Ricotta Stuffed Plums This sweet treat combines a slightly sweetened ricotta cheese with nutrient-rich dark-colored plums. It is ideal for a midday snack or as a healthy dessert to end a meal.

Ingredients | Serves 4

4 red or purple plums 1 cup ricotta cheese 4 teaspoons muscovado sugar 1 teaspoon ground cinnamon Mint leaves (optional)

Decorative Display When cutting your plums, use a knife to cut a zigzag design along the edge. You can also put the ricotta cheese in a large cake decorating bag with a star tube for filling the plums. This makes for a much more elegant presentation if you decide to turn this healthy recipe into a course for your next dinner party.

1. Wash plums and cut in half. Remove the pit. Gently remove some of the flesh to create a small cup for the ricotta. 2. In a bowl, combine the ricotta cheese, sugar, and cinnamon. Stir well to blend the sugar. 3. Scoop an equal amount of ricotta cheese into each plum. Garnish with some mint leaves if you have them, and serve immediately.
