in the under-floor battery. At speeds below 11mph (17km/h), the engine will shut off while the driver applies the brakes. When pulling away, the stored energy is redeployed to assist the engine under acceleration and reduce fuel consumption. Available across the range (when specified with automatic gearbox) of four-cylinder Ingenium petrol and diesel engines, the mild hybrid delivers CO2 emissions from as low as 149g/km and fuel economy from 50.4mpg (based on the new NEDC Equivalent WLTP test procedure). If the customer chooses the 150PS diesel engine with front wheel drive, Evoque only emits 143g/km. An even more efficient plug-in hybrid electric vehicle (PHEV) model and three-cylinder petrol Ingenium engine will also join the range.

Every bit a Range Rover, the compact SUV combines all-terrain capability with all-weather assurance. New Evoque features All-Wheel Drive, as well as a secondgeneration Active Driveline with Driveline Disconnect to enhance efficiency and Adaptive Dynamics to deliver the optimum balance of comfort and agility. Terrain Response 2 - technology first found on full-size Range Rover automatically detects the surface being driven on and adjusts the set-up accordingly, while Evoque can now wade through water up to 600mm (previously 500mm).

The famed Range Rover command driving position has jumped into the digital age, with a segment-first ‘ClearSight rear-view mirror’ that transforms into an HD video screen. If rear visibility is compromised by passengers or bulky items, the driver simply flicks a switch on the underside of the mirror and a camera feed from the top of the car displays what is behind the vehicle in crisp high definition. The screen provides a wider (50-degree) field of vision and superior visibility in low light.

The new Range Rover Evoque is also the first in the world to feature Ground View technology, which effectively makes the bonnet invisible by projecting camera imagery onto the upper touchscreen to show the driver a 180-degree view under the front of the vehicle. This is useful when negotiating difficult parking spaces, navigating

high city centre kerbs or tackling rough terrain and is the realisation of the Transparent Bonnet technology previewed by Land Rover in 2014.
