Paul Renner presented an oversized ceremonial check to Flagler County Board of County Commissioners Chairwoman Barbara Revels at Bings Landing on Friday, Aug. 5. “I want to give a shout out to Frank Meeker and honor him as well,” Renner said. Hutson said what many were thinking, “This without Frank is a bittersweet day.” The $300,000 check will be used in the 2016-17 fiscal budget by the State for the improvements and enhancement to the Mala Compra basin a storm water system.

“We are very pleased Flagler County will receive this funding,” Revels said. “This is a very important project that will directly and indirectly affect everyone on the barrier island. Hopefully, we will not have standing water, and septic systems will be able to work better.” Meeker, who represented District 2 where the Mala Compra basin is located, lobbied strongly for the funding. Hutson told the crowd gathered at Bings Landing, that Meeker felt so strongly about the project, he continue to lobby for it in Tallahassee even as his health was failing. “He was our champion of this project with our legislative delegation,” County Administrator Craig Coffey said. “He worked very hard to get the funding included in this budget.”

Q&A WITH STEPHEN SCHOEMBS So where does a world-traveled chef go to eat? “I like local, off-the-beaten-path places. I love street vendors and mom-and-pop places. I think you get a real sense of where you are. In Thailand and the Philippines, you can go to their seafood market, buy fish and right across the street you can have it cooked for you.” What restaurants are on your bucket list? “I really want to go to the French Laundry in Napa, and Nobu.” What is the ultimate bucket list restaurant? Sukiyabashi Jiro, a 10-seat, sushi-only restaurant located in a Tokyo subway station. “He is a master at his craft and guides you through the meal.” What is the best meal you have ever had? When Stephen Schoembs was 6 years old, his parents moved from New York to Flagler County. He remembers the ferry that traveled between the welcome center and the barrier island, and he remembers the Sheraton, located where he is now the executive chef: Hammock Dunes Country Club. “I tell people I am so old that I went to Buddy Taylor Middle School when Buddy Taylor was the principal,” Schoembs said. (At that time it was Belle Terre Middle School and renamed for Buddy

Taylor after his death.) Schoembs returned to Flagler earlier this summer, to visit his mother. While he was on vacation, he was considering two job offers, one in Dubai and the other in Nairobi. Lucky for the diners at the country club, a third option developed as executive chef at their country club, and the last week of July he officially came home to work. He inherited his love of cooking. His parents owned a gourmet deli in West New York, before they moved their family to Florida and opened Boppers in Daytona Beach. His father was also one of a group who opened the Denny’s in Palm Coast, and it was there that Schoembs started his first paying job: washing dishes. “I graduated from FPC and

went to Daytona State and then the Culinary School of America in New York,” Schoembs said. “I had an internship with Roger Verget in a small town above Cannes in France.” He has cooked his way around the world, including Germany, Hawaii, Saudi Arabia, and of course, Flagler Beach. “I started a catering company with Bug Mahoney who owned Market Place Deli, and worked at Canatella’s and Hammock Beach.” Schoembs began his job at Hammock Dunes the last week in July and has already started updating menus, and in September planned to introduce a special event, “Cooking with Chef Steve.” “It’s a cooking class where we

show them how to prepare three courses and then they get to eat it,” he said. “We want to do fun dining, we want to create a fun experience and for everyone to have a good time.” Fresh food attractively presented is a goal for Schoembs and his staff. “I am really blessed with the fact that my staff is so eager to learn and see new things. They enjoy coming to work every day, and that makes it exciting for me too.” Fresh food from local sources is important to Schoembs. “Most of our seafood is locally sourced out of Jacksonville and Orlando,” Schoembs said. “Our goal is to eventually become as organic and farm-to-table as possible.”

A Steller’s eider drake sits quietly in Bart LaRose’s workshop. It can’t make noise — it doesn’t have a head. LaRose hasn’t carved it yet. Throughout the LaRose home there is a bird sanctuary of sorts. Ducks are perched on shelves – one is stretching a leg out from under ruffled feathers. A pileated woodpecker is poised to drill a hole in a tree branch in the kitchen, and a bluebird and cardinal quietly watch the household from a bookshelf. “Everybody seems to like the pileated woodpecker,” LaRose said. “To me it’s just a black bird. It’s whatever people relate to.” The birds are all very different, but all have one with thing in common – they are made of wood painstakingly carved by LaRose. Feathers aren’t just painted on as they would be for a decoy; they are individually crafted, painted and layered. Real birds have more than one feather texture from the down (closest to their skin), to flight wings, and tail feathers — and so do LaRose’s creations. The retired production man-

ager from the ladies garment district in New York City carved his first duck in 1996. “I’ve been building things all of my life,” LaRose said gesturing to a wooden ship in the dining room. “I got into this because I got tired of building and flying model airplanes.” LaRose has learned his craft through research and magazines, and guidance from fellow carver and neighbor, Bob Roberts. “I use a combination of patterns and pictures,” he said. “I go online.” When asked how many birds he has carved, he says, “Lots.” He doesn’t actively sell his creations, but does have a website and has created birds on commission. He made one of his smaller birds for a silent auction to benefit The First Tee fundraiser for Flagler Palm Coast High School. His largest project was a halfsized bald eagle, commissioned by a man who initially asked for a full-size eagle to be carved. Even the half-size eagle, which was created from an 8-by-8-by-22inch piece of wood was 20 inches tall and very life-like when it was completed. While he orders the basswood

or tupelo wood he uses to carve his birds, the material for the stands some birds are displayed on is often as close as his own backyard. “The stands often come from branches that have fallen from my trees,” he said. “I try to pick pieces that match the bird.” His current project, the Steller’s eider drake will take about 300 hours to complete. “I usually work a couple of hours a day, because I play tennis and golf, and tend the garden,” LaRose said. “In the afternoon, before dinner I usually have time to sit down and do a little. I’m not in a hurry, because I am running out of space.”

MUSIC IN A CIGAR BOX Orthopedic surgeon, cigar box guitar and ukulele maker, and performer — this Hammock Dunes resident seems to do it all. JACQUE ESTES COMMUNITY EDITOR

It started a couple of years ago, almost as a dare. Dempsey Springfield was in New Smyrna Beach with his wife and one of his brothers, when his wife spotted two cigar boxes in the trash. “I said, ‘You know you can make guitars out of those,’” Springfield said. They didn’t believe him, which left him only one choice: to prove them wrong. “I made a couple and then I got hooked,” Springfield said. “Now I have cigar boxes all over the place.” No two cigar boxes are alike. He picks up a wooden box with hinges that he has lacquered and electrified, and strums the three steel

strings. A rich melodic sound fills the room. “All are a little bit different; some are cardboard, others wood, and it depends on the size of the cigar box,” he said. “I make mainly three-string as opposed to the regular guitar which is sixstring.” He also made a four-string ukulele for his sister-in-law, Patty. “I give them a lot as gifts,” Springfield said. “I will have to get rid of some before I make any more. I have a little stash down stairs.” The boxes come from a variety of sources, including family and friends. One of his favorite places to buy the boxes is a cigar store in St. Augustine. “Every tobacco store has cigar boxes for sale,” he said. “The real-

ly nice ones are sent back to the (cigar) company. There’s a little tobacco shop in St. Augustine owned by a husband and wife, and they send the money they get for the cigar boxes to a school in Honduras.” The leftover bones from a roast beef dinner at a restaurant are dried and bleached and used for the bridge and nut of the instrument. “Real guitars use bone; it’s the best material,” he said. “I add frets on mine. Some people don’t; they play it with a slide.” Springfield likes to experiment with his music and creations. He had made single-string guitars out of cans, but his wife said they were too ugly to be shown. On a vacation to Hawaii he discovered a stick bass, a single-string electric instrument that produces a rich sound. The retired orthopedic surgeon has taken his love of music, although not the cigar box guitars, to the stage, playing in Hogtown Creek, a band made up of his family: his brothers and sisterin-law. Growing up in Gainesville, the group was named for the Hogtown Creek, which was near where the family lived. Hogtown Creek performed at the 450th anniversary of St. Augustine, First Fridays in St. Augustine and the Barberville

Pioneer Music Festival. They plan on returning to play at the Festival again this year. “We play what they call Americana, a traditional blue grass and modern folk music genre,” he said. “We play predominately American written music. I play the mandolin or the bass in the group,” he said. “We have not — yet — used my cigar box guitars on stage.”

Since 1981, Hammock Hardware has carried everything imaginable for the “honey-do” list — including the honey: Mason jars of local honey line the shelves behind the front counter. “We sat around one night, after living here for three years, and asked ourselves, ‘What does The Hammock need?’” Margaret Russell said. The answer was a hardware store. In the 1980s there were no big box stores, and only a Jiffy gas station and convenience store and the Delores Motel in The Hammock. John and Margaret Russell both grew up in Daytona Beach. When they moved to The Hammock, they not only found a place to raise their children and start a nostalgic hardware store, they also found their roots. BEFORE ITT ...

“I was a member of the DAR and brought John’s sister into the DAR,” Margaret Russell said. “She started researching the Russells.” They discovered that they were related to another John Russell who owned much of what is now Flagler County and sold some of the land to John Bulow. “She had it proven through DNA that they are related,” Mar-

garet Russell said. “We find it hilarious that we owned it before ITT.” John and Margaret Russell may not own Flagler County as his ancestor did, but they have a very popular little spot that spurs the imagination. The white wooden building with blue trim is sheltered by towering oaks draped in Spanish moss. Dogs wander inside and out, and it would seem natural if Goober or one of the Mayberry residents was standing under the covered porch catching up on the local news, a pastime that has not gone out of style in this corner of Flagler County. “People come for the news, what’s going on and so and so, and usually Robin and Alex can tell them,” Margaret Russell said. “When we were here, we could too.” Margaret and John have turned over the day-to-day operations to their daughter Robin and her nephew, Alexander Russell. The next generation, red-headed toddler Tinsley, has already made her presence known with toys and coloring tables strategically placed to allow her to oversee operations.

when a French Canadian visitor came into the shop in the 1980s. “I could hardly understand a word he said,” Margaret Russell recalled. “But I finally figured out that he needed a wire for a toaster, the heater wire. I saw one and pulled it out and sold it to him. Never had another request for one.” John Russell knew exactly where that piece had come from. “We bought that piece six weeks earlier in Georgia, in a basement sale,” he said. “I thought, ‘We’ll never sell it,’ but it was cheap.” The store has had a few wouldbe burglars in its day. “When Bennett was sheriff, a guy broke the window by the cash register. We had an intercom system then so we heard it and called 9-1-1,” Margaret Russell said.

UNUSUAL REQUESTS

The store aisles are filled with items that are familiar and others a bit harder to find. The most unusual request for Margaret was

John wore his shoes for months.” The Russells don’t rely on an intercom system anymore; they have several cameras inside and outside the store. “In the last couple of years, quite often the sheriff’s officers will come by to see if a vehicle passed by here. We have a good view of the road,” John Russell said.

WHAT’S A MOTTO WITH YOU? The couple gave different answers when asked what the store motto would be. “Our motto has always been, ‘If we don’t have it, you don’t need it,’” John Russell said. “‘If we don’t have it, we will get it for you,’” Margaret Russell responded.

The attraction was the dedication and ribbon cutting of the new pickleball courts, an addition that many have been waiting for. “I was driving down to Daytona Beach Shores to play,” said Sylvia Whitehouse, the gold medal winner at the Florida International Senior Games and State Championship in the women’s 50-54 doubles division. Whitehouse, Lee Davis, Mark Cohen and Bobby Caviness played a game to give the crowd of more than 50 residents of all ages an introduction to the game. After their match ended, Flagler County Commissioner Nate McLaughlin shed his shoes and took an impromptu lesson. “The only things you need for this sport is a racket and a pair of good all-court tennis shoes,” Whitehouse said, explaining that some tennis shoes mark up the courts.

Joseph and Carolyn Lee, of Palm Coast, sold 130 Island Estates Parkway to Samuel and Denise Jenkins, of Stuart, for $1,380,000. Built in 2000, the house has four bedrooms, four baths, three halfbaths, a boat house, boat dock, swimming pool, fireplace and 6,048 square feet. It sold in 2009 for $2,400,000.
