(currently chef in Novecento México, at Polanco). Es un chef casi autodidacta. Esa ruta lo llevó a viajar, aprendiendo sobre la cocina tradicional desde sus raíces y el respeto por la tierra. Trabajó en numerosos países, como Uruguay, Japón, España y México. Esas experiencias le permitieron conocer distintos estilos, productos y técnicas, que invitaban a ser explorados y combinados en una personalidad propia. Su línea es una cocina de producto, elige y compra a proveedores de calidad, trata de replicar sabores de antaño con técnicas modernas. Es conocido como el cazador de recetas e intérprete de tendencias gastronómicas. Desde 2010 forma parte de elgourmet.com, apostando a la propuesta de la cocina con personalidad. Entre sus influencias nombra al chef japonés Takehiro Ohno. Actualmente Francisco es el chef de Novecento México, en Polanco.
