We grew seven varieties of cucumbers on the farm, and I’d do a salad to feature them all. Before we opened Greens, I went to Europe and brought back a lot of seeds, like golden beets—things we now expect to find at Trader Joe’s or Whole Foods but which were just being introduced here at the time.
