Marni Goldman, Author of True To Myself: Peace, Love, Marni When did you decide it would become your mission to tell others “it’s OK not to be OK”? Last January, after a mother at my son’s school presumed I had the perfect life and was quite rude because of it, I made a Facebook video to share my depression, anxiety, suicidal thoughts and some of the horrifying experiences I endured as a child. Overnight, my inbox was flooded with messages. The National Alliance on Mental Illness (NAMI) saw my story and asked if I wanted to become a speaker to end the stigma at middle and high schools. I was honored to have the opportunity to do what I always wanted to. Did you book speaking engagements right away? I received my NAMI certification in 2019 and while writing my book began healing from childhood trauma. After that, I was 100 percent ready to speak with clarity of understanding about what I went through, how I survived it and what I do daily to stay healthy. Growing up in Fort Lauderdale, musician Kev Marcus gravitated toward the violin and found a musical compatriot in violist Wil Baptiste. Together, they merged their classical training and hip-hop influences to form Black Violin. Q&A When did you realize you could do this for a living? Marcus: When we won Showtime at the Apollo. It is the hardest crowd in the world—they boo you off the stage if they don’t like you. We went out there and won three shows straight and became 2005 Apollo legends. That was when we looked at each other, pulled out our phones, called our jobs, and quit. Who are your favorite classical composers? I love late Romantics, so Beethoven would be on my list. I love Chevalier, wow. Bach is the OG. … We have a lot of Dvořák on this new album. We have a song called “Serenade,” which is Dvořák’s “Serenade for Strings,” but we put a beat to it. It sounds like it can live on a classical station even though there’s a trap, hip-hop beat underneath it. What about a favorite hip-hop artist or producer? Timbaland is why we became producers. He had a very strong influence on us and how our music has grown too. Pharrell is groundbreaking and does amazing stuff as well. Billie Eilish’s brother [Finneas O’Connell], phew, he’s killing it. I think truly gifted artists can move you in multiple ways, not just make you shake your butt. They can inspire you or take you to a whole other mood or vibe you didn’t even know you had. And that’s what true art is.

According the Miami DDA’s most recent tourism report, Downtown Miami is now home to 39 hotels with 8,504 rooms, up from 28 hotels and 6,404 rooms in 2010. The 33 percent increase in hotel inventory is accommodating a dramatic uptick in visitors, with Downtown Miami ranking among the top 10 U.S. markets for hotel occupancy and the neighborhood attracting six million business and leisure tourists annually. Additionally, STR, which tracks hotel markets, highlighted that Miami was the only city in the country to experience a double-digit increase in occupancy rates (11 percent) from 2018 to 2019. Swede Emotion THE SMART, SWIFT AND SEDUCTIVE S60 IS PROOF THAT VOLVO HAS NEVER BEEN MORE PLUGGED IN.

T

he whole matte paint thing has garnered little more than eye rolls from me, since few cars wearing it look better for their lack of shine. Sure, they look more badass, devoid as they are of that prissy clearcoat, but I feel like most that wear it are overt enough and matte paint just takes that to the level of caricature. Then I saw and drove Volvo’s excellent 2020 S60 T8 Polestar Engineered (yes, that’s its actual name) in a brooding, matte finished “Osmium Grey” hue. There are three other colors available—all on the grayscale—as well as a non-matte Osmium Grey, too, but neither I nor anyone else who sat in it, rode in it, of simply took it in during my week with it would want it any other way. Naturally, the eye-popping paint commands an equally eye-popping price, adding $7,000 to the car’s $65,795 base price, which a Volvo representative said can be attributed to in part by what went into the paint job to ensure a level of durability that’s on par with glossier finishes, though I was instructed not to take it through a mechanical car wash and to use special soap and microfiber rags when hand-washing it.

Sigh…as with so many other things exceptionally beautiful, maintaining such gorgeousness requires a fair bit of effort. In any case, the precious paint job should add a measure of exclusivity to the S60’s top-of-the-line, plug-in hybrid T8 model, which, with its all-important “Polestar Engineered” suffix, is sufficiently exclusive already. So what the hell is that suffix about? Well, in short, it means it’s designed to go fast—a trait not often associated with Volvos—and, as such, adds new dimension to Volvo’s eminently pleasing S60 mid-size sedan. Polestar had been an independent

Swedish race team and, later, the official modifier of Volvo street cars before Volvo bought it outright in 2015 and turned it into an in-house tuner of its existing cars, à la the AMG brand within MercedesBenz. Polestar was recently spun into a standalone subsidiary of Volvo, and a new line of electrified cars and crossovers will be introduced by the company under the nowstandalone Polestar brand, not as Volvos, in an effort to take on Tesla and its ilk. But I digress. In the case of the S60 T8, the Polestar Engineered moniker signifies that these Swedish speed freaks have touched the car in their own special way and turned it

rather, um, randy. Specifically, they dropped the suspension, installed brand name shocks and brakes behind some sexy 19-inch wheels and corralled 15 more ponies into joining the 400 noble steeds already employed by the T8 plug-in hybrid’s so-called “twin engine” powertrain, which combines a four-cylinder engine that’s been both turbocharged and supercharged with electric motors powered by batteries sizable enough to power the car by themselves for up to 21 miles, says Volvo. The result is prodigious acceleration that could trick people into thinking there’s a V-8 under hood, if not for the lack of V-8 burble. It is, in fact, the quickest Volvo sedan in history, and Polestar’s influence at the wheels brings handling and braking to commensurate levels, creating a confident and strident, if not quite menacing, sport sedan. Leave the drive mode selector at “Power” for full effect. When not channeling the driver’s inner Stig Blomqvist, the car is a pampered housecat. Indeed, the powertrain’s default “Hybrid” and electric-prioritizing “Pure” modes afford it the countenance of a larger, true luxury sedan. Helping matters is the list of standard accoutrements so expansive, with everything rendered using such lovely materials, the top-dog S60 can truly be considered a luxury sedan, albeit a reasonably sized one. The interior comes in any color you want as long as it’s black, with a light sprinkling of light contrast stitching, and a surprising splash of

color coming in the form of gold seat belts that match the gold-painted brake calipers peeking out from behind through those lovely wheels. It’s a modern and chic space, with metal mesh trim rather than conventional wood accents, gleaming grilles for the awesome Bowers & Wilkins surround sound system, and Volvo’s signature faceted dials and thumbwheels looking as elegant as ever. Volvo’s well-known mastery of seats comfort is manifest in the subline sport seats that cosset your backside with both perfect support and cloud-like suppleness, upholstered. in—another surprise—an elegant and modern combination of Nappa leather and black cloth. I put nearly 1,000 miles on this test car, during which I recharged the batteries maybe twice, since I wound up in different destinations

nearly every night. Recharging required between three and four hours each time using Level 1 chargers, after which I’d creep around for a few miles, alternatively enjoying the full thrust of electron-enhanced performance driving and silent, luxurious wafting about, basking in the admiring glances of passersby and fellow motorists. All too soon, however— say, 15 miles or so (I have a heavy right foot)— the battery’s state of charge had dropped such that the engine’s muted hum was constantly heard, indicating hybrid mode driving rather than gas + electric mode. At week’s end, my upper 20s fuel economy wasn’t too far off the EPA’s mpg hybrid-mode fuel economy estimate and reflected the fact that I drove it more like I would drive a BMW M3 than a leather-lined Prius. I suspect that most owners will plug in their cars overnight more religiously and hence do more of their driving electrically, and therefore achieve something closer to the EPA’s estimate of 69 mpg. Anyone attracted to this car despite the somewhat steep price should also know that it is available in V60 wagon form as well as in XC60 crossover duds, all conveying the same general level of dynamic competence, efficiency and understated style. Personally, I would savor the added utility and delicious irony of a V60 T8 Polestar Engineered. In Osmium Grey matte, of course.

CATE BLANCHETT ONCE TOLD HARPER’S BAZAAR magazine she wants to play characters as far from herself as possible because she likes to use her roles as a way of understanding someone else’s perspective. She’s elaborated that she is “never interested” in playing characters that are too similar to who she is in real life. “I’m never interested in portraying myself,” she says. “For me, selfishly, it’s always about trying to understand someone else’s perspective. Often, the further from my own experience and my set of values, the more fascinating it is. And the only way we can move forward is to learn from history.” Blanchett has previously confessed she was pushed into acting “against her will,” admitting that, “The only thing I wanted to do when I left high school was travel with my work. I didn’t at all think about notoriety or fame. I thought maybe I’d move into the visual arts, but from a curatorial perspective, or architecture, even though my math was absolutely woeful.” Fortunately for the audiences who are intrigued by her chameleon-like performances, Blanchett did go into acting, and has been firmly ensconced in the profession since leaving high school. Today, she’s also a director,

however, which she saw coming a few years back when she told the press she only had a few more years left in front of the camera before “I lose my sanity and attempt to make it as a director.” She explained at the time: “I don’t know what I am going to do next as an actor. I never do, really. But I feel like I’ve got probably a couple more years left in it before I lose my sanity. If the offers are still there [to go into directing]. And if they’re not, then maybe I can throw some pots?” Hard to imagine the offers are going anywhere. Blanchett, who graduated from the National Institute of Dramatic Art, started out on the stage in Australia, playing roles in Electra and Hamlet, among others. In 1998, she played Elizabeth I in the movie Elizabeth, winning a BAFTA Award for Best Actress and her first nomination for an Academy Award for Best Supporting Actress. She actually took home that award for her performance in The Aviator, a biopic in which she played Katharine Hepburn, and nabbed a Best Actress Oscar for her 2013 film Blue Jasmine. But not all her accolades and awards have come from Hollywood—many are arguably more prestigious: The Australian government awarded her the Centenary

With such a prestigious CV, it’s ironic that one of her favorite roles ever was as the villainess Hela, the goddess of death, in Marvel production Thor: Ragnarok. The character was killed off in that film, but Blanchett made it clear to the Hollywood Reporter two years after Blanchett as Hela in Thor: Ragnarok. the film came out that she would love it if Hela could be resurrected for the upcoming (in 2021) Thor: Love and Thunder. But even if she’s not directly involved in the movie, Blanchett is still very excited to see it, telling Entertainment Tonight, “I’m so, so excited. Further afield, in yet a second television series, she’s portraying Phyllis Schlafly, the conservative activist who led the fight against the Equal Rights Movement in what is also a true story, Mrs. America, set to premiere on Hulu this April 15. The story will be told from the viewpoints of not just Schlafly but also legendary feminists Gloria Steinem (played by Rose Byrnes), Betty Friedan (Tracey Ullman), Bella Abzug (Margo Martindale), Jill Ruckelshaus (Elizabeth Banks) and Shirley Chisholm (Uzo Aduba). But all that TV work doesn’t mean she’ll be absent from the big screen: Blanchett is currently filming Nightmare Alley, and Lucy and Desi, in which she’ll star as Lucille Ball, is in pre-production. So there’s plenty for her to look forward to that doesn’t involve “throwing pots”—and plenty for us to look forward to in the way of masterful performances. As her Where’d You Go, Bernadette (2019) director, Richard Linklater, said of Blanchett, “She’s a genius.” We agree.

A

driana Jaegerman never thought being a female executive in the male-dominated engineering field was an obstacle. “You have to trust yourself and trust what you know,” says the managing principal for Stantec’s Florida Buildings Group. “With time, people see beyond gender; they want people who are good at what they do,” she says. Her advice to “keep your integrity, be outstanding in your field and ultimately you’ll be recognized” is something she practices daily while overseeing 150 landscape architects, building engineers and interior designers at one of the country’s largest engineering firms. From a young age, family role models drove Jaegerman to accomplish much and leave the world a better place. “My grandfather was a Holocaust survivor, left

Europe for Venezuela and built everything from nothing,” she says, “He always said, ‘You need to build a community,’ and that philosophy is deeply ingrained into my soul,” she says. Jaegerman fosters collaboration for developments including YotelPad, Yard 8, Wynwood Square, Luma and Kenect Miami, which she says is an integral part of her success. “These projects are exciting, and when you can walk every inch of it and know you’ve designed it with a highly effective team, it’s a proud moment,” she says. Recently, Jaegerman and Stantec colleagues created a seminar series for a Miami-Dade County public school “to talk about the disciplines we are doing and help those kids see real longterm opportunities,” says Jaegerman. It’s all about building a community.

Hurowitz

I

t’s 7 p.m. and 16-year-old Henry Hurowitz has just returned from lacrosse practice. Normal stuff for a typical adolescent, yet Hurowitz is anything but typical. The South Florida teen has invented and patented products that airlines are noticing and initiating programs to feed the homeless—all in his spare time and often with the help of “older people, like college kids,” he says. In 2017, Hurowitz created FoodEase (foodease. org), an initiative that gathers fresh and unused food from partners including Panera, Publix and seven South Florida hotels and delivers them to four area homeless shelters. The idea came from attending a Bar Mitzvah where, he says, “I asked the caterer what they were planning to do with leftover food; they said they were throwing it out. I had the idea of taking it to a local homeless shelter and ever since then I wanted to help.” Partnering with national FoodRescueUS, Hurowitz has donated more than 30,000 pounds of food for 25,000 meals since July 2019. His only limitations are attracting more delivery drivers. “We need more volunteers to get more hotels to participate,” he explains. “We have about 10 solid volunteers but could do so much more.” Not one to rest on his laurels, Hurowitz developed Germ Genie (germgenie.com) last December with his Junior Achievement classmates from NSU University School in Fort Lauderdale. The business class-style kit contains airplane tray table and headrest covers, hand sanitizer, disinfecting wipes and more, all packaged by his team with a handwritten note whenever possible. Has the COVID-19 outbreak helped sales? “Oh yes,” exclaims Hurowitz. “AutoNation just purchased 1,000 kits and we’re in talks with a major airline.” Ten percent of profits go directly to Joe DiMaggio Children’s Hospital.

T

hough Ricky Laviña handled taxes for some of South Florida’s largest companies, he dragged his feet when it came to doing his own. “Here I am a CPA with a Big Four accounting firm and I didn’t want to do my own taxes,” says Laviña. “I knew if I felt this way, there were 160 million American taxpayers who did as well.” Laviña and fellow Miamians Michael Mouriz and William Sahatdjian saw how online apps were streamlining everything from ride sharing to food delivery, quit their jobs and seized a market opportunity. In 2015, the trio created Taxfyle (they call it the “Uber” of taxes). Starting out with 100 CPAs, the on-demand accounting app has grown to 2,400 CPAs—the largest network of its kind in the world, assures Laviña—for the 50,000 American taxpayers it serves. “It was so obvious that this was the next step in the industry,” explains Laviña, who created Taxfyle primarily for freelancers, entrepreneurs and small business owners. “If you’re looking to get more money back, bought a property, started a business, sold some stock or traded cryptocurrency, we made this product for you,” he says. The sophisticated, userfriendly app matches clients with vetted CPAs, provides upfront pricing, is more personalized than TurboTax and is 40 percent cheaper than H&R Block or “brick and mortar,” says Laviña, “plus, in about a minute, you’ll have a price estimate and be chatting with a pro.”

Gartenfeld

O

ne would assume museums inspired Alex Gartenfeld as a child growing up in New York. The chief curator of Institute of Contemporary Art (ICA) Miami laughs and says no, though everyone thinks so. He credits supporters and art collectors for positive feedback about tomes he published “surrounding artists’ independent spirit and LGBTQ+ making books.” Ever seeking to expand art’s impact on those it touches, Gartenfeld studied Art History at Columbia University, then founded two art curatorial spaces in his 20s. He quickly fielded requests to curate larger projects at home and abroad. “All of my work has consistent focus on artists’ voices from the beginning,” says Gartenfeld, who left New York in 2013 to open ICA, “whether it’s curatorial projects or what we do here at ICA,

it was always the theme to put artists first.” With his team of three senior curators and assistants, he talks excitedly about presenting never-before-seen collections, including an Allan McCollum survey, which opened March 2020. “He’s never had a retrospective in the U.S.,” marvels Gartenfeld. “His work is in 90 museum collections worldwide and this is his first U.S. museum survey. Like ‘Judy Chicago: A Reckoning’—presented in 2018 —he is a great artist hiding in plain sight for whom we’ve done a major survey exhibition.” Bringing renowned artists to Miami and inspiring conversations are Gartenfeld’s passions, yet his love of writing continues. “We published 20 publications in our first two years here,” he says. “That interest in publishing continues to this day.”

How did the chance to sell your jewelry on QVC happen, and what’s the experience been like? Last summer, QVC and HSN announced a search for the next big thing in beauty, fashion, jewelry and accessories. We submitted taudrey as part of The Big Find competition and were selected from over 600 entries to premiere our brand on QVC. While intimidating at times, the experience has been a dream come true. As we navigate the process of being a tiny jewelry fish in the big pond that is QVC, we’re grateful to be soaking up knowledge from brands and, of course, a retailer that we idolize. We’re thrilled to be introducing our hand-personalized pretties to new markets. What was your biggest “pinch-me” moment? Being on the QVC campus and rehearsing for taudrey’s live debut. Walking through the halls of the powerful retailer with my product in hand was an experience that will forever mark my heart. I’m sure I looked like a little girl visiting Disney World for the first time. It made me realize and appreciate how far my team and I have come and was such a motivating moment. You recently launched your first fine jewelry line. What inspired it? At the start of 2020, we launched taudrey luxe, two gorgeous pieces (one necklace and one bracelet) that feature 14K gold and white pavé diamonds. For a brand dedicated to gold-filled pieces under the $100 mark, this was a giant leap for us. Customers constantly ask about gold offerings, and as we’re celebrating evolution and brand maturity this year, it seemed like the time to give our customers what they’ve been asking for. Priced between $428-$478, the designs are classic taudrey: subtle and dainty.

I believe it’s important to evolve with the times, especially since everything is driven by social media in the recent years. However, consistency through the pieces I bring in is very crucial. One factor that is really important at Jessie Boutique is maintaining the one-on-one relationships with my customers that they might not get with big retail stores. Once the company loses that one-on-one service, the customer interest, loyalty and reliability is lost. How do you think your boutiques stand out in today’s fashion industry? I really know and understand my customer’s wants and needs, and every item in my stores is handselected by me. When I go on buying trips, it’s like shopping for three separate stores; my stores vary in customer’s preferences, which makes the buying process more challenging. Personally, I prefer buying from women owned-and-run brands, which are 90 percent of the brands I carry. One brand I’ve been recently loving is Amur, not only because of their beautifully unique pieces, but their mindfulness in being a sustainable brand. How else are you making a fashion impact in South Florida? I’ve built up my social media accounts, personal and business, to attract a wide variety of customers. With this in mind, Jessie Boutique will style your daughter, mother and grandmother. Since I was born and raised in Miami, I really understand that Miami’s fashion is different than any other. I also do a lot of personal shopping where I go to clients’ homes and even hotels for my seasonal clients. My online business is something that has grown so much over the years, so I’m always focused on evolving that as well.

That’s how Maison 24 x Cities was born and launching in Miami was a no-brainer. We immediately started researching and working with artisans to develop exclusive fashion pieces and home accessories inspired by Miami’s mod motels, kitsch Sunshine State souvenirs, and its long-standing nickname “Magic City.” Some of our bestsellers are the two dresses and an oversized market tote that are made of Tyvek; without getting too technical, it’s like paper that is virtually indestructible and it’s great for travel, as the dress and tote fold into the size of a greeting card. W When Alfredo Leon’s Venezuelan client moved his family to Miami last year, the interior designer was presented with a shell of a condominium at Privé Island Residences in Aventura. The spacious, 3,400-square-foot (with another 1,800 in open terraces) condominium has such spectacular water and sky views from every room that the family members feel as if they are living on an island. “It was very important for this residence to be designed in a natural, simple palette to accommodate the client’s colorful contemporary art collection,” explains Leon of ABITAR Design Group. “But the client did not want to use gray and white. To achieve this, I used different techniques and textures on the walls including wallpaper, wood paneling and stone.” Leon, who moved from Venezuela to the U.S. many years ago, also has a degree in architecture and taught design and theory in Venezuela. He knew that he would have to

use his moxie and experiment to find the right mix for the couple and their four children, an active family that wanted to incorporate the inside of their home with the exterior tropical vibe of Miami waterfront living. Throughout the home, Leon used light flooring made of large 30-x 60-inch glossy Italian tile that resembles marble. He used different ceiling materials in the living room, dining room and kitchen. In addition, each room has LED lighting and high-hat lamps in the ceilings. “You can see the rooms illuminated in each space,” says Leon. Leon designed the home

with the family’s private areas divided and separated from the social spaces which are located in the center of the house. “The family members share their regular day-to-day activities with the kitchen open to the social spaces,” he says. “They also use the terraces constantly.” Altogether, both the private areas and the social spaces combine beautifully to create a perfect atmosphere to take advantage of Miami’s scenery and weather. In the large living areas, including the dining and TV spaces, lines are blurred and everything is open. The

most impressive part of this flow from room to room is the view—with all glass and no walls, the family can see the Intracoastal and ocean perfectly. “It is like being on a boat,” Leon marvels. “They entertain a lot and love being outdoors, where they have RH tables and lounge chairs for alfresco dining. It’s amazing at night with the breeze and a terrace facing east.” In the living space, which is formal yet comfortable, Leon used contemporary furnishings including a simple Bonaldo three-seat linen sofa by Anima Domus, stone

and bronze-mirrored coffee tables by Saccaro, a pair of Lima chairs by Tacchini, white matte Carrara accent tables by Natuzzi, a leather bench by Casamilano Italy, a silver silk area rug by Amir, and large framed art from the private collection of Peter Halley’s “Electric Forms” series. The dining room space is highlighted by splashy art by Venezuelan artist Alirio Rodriguez. Walls are covered in plain grayish taupe wallpaper and blend with the gray cotton-wool dining chairs, giving the art center stage. “The art shines,” says Leon.

“Altogether, both the private areas and the social spaces combine beautifully.”

He also commissioned unique lighting. Leon suggested two Italian chandeliers that look like one to illuminate the glass-top wood-bronze base dining table. And he added a ficus to bring the sensation of a garden inside. The family room features a spectacular pair of yellow leather armchairs by B&B Italia, along with a gray and taupe cowhide area rug with a modern pattern by Addison House. They are used to break up the different living sections. The vivid painting Texture Colors by Secundino Hernandez is from the owner’s private collection. “The family and kids are in this TV area constantly to talk and enjoy their entertainment options,” says the designer.

The designer opted for a wall of wood to separate the kitchen and also to warm up the white color scheme. The kitchen table is walnut, and the barstools are upholstered in a sleek Italian leather—they mark the scene as cool yet offer the family a wonderful place to dine together, chat and soak in the water views. The beautiful Italian Carrara marble backsplash and countertops add a touch of contemporary elegance. Leon designed the master bedroom with more warmth than the rest of the house. The door couldn’t be moved, so wood panels were made into an entry. The family members cannot see a door when they come and go from the room. “The couple wanted

a contemporary look here as well, but with an added layer of warmth,” he says. “So I put gold wallpaper on the ceiling and behind the headboard of the bed.” The rug is vintage style, and a natural walnut wood side table and desk by Pianca from Addison House add texture and function so either spouse can work in the room. The bedroom for the 12- and 18-year-old daughters is charming, with a mix-and-match of modern looks and necessary function. With wallpaper from Phillip Jeffries placed behind the pair of beds, it is perfect for children yet with its copper finish exudes an understated elegance. A RH wall sconce lamp and an Italian chandelier from Lighting Lab illuminate the room while red chairs add a touch of color to break up the monotony. The wool shag carpet and metallic sheen drapery add more coziness. When the project was completed, Leon doesn’t know who was more pleased—he or the clients. They have invited many people to come over and see the interior because it looks so great. Says Leon, “They call it their own private island and never want to leave the house.”

Sake Glazed Chicken Wings WHAT YOU’LL NEED • Medium-sized chicken wings (flats only) • Bamboo skewers (soaked in water for 5 minutes) • Sake • Mirin • Kosher salt • Maldon Sea Salt • Lime

INSTRUCTIONS • Cut off ¼ inch of wing ends, slightly revealing bone. (This step is optional, reduces cooking time and makes eating a lot easier.) • Start skewering the chicken. Each portion will contain 2 wings and 2 skewers. Keep each piece of chicken about 1½ inch

away from each other on the skewer. Skewers should pierce between the bone and skin. • Spray or rub a generous amount of sake onto skewered wings. Season both sides of wings with an ample amount of salt. • Place wings skin-side down on an elevated rack, above the grill, on medium-high heat. Cook until crispy and slightly blistered; about 6-7 minutes. • Flip wings meat side down. Cook for an additional 4-5 minutes. • Before serving, spray mirin on both sides of chicken wings. Cook both sides for about a minute more. Be sure to keep skin crispy, blistered and golden brown. • Squeeze some lime and sprinkle additional sea salt to taste. Enjoy!

Fort Lauderdale Beach’s Mushroom Bolognese WHAT YOU’LL NEED • • • • • • • • • •

1 cup of finely chopped mushrooms 4 oz. small diced onions, celery and carrots 4 whole garlic cloves 3 oz. tomato paste ½ cup red wine 2 cups of stock or water, to be used gradually Herb bouquet – thyme, oregano, bay leaf, basil 5 cups (dry) of gnocchi sardi or preferred pasta Parmesan cheese, upland cress or other greens of choice, and extra virgin olive oil for garnish Salt and pepper to taste

INSTRUCTIONS • Fill a medium stockpot with salted water and set it to boil; this will be used later for the pasta. • Heat up the extra virgin olive oil in a pan. Once hot, add the finely diced vegetables and sauté until translucent.

• Add mushrooms and cook until they start to dry. •C  over the vegetable/mushroom mixture with the tomato paste and let it caramelize. •O  nce the tomato paste has dried, add the wine and let it reduce by about 80 percent. •A  dd stock or water and herb bouquet, and bring heat down to a simmer. • Once the sauce thickens, add pasta to the water in step one. • Put a touch of olive oil in a small/medium sauté pan and add the blanched (al dente) pasta. •H  eat up the pasta (use caution, due to the water and oil mixing) and add one spoonful of the mushroom Bolognese at a time until the pasta and sauce comes together. •S  eason with salt and pepper to taste. •P  late the dish. Garnish with shaved parmesan and pluck greens to scatter on top. Finish it off with a drizzle of olive oil.
