Ready for summer

I

love being a Floridian, but there are a few things I truly miss about living in New England. My family for sure. Snow and trees that aren’t palm trees. And spending summers on Cape Cod. I guess I’m feeling a little nostalgic as I type this editor’s note. My whole family still spends summers at the same cottage together— except me, being all the way down here in South Florida. I’m feeling sad about that today, but I’m happy at least that I have so many wonderful memories of those summers. That said, I’m definitely looking forward to this summer down South. I can’t wait to get outside, explore Jupiter, and just be FREE! I’m excited to listen to live music, see friends, and do all the stuff I haven’t done much of for a while. Hooray for summer! In this July/August issue, we include some fun ideas to help make your summer amazing. Take a road trip to some of the cool destinations right in our state—with your honey, with your family, or with just yourself. Turn to page 52 for some suggestions (plus, if you’re thinking about spending a few days down in the Keys, you’ll want to read about this one very enticing spot on page 28). Beginning on page 42, we put together a super handy guide to some of the pet-friendly parks, beaches, music venues, restaurants, and other fun activities in the area where dogs are welcome. My sweet Teddy is too old to do much adventuring these days, but I definitely plan on bringing him out to at least a few of these spots. Oh, and don’t forget to check out the feature on page 34, where we get to know a few of the great (single) men who live in the area. Three of the guys are pictured on our cover, and you can read all about them and others inside. I hope your summer is everything you want it to be and more. Peace and blessings,

Back on the road again

CHASIN A DREAM PHOTOGRAPHY

W

ho remembers the lyrics of a catchy little tune from the 1970s that went: “Me and you and a dog named Boo, travelin’ and livin’ off the land, me and you and a dog named Boo, how I love being a free man”? It was a 1971 debut single by Roland Kent LaVoie (stage name: Lobo) about two nomadic hippies and a dog taking a cross-country road trip in a dilapidated old car and how they couldn’t wait to get back on the road again. While I never would have remembered who sang it without looking it up, I do remember how it makes me feel every time I hear it. The song was stuck in my head like the humidity on my skin on a recent road trip to the Florida Keys with my son, Dylan, and our dog, who we affectionately refer to as Boo. While my son thought it was the nerdiest song ever, I kept thinking about how it brought back such fond memories of simple times, simple lives, and simple pleasures. Memories like hopping in my 1969 Camaro and hitting the road, heading to the beach, to a concert, to reconnect with a childhood friend, making just enough money to get me to the next adventure. It was a time of fewer responsibilities and more unbridled freedoms. Like the famous chocolate-covered Key lime pie on a stick, this was nostalgia on a stick for me. Road trips do that: They make you slow down, look out the window, and dream about the good old days or what lies ahead. There are so many great Florida road trip destinations to discover this summer, whether you’re traveling with family, alone, or with Fido (they need to enjoy the dog days of summer too). This summer, I hope you travel like it’s 2019, especially now that the world has opened back up. And if you’re in the mood for a staycation, there’s no better place than our little slice of paradise. This issue of Jupiter Magazine is a combined July/August summer edition, so we’ll see you back in September with our Leadership Issue and our Leaders of Palm Beach County profiles—please contact me to reserve yours. Have a great summer and safe travels!

ou’ve likely enjoyed a bike ride on land—but have you ever biked on water? Give it a go with a visit to Paddle the Pointe. Owners Lori Griffith and Alex Cotleur have expanded their paddleboard and kayak business at Jupiter Pointe Marina with a new rental option: the Hydrobike. “One of the really cool things about this bike is that virtually anyone can ride it, and they are great in wind and waves,” says Griffith. The bikes can be used by anyone over 5 feet tall and come

equipped with two side platforms that can accommodate tiny tots and furry friends. Cotleur offers daily lessons and tours and says Paddle the Pointe is an ideal location to give Hydrobikes a spin. “We are next to two sandbars and across from a preserve, so being on a Hydrobike gives the rider a much clearer view of the water world below and provides a level of comfort for some who are a little leery of a paddleboard,” she says. paddlethepointe.com —Melissa Puppo J U LY/ A U G U S T 2 0 2 1 | JUPITER

STAYING Afloat Live Like Jake opens a new indoor swim facility to aid in its mission of preventing childhood drowning tragedies

JEFFREY LANGLOIS

I

n 2014, Keri Morrison started the Live Like Jake Foundation to honor her son, Jake, after he passed away in a drowning accident. At first, Morrison’s mission was to help people live life positively no matter what circumstances come their way. But when she began taking her daughter to self-rescue swim classes for infants and young children, her mission evolved. “Once we enrolled Julia in lessons and saw how they could have saved Jake’s life, we decided to become a nonprofit to raise awareness about childhood drowning prevention,” shares Morrison, who left her corporate job to focus on the cause full-time. Aside from promoting awareness, Live Like Jake also raises funds to secure scholarships for self-rescue swim lessons for families who have financial difficulties and offers emotional and financial support to those who have experienced a drowning tragedy. To date, Live Like Jake has provided more than 2,600 scholarships in 38 states. This spring, the organization took things one step further by unveiling a new indoor swimming facility in Palm Beach Gardens. “Jake passed on November 30, which is an off-season time,” says Morrison. “So to me, it was important that the lessons could

continue all year as well as into the evening hours.” Lessons are taught by ISR (infant self-rescue) instructors and are usually five days a week for about six weeks, depending on the child’s skill level. “These lessons are the last layer of defense for your child,” says Morrison, who cautions that many parents refute the need for lessons because they don’t have a pool or live on the water. “Well, neither did I,” she notes. “If you live in Florida, there is water everywhere.” While it’s been more than seven years since Jake’s passing, Morrison says days are still painful, but she finds comfort in the fact that his memory lives on. Says Morrison: “All of our scholarship families get pictures of Jake. The swim instructors all wear a rash guard with a picture on it. They’ll send me stories of how the kids will ask, ‘Who’s that?’ It warms my heart that people still talk about him—that he matters.” For more information about enrolling in swim classes, visit livelikejake.com.

oms Amy Abbott and Stephanie Barimo opened Coastal Kids inside The Gardens Mall in 2019, offering beachwear for children that is not only cute but also protective in the sweltering sun. “Every day is a beach day when you live in the Sunshine State,” says Abbott. “Our swimwear provides stylish sun protection so you can enjoy your day by the pool, at the beach, or on the boat and not worry about harmful sun rays.” The store carries popular brands such as Snapper Rocker, Quicksilver, O’Neill, and Roxy in an array of high-quality goods. And last year, the duo took the business a step further, launching their own line under the

oggerhead Marinelife Center is offering an array of turtle-centric activities this summer for all ages. Starting in August, the Sunrise Nest Excavation programming series ($18/nonmembers; $16/members) will offer insight into LMC’s research endeavors. Join staff as they lead you around local beaches for an in-depth look at the nesting and hatching processes of sea turtles. You’ll also have the opportunity to witness a live excavation and create your own data sheets during the early-morning adventure. In the evenings, you can also take part in “hatchling releases.” This experience ($22/nonmembers; $20/members) begins at 8 p.m. at LMC’s outdoor Sea Turtle Hospital and is followed by a presentation and a trip to the beach to watch as sea turtle hatchlings are released into the ocean. Online registration for both activities begins July 1. marinelife.org

The Town of Jupiter has just made it easier to keep our community and waterways clean, thanks to the Beach Bucket Foundation. New “bucket cleanup stations” have been installed at four Jupiter parks and waterfront locations like Abacoa Community Park (there are also other existing locations nearby, including Juno Beach, Loggerhead Park, and Ocean Cay Park). Simply grab a bucket on your next outing and use it to pick up any litter you see during your excursion. beachbucketfoundation.org.

A Winning Combo THE PINE SCHOOL TAPS A COLLEGE COACH WITH AN IMPRESSIVE TRACK RECORD AND A UNIQUE APPROACH TO STUDENT DEVELOPMENT TO LEAD ITS ATHLETIC DEPARTMENT INTO THE FUTURE win over a nationally ranked opponent in three years. The following season, he was named Centennial Conference Coach of the Year, taking the team to a first-place win in the regular conference for the first time since 2004 and landing them a spot in the Centennial Conference Championship Game and the NCAA Division III Tournament for the first time since 2008. His success continued throughout the 2014 season, when he was named the NCAA III Men’s Lacrosse Coach of the Year by the influential athletic website CaptainU. He also implemented a new strategic plan for Washington College’s athletic department and helped create a successful fundraising model. Before joining Washington, Shirk, a lifelong lacrosse player, was associate athletic director at the Naval Academy Preparatory School in Rhode Island, head lacrosse coach at Virginia Military Academy, and assistant lacrosse coach at Brown University and the University of Maryland. As he moves his family (wife, Liz, and their three children) to Florida, Shirk says he is excited about his new endeavor. “I want to get to know everyone at The Pine School, then analyze the existing programs before I find ways to improve them so we can do better in strengthening Pine athletics,” he says. “I have lots of connections through my experience and want to bring all of that with me.” His eagerness to lead the students at Pine—who range from COURTESY OF THE PINE SCHOOL

thletes at The Pine School in Hobe Sound will be greeted in the fall by a new leader—with a lot of wins under his belt. Jeff Shirk, who will start his new gig as athletic director this summer, comes to the school from Washington College in Maryland, where he led the men’s lacrosse team to an NCAA Division III Tournament as head coach and also served as assistant athletic director since 2014. For Shirk, working with student athletes is about more than just sports. He aims to make sure every student receives a well-rounded education by combining athletics, academia, and the arts. “My philosophy is a character-based approach to education,” says Shirk, 43, who grew up in New Jersey. “I want to develop the whole person through consistent routines that create an environment of integrity, compassion, confidence, teamwork, and leadership.” At Washington College, his achievements have been recognized and highly rewarded. In his first season coaching the men’s lacrosse team, Shirk—who holds a master’s degree in athletic administration from Arkansas State University and a bachelor’s degree in elementary education from the University of Maryland—led the team to its first

kindergarteners to twelfth-graders— corresponds with a passion for watching his own children grow up. “I have been so busy in the past few years that I missed some of my oldest daughter’s events because I was covering college games,” he says. “I didn’t want to wake up and realize that I have missed everything. All three of my kids will be enrolled at Pine, so I will get to be around them every day.” In addition to lacrosse, The Pine School offers soccer, basketball, tennis, golf, track, swimming, and volleyball. Shirk says he believes he won the job over other candidates because of his approach to developing the whole person and ensuring that all students live up to their potential to achieve academic success through consistent routines and embracing the benefits of positive role models. “My values and goals align with what this school is all about,” he says. “Right from the beginning, we were a good fit. I am super excited about coming to Pine.” ❖

Keeping It COASTAL ROBYN LADWIG DRAWS INSPIRATION FOR HER ARTWORK AND JEWELRY LINE FROM THE OCEAN—AND GIVES BACK TO ONE OF OUR LOCAL WATERS’ MOST BEAUTIFUL CREATURES s a self-described “lifelong creative,” Robyn Ladwig was always looking for a fun way to unwind at the end of each day spent helping with her husband’s business and caring for their children. Fortunately, her family knew exactly what she should do. “I had mentioned wanting to start a hobby to my husband, and one Christmas, he gifted me an easel and paint set and it just started from there,” she says. “I started playing around

22

with all the different avenues of art. At night, I’d tuck the kids in, go upstairs, and paint.” Ten years later, Ladwig—who splits her time between Stuart and Michigan—has taught herself how to work with several mediums, including ink, acrylic paint, and epoxy resin. The latter is her medium of choice, creating a high-gloss finish on the water-inspired paintings, jewelry, and home goods. In 2017, she started her brand, Coastal Custom Art, and began selling

her creations, as well as custom pieces she creates for clients. Her work also incorporates one semi-constant component: sand. “Loving the water, I just gravitated toward trying taking a bird’s-eye view of the shoreline, and then I thought about using real sand and found objects,” she says of her process. “I’ve had commissions from people who got married on a special beach or lake and brought me sand from the site. A lot of families will vacation every year somewhere, so they give me their sand and then gift their children a painting to commemorate the time they all spent together at that cottage or beach. That’s the beauty of what I do and why I love it so much.” Ladwig is keen to give back to the ocean she loves so much. She has partnered with the Treasure Coast Manatee Foundation (tcmfinc.org), which works to protect the species in our local waters. Since January 2021, she has donated 50 percent of the proceeds from each piece of art or jewelry sold in the organization’s gift shop. “I reached out to them because I thought that would be a wonderful way to help the manatees,” she says. “They’ve always been near and dear to my heart.” In addition to the foundation’s gift shop and Ladwig’s website, locals can find Coastal Custom Art designs at The GypSea

Cottage in downtown Stuart, and Shuckers on the Beach and Sunrise Surf Shop in Jensen Beach, as well as several boutiques along the Gulf Coast. More recently, Ladwig has begun creating one-of-a-kind trinket dishes using shucked oyster shells and handcrafted cheese boards. Says Ladwig: “I’ve turned [my hobby] into an art career, and now that my kids are all grown, I have even more time to devote to it. It’s just been wonderful.” coastalcustomart.com; @robynladwigart (Instagram) ❖

THE EXPERT IN PODIATRY Orlando A. Cedeño, DPM What is your favorite thing about Jupiter? My favorite thing about Jupiter is the family environment. It has a surprisingly smalltown feel close to big cities and provides access to my favorite outdoor activities, including golf and boating. There is no other city like Jupiter, and I am humbled to be serving our community.

How do you measure success? Success is measured by how many patients’ lives I can impact daily, either through standard noninvasive medical care or surgical correction of any underlying deformities acute or chronic.

What is your passion? My passion is providing the best healthcare that I possibly can by implementing the newest treatments and technologies. Currently, we have an excellent team that performs laser therapies for the foot and ankle along with regenerative medicine to optimize overall foot and ankle lower extremity function.

What do you do to stay motivated? What keeps me motivated is knowing how I am making a difference on a day-to-day basis with my patients. I strongly encourage patients to do daily activities that contribute to their mental wellbeing and overall health. I also enjoy spending time with my family and friends.

What conditions are typically treated in your practice? Heel pain, ankle replacements, bunions, sports injuries, foot and ankle trauma, fungal nail infections and treatment of varicose veins of the leg.

What are the current treatments for patients living with heel pain? Shockwave Therapy, Amniotic Stem Cell Therapy and Radiofrequency Therapy.

How often does your practice perform procedures in ambulatory surgery center setting? We perform 90% of my procedures in an ambulatory surgery setting. The only procedures that we perform in a hospital setting are major reconstructive surgeries or procedures on patients with restrictive co-morbidities, such as obesity.

What role do PRP injections play in foot and ankle surgery? We have done many PRP injections in our practice. These injections mainly play a role in the regeneration of soft tissue. After three to six months, the human body will decrease the inflammatory healing process. In patients with a chronic injury, one of the best options is to increase blood supply to the area. We have had very positive results with PRP injections. In the ASC setting, we have used PRP injections to augment many of our soft tissue procedures, such as ligament repair. We are also using these injections to promote bone healing. In the surgical setting, we have seen the injections lead to quicker recovery times.

JUICE Life Get your squeeze on this summer with refreshing, nutrient-rich beverages made with fresh fruits and veggies. Here, Dr. Ken Winnard of OneLife Health and Performance reveals how to “juice” safely and reap the benefits.

“J

by MELISSA PUPPO

uicing” is a hot topic in the nutrition world. Certainly, it’s not for everyone (diabetics, for example, need to take caution). But if done the right way, making your own sweet, tasty beverages at home can provide a host of benefits. “Juicing can be healthy in a lot of ways—if done properly,” says Dr. Ken Winnard of OneLife Health and Performance in Palm Beach Gardens, whose clinic focuses on prevention and education of nutrition and lifestyle. First, Dr. Winnard points out who might not want to juice. “Let’s take, for example, if someone concentrates fruit into a juice but has underlying pre-diabetes and isn’t aware of it—because there are a lot of folks flying under the radar with pre-diabetes or unable to regulate sugars consistently. They may do more harm than good by juicing,” he says. “It’s important to know what’s happening on the

26

inside, to have some lab work done and be evaluated by a medical professional.” A juicer takes fruits and vegetables from their original forms and removes components like fiber, so the remaining juice has a higher sugar content and glycemic load. “Even though it’s a natural sugar, it’s still sugar,” says Dr. Winnard. “That means you’re going to get a bigger strike in the bloodstream, and that can be detrimental to certain people. Or, if you’re juicing too often or not in the right setting, it can lead to unfavorable health consequences.” Ruling out food sensitivities and inflamed gut are also crucial before deciding to juice. That said, for the ideal candidate, juicing is a wonderful alternative to grabbing a supermarket juice packed with excessive amounts of sugar. The nutrients in fresh fruits and vegetables can help boost minerals in the body that it might have been lacking.

THE RIGHT STUFF Dr. Ken Winnard recommends using nutrient-dense veggies such as kale and cucumber.

Create the perfect at-home juice bar with tips from the pros

INVEST IN A GOOD JUICER. If you use a blender, the fiber and skin of the fruit or vegetable will be in the liquid that you’re going to consume. With a juicer, everything breaks down into concentrated macro and micronutrient levels. Dr. Winnard recommends a Breville juicer (pictured here).

Other studies have found that incorporating fresh juice into your diet can improve energy and mood, help support the immune system, and prevent certain ailments. If you want to give it a go, follow these tips from the expert. THE DETOX DEBATE Knowing how often to juice is person-specific, according to Dr. Winnard, but it’s best when done as a supplement to the whole foods you’re already eating rather than as a replacement for food. “We add juicing in sometimes to boost that nutrient load,” he says. “When I see programs, cleanses, and detoxes, a lot of them are cookie-cutter and onesize-fits-all, and that’s just not how people are. Everyone’s different. Everyone needs their specific nutrition based on what their body needs.” To that end, he says his clinic doesn’t recommend juicing by itself very often: “We need to make sure that people are getting enough nutrient-dense, high-quality foods that help drive their health forward. Having somebody just juice for an extended period of time, like with some cleanses, can prevent you from getting the calorie intake you need to maintain muscle mass or proper nutrition.” INGREDIENTS MATTER Nutrient-dense veggies like beets, carrots, celery, spinach, and cucumber paired with a smaller amount of fruit such as apple or pear are ideal and tasty. “To keep the sugar load down, you want to use less fruit and more veggies,” Dr. Winnard advises. He says using coconut water or regular water is fine and even adding a little bit of fresh orange juice can help improve the flavor profile. Two juice blends his clinic recommends include carrot, lemon, and ginger and cucumber, celery, and apple. DO IT YOURSELF Dr. Winnard’s cardinal rule: Make your own juice. “If you’re going to juice, you want to be buying the best ingredients you can get and making the juice yourself,” he says, adding that he recommends visiting a local farmers market or having produce delivered straight from a farmer. “That way, you know exactly what’s in it and not adding sugar or processed sugars or other processed foods to make it taste better.” Another word of advice is to follow the Environmental Working Group’s “Clean 15 and Dirty Dozen” list to help you reduce exposure to toxic chemicals when deciding to buy organic or non-organic fruits and veggies. ❖

Breville the Juice Foundation Cold XL, $350, Williams-Sonoma

BUY LOCAL AND ORGANIC. It’s a good idea to visit a local green market or farm stand for your produce. Alex Slawson, of Meraki Juice Kitchen in Palm Beach Gardens, will sometimes make the trip to Lake Worth to shop at Rorabeck’s Plants and Produce. Closer by, you can stop by Gardens 2 Go Food & Produce Market in Palm Beach Gardens or the J-Town Farmers Market at El Sol in Jupiter. Kai-Kai Farm in Indiantown even offers delivery service, and in a pinch, Sprouts and Whole Foods are also good options. FIND THE RIGHT BLEND. Meraki Juice Kitchen is known for its array of flavorforward juices. Take a cue from Slawson by always adding lemon, ginger, and apple to your homemade juice. “It creates the perfect balance of tangy yet a little sweet,” she says. “You can’t go wrong adding those three ingredients to any green or beet juice.”

ith many of us still hitting pause on international travel at the moment, the Florida Keys feel more relevant than ever as an exotic escape close to home. Lucky for us, the largest and most accessible key in the island chain, Key Largo, has been busy debuting one high-end oasis after another, transforming the iconic no-frills destination into one spiked with unfussy luxury. A highlight of this Upper Keys redux is Baker’s Cay Resort, Key Largo, a thoughtfully

Opened in 2019 as part of the Curio Collection by Hilton, the resort embraces a tasteful, modernist beach house feel with understated, whitewashed accommodations countered by colorful common areas. furniture and coastal elements. Floor-to-ceiling windows and private terraces dole out dreamy views of the Florida Bay and the surrounding flora. Lobby pillars double as shelves for a lending library, with hundreds of books stacked among teak furnishings and rattan chandeliers. On the culinary side, Calusa combines Creole and Caribbean flavors on a seafood-forward menu in a sleek, agave-speckled space overlooking the bay. Meanwhile, the wildly popular Dry Rocks fulfills tequila and taco fantasies of all proportions in a whimsical setting of barstools, beachfront swings, and pillow-strewn couches (floating above the sands by way of wooden platforms). Baker’s Cay flaunts two beautiful beaches: bustling Coconut Beach, equipped with loungers aplenty, a tiki bar, and kayaks and paddleboards for rent, and quieter Hammock Beach, an unofficial

adults-only swath where loungers lie half-submerged in the water under a canopy of hardwood hammock. There is a duo of heated swimming pools, too, and a pool bar to enhance the fun-in-thesun experience. For those wanting to hit the Keys’ jewel-toned waters, the resort offers activities like scuba diving, parasailing, sunset sailing, backcountry fishing, and a signature Dock to Dish program. In this half-day excursion, guests head out with famed Keys fisherman Captain Casey Scott to score the best in local catch, which is then used to create a multicourse feast. Overall, Baker’s Cay underscores the Upper Keys’ real-time revival with its stylish decor, unbeatable waterfront setting, and personalitydriven spaces. It’s at once exciting, unpretentious, and intoxicating— the promise of a faraway island that’s only a few hours’ drive south. bakerscay.com; hilton.com ❖

Soulful Soother: DR. PAUL O’LEARY

S

eeing a chiropractor can be a spine-tingling experience, which is why Dr. Paul O’Leary eases his patients’ nerves with compassion. “I do a lot of listening and take plenty of time to go over questions,” says O’Leary, 37, who owns Total Health & Wellness Chiropractic in Jupiter. “It’s important to gain people’s trust and help them feel comfortable.” In 2014, the Palmer College of Chiropractic alumnus opened his private practice after the doctor he had been working with for three years decided to move his facility farther north. Today, clients—who range from professional athletes to active moms— flock to his office on Toney Penna Drive for O’Leary’s empathetic care and specialized treatments like the “active release technique,”the gold standard in soft-tissue care. “My goal is getting people better quickly and seeing them as little as possible,” says the Jupiter resident. Born near the Bronx Zoo in New York City, O’Leary was 5 years old when he moved to Palm Beach Gardens with his parents and older brother, Joseph. Living near the beach spawned a lasting devotion to the ocean and surfing, a soulful activity he taught himself. “Surfing has become an addicting hobby,” he says. “Nature has a certain energy that’s absolutely magnetic.” Maintaining equilibrium between his work and personal life is very important to O’Leary, who paddles out between the Juno Beach Pier and the southern end of the Jupiter Inlet whenever the swells are good. When he’s not breaking waves or mitigating back pain, he can often be found playing piano and drums for local indie band Ghost Lion, which opened for One Republic at SunFest in 2019 and has toured with singer-songwriter Chris Daughtry. “Then chaos started and slammed the brakes on us,” he says, referring to the pandemic. O’Leary also enjoys spending time at home with his pet, Liddy, a little box turtle that resides in his backyard. He once tried finding her a boyfriend, but the plan backfired. “She was ferocious, and I thought he was going to die of a heart attack,” he says, laughing. “I would love for her to have babies, but I don’t think she’s ready.”

Sharp Shooter: VAN RICHARDSON

I

t was at a very young age that Van Richardson discovered the joy of music. “My brother played all the sports, so my mother said, ‘We’re going to do something different with this child—he’s going to play piano,’” says the 26-year-old Jupiter resident. Richardson learned to play songs by R&B artists like Alicia Keys and John Legend, and when he wasn’t tickling the keys, he was usually performing deafening drum solos in the garage. While studying at Christian Life Academy, a now-closed private high school in West Palm Beach, he became fascinated by design and aspired to study architecture in college. But that all changed during his senior year. “I wanted to be an architect for the longest time, then I realized I only loved the visual side,” he says. “It’s a lot different when you’re actually the one designing it.” He went back to his first love, music, and discovered the School of Music & Recording at Full Sail University in Winter Park. He toured the campus, took one look at the recording studios, and promptly enrolled in the recording arts accelerated program. “I went in thinking I’d work at a studio and do background work, but once I got into the degree and how much sound is involved in the industry, that’s what caught me the most,” he says. To combat the stress of late-night studies and long lab hours, he would indulge his visual-arts side, snapping photos with the Pentax camera his father had given him. He wasn’t ready to relocate to a music hub like Los Angeles, Memphis, or New York, so he returned home with the hope of finding a studio job. But he soon realized Palm Beach County wasn’t much of a music center. “I would tell people what I had majored in, and most didn’t know what I was talking about,” he recalls. As he searched for a transitory job to cover his rent and living expenses, he also wanted to work off the weight he’d gained at college. He joined Hard Exercise Works (now HEW Fitness) in Wellington, where he embarked on a five-week boot camp workout. After seeing his drive and results, the gym’s owners offered him a position to train members full-time. He completed a fiveweek internship, then began coaching one-hour interval-training classes that mixed condensed workouts like running and weight lifting. During a career discussion with his boss, Richardson mentioned his background in photography and video production. “He granted me access to bring in my camera gear and take pictures of the clients,” he says. He also found side work as a second shooter with Robert Perez, Chad Andreo, and other photographers/videographers he had met at the gym. Four years later (and with his boss’s blessing), he struck out to become a full-time freelance photographer/videographer. Today, he partners with new and established brands in the fitness, sporting, and retail industries and lends his creativity to bringing visual awareness to clients like Alexander W. Dreyfoos School of the Arts, Rosemary Square, The Related Group, and HEW Fitness. Despite his busy schedule, fitness remains a top priority, as well as spending time with people who matter most—like his father, a retired officer with the Palm Beach County Sheriff’s Office. Says Richardson: “A perfect weekend to me is hanging out with my pops in Port St. Lucie, just grilling, talking, and helping with little projects around his house.”

Aquatic Angel: RYAN BURGESS

B

efore he moved to South Florida in 1993, Ryan Burgess had never given the cyan depths of the Atlantic Ocean much thought. At 16, the East Lansing, Michigan native moved to Palm Beach Gardens with his family and, at 16, started working for Whitecaps Watersports, an equipment rental company bookended between The Breakers and the former Ritz-Carlton Hotel in Palm Beach. On weekends, he would shepherd tourists and hotel guests around on Jet Skis and teach them how to surf, scuba dive, and parasail. “When I became PADI-certified [Professional Association of Diving Instructors], my love for the ocean took off,” says Burgess, now 37. After graduating from Palm Beach Gardens High School, he attended the University of South Florida in Tampa for a while, studying business and marine biology. But pursuing higher education just wasn’t in the cards for him, he says. He had always enjoyed playing golf, so he returned home and became a custom club fitter at the Palm Beach Golf Center. After eight years in the sporting business, he was ready to switch gears. His friend Mark Waite had recently launched Restoration Alliance, a company that restores edifices damaged by fire, water, and mold. In 2015, Waite hired Burgess as a junior estimator, and today the Jupiter resident is an estimator/project director with the company, now under new ownership as First Onsite. In early 2018, another connection led him to what would become a huge part of his life. An ex-girlfriend sent him a link to Crossing for a Cure (now called The Crossing for Cystic Fibrosis), a charity race Piper’s Angels Foundation hosts to raise money for cystic fibrosis. A few weeks later, he met the charity’s founder, Travis Suit, at Paddlefest. Suit urged Burgess to participate in the 80-mile endurance challenge, which crosses the Gulf Stream beginning in Bimini, Bahamas and culminating in Lake Worth. At the time, Burgess was only a recreational paddleboarder, but he didn’t need much convincing. “Travis has a way of inspiring people, and he’s so beautiful with words,” he says. “I went home and signed up. I was hooked.” In the months that led up to The Crossing, he spent endless hours training at the gym and on the water. His family pitched in by dropping him off at random bridges around Palm Beach County to paddle the 5- to 25-mile distances back home. That June, he completed the transatlantic challenge in 16 hours—and he still feels pride in never having left his board to sleep or rest on one of the support boats. After that, he was thirsty for more. “It’s the best thing in the world when you land on the beach after putting your body and mind through something so epic,” he says. “I’ve been crossing oceans ever since.” In 2019, he became Piper’s Angels’ director of mentorship, preparing the next wave of boarders for the annual odyssey. In January, he hosts a paddle that increases to 20- and 30-mile intervals over a few months, as well as weekend paddling events and training clinics, to condition paddlers for the long journey held in June. Burgess regards his role advocating for those living with cystic fibrosis as one of his greatest achievements and plans on staying with the nonprofit for the long haul. “There are many things Travis and I want to do to give back and spread love and happiness around the world,” he says. “At the end of the day, that’s all that really matters.”

Flourishing Franchisee: DAN STEPPLING

L

ong before Dan Steppling became a successful restaurant franchisee, he saw a future mired in medicine. While attending Martin County High School, the Palm City native played football and wrestled while excelling academically in health science and communications. “My best friend at the time and I made a pact that he was going to be a pharmacist and I was going to be a doctor,” says Steppling, now 30. He went off to the University of Central Florida to study pre-med, but two years in he changed his career trajectory to business and switched to a marketing major with a minor in finance. “I was making good grades, but I wasn’t having any fun,” he says, explaining the about-face. “Life is too short to spend your life doing something you aren’t passionate about.” Growing up, Steppling had worked at his dad’s Subway restaurants in Stuart, Port St. Lucie, and Fort Pierce, learning important business practices like setting goals and maximizing customer satisfaction. At 24, he cashed in on that experience and acquired two of his own Subway franchises (which he co-owned with his brother Josh), in Jensen Beach and Port St. Lucie. “My dad had called me about two failing Subway restaurants and said we should take a look because there were deals to be had,” says Steppling. “When a restaurant goes under right away, it can be super cheap if all you have to do is pay the rent and liens on the equipment.” Nearly two years later, he purchased his brother’s shares and invested in two more Subways, in Sebastian and Vero Beach (he sold his Martin County properties in 2019). “I built a business model on buying failed franchises and souping them up,” he says. Then, in 2018, he crossed paths with Hurricane Grill & Wings owner Spiro Laskaris, who had recently launched a Greek dining concept called Spiro’s Taverna. Laskaris didn’t mind that Steppling’s experience was vested in fast-casual chains rather than casual-dining restaurants. “Spiro was adamant I could do it and took me under his wing,” says Steppling. “I trained at his Palm City restaurant and excelled fairly quickly.” Today, the Stuart resident owns two Subways and three Spiro’s Taverna locations (Port St. Lucie, Vero Beach, and Melbourne) and plans to accrue more. While his businesses keep him very busy, Steppling is also an advocate of altruism. He has given back to the communities he was raised in, donating to myriad charities including Citizens for Clean Water and Susan G. Komen Florida, and he sponsors high school clubs and sports programs around Martin and St. Lucie counties. In his spare time, he enjoys running and weight training, family barbecues at his father’s house, and playing two-man touch football with his three brothers.

Days spent on the water can really work up an appetite, and the resort doesn’t disappoint with dining options. In addition to West 82º, which serves breakfast, lunch, and dinner in a sleek yet welcoming indoor-outdoor setting, there’s also the Tiki Bar by the lagoon-style pool for casual bites and tropical cocktails and the 19th Hole Sports Bar and Grill at the Golf Shop. Although you could easily spend your entire vacation never leaving the Plantation, more outdoor pursuits await off the resort. Be sure to plan a visit to Three Sisters Springs, where you can launch kayaks from Hunter Springs Park or Kings Bay Park, navigate the crystalclear waters, and swoon over the lush flora and fauna. On the way back to the resort, refuel at The Crab Plant or Hardwood Smokehouse for a messy, fun, and unforgettable spread the kids will love. provides guests a rare chance to swim, dive, and snorkel alongside these gentle giants. In fact, Citrus County is the only area in the country where such interaction is actually legal. In addition to manatees, visitors are also likely to spot dolphins and a variety of both freshwater and saltwater fish. The Adventure Center can also book fishing charters to hunt some of these species, such as largemouth bass, grouper, redfish, and, when in season, scallops. A huge draw for the resort, scallop season begins July 1 and runs through September 24. Guided scallop tours allow kids to strap on goggles, snorkels, and fins, chase after the little fanshaped shells that hide in the shallow grass flats, and fill mesh bags with their haul. Best of all, the skilled chefs at the hotel’s West 82º Bar and Grill will prepare a sea-to-table meal with your catch.

oad-trippers going it alone will find the best of both worlds in St. Petersburg: the easygoing attitude of St. Pete Beach on the Gulf and the cultured and hip sensibility of downtown and the Central Arts District. Expect to encounter friendly, unpretentious, interesting people and no shortage of activities suited to the solo traveler. The area’s two most historic hotels—The Don CeSar (doncesar.com) in St. Pete Beach and The Vinoy Renaissance St. Petersburg Resort & Golf Club (marriott.com) located downtown along Tampa Bay—present great vantage points to explore all the city has to offer. The Don, a pastel beachfront Mediterranean castle that originally opened in 1928, recently revealed the last phase of renovations that began in 2018. Guests of the self-proclaimed “Pink Palace” will bask in the restoration of its palmlined entrance, the redesign of the main property’s 277 rooms with more contemporary furnishings, and the introduction of the new Beacon Pool Bar and Rooftop Lookout and Society Table restaurant. The Vinoy, a pink Mediterranean château circa 1925, shines with its iconic lobby adorned with whitewashed arches, sleek suites, a quaint tea garden, and above all, proximity to St. Pete’s top cultural attractions. Just four blocks from The Vinoy, the new St. Pete Pier, an architectural masterpiece nearly seven years in the making, extends out into the bay

offering breathtaking views and public art while providing a community gathering place for the city’s inhabitants. It’s a sight to behold, so make a point to grab a cocktail at Pier Teaki, an open-air modern tiki bar, or Teak, the pier’s fine-dining hot spot, to take it all in. Walking an additional four blocks south brings you to The Dalí Museum, an architectural gem in its own right and a must-visit for fans of Salvador Dalí’s Surrealism. Another great artist holds court less than a mile away at the Morean Arts Center: Dale Chihuly. The Chihuly Collection showcases an enormous repertoire of the artist’s iconic glassworks that beg for some pensive solo admiration. Nearby, the Central Arts District, which starts downtown on Central Avenue and extends through the heart of the city, is experiencing a bit of a renaissance and bursts with trendy shops and restaurants. Make a day of it and start off on a high note with a morning pick-me-up at Black Crow Coffee, a quirky ecoconscious coffee lounge. Next, hit up Misred Outfitters for playful women’s fashions, Ashe Couture for the perfect swimsuit for lounging on the beach or by the pool, and Bohemian Rêves for herbal beauty products and boho-chic accessories. After all that shopping, you’ll need some refreshments, so stop at Green Bench

Brewing Co. for unique craft beers best enjoyed outside on the sunny and vibrant lawn. On the food front, the Central Arts District can’t be beat with its wide variety of cuisines and atmospheres. Seafood lovers should try Trophy Fish for fresh catches like spiny lobster and creative cocktails in a playful outdoor setting. If Asian cuisine is more your style, check out the moody aesthetic at Būya Izakaya and Ramen, renowned for its Japanese small bites, tasty bao buns, and ramen so delicious you won’t even question slurping up soup in the Florida heat. Once the sun begins to set, end the night at Ruby’s Elixir for live music and a spirited scene. Or head toward the beach, about 30 minutes from downtown, and visit 360 Rooftop at Hotel Zamora for panoramic views of the Gulf in all of its glory. ❖ COURTESY OF THE VINOY

Locals Helping Locals IN OUR BACKYARD

Mikayla / Warrior On April 24, 2020, at just 13 years old, Mikayla, was diagnosed with Hodgkin’s Lymphoma. Chemotherapy is painful, merciless, and something no child should ever have to endure. But our community is strong, and Chasin A Dream Foundation believes that locals always help locals. Mikayla officially became a survivor November 13, 2020, but her journey is not over, and it’s just beginning for so many families right here in our backyard.

Home Resource Guide.indd 2

Chasin A Dream Foundation provides individualized, life-changing assistance to local families with children battling cancer, cystic fibrosis, and other life-threatening illnesses. With your support and resources, we can help ease the stress these families are facing. Our foundation starts with LOCALS HELPING LOCALS® and investing in the health of our children. Let’s make a difference together. PLEASE DONATE AT CHASINADREAM.ORG OR CALL 561-315-7005. CHASIN A DREAM FOUNDATION IS 501(C)3 APPROVED 82-2066748

GRADES: 9th - 12th DENOMINATION: Catholic TUITION RANGE: $14,500 - $16,000 STUDENTS: 500 STUDENT-TEACHER: 13:1

At The Benjamin School, we see a multitude of talents in each child and join with parents to discover, nurture, apply and celebrate each student’s unique gifts. Beginning with our 3-year-old program and continuing through Upper School, we offer a wide range of possibilities for students across broad horizons. In addition to our strong academic program, the School encourages involvement in the visual, performing and creative arts and in a robust athletic program. At the heart of our school is a commitment to teach the importance of good character.

Founded in 1961, Cardinal Newman is a premier, Catholic college preparatory high school in West Palm Beach. It has a rich tradition of attracting gifted scholars, athletes, and artists who will become women and men of character, faith, and intellect. Newman’s coeducational environment allows students to grow and develop in a safe and communal setting. Every classroom promotes collaboration, creativity, and critical thinking and each student receives the support required to achieve his/her personal best. Among our 12,000 graduates have been war heroes, police chiefs, physicians, musicians, authors, researchers, politicians, lawyers, professional athletes, teachers, entrepreneurs, priests, and community leaders.

A leader in early learning, the East Campus (PK2-1st) is located just 1 mile from the West Campus. On our West Campus, classrooms with small group interaction and differentiated learning allow students in the Lower School (2nd-4th grade) and Middle School (5th-8th grade) to excel, while the Upper School (9th-12th) rigorously prepares students for their postsecondary pursuits academically, socially, and spiritually.

ULTIMATE Clambake

N

othing says summer like a good old clambake. Cod & Capers in North Palm Beach offers them through its catering arm, either fully cooked or delivered in raw ingredients that the customer can prepare at home. According to manager Jessica Zabel, the composition of the clambake depends on where the clientele is from. “People from the Northeast tend to prefer lobster,” she says, “while

we get a lot of requests from Southern states for a Low Country shrimp boil.” The Seafood Bake for two pictured here (it’s offered on special for certain occasions like Valentine’s Day) includes lobster tail, mussels, clams, Key West pink shrimp, potatoes, and corn, accompanied by Old Bay butter. If you want sausage added to the mix, be prepared to wait as it has to be special-ordered. codandcapers.com —Mark Spivak J U LY/ A U G U S T 2 0 2 1 | JUPITER

f you feel guilty eating chocolate, it may make you feel better to know you can enjoy it while helping children and adults with autism and other developmental disabilities. At The Chocolate Spectrum in Jupiter, all the money raised by sales goes directly toward various training programs offered by owner Valerie Herskowitz, who works as a volunteer and takes no compensation. A speech pathologist who also teaches at Nova Southeastern University, she started the business in 2016 as an outgrowth of working with her autistic son, Blake. “It started with making chocolate at home to keep him busy,” says Herskowitz, who is certified as a chocolatier by Canada-based Ecole Chocolat. “Eventually, we had so

94

much chocolate that we had to sell the overflow, and the business grew from there.” The Chocolate Spectrum operates a retail store on Indiantown Road and also sells products at two satellite locations, in addition to mail-order sales. Their signature items include several dozen varieties of truffles, available individually or as an assortment; fudge is also popular, as well as chocolate-covered pretzels and Oreos and thematic items for the holidays and birthday gifts. Herskowitz conducts several different training programs for children with autism. “We focus on business skills as well as chocolate making,” she says. “We want to give them a head start on getting a job, so

working in a retail setting and polishing their people skills is important. The unemployment rate for adults with autism is between 80 and 90 percent. Our goal is to get them to a point where they are as independent as possible so they’re not supported by society and sitting around watching TV all day.” At least 50 children have graduated from the training programs since 2016; a few have become paid employees at The Chocolate Spectrum, while Herskowitz has helped find other jobs for the majority of her other trainees. Prior to the pandemic, Herskowitz ran a range of programs at the store, including cooking classes, field trips, and “Open Kitchen,” a drop-in opportunity every Saturday for local children and families to participate in the chocolate-making process. COVID hit The Chocolate Spectrum hard; like other food-related businesses, they were limited to online sales and contactless pickup. Despite the challenges of the past year, Herskowitz is optimistic. “We’re gradually getting our programs operational again, even if they need to be smaller due to social distancing. One out of every 54 children has autism, and the CDC estimates that five million adults are affected by it in some form. We need to continue to provide opportunities that aren’t currently available in the community.” 6725 W. Indiantown Road, Jupiter Suite 38; thechocolatespectrum.com; 561.277.9886

TRY THIS SHOWSTOPPING PREMIUM COCKTAIL AND MORE AT 1000 NORTH

Deep Purple meets Michael Jordan with Smoke on the Water ($45), one of the new “Over the Top Shelf” cocktails offered at 1000 North. The drink incorporates Cincoro añejo tequila, cinnamon- and vanillainfused agave, and a trio of bitters from Woodford Reserve to create a luxurious tequila old fashioned. Jordan, an investor in both the restaurant and the spirit, launched the brand at 1000 North early last year. “We wanted to offer our customers something unforgettable,” says bartender Josh Dearden. “I wanted our drinks to be as beautifully prepared as our food.” To make the cocktail, Dearden uses a Foghat smoker to add cherrywood fumes at the end. The smoke affects the aromatics of the drink more than the taste and also creates undeniable visual appeal. 1000north.com —Mark Spivak INGREDIENTS: 2 oz. Cincoro añejo tequila ¼ oz. infused agave 3 dashes Woodford Reserve bitters (aromatic, orange, and spiced cherry) PREPARATION: Combine all ingredients in a large mixing glass and stir with ice to chill. Strain into a rocks glass over a large ice cube. Use an orange swath to express citrus oil around the rim. Top with the smoker and fill the glass with cherrywood smoke; cover with napkin and remove just before serving, releasing the aromas.
