FROM THE EDITOR

The Creative Muse

Daphne Nikolopoulos

CAPEHART

Not long ago, I met Barbara Hulanicki through a mutual friend, in South Beach. Over cups of strong Panther coffee, we talked about everything from hotel design to photography, and she mused about the 1960s and her improbable rise to fashion stardom through her boutique, Biba. Like many things in her life of 84 years, it happened by one thing leading to another, the result of putting herself out there and, as she puts it, stirring up energy. I was enthralled— and compelled to share that energy with our readers. Barbara headlines our creativity-themed issue this month, and her story, written by biographer Paige Bowers, is a must read. Turn to “By Design” on page 48. I’d also like to point out senior editor Kristen Desmond LeFevre’s thoughtful Q&A with Miami-based poet Campbell McGrath. I’ve been following Campbell’s work since I met him at the Florida Book Awards in 2013 and read some of his poetry, previously unknown to me. He’s regarded as a witty and incisive chronicler of American culture, with all its quirks and foibles, and he’s been recognized on an international stage for his work. Since April is National Poetry Month, there’s no better time to get to know our pre-eminent poet. Turn to “Verses and Vibes” on page 22. If photography is more your thing, check out “Still Waters,” a visual essay of expansive Everglades imagery by Paul Marcellini. Through Paul’s lens, the simple beauty of a freshwater prairie or a star-embroidered night sky takes on a haunting dimension. See for yourself on page 72. There’s certainly no shortage of creatives—or creative pursuits—in the Aventura and greater Miami area. I hope our pages inspire you to call upon your own muse, or at least appreciate the voices that make our community so diverse and vibrant. Enjoy the issue!

Torrisi Italian Specialties, an 18-seat eatery in Little Italy. Sandwich shop by day, prix-fixe restaurant by night, Torrisi’s rotating menu and unique ambience attracted a loyal following, including former banker and hospitality veteran Jeff Zalaznick. He eventually joined the duo, and together they formed Major Food Group. This partnership led to a second restaurant, the casual “red-sauce” spot Parm. In 2013, the three New Yorkers set their minds on a fine-dining project and opened Carbone, resulting in—among other accolades—James Beard Award nominations. The brand has since flourished and evolved into an ever-growing empire of concepts with imaginative decor, meticulous service, and new riffs on well-known dishes. “The common vision is creating something that we would want to enjoy ourselves,” says Carbone of the innovative concepts that have garnered national attention. “If we feel there is a void in a particular market for a certain style of restaurant, and it’s something we want to be a part of, then we will go after building that.”

WORLD RED EYE

COURTESY CARBONE

Northern transplants that have grown to love the innovative concepts by New York–based Major Food Group can sing praise with the group’s recent expansion south. The global restaurant company behind eateries such as Sadelle’s, The Lobster Club, Dirty French, and ZZ’s Clam Bar in New York City made its way to Miami Beach in January, launching the fourth location of its Michelin-starred Italian eatery Carbone, famed for its legendary spicy rigatoni with vodka sauce. Led by a trio of friends—chefs Mario Carbone and Rich Torrisi and entrepreneur Jeff Zalaznick—Major Food Group currently operates 27 concepts. This successful collaboration began with the ingenuity and culinary expertise of Carbone and Torrisi, who attended culinary school together in1998. After stints in Europe and kitchens across the country, the Culinary Institute of America alumni crossed paths again in 2003 while working together at Café Boulud on the Upper East Side. They eventually became roommates, and in 2009 teamed up and opened a place of their own:

The opening of the ultra-luxe Carbone at the space formerly occupied by Stephen Starr’s Upland in Miami Beach’s South of Fifth neighborhood marks the group’s first stage of expansion in South Florida. Five additional restaurants are slated to open in Brickell and the Miami Design District later this year. Renowned designer Ken Fulk led the design for the restaurant’s ultra-chic interiors. A gorgeous color palette of terracotta, cream, and rich emerald green, along with chandeliers and Murano sconces, set the scene for a classic Italian feast. A more laid-back patio that can seat up to 50 is also available for eager diners. “Miami has always been and will always be New York’s sister city, and I think that the relationship between the two allows a seamless transition,” says Carbone. Zalaznick, who has established residency in the Magic City with his family, says the opening of the upcoming eateries will consist of a mix of new and existing brands in the group’s portfolio. After a decade-plus of culinary entrepreneurship and achievements, Torrisi notes that “COVID or no COVID, it takes nothing less than obsession” to succeed in this business. “We give time and attention to detail for every facet of the guest experience,” he says. “The idea is to deliver a memorable mix of food, atmosphere, and service. All aspects should reflect our main goal, which is that our guests should always have fun.” —J.A.

AVENTURIST Q&A

CREATIVE CURATING Art curator and entrepreneur Jessica Goldman Srebnick has devoted her career not only by navigating the real estate and art world but also by helping other creatives shine along the way. “I was taught to see creativity in all things,” says the daughter of the late Tony Goldman, the real estate visionary behind South Beach’s revitalization and Wynwood’s renaissance. “It was only fitting for me to embrace the arts in all forms. It is part of my DNA.” Goldman Srebnick presently helms her family’s real estate business, Goldman Properties, and its curating arm, the creative collective Goldman Global Arts. She has spearheaded one-of-a-kind initiatives, like Art Unexpected, the street-art mural project at Hard Rock Stadium, with American artist Peter Tunney. The mother of three also serves as the Wynwood Walls’ lead curator. For her book Walls of Change: The Story of The Wynwood Walls, she teamed up with writer Hal Rubenstein and photographer Martha Cooper to celebrate more than 100 street artists featured in the open-air museum. Here, she shares her insight on Miami’s growing arts scene and more. –J.A. How do the Wynwood Walls inspire the local arts scene? The Wynwood Walls was created to be a place of hope, inspiration, and thought-provoking art. An open-air, curated museum meant to highlight the best street art in the world. What could be more inspiring? Having been closed for nine months, it gave us the extraordinary opportunity to reimagine our dreams for the future and an opportunity to incorporate vibrant programming in order to enhance the art, by incorporating dance, education, music, health and wellness, and much more with the hopes of inspiring locals, visitors and people of all ages to embrace, support, and celebrate the arts in new and innovative ways.

l

Judy Carmichael

Jessica Goldman Srebnick

What does it take to create within the Wynwood Walls? It takes strong talent, unique style, consistency, and maturity in [an artist’s] craft. When it comes to an artist that catches my eye, I know right away when I am struck by someone’s work. I want to see more! Art had the ability to move someone. I am always moved, for different reasons, when struck by talent. I also watch the progression of an artist. How do you infuse art into real estate? In the past, architecture has been thought of as an unexpected canvas for art. No more. Real estate, of late, has embraced the marriage of art and architecture. As a company, we have always infused our Goldman Properties projects with creativity, including large-scale murals, sculptures, unique facade work, photography in our common spaces, and big, bold statements of creativity.

NICK GARCIA

Jessica Goldman Srebnick has led the way for a booming arts scene LOCALLY AND BEYOND

As a community on the rise, what’s in store for Miami’s future? Miami is far beyond a community on the rise; we have been catapulted in our growth trajectory as a major international city. It’s not New York or Paris or San Francisco. [It’s] a hub for art and culture, a growing tech community, diverse real estate, hospitality, glorious weather, and so much more. In 2021 we are seeing a major influx of people moving to Miami. They are moving for the quality of life, for the energy, and for the opportunity to participate in a city of the future. How will you continue advocating for the arts? Supporting artists and bringing creativity to the world is a huge passion of mine. You’ll continue to see unique partnerships that put the arts on bigger platforms, along with collaborations and the desire to push the boundaries of my own abilities.

DON’T MISS: Mark your calendar for April 8 when Swing Time! The Judy Carmichael Trio performs at the Aventura Arts & Cultural Center. Steinway artist and Grammy-nominated pianist, singer, and songwriter Judy Carmichael and her trio will perform the Great American Songbook and swing era music with her distinctive sound. Listen to classics such as I Got Rhythm, Between the Devil and the Deep Blue Sea, and more of Carmichael’s own compositions

during this special evening encompassing the history and culture of jazz, improvisation, and vocal interpretation. “I’m thrilled that my first time on stage in over a year will be in such a beautiful venue with a loyal audience of music enthusiasts,” shares Carmichael. To ensure social-distancing guidelines, tickets are available in pods of two- and four-seat groups, and face masks are required. (aventuracenter.org) –Melissa Puppo

AVENTURIST Q&A

VERSES and Vibes

Writer Campbell McGrath dishes on the POWER of poetry By Kristen Desmond LeFevre

AM: Can you give us a peek into your writing process? Campbell McGrath: A lot of my colleagues believe that to be a real writer, you’ve got to write every day, and that’s a good goal. I’m trying to be alive to the wounds in the world every day, but that doesn’t always mean I write them down daily. I try to write in my notebook, if not every day, then at least a lot. I’m writing down ideas, images, things I’m thinking about, things that might be useful. And then it takes time to go back to that material and really explore it and say, “What do I have here?” and, “How will I turn these into a poem?” How would you describe your voice? When people say, “Oh, that’s typical Campbell McGrath,” it’s probably because the poem is about America and culture. It probably has a sense of ironic, humorous, fun-poking darkness that explores the tragic comedy of American culture. You know, the kinds of things you’d cry about if you didn’t laugh at them. I’m a big fan of American culture. I’m very attuned to its bizarreness and senselessness. So that tends to be the thing I write about, and where my style lands. Was poetry always the goal? I’ve always loved books in a very particular way. I loved reading, but when it came time to write something, I liked writing poems. But did I think 22

COURTESY CAMPBELL MCGRATH

Since April is National Poetry Month, we caught up with poet, Pulitzer Prize finalist, and FIU distinguished professor Campbell McGrath. He’s authored 15 books of poetry—most recently, Nouns & Verbs: New and Selected Poems. He’s a recipient of the MacArthur Foundation “genius grant,” and his work has appeared in The New York Times, The Paris Review, and The New Yorker. Those bona fides aside, McGrath says poetry is for everyone. All you need to do, he says, is give it a chance.

back then that writing poetry was a thing you could do with your life? No, I sure did not. Can you teach a person how to be a poet, or is it a talent you’re born with? No one would ever say, “Can you teach someone to play basketball?” You can’t teach them to be Michael Jordan, but you can teach them to play the game to their best potential. Poetry is a craft in the same way a sport is: Anybody can learn it. You can learn to play basketball by yourself in your driveway. But if you have a coach (or in the case of poetry, a professor or a teacher) who works with you, you bring the learning curve down. I’m still learning all the time—and I feel like I’ve literally written like 5 million poems. But if I wasn’t still learning, I would be bored of it. Are the days of the starving poet over? You know, starving is not a very good strategy for a poet. You starve and then you die and then you don’t write anything. I haven’t had a student in a long time who had that kind of starving poet vision. They know it isn’t about starving; it’s about getting the poems written and finding a way to erect a scaffolding to make a sensible life that enables them to write poems.

You’re pretty prolific. What keeps you writing and getting published? I feel like part of your task as an artist is to squeeze all the juice from the lemon. Whatever amount of talent or inspiration I have, I feel I’m beholden to try to put it out in the world. Now, the world may throw it in the dustbin and say, “This was terrible. We don’t even want it!” But when I started winning prizes and stuff, I really began to feel the need to do this as seriously as possible. When you’re lucky enough to be enabled like that, I think there’s an obligation to be prolific. That said, some of our best poets are not prolific. Poetry, in particular, is really about density and condensation. One drop of it can be enough sometimes. But I’m just trying to get as many drops out there as I can. I don’t want to leave anything unsaid that I might’ve said. If I can say it well enough.

LIVING WITH IVEY

READ CAREFULLY

FOOD LABELS: What do they all mean? By Ivey Leidy Photography by Kent Anderson In the United States, the government regulates every food we eat to ensure its safety. The U.S. Department of Agriculture (USDA) oversees meat, poultry, and eggs, while the Food and Drug Administration (FDA) is responsible for dairy, seafood, produce, processed foods, and drugs. In the U.S., the government issues financial benefits in the form of subsidies to farmers, mainly those producing corn, wheat, soy, dairy, meat, and sugar. Essentially, our government pays farmers to grow what the government wants them to grow, in the manner in which the government wants them to grow it and at what efficiency. Unfortunately, as a means of making as much income as possible in the shortest amount of time, many farms use methods to expedite and capitalize upon this process. Antibiotics, growth hormones, pesticides, 24

and GMOs all help maximize output, while degrading our food quality. GMOs are genetically modified, living organisms, whose genetic makeup has been altered in a lab to make them resistant to disease, increasing crop yields. The end result? Our food has morphed into a distant relative of food, difficult for our bodies to recognize and harmful to our health. Here, I delve into what the labels mean, which ones to look for, and which to ignore.

MEAT AND DAIRY When it comes to beef, opt for cuts from local farms as opposed to factories, if you can find it. If not, the best choices are grassfed, AGA (American Grassfed Association) certified, or certified grass-fed by AWA (Animal Welfare Approved). Grass-fed means that the animals are only fed grass from the day they wean from their mother’s milk until the end of their life. They are also raised in open grass pastures, free to graze, and always antibiotic-free. The second-best choice is USDA-certified organic. This means the cattle are fed 100-percent organic feed consisting of corn, grain, and grass, and no antibiotics are administered. Avoid processed meats as these have chemicals, fillers, additives, and even high-fructose corn syrup.

FISH For fish, you have two options: wild or farmed. Farm-raised fish has higher fat, less protein, and fewer nutrients than wild. Farmed fish are often fed cornmeal, soy, and even canola oil. They’re also commonly given antibiotics due to their crowded conditions and risk of infection, as well as growth hormones. In addition to being lower in saturated fat and calories, wild fish is higher in heart-healthy omega-3 fatty acids, vitamins, and minerals. The best label to look for is MSC (the Marine Stewardship Council).

PRODUCE For produce, there’s either organic or conventional. Organic produce is grown on soil that has not been treated with substances like pesticides and fertilizer. All organic produce is non-GMO. Conventional produce is often subsidized, and its farming practices involve pesticides, usually GMOs, synthetic fertilizers, antibiotics, and hormones. These have been shown to cause hormonal imbalances, chronic inflammation, and chronic disease.

POULTRY AND EGGS The best choice for poultry is certified humane (see definition in sidebar). The second-best choice is certified organic. This signifies that the animals were raised on a 100-percent organic, non-GMO diet that did not contain animal by-product or antibiotics.

Whole Roasted Chicken CRISPY-SKIN WHOLE CHICKEN COOKED IN A CAST-IRON SKILLET WITH ROASTED CARROTS, MUSHROOMS, SHALLOTS, APPLE, AND FENNEL INGREDIENTS 3-5 lb. certified humane, certified organic chicken 1 lemon, sliced with seeds removed 3 sprigs of thyme 3 sprigs of rosemary 4 cloves of garlic, divided into 2 chopped and 2 crushed 4 large carrots, peeled and chopped 2 cups of sliced shitake mushrooms 3 shallots, peeled and chopped 1 fennel bulb, stems trimmed and bulb cut into quarters or wedges 1 apple (Honeycrisp or Fuji is best), cored and diced 3 tbsp. olive oil, divided

Preheat oven to 400. Combine chopped vegetables and apple in a bowl and toss with 2 chopped garlic cloves and 1 tbsp. of olive oil and set aside. Pat chicken dry, removing any giblets in the cavity and untying the legs. Stuff cavity with thyme, rosemary, lemon slices, and 2 crushed garlic cloves. Rub outer skin with 1 tbsp. olive oil and a sprinkle of sea salt. Lay chicken breast side down onto an unheated cast-iron skillet. Turn burner to medium-high heat and cook chicken for 8 minutes. (I’ve found heating from a cold cast iron yields the crispiest skin.) After 8 minutes, turn heat off, carefully flip your chicken breast side up, and retie the legs. Add in your chopped vegetables, tucking them around the chicken. Drizzle with remaining 1 tbsp. olive oil. Transfer to oven and roast for 45 minutes to an hour. Remove from oven when chicken’s internal temperature reaches 160. Let rest for 5 minutes. Transfer to a platter, arranging roasted vegetables around the chicken. Salt and pepper to taste.

COMMON LABELS DEFINED CAGE-FREE: Cattle are required to have outdoor space. Chicken and other poultry are raised in pens in “houses” and given access to 1 to 1 1/2 feet of floor space. This could be grass, gravel, or concrete. FREE-RANGE: Animals are given access to 2 feet of outdoor space.

024_LIVING_IVEY_0421-2.indd 25

CERTIFIED ORGANIC: Animals are fed a 100percent organic diet, free of hormones and antibiotics. All organic chicken is free-range. CERTIFIED HUMANE: Animals are never kept in pens, crates, or cages; are given plenty of outdoor access; and are not fed growth hormones or antibiotics. GRASS-FED: Animals are given only grass after

weaning off milk.

NATURAL OR ALL NATURAL: This term isn’t regu-

lated, so it holds no weight. Initially, it referred to food that didn’t contain artificial ingredients, but it’s meaningless when used to describe meat or poultry. FRESH: The meat or fish has never been frozen. NON-GMO: A law was passed in 2016 requiring manufacturers to disclose GMO ingredients. Look for this stamp when buying anything.

Adventures in ECO-LUXURY

Revel in Costa Rica’s stunning natural heritage at Nayara Tented Camp and the boutique Cayuga Collection By Paul Rubio

BRICE FERRE STUDIO

Properties such as Nayara Tented Camp (inset) and Cayuga Collection’s Arenas Del Mar (below) exemplify Costa Rica’s ecotourism elite.

W

hen ecotourism solidified as a concept in the 1990s, Costa Rica emerged at its forefront. Spearheading a movement of environmentally conscious travel, the petite Central American country became the promised land for soft adventures in biodiversity. As the archetype evolved, it began incorporating elements of style and sophistication, proving that nature and luxury could successfully coexist. Today Costa Rica’s top eco-minded properties span the full spectrum of luxe—from casual to ultra—and showcase the best of the country’s wildlife-rich jungles and forest-fringed coastlines. Here, we present some of our favorites, from the dreamy Nayara Tented Camp near Arenal Volcano to a trio of Cayuga Collection hotels positioned in Costa Rica’s most coveted coastal destinations.

Nayara Tented Camp boasts safari-chic accommodations with large terraces inclusive of infinity pools and views of Arenal Volcano. Spend your day in one of the thermal hot spring pools or embark on a sloth-spotting expedition.

38

NAYARA TENTED CAMP Draped in lush cloud forest and punctuated by skyscraping volcanoes, Costa Rica’s mountainous interior is synonymous with dramatic natural beauty. Nowhere is this more visible than in the area around Arenal Volcano: a 5,400-foot-tall marvel flanked by mist-shrouded wilderness, waterfalls, and hot springs aplenty—as well as a sumptuous, safari-style lodge immersed therein. True to its name, Nayara Tented Camp delivers canvas-topped glamping within Arenal Volcano National Park. In its Central American debut, design firm Luxury Frontiers, renowned for ultraposh camps across Africa, combined safari glamour and a Costa Rican sense of place to create a 21-tent hillside retreat in direct view of Arenal. Design details abound in each of the 1,700-squarefoot clifftop tents, with tailor-made furnishings that blend vintage exploration with jungle chic. Highpoints include a textured mural depicting rainforest flora along the back wall of a four-poster king bed, a foldable leather campaign chair, and a trunk-esque minibar. Step outside to swoon over a spacious terrace enveloped in foliage. Appointed

with a sleek dining table, hammock, day bed, and a hot spring–fed infinity pool, these accommodations are what eco-luxury dreams are made of. In such an extraordinary setting, it’s tempting to follow the plan: relax, room service, repeat. But this area is meant for exploring, even if kept just to the immediate grounds. Nayara Tented Camp lies in a collective reserve alongside two casita-dotted sibling properties, Nayara Springs and Nayara Gardens, lending to a multitude of shared amenities and experiences over vast acreage. Among the can’t-miss are the short hiking trails, famed for excellent sloth sightings. There are also seven thermal hot spring pools tiered throughout the forest, each bubbling at a different temperature (with bar service available), and an open-air yoga pavilion, where daily complimentary classes are held. Recognizing that adrenaline-seeking guests may also want to discover more of Arenal Volcano National Park—it is Costa Rica’s adventure capital, after all—Nayara offers numerous group tours and private excursions anchored by activities like zip lining, kayaking, canyoning, spelunking, monkey spotting, and white-water rafting. Across three personality-driven restaurants, Nayara’s gastronomy ranges from hyper-local to Latin-Asian fusion to pure Italian excellence. Fuel up on a traditional casado (black beans, plantains, salad, tortillas, plus a protein) and ensalada palmito (hearts of palm salad) at Amor Loco. Salivate over plantain-wrapped sushi rolls at Asia Luna and get excited for the house-made pastas at Mis Amores. And even if you aren’t a breakfast person or an early riser, we suggest you become one while at Nayara Tented Camp. Indulging in a gorgeous morning spread on your terrace as hummingbirds zip by, toucans sing, and the sun rises over Arenal is the most satisfying food for the soul. (nayaratentedcamp.com)

CAYUGA COLLECTION Nestled between the Caribbean Sea and Pacific Ocean, Costa Rica boasts an impressive 800-plus miles of coastline, the best of which can be savored in style thanks to Cayuga Collection, a small but diverse portfolio of light-onearth boutique hotels across Central America. The collection’s three oceanside Costa Rican properties offer distinct experiences of rainforest-meets-ocean splendor, starting with the crown jewel of Cayuga, Kura Costa Rica. This eight-suite, adults-only spot hones in on the picturesque marriage of land and sea through design and location. Perched high in the forest atop the Pacific coastal town of Uvita, Kura is an exercise in tropical minimalism, defined by breathtaking panoramas and open-air spaces where nature is always present. Also on the central Pacific coast is Arenas Del Mar, an eco-conscious resort in the popular surf town of Manuel Antonio. It spans both mountain and beach, with suites at higher elevation to maximize views of the palm-laced coastline and

037_ESCAPE_0421-4.indd 39

amenities at sea level to optimize waterfront pursuits (which include highly Instagrammable tree swings). Though public, the beach here feels private thanks to cliffs and boulders that demarcate a generous swath. While topography helps to keep other humans out, Arenas Del Mar is trying to let more wildlife in. The resort has reforested the land above to create an 11-acre biological corridor with neighboring Manuel Antonio National Park, providing extended habitat for the white-faced monkeys, scarlet macaws, and sloths that call this land home. Get your steps in with daily rainforest hikes on trails within Arenas and the national park. Or, counter languid afternoons on your balcony or at the full-service beach club with morning runs on Manuel Antonio’s miles-long main beach stretch. Over at Puerto Viejo on the southern coast, Hotel Aguas Claras captures the essence of the region’s infectious Caribbean feel. At this adorable collection of 12 bungalows and suites, the bold, colorful aesthetic skews classic Victorian-Caribbean, while the vibe slants toward

tranquility and wellness. Keeping true to its sustainability ethos and the local flavor, each unit is adorned in eclectic upcycled materials, repurposed furniture, and found objects. A small walking trail leads to the coastline of Playa Chiquita, one of the country’s most famed beaches (thanks to crystalline waters and a virgin appearance). Here, Aguas Claras houses a small toes-in-thesand beach club featuring regional delicacies (hello: watermelon mojitos and tostones). Back

on property, a sprawling yoga pavilion sets the tone, while house bikes allow guests to venture out and fully embrace the charming beach shacks, indie boutiques, and laid-back lifestyle that define this Caribbean coast. Though Costa Rica may appear small on Google Maps, a short distance can take a long time thanks to rugged, single-lane highways (often packed with trucks), current limitations on internal flights, and requisite connections through the capital city of San José. Basically, one or more overnights in the capital is all but inevitable. Thankfully, Cayuga’s Hotel Grano

de Oro makes the layover in this otherwise unappealing city pleasurable. An adaptive reuse of a turn-of-the-century Victorian mansion, Grano de Oro upholds Costa Rica’s cultural heritage and presents an ideal base for seeing the city’s key attractions, such as the Jade Museum, National Theater, and Pre-Columbian Gold Museum. You may not be waking up to the sights and soundtrack of the rainforest, but you will dabble in Costa Rica’s history and culture—a fine complement to rewarding exploits at the country’s trailblazing eco-luxury resorts. Practical MAGIC

McLaren’s stunning new GT is the EVERYDAY SUPERCAR that can deliver you to the golf links at 203 mph By Howard Walker I love McLarens—with a passion. I love the rock-out-of-a-catapult acceleration, the spooked-squirrel handling, the mind-reading steering that can almost predict your intentions before you even nudge the wheel. For me, these British-built projectiles are the very definition of the mystical term “supercar.” To drive one, to feel that 600-plus twin-turbo horsepower, is like downing a quadruple espresso after a lifetime of decaf. But, they do come with the odd compromise or two. The endless drone from those monster tires at each corner is like driving with a leaf blower in the passenger seat. Hitting any kind of lump or bump is like colliding with a Florida sinkhole. As for carrying personal items aboard, if they won’t fit into a squashy gym bag, you’re going to need to call FedEx. However, the new McLaren GT is a kinder, gentler McLaren with more refinement, comfort, and civility. Oh, and did I mention there’s 42

space in the back for a golf bag? Thank McLaren for listening to its customers—or its dealers, who likely moaned about losing another sale to more accommodating rivals, such as Bentley’s grand touring Continental GT or Aston Martin’s DB11. What we have here is the first McLaren hatchback. One tap of the key fob and the huge rear tailgate pops open to reveal a long, wide luggage area. And although it is rather oddly shaped, it works. According to McLaren, it can accommodate 14.8 cubic feet of “stuff.” That total climbs to 20.8 when you factor in the small forward trunk. While this new feature does transform the versatility of the GT, it too is not without its compromises—like having a heat-blasting 4.0-liter twin-turbocharged V-8 sitting beneath it. McLaren engineers had to develop a thermal heat shield to reduce temps from 900 degrees Fahrenheit around the engine to a still toasty 100. Stow that box of Godiva back there at your peril. More worrisome is the fact that the luggage area is open to the cockpit. Yes, there are numerous tie-down rings, but that loose jar of Petrossian beluga caviar could become a high-speed projectile under heavy braking. And as with all McLarens, this GT can stop with the same immediacy as hitting a brick wall. In keeping with the slightly more mellow image of this new GT, the design has also been softened. Unlike the angry-bird McLaren 720S on which it’s based, the GT sheds the track-focused rear wing, huge wheel-arch vents,

and air-gulping rear intakes. I think it’s the best-looking McLaren in the lineup. It’s just sleeker and more stylish, enhanced by lovely forged alloys at each corner, the biggest ever fitted to a McLaren. Open the high-lifting scissor-like doors and inside, McLaren’s typical wafer-thin, butt-numbing seats have been replaced with wider, comfier, thicker-padded versions that are a delight. The cabin is now a sea of handbag-quality leather befitting the grand tourer the GT is. And boy, does this car tour grandly. There’s less snap, crackle, and pop from the exhaust compared to, say, the 720S. Less volume, too. And the suspension has been tuned to deliver a ride that is a tad smoother, less brittle, more forgiving, and has less tire roar. But don’t for one second think McLaren has gone soft on performance. The GT’s 4.0-liter V-8 packs a 612-hp punch that can slingshot the car to 60 mph in a retina-blurring 3.1 seconds. This beast won’t call it quits until the speedo shows 203 mph. Hustle the GT along a curvy two-laner and its race-bred heritage, along with perfect poise and balance, is there to thrill. Although it was developed for the track, on ordinary roads it goes precisely where you point it. Its handling is nothing less than stellar. Pricing starts at around $213,000, though with a few options—the $6,000 electrochromic glass roof is a must-have, as is the $15,400 fourpiece set of custom luggage—reckon on closer to $260,000. But for me, all that McLaren magic more than justifies the price tag. « PRICE: $213,195/$263,265 AS TESTED ENGINE: 4.0-LITER TWIN-TURBO V-8 POWER: 612 HP TORQUE: 465 LB-FT TRANSMISSION: 7-SPEED AUTOMATIC 0-60: 3.1 SECONDS TOP SPEED: 203 MPH LENGTH/ WIDTH: 184/81 INCHES WEIGHT: 3,384 POUNDS WHY WE LOVE IT: BECAUSE IT ADDS ELEGANCE AND VERSATILITY WITHOUT LOSING THAT WILD-CHILD MCLAREN CHARACTER.

HIGH SEAS

RETURN of the Sundancer

Sea Ray brings back its iconic FAMILY CRUISER in the bold shape of the new 370 Outboard By Howard Walker Ever wondered how Sea Ray got its name? Maybe it’s a play on stingray or manta ray. Or, perhaps, a reference to a ray of sunshine on the sea. Good guesses—but wrong. It all goes back to Cornelius Nathaniel “Connie” Ray III. In 1959, the native Detroiter founded Ray Industries, cranking out zippy runabouts. By putting a spin on the “C” for Cornelius and looking to his last name, it was an easy evolution to Sea Ray. By 1986, when Connie had sold his company to the Brunswick Corporation powerhouse, Sea Ray had taken its place among the world’s biggest boatbuilders. One of Connie’s many strokes of genius was seeing a gap in the market for a family-focused

express cruiser. Forty-five years ago, he built the first Sea Ray Sundancer and the rest, as they say, is history. Despite a rocky few years over the past decade, during which time Brunswick even pondered selling off the Sea Ray brand, the Sundancer is now back—with a vengeance. The 370 Outboard not only marks the introduction of a next-gen Sundancer family, but also heralds the reinvention of Sea Ray itself. New from the keel up, the 370 Outboard is a masterpiece from any angle. While the hull profile has styling cues from Sundancers past, it’s that towering, glass-filled hardtop and huge windshield that are guaranteed to spin heads. Before its global unveiling earlier this year, I got to spend a fun-filled morning putting the 370 through its paces across Sarasota Bay. I came away thoroughly impressed at what it manages to pack into 37 feet. While we all remember Sundancers of old, with gas-guzzling V-8s powering through sterndrives, the 370’s designers wisely opted for outboards. They’re quieter, smoother, easier to maintain, and way more space-efficient.

Rather than having the galley down below, there’s an electric grill, sink, fridge, and freezer right there. Cross through the port-side windshield door and into the bow. The beauty here is the height of the walkway sides, which give a great sense of safety and security. The mile-high hardtop is a true feat of design ingenuity. The sheer amount of glass is astonishing, giving superb all-around visibility from the helm. Nice touches include the power-sliding sunroof, air conditioning, and a rear sunshade that glides out of the hardtop. Up at the helm there are twin seats on either side, while the control panel could easily have come out of a fancy Mercedes. Twin 16-inch Simrad displays integrate pretty much all of the boat’s major functions. Down below, the cabin is flooded with light courtesy of huge hull windows. Up in the bow there’s an L-shaped sofa that, at the touch of a button, creates a queen bed. Midship, beneath the cockpit, there’s another “L” that becomes a double. And the quality of materials is exceptional, with white onyx Corian countertops, lovely wood, and upscale fabrics. Out on Sarasota Bay, this new Sundancer leapt onto the plane and punched to 45-plus mph with ease. While there wasn’t much in the way of wave action that day, the Sea Ray still sliced through other boats’ wake, with any rock and roll quelled by the optional Seakeeper3 gyro stabilizer. Joystick control made docking a breeze, even in a breeze. You’ll pay around $650,000 for a 370 with triple Mercury 250s, though with the triple 300s and plenty of must-have options, reckon on closer to $900K. But with this new 370 Outboard, Sea Ray definitely builds on the Sundancer legacy with a boat that’s sleek, sexy, and a lot of fun. Connie Ray would have been proud. «

CHIC Retreat

Relax in style—sans jet lag—at Baker’s Cay Resort, KEY LARGO By Paul Rubio With many of us rethinking international travel at the moment, the Florida Keys feel more relevant than ever as an exotic escape close to home. Lucky for us, the largest and most accessible key in the island chain, Key Largo, has been busy debuting one high-end oasis after another, transforming the iconic no-frills destination into one spiked with unfussy luxury. A highlight of this Upper Keys redux is Baker’s Cay Resort, Key Largo, a thoughtfully designed, 200-room property cast over 13 acres of tropical groves and two white-sand

beaches. Opened in 2019 as part of the Curio Collection by Hilton, the resort embraces a tasteful, modernist beach house feel with understated, whitewashed accommodations countered by colorful common areas. Nautical-inspired rooms and suites soothe with wood furniture and coastal elements. Floor-to-ceiling windows and private terraces doling out dreamy views of the Florida Bay or the surrounding flora. Lobby pillars double as shelves for a lending library, with hundreds of books stacked among teak furnishings and rattan chandeliers. On the culinary side, Calusa combines Creole and Caribbean flavors on a seafoodforward menu in a sleek, agave-speckled space overlooking the bay. Meanwhile, the wildly popular Dry Rocks fulfills tequila and taco fantasies of all proportions in a whimsical setting of barstools, beachfront swings, and pillow-strewn couches (floating above the sands by way of wooden platforms, no less). Baker’s Cay flaunts two beautiful beaches: bustling Coconut Beach, equipped with

loungers aplenty, a tiki bar, and kayaks and paddleboards for rent, and quieter Hammock Beach, an unofficial adults-only swathe where loungers lie half-submerged in the water under a canopy of hardwood hammock. There is a duo of heated swimming pools, too, and a pool bar to enhance the fun-in-the-sun experience. For those wanting to hit the Keys’ jeweltoned waters, the resort offers activities like scuba diving, parasailing, sunset sailing, backcountry fishing, and a signature Dock to Dish program. In this half-day excursion, guests head out with famed Keys fisherman Captain Casey Scott to score the best in local catch, which is then used to create a multicourse feast. Overall, Baker’s Cay underscores the Upper Keys’ real-time revival with its stylish decor, unbeatable waterfront setting, and personalitydriven spaces. It’s at once exciting, unpretentious, and intoxicating—the promise of a faraway island that’s only a few hours’ drive south. (bakerscay.com; hilton.com) «

DESIGN

BY Whether it’s fashion, interiors, or life in general, style icon Barbara Hulanicki knows something about reinvention BY PAIGE BOWERS PHOTOGRAPHY BY GIO ALMA

Warsaw- born fashion designer Barbara Hulanicki is best known for her iconic clothing store, Biba.

048_BARBARA_0421.indd 49

Barbara Hulanicki hates the past. It’s annoying, she says. She’s done it. She wants to move on, see the unknown, and find out what everyone is wearing. Big bottoms, little bottoms—it doesn’t matter. She is an incessant peoplewatcher with a well-trained eye for what works in fashion and what is, as she might put it, rubbish. As forward-looking as the 84-year-old may be, it’s the past that has informed and fueled her very prolific present, where she continues to dream and design from her perch in South Beach, her home for the past two decades. Has her life gone exactly to plan? No. Because she doesn’t plan. “Things just sort of happen, and you pick up on what comes your way,” she says. “If you sit around and mope, then nothing happens. But if you’re constantly out there, making energy, something always comes back to you.” When the energy you create is like an uncorked bottle of fine Champagne or bold holiday fireworks, the “something” that comes back to you is nothing less than celebratory and devilishly good fun. Such is Hulanicki’s magic.

In addition to a wallpaper and handbag line (among other pursuits), Hulanicki is launching a new line of clothing with the U.K.-based virtual showroom creator BrandLab 360.

Born in Warsaw to Polish parents, Hulanicki grew up in Jerusalem because her father was stationed there as a diplomat. When Zionist extremists murdered him in 1948, Hulanicki’s relatively young mother had to figure out how to raise their three daughters alone. They moved to Brighton, England, and Hulanicki soon fell in love with art, studying it in art school before working in fashion illustration. After meeting and marrying ad-man Stephen Fitz-Simon in 1961, Hulanicki opened a mail-order business in 1963 that sold her affordable clothing designs. They called it Biba’s Postal Boutique (Biba is the name of one of Hulanicki’s sisters). Its first major success came a year later, when it sold 17,000 copies of a pink gingham dress with matching headscarf. The postal boutique soon became a storefront, which became an even bigger storefront and attracted superstars like Mick Jagger, Brigitte

Bardot, Barbara Streisand, and others. It was ground zero for Swinging Sixties London until it was forced to close in 1975. Hulanicki and Fitz-Simon moved to Brazil with their son, Witold, trying to reinvent themselves with a new fashion line. But times were difficult, and they returned to London six years later. In 1989, the Rolling Stones’ Ron Wood called on Hulanicki to work on the interior design of his new nightclub in Miami. She was supposed to stay six months but never left. “When my friends ask me what I’m doing here, they don’t get it—until they come here and see it for themselves,” she says. Hulanicki is considered a South Beach treasure, full of stories replete with chance meetings—often of the near-worshipful sort, sometimes with episodes of near-fainting. She is spotted sipping coffee at The Betsy Hotel, and those who see her are usually shocked to find

that an icon of her stature has been quietly going about her business in South Beach for decades, right there, under their noses. Chris Blackwell, founder of Island Records, remembers flying to Miami in 1990 to see a young female singer on his label who was shooting her first music video. He got to the set and “had a shock” because Hulanicki was there, and he had no idea why. “There she was, doing costumes for this singer, this girl who was unknown then, and sadly to say, unknown now,” says Blackwell. Blackwell recalls talking to Hulanicki that day—again he was awestruck, and can’t recall what he said—and then later thinking he might suggest to her that perhaps she’d like to do the interiors for The Marlin Hotel, which he had just purchased in South Beach. “To my luck, she said, ‘Oh yes, I’d love to do that,’” says Blackwell. “That’s how we started,

“If you sit around and mope, then nothing happens. But if you’re constantly out there, making energy, something always comes back to you.” and it was just a miracle that it even happened, and that my little hotel that she fixed up became the cornerstone of what brought back South Beach.” Blackwell and Hulanicki continued their collaboration with his other hotels, not only in South Beach, but in the Caribbean. Hulanicki has also designed private homes in the area, and other South Florida hotels too, such as Hotel Biba in West Palm Beach. Little wonder, Blackwell says, as “she has such energy and incredible taste.” Lesley Goldwasser, co-owner and curator at The Betsy Hotel, has vague memories of going to Biba as a 10-year-old with her mother. Decades later, she was stunned to find that the unassuming blonde who took her daily coffee at The Betsy was the very icon who made Biba the place to go. When they first met, Goldwasser wanted to do an exhibit on the Biba era, but when she got to Hulanicki’s studio and saw some of her photography, she opted to showcase her post-Biba world at the hotel instead. London 1986—Après Biba features those works and includes never-before-published pictures of the ballet A Different Set of Muscles. “These pictures are eye-popping in terms of the color and exotic frames that she created,” says Goldwasser. “When I went through the photos in her archives, I kept finding new treasures, so it was really hard to pick which ones to use. But now, they’re in a magnificent exhibit.” Hulanicki has a wallpaper line, a handbag line, her exhibit, and her hotel and private home designs. She captured her Biba years in A to Biba: An Autobiography of Barbara Hulanicki. She has met everyone who is anyone before they were somebody, and she usually has a charming story to tell about it. She is cur

rently doing fashion illustrations for a high-end line (but further details are under wraps). Just knowing she is doing it is titillating enough. And now, she’s launching a new line of clothes with virtual showroom creator BrandLab 360, called HULA by Barbara Hulanicki— another partnership that was born out of a chance meeting. “We were lucky to meet Barbara during Miami Fashion Week 2019,” says Jennifer Drury, co-founder of BrandLab360, which is based in the United Kingdom. “We had been invited to talk as part of a panel discussing sustainability in the fashion industry, and Barbara had come along to observe. After the event, she approached us with her compliments on the BrandLab360 platform and suggested a collaboration. We were thrilled at the idea and keen to get started straight away.”

Drury says Hulanicki has been a hands-on partner, often waking up at 4 a.m. Miami time to FaceTime with the BrandLab360 team for the HULA campaign’s photo shoot. “She gave us her creative input, and of course, provided us with her usual humorous entertainment,” says Drury. Pandemic aside, Hulanicki says she is always busy doing the things she loves. And she says she has just as much energy as she did at 18. “I love being the age I am,” she says. “Men go a bit soggy as they get older. But women get this huge energy. I look at some of the young ones, and I kind of think you have to go through it and work it out yourself to get the knowledge and experience. I imagine it would save us all some time if you didn’t have to go through all that. But I did. And this is the most wonderful time of my life.” « APRIL 2021

It Takes Two Feeling like the world has gone through a global breakup? Organizers of Miami’s tango scene say the power of “the dance of the warm embrace” can help us recover, reconnect, and restore what we’ve lost. By Michelle Payer

f you didn’t know already, now you do: Miami has a tango scene, and it’s red hot. For the moment, it’s something of an underground movement. But that’s all about to change. It’s true that milongas—the term for social dances—have largely been dormant since COVID-19 put a kibosh on most group gatherings (and let’s face it, it’s hard to socially distance when you’re tangled up in a tango). But the pandemic alone isn’t to blame. Unlike Miami’s ubiquitous salsa community, tango has yet to achieve a mainstream appeal, largely because it’s not a dance you can jump into with a swish and swivel of your hips. Case in point: to lead the tango you’ll need about six months of lessons. To follow, you’ll need approximately three months of dedicated practice, “so you’re not bumping into anyone on the dance floor,” explains Lorena Diez, a longtime dancer and milonga organizer at Lincoln Road’s Open-Air Tango.

To the casual observer, tango appears to be highly structured and choreographed. But Diez says milongas are improvised between partners for the three or four minutes they are in each other’s arms. “It’s like a physical conversation without talking,” she says. “It has an added benefit for some illnesses like Alzheimer’s and Parkinson’s. The neurological connections are

052_TANGO_0421-2.indd 55

so fast, your brain works quickly to grasp what’s happening in seconds—first by listening to the music, then absorbing it into your body, then seeing how your partner interprets it. It’s quick and so enjoyable, and that’s why everyone gets so hooked on tango.” Tango teachers and milonga organizers slowly planted the Miami milonga seed when

they arrived in the Magic City as transplants in the early 2000s. They had absorbed tango in their Argentine and Uruguayan homelands— usually via their grandparents—even as the 1960s rock revolution supplanted tango’s popularity. They longed for a connection to home that could only be satisfied through a deeply rooted, genetic tango thread. APRIL 2021

While currently on pause because of the pandemic, Miami’s booming tango scene featured weekly milongas for experienced and novice dancers alike.

56

But they soon found Miami’s tango scene dominated by los viejitos—the older generation. That’s when a handful of passionate dancers—including Diez, Diego Santana, and Mariano Bejarano—set out to bring tango to a new generation of Miamians, offering free classes at South Florida restaurants on Lincoln Road, Little Havana, Coral Gables, North Miami, and Hallandale. In 2018, Santana held a “hidden milonga” behind Miami’s 71st Street bandshell one Saturday a month without a permit. Miami’s close-knit tango teachers would host milongas every night into the wee hours of the morning for the sheer joy of dancing. “Before the pandemic, we had tango milongas every day for the last four years,

which only happens in Chicago and New York,” says Santana, who teaches private lessons and organizes milongas. “Two milongas have continued for about 20 years: La Ideal every Sunday in Hallandale, and C.I.T.A., Club Internacional de Tango Argentino in Hollywood that donates all ticket sales to St. Jude Children’s Research Hospital,” he says. Another element that sets Miami’s milonga scene apart from other cities? Its approachability. “Little by little, tango students come to Miami because the community is very friendly, unlike New York or Chicago where it can be very intimidating,” says Santana. “Here, people say, ‘come sit with us’ and invite strangers to join them.”

YOU WANT TO KNOW THE SECRET? IT’S NOT THE STEPS. IT’S THE CONNECTION. THERE’S NOTHING BETTER”. —MONICA LLOBET

Miami native Monica Llobet studied tango after she took waltzing lessons in preparation for her Quinceañera. She’d heard stories about her Bolivian grandparents mastering the “dance of the warm embrace,” and became fixated on tango. “It was 2000 and it was the wild west of tango,” says Llobet. “We were all trying to figure things out.” While still a Florida International University student in 2000, she became the International Dance Organization World Tango Champion. She won her first Tango World Cup the same year in Budapest, then another world championship in Miami, followed by the World Cup in Hong Kong. Then she lost her partner to lung cancer and stopped dancing. “With tango, it has to come from within,” says Llobet. “There has to be a connection.” It was during the hiatus that someone recognized her in a small South Beach restaurant and persuaded her to arrange milongas at The Ritz-Carlton Coconut Grove. “I walked up to general manager Angella Reid and said, ‘I’m Monica. I’m a world champion tango dancer, and I’d like to have a milonga here,’’’ Llobet recalls. Reid smiled and said, “I like your style, let’s do it.” And so Alma de Tango was born and continues at Coral Gables’ Biltmore hotel. “Though milongas are paused at the moment, I’m doing private lessons and still connecting with people,” says Llobet. “I know as soon as we open our doors, there will be a huge wave of people coming back. There is a deep level of meditation with your partner to feel subtle movement and the music’s smallest notes. It’s a beautiful thing, and there’s a lot of warmth to it. It’s called ‘the warm embrace’ because you’re completely focused on each other and in those three to four minutes, to listening to each other. After a year of isolation, to have someone hold you, that will be really powerful and something special. People who don’t dance will be reaching out for something like this. You want to know the secret? It’s not the steps. It’s the connection. There’s nothing better.”«

or Michael Buttacavoli and Allison Guzy, their engagement getaway at the White Elephant Palm Beach couldn’t come soon enough. Buttacavoli, a professional golfer based in Miami, proposed to his fiancée at Kimpton Seafire in Grand Cayman in early March—returning to South Florida 10 days before the state went into pandemic lockdown, dashing hopes for an engagement soiree. “We didn’t celebrate with friends,” he laments.

Two weeks after the White Elephant’s early November grand opening, the couple decided to properly put a pin in their betrothal by embarking on a lighthearted engagement escape to the hotel, which included a bicycle trek to Bradley Park, poolside mimosas, and a candlelit dinner for two on their private penthouse terrace. When they officially come together as husband and wife in July, they will return to Palm Beach for their nuptials during a

four-day, YSD Events–planned weekend that will include visits to such island icons as The Breakers and the Palm Beach Par-3 Golf Course for a pre-wedding, get-to-know-you golf tournament. They have reserved The Brazilian Court for the black-tie courtyard ceremony and accommodations for close friends and family. “It’s hard to say what it will be like number-wise,” Guzy says, given COVID-19 pandemic uncertainty. “It will feel intimate and capped capacity-wise.” Like everyone, Buttacavoli and Guzy have learned to play life by ear

as the pandemic has evolved, but this test of patience and resilience is something they’ve long embraced due to his demanding PGA Tour Latinoamérica schedule that takes him throughout South and Central America. To date, he’s played in 22 countries since turning pro in 2010. They scheduled the wedding and their White Elephant escape around his touring dates and are anticipating their honeymoon to Sri Lanka and the Maldives before settling down in a Miami Beach home located, unsurprisingly, on a golf course. The couple enjoyed an intimate picnic on their penthouse terrace at the White Elephant Palm Beach. Carla Hagan coordinated the food styling and contributed the calligraphy elements, while Renny & Reed orchestrated the florals and seaside-chic decor.

Food for Thought

Guzy, who works in guest-experience relations with an athletic apparel company, plans to finish her master’s degree in French history at the University of Delaware. She’s particularly excited about seeing how the menu develops as the event draws closer. “The French foodie in me loves chef Daniel Boulud and Café Boulud,” she says of The Brazilian Court’s culinary centerpiece. “It has a French flavor aesthetically and literally.” Because she is a pescatarian, the wedding-day fare will likely feature an array of local fish. Rather than a traditional Sunday send-off brunch, the couple is planning a “hair of the dog” breakfast with bloody Marys, bellinis, and mimosas in homage to her passion for animal rescue and her dogs: American bulldog Cocoa, English bulldog Dublin, and London, a Labrador, who will be part of the ceremony. 62

Fun and Games

Buttacavoli’s career as an athlete drives him to healthful eating, which they discovered was a shared interest. But beyond food, it was a passion for fitness and sports that brought Guzy, 31, and Buttacavoli, 32, together. The pair were introduced on a blind date through a gym acquaintance. “We immediately connected,” says Guzy. “We both love fitness and exercise. We knew some of the same people and trainers coincidentally.” She is also a world traveler. “I play no golf but he also travels a lot, so we connected a lot over travel,” she says. “We had a lot of common ground.” Originally from the Minneapolis area, Guzy played ice hockey for 14 years before hitting the Colorado slopes her freshman year in college and eventually transferring to the University of Miami. “I understand the grind

058_WEDDING_0421.indd 63

and the other side of the sports life,” she says. “It’s not all glamorous.” Born and raised in Miami Beach, Buttacavoli played a range of sports before focusing on golf, graduating magna cum laude with a bachelor’s in economics from Rice University, where he attended on scholarship. He is working through a complex circuit of tournaments to make the PGA Tour. “I’ve had lots of experiences you can’t learn in grad school,” he says. “The combination of those things has set me up to be successful no matter what I decide to do.” Guzy agrees. “Being around sports my whole life, I have never seen anyone who can push themselves on their own like Michael can,” she says. “He’s very self-motivated.” APRIL 2021

Anyone who’s traveled to Nantucket knows the White Elephant as a beacon of island hospitality. The same casual elegance and romantic by-the-sea vibe has been transplanted to Palm Beach with the opening of a 32-room sister hotel that’s every bit as chic and steeped in history. Located in the landmark building previously housing the Bradley Park Hotel, the White Elephant Palm Beach has honored the original structure while modernizing it with a contemporary aesthetic, articulated in a graphic black-and-white motif, pop art, and a sexy courtyard that’s already become the island’s gathering place of choice. Rooms are petite jewels, elevated by artful appointments and private outdoor spaces. The grandest accommodations are the Palm and Park penthouse suites, which feature living rooms and kitchens designed for entertaining, and rooftop terraces that overlook treetops and Palm Beach’s architectural landscape. —Daphne Nikolopoulos

Wedding Day Details On the big day, the bride will be dressed in an unaltered Vera Wang gown she glimpsed in a Miami boutique but confirmed on a visit with her mother to New York City to review the whole collection. Buttacavoli says he has no doubt the day “is going to be incredible.” The Brazilian Court is where the groom-to-be previously spent a long, beachside weekend with Guzy and her mother, which makes their choice even more special. “I really hope all can go as planned,” he says. “With the COVID uncertainty, it makes it tough. I can’t wait for the day to finally come.” «

orn and raised just 20 miles from Everglades National Park, Florida, landscape and nature photographer Paul Marcellini says he’s visited the subtropical wetland spanning nearly 2 million acres close to 1,000 times since he was a child. Always attracted to the outdoors, he naturally began photographing the land when he picked up a camera in 2005. He’s since won multiple international awards for his photography of Biscayne National Park, Miami International Airport, South Florida museums, and more. And in 2016, one of his Everglades images was used for a USPS stamp, celebrating 100 years of U.S. National Parks. “I am not a photographer just to be a photographer,” says Marcellini. “I love getting into unspoiled locations and then being able to show those to others.” A self-taught naturalist, Marcellini says he’s constantly finding ways to raise awareness for our delicate ecosystems. “I am most familiar with the ecosystems that are near me, as they are where I spend the most time,” he shares. “I hate to see them diminished, and through my images I hope to inspire people to take an interest and care. If they don’t even know, they will never care, and an attractive image is a good first step in catching their eye.” Flip through for a mesmerizing sampling of Marcellini’s work uncovering the beauty of the Everglades. —Melissa Puppo

Basque Breakthrough By Paul Rubio Miami’s gripping rebirth as the new nexus of America’s international food scene advances with the opening of Leku, a restaurant showcasing the celebrated gastronomy of northern Spain’s Basque Country. This famed region is known for balancing ingredient simplicity and epicurean complexity over the likes of fresh seafood, meats, and produce—and it has some 40 Michelin-starred restaurants to prove it. Leku imports haute-yet-approachable Basque cuisine to the Miami market under the direction of chef Mikel Goikolea, who hails from the small town of Otxandio and has trained in some of Spain’s top restaurants. BODEGA TAQUERIA & TEQUILA

This boho-chic taco truck-meets-speakeasy concept duplicates its intoxicating South Beach recipe with a second location in Fort Lauderdale’s Riverwalk district. Similar to the original, the venue’s front half is a fast-casual restaurant with an Airstream food truck serving CaliMex grub like shrimp- and steak-stuffed surf and turf burritos, classic tacos al pastor, healthy kale bowls, and, of course, chips, salsas, and guac. Meanwhile, the back half takes shape as a vibe-heavy lounge, specializing in mezcal-forward and tequila-based cocktails. The Fort Lauderdale location has one up on its South Beach sibling, however—it serves weekend brunch, with a specialty menu that includes breakfast tacos and avocado tostadas. l INGREDIENTS (serves 1) 1 large Hass avocado, cut in half 2 tsp. minced onions 2 tsp. chopped serrano and jalapeño chiles 1/2 tsp. salt 1/2 lime, squeezed 2 tbsp. chopped cilantro 2 tbsp. diced tomatoes

l INSTRUCTIONS Using a pestle and mortar, grind 1 tsp. minced onions, 1 tsp. chopped chiles, 1 tbsp. cilantro, 1/2 tsp. salt, and the lime juice until a paste is created. Score each half of the avocado by making three slices lengthwise and four across (creating perfect-sized chunks). Scoop the avocado out of the skin and lightly mash it into the paste, working through larger pieces while avoiding over mashing. Add the other teaspoon of minced onions, chopped chiles, and cilantro and mix (this is to achieve a crunch factor within the guacamole). Finally, gently fold in 2 tbsp. of diced tomatoes, maintaining the tomatoes’ original texture. Plate and serve.

DRAGON’S RESOLVE Made with local-to-Florida dragon fruit and passion fruit, this tropical drink makes every attempt at mindful conservation

As we head into Earth Month and look forward to Earth Day on April 22, I was inspired to honor the occasion with a cocktail that highlights both notions of sustainability and energy conservation. But first, I wanted to bring into focus a few earth-friendly considerations to ponder while you sip your next cocktail.

Ingredients (makes 1 drink) 1 1/2 oz. gin 2 1/2 oz. dragon fruit puree 1 1/2 oz. passion fruit shrub (recipe below) 1/2 oz. simple syrup (optional)

• Think local and seasonal: By choosing local and seasonal produce, we avoid costly packaging and transport. • Avoid plastic: Say goodbye to plastic straws. Consider a reusable metal, glass, or bamboo straw instead. • Repurpose ingredients: In this recipe, the dragon fruit is used as the puree for the cocktail and the shell for the drinking vessel. The passion fruit was also used whole to create the shrub. The best way we can show our appreciation for the earth is by being mindful of creating less waste and reducing our environmental impact, even when it comes to cocktails. Cheers to this beautiful earth of ours! —Jules Aron

Add all of the ingredients to a blender and mix without ice. Pour the mixture into the dragon fruit shell and top with crushed ice. Garnish with pineapple leaves and edible flower petals. Passion Fruit Shrub Ingredients 1 cup passion fruit 1 cup sugar 1 cup water 1 cup apple cider vinegar

In a medium saucepan over low heat, combine the passion fruit, sugar, and water and stir until the sugar is completely dissolved. Bring the mixture to a low simmer. Stir in the vinegar and bring the mixture just to a simmer. Strain and pour the shrub into a sealed glass jar. Keep refrigerated for up to a month.

DIVERSE Vintners More and more Black-owned WINERIES are beginning to appear across America

By Mark Spivak Over many centuries, the wine business has acquired a reputation as an old boys’ club—unofficially, an old white boys’ club. While more and more women are breaking the glass ceiling of America’s wineries, the same hasn’t been true for people of color. According to the Association of African American Vintners (AAAV), fewer than 100 of the nearly 11,000 U.S. wineries are Black-owned, amounting to less than 1 percent. However, things are beginning to change. There are 35 members in AAAV’s “Vintner/Grower” category, and additional Black-owned 86

wineries are springing up all the time. Here, we highlight some of the most exciting. Vision Cellars: Mac McDonald, the son of an East Texas moonshiner, decided to become a winemaker after tasting his first Burgundy at age 12. After purchasing land in Sonoma County, he released his inaugural Pinot Noir in 1997 and became one of the industry’s pioneers in diversity. Pinot Noir remains his first love, although he also produces both white and red blends. (visioncellars.com) McBride Sisters: It’s a fairy-tale story: After growing up separately across the world in California and New Zealand, sisters Robin and Andréa McBride reunited to build the largest Black-owned wine company in the U.S. Their She Can and Black Girl Magic collections are currently shipped to 33 states. (mcbridesisters.com) Indigené Cellars: Raymond Smith established his winery in California’s upper Carmel Valley, making distinctive wines from both estate vineyards and purchased fruit. His range includes everything from Moscato and Grenache Blanc to Cabernet Sauvignon, Santa Lucia Highlands Pinot Noir, and a Tuscan-style Sangiovese blend. (indigenecellars.com)

Longevity Wines: Phil Long started making wine in his garage in 2006 and founded his Livermore facility several years later. While he yields sparkling wine, Pinot Blanc, and Muscat Canelli, he’s partial to full-bodied reds such as Zinfandel and his signature deb-ru-vée, a Rhône-style blend of Grenache, Syrah, and Mourvèdre. (longevitywines.com) Maison Noir Wines: Sommelier André Hueston Mack traded the dining rooms of Per Se and The French Laundry for life as an Oregon winemaker. Originally called Mouton Noir (“black sheep”), he changed the winery name after a trademark dispute with Château Mouton Rothschild. His labels include Knock on Wood Chardonnay, Love Drunk Rosé, and Other People’s Pinot Noir. (maisonnoirwines.com) Theopolis Vineyards: Trial lawyer Theodora Lee founded her small-lot estate in the Yorkville Highlands appellation of Anderson Valley and released her first vintage to critical acclaim in 2006. In addition to award-winning Pinot Noir and Petite Sirah, she produces a zesty rosé and a tropical white blend. (theopolisvineyards.com) Brown Estate: Siblings Deneen, David, and Coral Brown came together in 1995 to establish the first Black-owned winery in Napa, making wine from grapes their parents had been selling since 1980. They are best known for estate-grown Zinfandel from the Chiles Valley. (brownestate.com)

Longevity Wines is best known for reds like its 2017 Cabernet Sauvignon.

Wachira Wines: Dr. Christine Wachira, the first Kenyan-born California winemaker, fell in love with wine while working her way through college and graduate school. Her releases include The Buffalo (Chardonnay), The Rhino (Cabernet Sauvignon), The Elephant (Zinfandel), The Leopard (Muscat), and The Lion (sparkling). (wachirawines.com) La Fête du Rosé: Donae Burston, a 20-year veteran of the wine and spirits industry, launched this brand in 2019 from Domaine Bertaud Belieu, which was founded in 1340 and is committed to sustainable agriculture. He makes Provençal rosé from Grenache, Mourvèdre, and Syrah with the goal of reaching multicultural drinkers. (lafeterose.com) «

LAST LOOK

TELLING HER STORY Spring brings Lady Pink: Graffiti HERstory, a solo exhibition of pioneering street artist Lady Pink, to the Museum of Graffiti in Wynwood. Presented in two adjacent rooms, the show pays homage to underground street art icons through a series of paintings and digital prints based on the artist’s memories of New York City in the 1980s. In the other room, Lady Pink’s unique vision on feminism and human rights is portrayed through

large-scale paintings. Known as the “First Lady of Graffiti,” Ecuadorian-born Sandra Fabara started tagging in 1979. She’s become well known to Miamians through her mural of a reclining woman on display at the Wynwood Walls. Graffiti HERstory is on exhibition now through May 20.
