EK 825A is an ON-OFF digital controller suited for the Blast Chill/Freeze Cycle management through the Compressor, Evaporator Fans, Defrost and Cabinet Lights. The unit allows the regulation of time and temperature through established parameters, of automatic Blast Chill/Freeze Cycles. The controller has six different functions, each of which is listed below: •

Blast Chill (for temperature or time) During which the controller regulates the rapid cooling of pre-cooked foods within the maximum established time

Cold Storage The controller will work as a natural thermostat (with evaporator fans and defrost management) to maintain the cabinet temperature within the established parameters

Blast Chill/Store This function will chill the food to the required temperature and hold it

Blast Freeze This function rapidly cools the food for storage until frozen to the chosen temperature

Frozen Storage The controller uses the evap fans and the defrost management to maintain the frozen temperature of the food

•

Blast Freeze/Store This function will rapidly freeze the food and maintain it as frozen by regulating the temperature and fans inside the cabinet.

In order to ensure the smooth running of a cycle of Blast Chill/Freezing, it is necessary to ensure that the needle probe is positioned correctly inside the product. The controller will perform a test to verify the proper insertion of the needle probe. Completing this test will ensure that the alarms signals will react correctly. This controller is fitted with 2 temperature alarms, the first kind of alarm will be an intermittent beep with the corresponding alarm being shown on the cabinet display alternating with the temperature Other alarms (wrong probe, faulty probe, bad connection, high ambient conditions etc) will sound intermittently as the first alarm and will display an alarm code that requires immediate attention to prevent failure.

Pressing the START key will put the machine into operation, where it will restart the last programme entered. In the event of power supply loss, the machine will recover and resume the previous operation once power has been restored, however the cycle time will be reset. Pressing the SET TIME key whilst the machine is stopped selects the amount of time for the chosen cycle, it is also possible to select which cycle you require whilst the machine is stopped.

1. BLAST CHILL CYCLE (By Temperature) Press the BLAST CHILL button to select this cycle and the START button to begin. If the parameter d4 is set to 1 and if the conditions allow it (the temp of the evaporator probe must be below the amount established in parameter d2) The unit automatically begins a defrost cycle to ensure the best performance from the refrigeration system. The codes on the DISPLAY TEMP and DISPLAY TIME respectively should show dEF and the time established within parameter c1. In order to ensure a smooth cycle of blast chilling it is essential the needle probe is properly positioned inside the product, so the unit will carry out a test to verify proper insertion of the needle. After a successful test and if the conditions permit it (The eventual defrost cycle must be finished and the temperature of the needle probe must be lower than that set in parameter c8) The unit will begin the cycle. The DISPLAY TEMP and DISPLAY TIME respectively display the needle probe temperature and the time remaining of the cycle. The temperature that regulates the compressor is read by the cabinet probe, the parameter cb is used for the set point, whilst the parameter c0 is the differential. When the temperature read by the needle probe reaches the desired temperature as set in parameter c2 the cycle has ended. The buzzer will emit an intermittent beep for the time established within parameter c9, the DISPLAY TEMP and DISPLAY TIME respectively display End and ---, the compressor, evaporator fans and the defrost outputs are deactivated. Pushing the START key, readies the machine for the next cycle . Pushing the SET TIME key displays the time in minutes to reach the temperature established in parameter c2.

The indicator DISPLAY TIME displays the length of the cycle, to adjust this, use the UP & DOWN keys and press the START button to begin. If the parameter d4 is set to 1 and if the conditions allow it (the temp of the evaporator probe must be below the amount established in parameter d2) The unit automatically begins a defrost cycle to ensure the best performance from the refrigeration system. The codes on the DISPLAY TEMP and DISPLAY TIME respectively should show dEF and the time established within parameter c1. When the defrost ends the unit starts the cycle, the DISPLAY TEMP and DISPLAY TIME respectively display the temperature of the probe and the time remaining of the cycle. Pushing the SET TIME key will display in minutes the elapsed time of the cycle.


The kind of temperature regulation is ON-OFF: The temperature that regulates the compressor activity is the temperature read by the cabinet probe. the parameter cb is used for the set point, whilst the parameter c0 is the differential. When the set time has elapsed, the cycle will end, the buzzer will activate with an intermittent beep for the length of time established in parameter c9 the DISPLAY TEMP and DISPLAY TIME will respectively indicate End flashing and 0, the compressor, evaporator fans and defrost output get deactivated, push the START key to reset the machine for the next cycle.

2. COLD STORAGE Push the CHILL/STORE button to select this cycle and the START key to begin. The DISPLAY TEMP and DISPLAY TIME respectively read the cabinet temperature and the indication ---. The unit works a normal thermostat with evaporator fans and defrost management. The kind of temperature regulation is ON-OFF and the temperature which regulates the compressor activity is read by the cabinet probe. The set point can be established with parameter c3 and the hysteresis with the parameter c0, the temperature that regulates the evaporator fans is set by the evaporator probe, the set point can be established with the parameter F1 and the hysteresis with F2

3a. BLAST CHILL/STORE (Temperature) Push the BLAST CHILL and CHILL/STORE buttons to select this cycle and the START button to begin. When the BLAST CHILL (as described in section 1) phase is over the unit will move into cold storage mode (as described in section 2)

3b. BLAST CHILL/STORE (Timed) Push the buttons BLAST CHILL, CHILL/STORE and SET TIME to select this cycle, the DISPLAY TIME indicates the length of time for the BLAST CHILL and can be modified by using the UP and DOWN keys. Press the START button to begin. When the BLAST CHILL cycle has ended (as described in section 1a) the unit will go into cold storage mode (as described in section 2)


4. BLAST FREEZE (Temperature) Press the BLAST FREEZE button to select this cycle and the START button to begin. If the parameter d4 is set to 1 and if the conditions allow it (the temp of the evaporator probe must be below the amount established in parameter d2) The unit automatically begins a defrost cycle to ensure the best performance from the refrigeration system. The codes on the DISPLAY TEMP and DISPLAY TIME respectively should show dEF and the time established within parameter c4. Pushing the SET TIME key displays the time in minutes to reach the temperature established in parameter c5 When the time established with the parameter c4 ends, if the temperature read by the needle probe is not lower than the temperature set in parameter c5, the cycle will continue, the buzzer will activate until it is stopped (DOWN key will stop the buzzer) The indicators DISPLAY TEMP and DISPLAY TIME respectively display the temperature read by the needle probe and 0 flashing, the refrigeration system remains active. Pushing the SET TIME key will DISPLAY TIME elapsed in minutes from the start of the cycle.

4a. BLAST FREEZE (Timed) Push the keys BLAST FREEZE and SET TIME to select this cycle. The indicator DISPLAY TIME displays the length of the cycle, to adjust this, use the UP & DOWN keys and press the START button to begin. If the parameter d4 is set to 1 and if the conditions allow it (the temp of the evaporator probe must be below the amount established in parameter d2) The unit automatically begins a defrost cycle to ensure the best performance from the refrigeration system. The codes on the DISPLAY TEMP and DISPLAY TIME respectively should show dEF and the set duration of the cycle. When the defrost ends the unit starts the cycle, the DISPLAY TEMP and DISPLAY TIME respectively display the temperature of the probe and the time remaining of the cycle. Pushing the SET TIME key will DISPLAY TIME in minutes elapsed since the start of the cycle. The kind of temperature regulation is ON-OFF: The temperature that regulates the compressor activity is the temperature read by the cabinet probe. the


parameter cC is used for the set point, whilst the parameter c0 is the differential, the evaporator fans status is forced to ON When the set time has elapsed, the cycle will end, the buzzer will activate with an intermittent beep for the length of time established in parameter c9 the DISPLAY TEMP and DISPLAY TIME will respectively indicate End flashing and 0, the compressor, evaporator fans and defrost output get deactivated, push the START key to reset the machine for the next cycle.

5. FROZEN STORAGE Push the FREEZE/STORE button to select this cycle and the START key to begin. The DISPLAY TEMP and DISPLAY Time respectively should display the cabinet temperature and the indication ---. The unit works as a normal thermostat with evaporator fans and defrost management . The kind of temperature regulation is ON-OFF and the temperature which regulates the compressor activity is read by the cabinet probe. The set point can be established with parameter c6 and the hysteresis with the parameter c0, the temperature that regulates the evaporator fans is set by the evaporator probe, the set point can be established with the parameter F1 and the hysteresis with F2

6. BLAST FREEZE/STORE (Temperature) Push the BLAST FREEZE and FREEZE/STORE buttons to select this cycle and the START button to begin. When the BLAST FREEZE (as described in section 4) phase is over the unit will move into frozen storage mode (as described in section 5)

6a. BLAST FREEZE/STORE (Timed) Push the buttons BLAST FREEZE, FREEZE/STORE and SET TIME to select this cycle, the DISPLAY TIME indicates the length of time for the BLAST FREEZE and can be modified by using the UP and DOWN keys. Press the START button to begin. When the BLAST FREEZE cycle has ended (as described in section 4) the unit will go into frozen storage mode (as described in section 5).

7. CORRECT POSITIONING OF NEEDLE PROBE At the activation of any cycle of BLAST CHILL/FREEZING the unit will automatically carry out a test to ensure that the needle probe is inserted correctly. The test is in 2 parts, Fast and Differential. A successful Fast test will exclude the Differential. During the Fast test, the unit verifies 5 times if the value obtained, minus the cabinet temperature that the temperature of the needle probe is higher than the set parameter c7. (the test is successful if this is the case on 3 out of 5 occasions). Each individual test is 10 seconds and the total time for the test is 50 seconds (approx) During the differential test, the unit verifies for peak times that the value obtained with the subtraction of the cabinet temperature on the needle probe differs by at least 1ËšC since. (the test is successful if this is the case on at least 6 of the 8 tests) This is with the parameter cE individual test time) at 4 seconds. To exclude the differential test, set the parameter cE to less than 4 seconds and the parameter c7 to 0.


If this test is unsuccessful the cycle will not end and the buzzer will beep intermittently, this can be turned off by pressing the DOWN key. The DISPLAY TEMP and DISPLAY TIME will respectively show 0—alternately with the cabinet temperature and decrease the time established with parameter c1 or c4. Push the DEFROST button to manually confirm correct insertion of the needle probe.

8. SOFT/HARD BLAST CHILL This mode is only available during a BLAST CHILL cycle. During the BLAST CHILL phase, this operation is divided into 2 parts, a hard phase (very low set point to maximise the BLAST CHILL by temperature efficiency) and a soft phase (the set point is higher than the previous one) To select the SOFT/HARD Blast chill cycle press the SOFT/HARD START button when the unit is in standby mode. If a BLAST CHILL (Temp) cycle is selected, during the hard phase the working set point of the compressor can be established with the parameter cF (the hard phase ends when the needle probe temperature reaches the set point established with the parameter cd), during the soft phase, the compressor works in the same ways as in section 1. If a BLAST CHILL (Timed) is selected, during the hard phase, the working set point of the compressor can be established with the parameter cF (the hard phase ends when the set time in parameter t1 has elapsed) during the soft phase, the compressor works in the same way as described in section 1a. To deselect the SOFT/HARD chill push any of the BLAST CHILL/FREEZE buttons whilst the unit is in standby.

9. DOOR SWITCH INPUT (dedicated parameters u0, u1, u2) The unit comes with a door switch input, which when activated does not end a cycle, but determines the actions established with parameters u0 and u1 and is indicated in the DISPLAY TEMP window with the symbol ]-[ alternating with the previous value shown and the intermittent beep of the alarm will sound. A door switch input on alarm will not allow the start of any cycle.

10. LOCK INPUT (dedicated parameters u3, u4) The unit comes with a locking device which deactivates at the end of a cycle and activates the alarm buzzer with an intermittent beep. The DISPLAY TEMP will show E4 alternating with the temperature of the cabinet/needle probe. The compressor, evaporator fans and defrost outputs are deactivated and no cycle is permitted to run whilst there is an outstanding lock input alarm.

11. MANUAL DEFROST Press the DEFROST button whilst the unit is in STOP mode to select the DEFROST cycle. If the conditions permit (the evaporator probe temperature must be below the set point of parameter d2 apart from the value established with the parameter d4) press the START key to begin the defrost cycle. The DISPLAY TEMP and DISPLAY TIME windows will respectively read dEF and according to the selected cycle the time established with parameter c1, or the length of the timed BLAST CHILL cycle or the indication ---. Press the DEFROST button during a cycle of cold storage and hold in for 4 seconds to begin a DEFROST. The DISPLAY TEMP and DISPLAY TIME windows will display dEF and ---.


A defrost cycle on run can be finished immediately by holding the DEFROST button in for at least 4 seconds.

12. MANUAL VENTILATION Push the DEFROST button during STOP status for at least 4 seconds to force evaporator fans on or off.

13. BORDERLINE CASES •

If the parameter d1 has a value of 2 the parameters d7, F0, F1, F2, F3, F4, F5 and u1 do not work on the evaporator fans output during a defrost cycle

If the parameter d1 has a value of 2 the door switch input on alarm happened during a defrost cycle and does not activate the alarm buzzer with an intermittent beep

If the parameter u1 has a value of 1, the door switch input alarm happened during a manual ventilation and does not affect the evaporator fans output.

In the event of loss or interruption of the power supply, during a defrost at the beginning of a cycle of BLAST CHILL/FREEZING, once the power is restored the defrost cycle will only activate if the evaporator probe temperature is below that set with the parameter d2 and if the parameter d4 has a value of 1.

INSTALLATION For a proper installation take note of the attached indications. Be sure that the conditions of use (environment temperature, humidity, power supply voltage, etc ...) are inside the indicated limits. Do not overload the relay outputs over the indicated limits. It is necessary to give the outputs the suitable protection against the short circuits and overloads.
