True BLUE Though it may look far from natural, the sky-blue hue popping up in everything from juices to desserts owes its striking appearance to the ocean’s superfood: algae. Blue majik, derived from spirulina, is thought to be one of the most nutrient-dense foods, with its color originating from C-phycocyanin, a protein rich in amino acids and antioxidants. Due to its slightly fishy taste, blue majik is best masked by other, stronger flavors like vanilla, peppermint, and tropical fruit, and bonded with a fat source such as coconut milk or yogurt.
