Cultivating goodness

In another life, I might just be a farmer. I try to grow what I can on the tiny piece of plantable soil at my house, but the idea of spending my days tending to life in the form of plants and produce sounds simply perfect. Plus, I love rocking a good pair of overalls! Anyway, I’m super envious of Chef Jeremy Ford, who went full steam ahead and bought 5.5 acres of land down in Homestead, learning everything he could about farm life. At Ford’s Farm, the chef grows all sorts of produce that he uses in the delectable dishes at his many restaurants—including The Butcher’s Club at PGA National Resort and Michelin-starred Stubborn Seed in Miami. You might remember Jeremy from Top Chef season 13, which he won back in 2016. Since then, he’s been taking the culinary world by storm, and he just opened a new restaurant in the Florida Keys (Salt + Ash at Hawks Cay Resort) and another Stubborn Seed in Las Vegas (at Resorts World). Jeremy is a special dude—super talented, funny, and always a blast—and I’m lucky to call him a friend. Back in February, he let us hang out at Ford’s Farm and see all the magic he’s been creating there. Take a look at what’s been going on at the farm and learn more about Jeremy in “The Maverick,” which starts on page 46. (And happy birthday, Jeremy!)

To celebrate our annual Foodie Issue this month, we also asked four local chefs to take a staple in the realm of culinary delicacies—caviar—and create unique, sometimes unexpected dishes (like caviar tacos!). If your palate appreciates the finer things, these dishes should be right up your alley. See what these talented chefs came up with in “Ode to Caviar” on page 54.

Another chef I got to know more about recently is Kyle Ripple. Kyle got his start at local spots like Guanabanas, Lynora’s, Food Shack, and Leftovers Café before moving into the private chef sector, preparing meals for top athletes. Now he also runs a chef concierge service called Ripples in Motion, which pairs private chefs with clients. Learn more about Kyle and his company in “Ripple Effect,” beginning on page 38.

One more thing: Mardi Gras may be over, but you can get your fix of New Orleans–style Cajun culture and cuisine right here in Jupiter at the Cajun Crawfish & Music Festival, which comes to Abacoa Town Center April 5-6. Welcome to the April issue of Jupiter Magazine! Grab a refreshment and sit back and enjoy reading our annual Foodie Issue. We have so many wonderful places to dine here in northern Palm Beach County, and over the many years I’ve lived here, I have seen numerous new restaurants open. The dining culture here is amazing, and there are so many hidden gems! I look forward to this issue every year to see what our editorial team has put together.

This has been quite a busy season, and I’ve attended such incredible events for well-deserving charities. And things aren’t slowing down in April! On April 5, Bella’s Angels is hosting its annual tea at The Country Club at Mirasol in the afternoon, and that evening, the Wild & Scenic Film Festival kicks off on the grounds of the Jupiter Inlet Lighthouse—it will be such a beautiful evening! On April 10 is the Go Red for Women annual luncheon at PGA National Resort. A couple of other events not to miss: the Carlin Park After Dark live music series continues April 12 at the Seabreeze Amphitheater, and the Cajun Crawfish & Music Festival will be happening at the Abacoa Amphitheater April 5 and 6.

Our amazing planet deserves TLC year-round, but Earth Day serves as an annual reminder every April 22 to roll up our sleeves, get a little dirt under our nails, and nurture the land that gives us life. There are many ways you can show the planet some love—by taking part in a beach cleanup, planting a native tree, or simply getting outside and enjoying nature.

There are also a bunch of special events going on this month around Earth Day you might consider. On April 5, the outdoor Wild & Scenic Film Festival will showcase short films celebrating the beauty of nature (jupiterlighthouse.org) Bring a lawn chair to the Jupiter Inlet Lighthouse & Museum and enjoy a night of educational cinema under the stars.

On April 12, don’t miss the big St. Lucie Earth Day Festival at Oxbow Eco-Center (stlucieco.gov). This year’s theme is “Growing a Greener World,” and activities and vendors will be sprinkled throughout the 225-acre site.

The festival seeks to highlight the interconnectivity between community, health, environment, and economy and will include a sustainable art fair showcasing artwork created with recycled or repurposed items—everything from sculptures and paintings to fashion and poetry.

Join The Friends of Jonathan Dickinson State Park at the Pine Grove Pavilion in Hobe Sound April 19 to help pull invasive plants and learn why they are harmful to natural species (friendsofjdsp.org). “Earth Day at Jonathan Dickinson State Park is all about connecting with nature and taking action to protect it,” says board president Jim Howe. “We invite the community to join us for a morning of adventure, learning, and restoration as we celebrate the planet together.”

Forget your worries and laissez les bon temps rouler! The Cajun-French phrase meaning “let the good times roll” is befitting for the upcoming Cajun Crawfish & Music Festival, which is always a good time. Currently in its seventh year, the event celebrates the vibrant culture with Louisiana cooking, live music, and more. This year’s festival comes to Abacoa Town Center April 5-6, bringing a little bit of the Big Easy to South Florida. We chatted with event coordinator (and New Orleans native) Virginia Sinicki of the The KVJ Show on WRMF radio to get the inside scoop.

Being from New Orleans, how would you describe Louisianians?

Louisiana people love to share their culture—the stories, food, and cocktails— and they’re very animated and hospitable. They never met a stranger and love sharing their vibe with new people, and you feel that at the festival.

What can people expect to see?

The festival is a lot like going to the French Market in New Orleans, with clothes, jewelry, pottery, hot sauces, authentic Louisiana memorabilia, and lots of artwork. This year, for the first time, I’m going to implement an art mural, where

kids can come out and paint a giant crawfish. We’re going to raffle it off and donate all the proceeds to our two favorite charities, Maddie’s Fight Foundation and Little Smiles.

What’s your go-to festival food and drink?

For food, it’s got to be the hot-oiled Louisiana crawfish. It’s fun to give people a tutorial on how to peel them. In Louisiana, we suck the head to get to all the spices and juices in there—it’s just the most delectable little sip. Sometimes we put some vodka in there and make a spicy little shooter. My favorite drink at the festival is the Champagne Hurricane, which is a very strong rum punch mixed with Champagne or prosecco. We also have authentic jambalaya, crawfish étouffée, gumbo, café au lait, beignets, po’ boys, and raw oysters.

What are you most looking forward to this year?

I love seeing people learn how to secondline. It’s a line of people that dance behind a big brass band, kind of like a conga line that weaves through the crowd. I’m also excited that [New Orleans funk/soul band] Flow Tribe will be playing. cajuncrawfish musicfestival.com; $5 admission ❖

DOODLE LOVE

Anew doggrooming facility in Jensen Beach is dedicated to servicing today’s uber-popular doodle breeds. With goldendoodles, Labradoodles, Aussiedoodles, and Bernedoodles growing in popularity, Vanessa Rushing— a groomer with more than 20 years of experience—recognized a need for a salon dedicated to doodle mixes (and mixed breeds in general), which have unique coat types and grooming challenges. She and her husband, Steven, opened Certified Doodle in October.

“The breeding of doodles is booming,” Rushing says. “A lot of doodle owners are first-time dog owners, and a lot of professional dog groomers haven’t had the proper training to groom doodles with the fundamentals. We work with your dog to make sure it has the best experience possible, and we want to raise the bar for what’s expected within the grooming industry.”

The salon’s approach is gentle and transparent. Groomers don’t use muzzles, and owners are welcome to watch the whole process if they’d like.

“Our grooming area is like a stage,” Rushing says. “People can see what we’re doing without even coming into the shop.”

Seaweed Revolution

Seaweed aquaculture is making waves in South Florida, offering potential benefits like alternative biofuel and fertilizers, natural filtering of our waters, and more

Researchers in South Florida are diving into the promising world of seaweed aquaculture, exploring how this sustainable practice can help tackle environmental challenges while boosting the local economy. Experts from the University of Florida and Florida Atlantic University are investigating how seaweed farming in the region’s tropical waters can help in ways like purifying runoff and improving water quality. With seaweed’s potential to be used in everything from biofuels to cosmetics, the natural resource could lead to an important new industry in our area, transforming Florida’s coastal ecosystems— and its economy—in the process.

In collaboration with Florida Sea Grant—a university-based statewide program that supports research, education, and outreach to promote the sustainable use and conservation of Florida’s coastal and marine resources—UF recently

received a $250,000 grant from the National Oceanic and Atmospheric Administration (NOAA) to explore local seaweed aquaculture. Ashley Smyth, PhD, an assistant professor at the UF Institute of Food and Agricultural Sciences Tropical Research and Education Center and the project’s lead researcher, explains that seaweed acts as nature’s filter, soaking up harmful excess from the water. “Seaweed is like a sponge,” she says. “As it photosynthesizes, it removes things like carbon dioxide and nitrogen from the water to help it grow. The removal of toxins is a net positive for water quality, marine life, and the environment as a whole.”

Researchers at FAU’s Harbor Branch Oceanographic Institute are currently studying seaweed’s ability to do exactly that. Rachel Brewton, PhD, part of the university’s integrated multi-trophic aquaculture system research team, says a good example of seaweed’s ability to filter water in South Florida is already underway at the Osprey Acres Stormwater Park & Nature Preserve in Indian River County. “The facility removes water from the Indian River Lagoon and runs it across an aquaculture system of microalgae the length of a football field,” she says. “You end up with much cleaner water, which is obviously better

for both humans and nature. The water is then pumped back into the lagoon.”

Smyth’s team plans to identify species with high-value compounds like bromoform that can be used in cattle feed to mitigate methane emission. She is also optimistic about the farmed seaweed’s potential for other uses such as biofuel, cosmetics, fertilizers, and pharmaceuticals.

According to Stuart-based dietitian and nutritionist Tegan Bissell, seaweed has a lot of nutritional value as well—it provides nutrients like vitamins and omega-3s, contains fiber that boosts gut health, is high in protein, and has antiinflammatory properties. However, only about 145 of the more than 10,000 species of seaweed are harvested for human consumption, and those species (like kelp and nori) are typically found only in colder waters.

Still, Smyth is excited about the future of seaweed farming in South Florida. “Our project’s goal is to identify options for growth, see what’s native to Florida, see which compounds they have, and how those compounds can be used,” she says. “We don’t know how viable of a market seaweed is yet, and that’s what we’re diving into.” trec.ifas.ufl.edu; fau.edu/hboi/research ❖

INTO A SUCCESSFUL “CULINARY CONCIERGE” BUSINESS THAT CONTINUES TO EXPAND

It all started with an over-medium egg—or, in Kyle Ripple’s case, a poorly cooked one.

Back in 2015, having recently graduated from high school, Ripple was staying at his family’s Jupiter condo with no real career plans—except to work on finding one. One morning while having breakfast at Another Broken Egg in Harbourside Place, he struck up a conversation with the restaurant’s chef, who invited Ripple back to the kitchen for an impromptu culinary test. His assignment? Cook an over-medium egg.

“I totally messed it up,” recalls Ripple, whose only restaurant experience prior to the over-medium egg episode was bussing at Guanabanas as well as a restaurant in Ohio, where he grew up. “The chef even said, ‘I don’t know if this is going to work.’” After breakfast, he drove straight to Publix and bought several egg cartons to practice making over-medium eggs at home.

Preparing meals may not have come easily to Ripple, but he had two important traits going for him: passion and a strong work ethic. “Where I come from in northeast Ohio, it’s a steel town, and hard work is part of who we are there,” he says. “I just brought that to Jupiter.” Within a few days, he returned to the same restaurant

and cooked a perfect over-medium egg—and he was hired.

Over the years, Ripple cut his culinary teeth in the kitchens at Lynora’s, Dive Bar, Food Shack, and Leftovers Café, working his way up from sous chef to head chef. “I was enamored with what I was doing,” he says. “I would work a 14-hour shift and come home to figure out how I could get better.”

Sometime in 2020, Ripple felt the itch to leave the restaurant business and become a private chef. Colleagues in the field raved over their ability to travel with clients and the freedom they had to plan meals. A friend who worked as a physiotherapist for PGA golfers recommended Ripple to

serve as personal chef to golfer Victor Perez during the entirety of the U.S. Open that year, and after just one week, Ripple was hooked. “When I left that tournament, I told myself, ‘This is what I want to do,’” he says.

Today, Ripple prepares and plans meals for big-name athletes including golfer Dustin Johnson and his family and MLB pitcher Jack Flaherty. For Ripple, the upsides to being a private chef have few boundaries. “With restaurants, it’s cooking food for a bunch of people, most of whom you’ll never talk to,” he says. “But as a private chef, I get to know people and cook meals that impact them on a daily basis. It’s a lot more rewarding.”

His work as a private chef also led to a new business. In 2023, Ripple partnered with Mark Tailby to launch Ripples in Motion, a chef-placement agency that connects private chefs with individuals and organizations. Today, Ripples in Motion boasts a network of 160 private chefs who work with families as well as in-house at high-end developments.

Ripple and Tailby have recently expanded the company, adding chefcurated meal-prep services and wine tastings to their menu of services. With meal-prep service, the client and chef work with a nutritionist to determine an optimal meal plan that is tailored to the client’s needs. Chefs can prepare meals at the resident’s home or cook them in their commercial kitchen and deliver them already made. At the wine tastings, clients have the chance to converse directly with an advanced sommelier, Cynthia Betancourt, who

shares the history of the wineries that produce the varietals and educates guests on things like flavor profiles and grape characteristics.

Ripple has come a long way from that kid who couldn’t cook an over-medium egg just 10 years ago. And he couldn’t be happier with how his professional life has panned out.

“Being a private chef is so rewarding,” he says. “I get to meet people, get to really know them, and cook meals that impact them on a daily basis…. It goes to show that if you put your mind to something, you can accomplish anything.”

IN SUNSET KEY, PRIVATE-ISLAND EXCLUSIVITY COLLIDES WITH THE IRREPRESSIBLE ENERGY OF KEY WEST

Private islands are usually synonymous with remote latitudes, where serenity is guaranteed and the feeling of escape is complete. That’s all well and good, but there’s merit to the idea of a little excitement just across the channel. This kind of a winwin isn’t always possible, which is why Sunset Key is so adored. Chef Jeremy Ford marches to the beat of his own drummer— and it seems to be working for him. The culinary rebel, who turns 40 this month, just added restaurants in the Florida Keys and Las Vegas to his already impressive list that includes Michelin-starred Stubborn Seed in Miami and The Butcher’s Club at PGA National Resort in Palm Beach Gardens.

Oh, and he’s a farmer now too.

“So you’re a John Deere guy?” Spinosa asks. “I was a Kubota guy at first, but it didn’t have the horsepower I needed,” Ford replies. “My buddy got me up to a 65 horsepower John Deere. It won’t do everything, but it’s enough to get my auger in the ground and start planting fruit trees.”

Two years ago, debating the pros and cons of tractor models is probably not something Ford would have

found himself doing. But these days, the chef begins most mornings at the wheel of his favorite ride—a John Deere 5065E—surveying the 5.5 acres of land in Homestead that he calls Ford’s Farm. It is a place the former Top Chef winner, award-winning chef, and restaurateur never imagined he would be. Yet now that he has added “farmer” to his repertoire, Ford says that his new profession is one of the greatest passions of his life.

Those who know Ford best are likely not surprised by his latest venture. His career path has always been a bit unconventional, starting as far back as 7 years old when

he picked up not a spatula but a guitar. “I was hell-bent on playing,” says Ford, who spent his early childhood in Jacksonville and dropped out of high school in his early teens to take his shot at being a rock star. “I went out to L.A. and toured. I played in a bunch of metal bands, but the one that ended up making it was Shinedown.” The group released their debut album in 2003, long after Ford had left the band. “It was kind of bittersweet,” he says. “I guess if I had stuck it out, I would have made it, but it just wasn’t meant to be my path.”

What was meant to be his path, apparently, was to become one of the most renowned chefs of the moment. Newly out of the music business, Ford landed a job at Matthew’s Restaurant in Jacksonville when he was 15. “Matthew’s was a tasting restaurant with very high standards,” he says. “I got great training at a very young age, but it was very intense.” After two years there, he got the itch to expand his cooking experience and moved to California with his best friend to seek out new opportunities. After asking around, he learned that L’Orangerie, a French restaurant in Coronado, was the place to go—so he went. “We knocked on the back door, and this tall French guy with glasses opened the door,” says Ford. “We told him, ‘We’re here to work.’”

At L’Orangerie, Ford focused on learning everything he could about French cooking. “The chef was right out of Nice, France, and every single day we were learning these old French techniques that you rarely see anymore,” he says. “I felt very fortunate to be in a place where we were learning such crazy techniques at such a young age.”

When his mother fell ill, he returned to Florida

in 2004 and contemplated his next career move. He set his sights on Miami, citing the city’s diverse culture and cuisine as what enticed him. He inched his way there—moving first to Fort Lauderdale in 2007 to work for Dean Max, who owned a series of successful restaurants including his flagship 3030 Ocean. Ford helped Max open new restaurants, they wrote a cookbook together, and Ford did his first James Beard dinner in New York. Then, in 2012, he got a call: Jean-Georges Vongerichten—a legend in the culinary world—was opening a restaurant in Miami Beach. Ford was hired as chef de cuisine at the esteemed chef’s new Matador Room. “Working under Jean-Georges was the job of my career,” says Ford. “He changed the way I season fish, how I look at produce… He was such a big influence in my career.”

Ford and his lifelong friend Joe Mizzoni sample some fresh Hakurei turnips. “He’s literally my lifeline,” Ford says of Mizzoni, who is also his farm/ restaurant business partner.

It was Vongerichten who encouraged Ford to interview for Bravo’s Top Chef in 2015— and also may have helped get him cast. Recalls Ford: “I was on a Skype call interviewing for Top Chef, and JG [Jean-Georges] walked into the room. They all saw him behind me. What better endorsement do you need?” The producers gave Ford the nod, and he flew to California to compete on Season 13 of the show. Ultimately, he emerged as the season’s winner, an achievement that brought him national fame and launched a new stage in his career. He was 30 years old.

In 2017, Ford opened his first restaurant, Stubborn Seed in Miami Beach (stubbornseed. com), which was awarded its first Michelin star in 2022. He made his mark in Palm Beach County with The Butcher’s Club at PGA National

Amid all these openings, Ford’s wheels were turning. “I had money saved up, and I thought about what I wanted to do with it,” he says. “I really wanted to get closer to the earth, and I decided it would be cool to learn what it takes to be an organic farmer.” He started driving around the Redland area of Homestead looking for land. “We were looking at 2-acre lots, and then it morphed into 4 acres, and somehow I ended up with 5 and a half acres,” he says. He bought the farm in July 2023, not really knowing much about “working the land”—but luckily, the farm had belonged to a woman with a master’s degree in horticulture. “She took me under her wing and taught me everything she knew about the land,” he says.

Just three months after Ford bought the farm, the winter growing season began—and he got a crash course in being a farmer. “I didn’t know what I was doing,” he says. “I would call my farmer friends and try to learn what I could.” The previous owner had grown all her plants in pots, so the soil hadn’t

yet been cultivated for seed. The land was on coral rock, so Ford had to use an auger to break through so he could integrate topsoil. “I spent thousands on Caterpillars, just grinding away at this hard coral rock,” he says. The good news was that the coral provided lots of calcium, which is great for growing.

By the end of the season, he had succeeded in growing okra, eggplant, tomatoes, herbs, carrots, and radishes. Says Ford: “It was just enough success to tease me to want more.” Ford’s Farm was officially in business.

Going into his second growing season, he upgraded to his beloved John Deere tractor and focused on expanding his plantings. He now grows more than 40 different crops including carrots, turnips, hibiscus, lemongrass, Swiss chard, allspice, eggplant, okra, broccoli, cauliflower, and tomatoes. His harvests are shipped to his various restaurants to be used in food and drink items. He also added bees to the property to generate fresh honey.

Last November, Ford completed construction on a 7,000-square-foot event space on the farm, where he hosts farm-to-table dinners. (The space is also available for private rental.) At press time, he had already hosted two farm dinners in the space featuring a multi-course menu with food grown on the farm, and he plans to do more. “We’ve had hundreds of people reaching out asking when we will be doing more dinners,” he says. “I’d like to be doing two dinners each month from November to March or April.”

The farm is a happy place for Ford, but he has no intention of slowing down and living “the simple life.” In fact, his life is quite possibly busier than ever at the moment, as he continues to expand his culinary empire. In January, he opened Salt + Ash at Hawks Cay Resort (hawkscay.com) in the Florida Keys, and in February, he brought Stubborn Seed to Vegas, opening a second restaurant under the name at the luxury hotel Resorts World Las Vegas. On the horizon: restaurants in Aruba and Columbus, Ohio.

As Ford looks back on the many incredible chefs who have mentored him along his journey, he hopes to foster the same passion for food in the next generation. He is building an internship program on the farm for culinary students to learn not just about cooking but also about where their food comes from. “They don’t teach you that in culinary school,” he says. “If the information is out there, there will be a lot more chefs growing food and a lot more chefs caring about where their product comes from. The Pearl invites guests to get “nauti” with the Blue Pill cocktail, a mix of Espolòn Reposado, pineapple, Munyon’s Paw-Paw, coconut cream, lime, and blue spirulina. Other standouts on the tiki-themed cocktail menu are the Tan Lines Margarita (made with tajin foam), the Coffee Colada (a piña colada with a coffee finish), and the Pearloma (their spin on a Paloma). Olsen says he tests new items at farmers’ markets in Stuart and Hobe Sound, seeking feedback before adding them to the menu.

Locals are enjoying a fresh new culinary experience at the North Palm Beach Country Club. The Clubhouse, which replaced Farmer’s Table, is open to the public and features a bistro-style menu.

The Clubhouse is managed by Lessing’s Hospitality Group, the company behind area favorites like Lucky Shuck, Beacon, and the Pelican Club in Jupiter. “We were aware of the property for years,” says Michael Lessing, who had originally passed on the opportunity to work with the Village of North Palm Beach in 2018, which is when Farmer’s Table entered the space. “[Back then], we were just getting acclimated to the area with the Pelican Club.” This time around, however, the timing was perfect—and Lessing took the reins on the new culinary vision last summer.

After a six-week renovation, The Clubhouse was up and running by late September. “We gave the space a facelift to brighten things up,” says Lessing. “Fresh colors and a fresh

look to go with the fresh new menu.”

The new menu was cultivated by Executive Chef Shane Johnson, who came from Beacon at Charlie & Joe’s at Love Street. Johnson manages both the upscale dining experience at The Clubhouse and the more casual vibe at the Grill Room. The chef describes the menu as “super seafood forward, plus brined chicken, duck and turkey, and new twists on classic favorites.” Popular menu items include the Faroe Island salmon with paella-style risotto; filet mignon, garlic mashed potatoes, and butter-poached jumbo asparagus served with a brandy-peppercorn sauce; Clubhouse chicken with lemon, butter, greens, and roasted garlic-mustard aioli; and the Bistro burger with smoked cheddar, caramelized onion, and horseradish au jus. The Clubhouse also offers a Sunday brunch and a $25 prix fixe lunch Monday through Saturday.

Next door at the Grill Room, diners can indulge in more casual fare like wings, burgers, fresh salads, and handheld sandwiches. (Guests are welcome to order from either menu in both restaurants.)
