BLUE Hot on the outside, raw on the inside internal temperature 40°C RARE Red and cool center, soft and spongy internal temperature 49°C MEDIUM RARE Red warm center, with a springy firmness internal temperature 53°C MEDIUM Pink center, quite firm, still springy internal temperature 58°C WELL DONE Completely brown, very firm structure internal temperature > 70°C
