Ingredients • 1 small granny smith apple, peeled, cored and finely chopped • 1 tspn lemon juice

• 2 sheets filo pastry • Canola cooking spray • 1 tbsp almond meal (or coconut)

• 1 tbspn castor sugar • 1/4 tspn cinnamon • Custard
Method Preheat oven to 180oC. Grease four holes on a large muffin tray.

Make custard as per directions on the packet, leave to cool.
* Closed: Christmas Day, Good Friday, Anzac Day
Combine lemon and apple in a bowl. Place one sheet of filo on a flat surface, spray with oil, top with remaining sheet, fold in half and cut into 4 even squares then press into muffin tray. Sprinkle with almond meal (or coconut), top with apple mixture and then sprinkle with half the sugar and cinnamon. Bake in the oven for 15 mins or until golden. Stand for 2 mins in pan and place on a wire rack for 5 mins. Spoon custard into cases and top with remaining cinnamon and serve.

Method Melt the butter in the microwave. Mix coconut, sugar, flour & cocoa in bowl and pour mixture into greased microwave friendly dish. Microwave on high for 5 minutes. Coat with a chocolate icing.
