As a happy coincidence, a rare white rhinoceros was born at Lion Country Safari on Sept. 22 — an amazing way to celebrate World Rhinoceros Day. The Loxahatchee drive-through safari park welcomed Aziza, a female southern white rhino calf. The birth contributes to worldwide conservation efforts for rhinoceroses, which are at risk because of a shrinking habitat and poaching. Some poachers target rhinos for their horns, which are used for medicinal purposes, while others hunt rhinos for trophies. The calf was named Aziza, meaning “precious,” to reflect the dire situation for rhinos. “The birth of Aziza on World Rhino Day really helps to bring awareness to the public about conserving the rhino species,” said Haley Passeser, a spokeswoman for

White rhinos, also known as squarelipped rhinos, are the larger of the two African species and weigh 4,000 to 6,000 pounds. Aziza gains 3 to 4 pounds daily from her mother’s milk and now weighs around 250 pounds. She is expected to gain 1,000 pounds each year for the first three years of her life. “Aziza is doing really well. She’s gained at least 150 pounds since her birth, so she’s growing really well. Iconic Prezzo restaurant to open in Palm Beach Gardens

For diners who think a restaurant’s ambiance is just as important as the food, the new Prezzo could be an excellent choice. The Italian trattoria, which originated in Boca Raton, is set to open in Palm Beach Gardens in November. Known for its imaginative interpretations of Italian classics and an upbeat, lively atmosphere, Prezzo strives to deliver a convivial neighborhood vibe. The new Prezzo trattoria at PGA Commons Plaza was formerly the home of Scusi, which closed its doors in recent years and housed Vic and Angelo’s for 14 years before that. The PGA Commons location is a go-to destination for locals. Restaurateur Burt Rapport of Burt and Max fame infused the iconic 90’s era Prezzo in Boca Raton with new life four years ago. The new Prezzo, located at 4520 PGA Blvd, will feature weekday lunch, date night dinner, and happy hour bar bites daily, with a weekend brunch in the works. The idea is to appeal to diners of all ages. Managing partner Eddie Pozzuoli is working with Rapoport on the new Palm Beach Gardens Prezzo restaurant, and they are planning to open other Prezzo locations after that. Mr. Pozzuoli, the owner of Tavolino Della Notte (Little Table of the Night) on Sample Road in Coral Springs, has always been into fine food served in a pleasant atmosphere.

The Prezzo brand is no stranger to Palm Beach Gardens. Another Prezzo restaurant opened previously in the Prosperity Centre Plaza on PGA Boulevard and Prosperity Farms Road by Burt Rapoport and then partner Dennis Max as a spinoff of the original Prezzo in Boca Raton. The menu of the new Prezzo location found inspiration in the flavors of the Boca menu, which is rooted in the New York Italian style. Prezzo Palm Beach Gardens will offer indoor and outdoor seating with a Mediterranean flair. The large patio will also feature an outdoor bar for diners to enjoy their meal and drinks in the fresh air. Pozzuoli said diners will enjoy classic Italian cuisine with some twists, such as traditional Chicken Parmesan and a Veal Milanese that is pound to a size that fills the entire plate. The arrabbiata pizza is topped with Calabrian chili tomato sauce, mozzarella, pepperoni, basil, and infused extra-virgin olive oil. Like the original Prezzo, the new location will serve

complimentary roasted garlic knobs paired with focaccia breadsticks to introduce the meal. Pozzuoli partnered with Rapoport to run the Prezzo brand two years ago. Rapoport is a third-generation restaurateur and president of Rapoport’s Restaurant Group in Delray Beach. He is known for high-quality cuisine at a good

value in a welcoming atmosphere. He served on the advisory board for Johnson & Wales, the largest culinary university in the nation, for more than 10 years. Rapoport’s Restaurant Group includes Max’s Grille in Mizner, alongside Burt & Max’s and Deck 84 in Delray Beach. A Chinese restaurant, Pagoda Kitchen, is in the works for suburban Delray Beach with acclaimed Chef Bryan

Emperor. The restaurant is taking the space of the former Apiero at the Delray Marketplace to satisfy the craving for the kind of Chinese food found in New York and San Francisco. Prezzo is due to open in midNovember with a fundraiser to benefit the Palm Beach Gardens community.

PALMS WEST JOURNAL It’s no secret that people in Palm Beach County treat their dogs like a part of the family. Businesses along busy streets set out water for dogs in hot weather. Restaurants offer full dog menus. Shops sell dog wardrobes. Beaches let dogs swim in the ocean. Now K9 Resorts Luxury Pet Hotel in Wellington offers the ultimate in luxury for day care and overnight stays. The high-end K9 Resorts is at 3381 Fairlane Farms Road near the mall. The first Florida location for the New Jersey-based franchise features 8,000 square feet with of luxury with features that appeal to dog owners like chandeliers, beautiful moldings,

spacious rooms and courtyards. An outdoor play space covers an additional 3,000 square feet. Owners David Blevins, a 25-year hotel industry veteran, and wife Heather, a former Planet Fitness franchise owner who grew up in Wellington, wanted a business in which they could combine their passions for hospitality and dogs. They decided that an industrial park off Pierson Road would be a great location because many pet lovers frequent the area. Despite some challenges in opening, David says things have gone well with staffing: “We have the same staff that we had two months ago when we opened.” Having an experienced staff has been important to operations, he says. The friendly, experienced pet handlers are trained and certified to ensure

canine guests’ comfort and safety. The business drew 500 people to its grand opening in October. Business professionals and prospective clients gathered for the ribbon cutting, after which K9 was closed for a deep cleaning in preparation for the first four-legged guests. The owners describe K9 Resorts as the “Ritz-Carlton of doggie day cares.” It offers cage-free boarding and day care with homelike amenities, recreation and facilities that exceed kennel industry standards. The luxury facility promises to give dogs the attention, exercise, socialization and care they deserve. David Blevins aims to provide them the same sort of superior atmosphere he offered over two decades as a hotel manager. Rooms include sound-resistant glass privacy doors and Kuranda beds that offer orthopedic comfort. Luxury suites are equipped with HDTV systems. The flooring features Microban, a built-in antimicrobial technology that prevents the growth of mildew, mold and bacteria. A PetAirapy UV air purification system and antimicrobial artificial turf also protect pets. Boarding and day care programs focus on exercise, socialization and the care required in a stimulating and engaging space designed by experts. Half-day and full-day options are available for day care. K9 Resorts offers special plans and discounts to first responders and members of the military.

Lion Country Safari works with the Associations of Zoos and Aquariums to ensure the survival of the species. The national effort brings in male rhinos that are strong matches with females to produce offspring with valuable genetics for the healthiest population. White rhinos are surprisingly agile and can run up to 25 miles per hour for short periods. They wallow in the mud to stay cool, protect themselves from the sun and repel insects. Rhinos have poor eyesight but acute senses of smell and hearing. They feed on grass and live about 50 years. White rhinos are found in South Africa, Botswana, Kenya and other African countries. Like the other African species, the black rhino, they actually are gray. Save the Rhino reports that poaching reached an all-time high in the past decade; 1,215 rhinos were killed in 2014, more than three rhinos every single day. To combat the problem, Save the Rhino shares information, champions community conservation efforts

and holds events to reduce illegal trade. The Lion Country Safari rhino conservation program is part of a worldwide effort to save the majestic animals. There is currently a steady decline in hunting cases and a significant rise in the white rhino population. Conservation efforts like the White Rhinoceros Species Survival Plan and the Save the Rhino organization, headquartered in London, are combatting the problem head on. Also at Lion Country Safari, the upcoming annual Christmas With the Chimps event will merge holiday cheer with safari fun and education. Santa delivers presents by boat to the park’s chimpanzees. The chimps suit up for their meeting with Santa and groom one another. Santa gives the chimps stuffed animals, clothes, treats and toys that enrich their intelligence. As soon as Lion Country Safari workers set up the decorations in preparation for Santa, the chimps hug, smile and yell in excitement. Covid Memorial Quilt exhibit inspires hope and healing at Armory Art Center

Madeline Fugate, a 14-year-old high school student, strives to bring healing and peace to those whose loved ones have died from COVID. Inspired by a past project by her mother to make a quilt honoring friends who died of AIDS, Madeline launched the Covid Memorial Quilt. “My mom’s making of her quilt really helped her and the community come together through that difficult time, and it turned out to be really healing for her, almost magical. So, I looked at her and said, ‘Why don’t we just do that again, a COVID quilt?’ And that’s how it was born.”

Friends and family members can submit their own square designs to be added to the quilt. Every step of the process holds significance, starting with the dimensions of each square: 8 by 8 inches, chosen because an eight on its side is the symbol of infinity. Eight “is a flow of energy — a sign of life,” the project’s website says “The Covid Memorial Quilt is a living memorial to remember all who have died. May they never be forgotten.” Madeline acknowledges the endless grieving since the outbreak of COVID19 and understands that the process of grief continues throughout a survivor’s life. Madeline’s main goal with the quilt is to help people heal while giving COVID’s victims a proper remembrance. “A lot of times when you Google or see on the news ‘COVID deaths,’ they are only talking about numbers. They

very rarely say people. Even on Google, there’s no mention of people; only a number pops up. … It can really be dehumanizing for them,” Madeline said. Each family can submit a design for a quilt square or write a detailed portrayal of the loved one so that Madeline and her team can create the square. Madeline has taken many personal stories to heart. One family submitted a snippet of a man’s shirt pocket with his business cards inside. The family explained that he always wore shirts with pockets so he could carry business cards to give to acquaintances. “It was really sweet to see. It was almost like having that physical representation allowed you to see him actually doing it,” Madeline said. A healing practice when navigating grief is to remember a loved one’s habits and celebrate them through practices of remembrance. Remembering how that

person lived can offer peace amid the pain that the person is gone. Madeline said she is certain of two things: The project will go on as long as people submit squares, and her calling in life is art. “As for now, I really want to get all of these people remembered, so I am putting all of my focus on that.” Panels of the COVID Memorial quilt are currently on exhibit within various parts of the country, including California, Nebraska, and West Palm Beach. West Palm Beach will feature more panels than any other exhibition in the United States. The COVID Memorial Quilt will be shown in an exhibition at the Armory Art Center at 811 Park Place in West Pam Beach. Seven unique Thanksgiving tradition ideas for your family

Thanksgiving is all about home and family, but the holiday is also about tradition. Even so, that focus on holiday tradition does not mean you cannot shake things up once in awhile. Sometimes, the stress of making the perfect five-course meal makes you want to just order some Chinese take-out, and hey, that’s not that bad of an idea. If you want to stay in a middle ground of celebrating the season without all of the stress, theres a lot of great alternatives that still feel festive enough to make the cheer last until Christmas. If you are tired of doing the same old things year after year, why not create some new traditions this Thanksgiving season? Here are six holiday hacks that will upend your old traditions and help you make some new memories. 1. Head to a Farmers Market or Local Farm for Fresh Fruits and Veggies November can often feel like you have two homes: your actual home, and the grocery store. When you used to only leave the house to go to the store on Sundays, you find yourself going back for more squash, fresh green beans (because you forgot about the last bag and they wilted way faster than normal), or because you tried to make the pie crust from scratch and gave up after attempt seven. Getting outside and taking a break from never-ending aisles and fluorescent lights can really be therapeutic. If you head over to the farmers market, or a local farm, you can get some help from your family picking out fresh berries, squash, all the things you need for a nice meal. Some great places to check out in our community are Benders Farm Fresh Market in Boynton Beach, and the West Palm Beach GreenMarket, open every Saturday from 9 a.m. to 1 p.m. 2. Create a Family Recipe Cookbook From Aunt Jane and her amazing green bean casserole to those spec-

tacular sweet potatoes your Uncle Bob makes, every member of the family has their own traditional Thanksgiving recipes. Now that the holiday is almost here, why not bring those dishes within reach of everyone, even those who cannot make the trip this year? Putting together a cookbook filled with timeless family recipes is a great way to celebrate Thanksgiving, but it will also make a memorable holiday gift. So start emailing, go on social media to solicit submissions and get your printer ready - you have a cookbook to make. 3. Plan a Potluck. Thanksgiving is a wonderful time of year, but the person doing the cooking may not feel that way. Cooking an entire holiday feast for a house full of relatives can be a huge source of stress, so why not get together and lighten the load on this year’s host? A potluck Thanksgiving can be a wonderful new holiday tradition, one that will allow every member of the clan to share their own special creations. The host can still cook the turkey, but knowing everything else is taken care of will set their mind at ease. 4. Explore NonTraditional Entrees There is no law that the turkey has to be the star of the Thanksgiving show, and exploring non-traditional entrees is a great way to shake things up. There are plenty of other delicious dishes you can try, and you just may discover your new favorite Thanksgiving tradition. From prime rib and brisket to seafood and pasta, there are plenty of ways to rethink the Thanksgiving day table. You can even whip up a vegetarian feast for the plant lovers in the family. 5. Plan a Thanksgiving Getaway Thanksgiving is more than just a single day - it is a four day weekend, and a great chance for a quick get-

Start a Thanksgiving Garden Thanksgiving is all about great food, and the fresher those ingredients are the better the meal will be. If you want your Thanksgiving dinner to be extra special, why not start a garden and harvest your own vegetables? Depending on where you live, you can grow everything from corn and sweet potatoes to kale and lettuce for the salad to pumpkins for the pie. Knowing that you grew the ingredients yourself will make them taste that much better. If you do not have room for a backyard garden, you can grow herbs right in your windowsill. You can purchase a pre-made herb garden complete with seeds and growth medium, or you can purchase and grow individual plants on your own. Thanksgiving is a wonderful time of year, with years of tradition and family fun. But that does not mean traditions cannot, or should not, change. What you may not know is that horse riding can actually be good for your health. Since their evolution around one million years ago, horses have been an important asset to the human population. They began as a smaller version of their current form and were almost wiped out at certain points in their adaptation. However, the species endured, and are now a mode of transportation that transformed human activity

globally. Today, horses have been replaced by alternate transportation methods, but they continue to aid mankind in many surprising ways. How Horse Riding Improves Health Since the advent of the combustion engine, horses have been used less for transportation and more as a hobby that has increased satisfaction, social interaction, and a feeling of well-being. These impacts did not go unnoticed by the health community, which began to investigate the value of horse riding for patients with physical or emotional disabilities. The results of analyzing the value

of riding and working with horses were startling, providing improved physical condition and fewer health issues, as well as a significantly better mental outlook. These experts also began to examine how horse riding could help non-disabled individuals, and studies began to confirm that riding provided significant benefits to the public at large. Core Strengthening The act of sitting atop a horse necessitates the use of core body muscles. Shifting and turning are common riding movements that require the use of these muscles frequently. Regular riding can help to keep your

core muscles toned and your posture more erect to give you a stronger and more confident appearance. Stronger Legs Horse riders must use their leg muscles frequently to mount, stay seated and signal to the animal. These constant movements result in increased muscle strength in the legs, a stronger gait, and better balance when walking. Greater Flexibility Being in the saddle requires a certain amount of turning, twisting, and lifting, all of which use muscle groups differently than normal activities. Over time, these movements can provide increased flexibility, balance, and coordination to protect riders against common injuries that occur during everyday movements. Burning Calories Horse riding involves a number of activities that expend energy to help maintain normal weight and increase muscle and cardiovascular function. Caring for the horses requires significant energy expenditure in mucking stalls, brushing, feeding, and saddling. In addition, riding itself burns calories, a smaller amount if seated on a slow walk, and more when trotting. More rigorous activities with the animal, such as cutting and reining, burn even more calories and can equal the amount expended during a workout at the gym. Outdoors riding, being in control of a responsive animal like a horse increases the production of beneficial brain chemicals that provide a feeling of happiness and well-being. Horse riding gives individuals a feeling of unparalleled sense of mastery and confidence. The interaction between a horse and rider is straightforward, with no hidden messages or perplexing reactions. The straightforward nature of the human-horse encounter makes it a soothing and enjoyable experience that carries over into non-riding life. Social Interaction Another aspect of horse riding that functions to improve physical health and emotional well-being is the social aspects of the activity. Horses necessarily require housing in equestrian centers that offer interaction with like-minded people. Riding in groups is commonplace in the equestrian community, and this aspect offers riders an improved ability to empathize and interact with others, leading to better health. Improved Disability Studies indicate that disabled riders show significant improvement in their physical conditions and emotional wellbeing when they engage in riding on a regular basis. Studies with disabled riders show that they receive the muscle and emotional benefits of riding, just as non-disabled riders. In the media, Ann Romney, wife of the former Republican presidential candidate Mitt Romney, extols the virtues of therapeutic riding, crediting it with improving her multiple sclerosis. She was diagnosed with MS in 1998 and claimed that riding helped her get out of bed when the illness threatened her with an everincreasing disability. Horse riding is not just a way to spend leisure time. It is a way of life that can improve your physical condition and mental outlook, giving you a chance to mingle with others that understand the magic of engaging with a horse regularly.

LOCAL HAPPENINGS Exciting new lineup at the Lake Worth Playhouse The Lake Worth Playhouse is a historic art deco gem providing mainstream and alternative programming, education, and opportunities for artistic expression. The nonprofit community theater occupies the spot of the former Oakley Theatre and is the oldest building on the Palm Beach County Art Deco Society register. The theater offers shows, Indie films, a Black Box series of plays, classes for children and adults, and children’s productions. The new 2021 – 2022 season’s offerings include lighthearted musicals as well as thought-provoking Black Box dramas and Indie films. The historic playhouse has a history of encouraging community involvement and volunteerism. The Oakley Theatre was constructed back in 1924 almost a hundred years ago by brothers Lucien and Clarence Oakley, who arrived in South Florida from their native Illinois. They rebuilt the theater after a devastating hurricane ripped through the area, but lost ownership when the Depression struck South Florida. After years of changing owners and an eventual shutdown, the Lake Worth Playhouse was rescued by a group of local citizens when it was incorporated in 1953. It started out by featuring productions in the auditorium of the old Lake Worth City Hall. In 1975, the Lake Worth Playhouse used federal grant money to renovate the original Oakley Theater building to use as its new home. Today, the Lake Worth Playhouse community theater continues its neverbe-dark policy with yearround programming. Theatergoers are treated to awardwinning dramas, entertaining comedies, lively musicals, Broadway blockbusters, and area premieres. Other programming includes international ballets, operas in cinema, a live concert series, alternative programming, and children’s shows. The Lake Worth Playhouse features the main stage for its theatrical fare along with the Stonzek Studio, an intimate Black Box-style theater equipped with highdefinition projection and an extra-large viewing screen. The Stonzek Studio is considered Palm Beach County’s

premier venue for independent films. The theater presents daily independent and foreign films to provide premium alternative entertainment to the community.
