hristmas in a chalet is always going to be magical, but you don’t have to actually be in the mountains to achieve it. “I love a Christmas that is a bit over the top. A large table, bursting with food and unusual place settings. Candles everywhere - on the floor, table, in the air LED, of course. Garlands and wreaths hanging wherever they can, the more unique the better, I think. I don’t want a predictable Christmas, it’s more fun when there are little suprises along the way.”

“Possibly the most magical experience of all is spotting the elusive Northern Lights.” Spotting the Northern Lights Possibly the most magical wintry experience of all is spotting the elusive Northern Lights, something that should be floating around near the brim of everyone’s bucket list. Sadly, sightings are never guaranteed, but there are certain places in Lapland where they seem to have the right mix of climatological and topographic conditions to make seeing the fabled Aurora Borealis far more likely. In terms of times of year, it’s best to be there in February or March, because the nights are still long, but it’s not quite so nippy.

Winter Adventures Inspired by Sue’s Aspen chalet and dreaming (as always) of holidays, we asked Tom Barber, co-founder of award-winning travel company Original Travel and Travel Editor of Esquire Magazine, for his top winter breaks.

A

fter a European ski season like last winter, where the Alps experienced almost unprecedented levels of snowfall, it might be tempting to take to the slopes again this year, but there’s more than one way to have fun with your salopettes on. Here’s a handy guide to several other ways to enjoy the white stuff in destinations other than the Alps.

Snowmobiling on a glacier in Iceland

Snowshoeing in Lapland Slow travel (ie: taking your time) is something of a ‘thing’ at the moment and snowshoeing certainly fits this particular bill. Available across Lapland (so in Sweden, Norway and Finland), snowshoeing is a lovely way to explore an arctic forest landscape in virtual silence, meaning there’s much more chance of seeing wildlife such as reindeer in their natural habitat.

You don’t even need to go in winter to enjoy snowmobiling on Europe’s second largest glacier, the wonderfully named and year-round Langjökull. After a safety briefing you’ll don a helmet and head off at speed across the glacier. Stop near the side of the glacier for jawdropping views across to other Icelandic ice fields and the Kerlingafjöll mountain range. Then head back to nearby Reykjavik for a fun night out in the Icelandic capital.

Stay in an Igloo or Treehouse in Sweden Scandinavia is home to an ever-growing number of extremely quirky places to stay. The longest standing is the original Ice Hotel (in Sweden), where you can enjoy a night cap vodka in an ice (of course) ‘glass’ before sleeping in arctic sleeping bags on a reindeer mattress in an igloo surrounded by extraordinary ice sculptures. Meanwhile over at the Treehotel, you can sleep – as the name suggests – in one of a series of bizarre treehouses. Choose a UFO or a mirrored-cube for one of the most original night’s sleep imaginable.

Dog sledding in Swedish Lapland Hovercraft on frozen sea in Sweden You might imagine that when the sea freezes in Lapland (yes, it’s that cold in winter) it would freeze flat. Not so. The wind sculpts the pack ice into bumps and troughs that are sometimes several feet high/low. All the better for this next activity – hovercrafting. Enjoy (if that’s the right word) hurtling across the ice, occasionally taking off before landing softly on the cushion of air. You may spot a seal or fish eagle as you speed by before returning to shore for a well-earned and warming mulled wine.

Mushing a team of super-enthusiastic huskies through the snow-heavy forests of Swedish Lapland is a completely magical experience. The huskies themselves are bundles of energy who howl with excitement when they know they’re about to be strapped into their harnesses. You stand on the heavy wooden rails of your sledge and you’re off, gliding along the trail following your guide, the only sound a gentle hiss as the sledge slips across the snow at pace. Should you ever want to stop, jump with both feet onto the spring-loaded plate with spikes on it that dig into the ice. The dogs will – eventually – get the message.

CHRISTMAS WITH SALVESEN GRAHAM We asked interior design duo, Nicole Salvesen and Mary Graham for their perfect Christmas table.

T

his colour palette was designed to complement candle light and low lighting, creating a warm and welcoming atmosphere on a winter’s night. The balance and symmetry of the room was achieved through the lights, mirrors and console tables with the fireplace at the centre. Finally, simple and quirky touches, such as ribbons around candlesticks and natural elements like the pine cones and dried oranges, were scattered around in order to add interest and a fun twist to the classic design. Gather Together

These one-pan dishes are perfect for simple yet impressive entertaining. Whole Roast Lemon & Garlic Chicken with Roasted Hispi Cabbage, Parsnips & Black Pudding A twist on a classic roast chicken, the trimmings are cooked in the same tray as the bird for ease. Serves 6  Prepare 25 minutes  Cook 1 hr 45 minutes

INGREDIENTS

Sweet Potato, Stilton & Walnut Tart with Charred Tender Stem Broccoli This tart is super simple to put together. This charred broccoli is particularly tasty, but you can serve with any green veg. Serves 6  Prepare 25 minutes  Cook 1 hour 30 minutes

INGREDIENTS

 750g sweet potatoes, scrubbed  375g puff pastry  150g crème fraîche  100g stilton  30g walnuts, roughly chopped  2 tbsp pumpkin seed  1 small red chilli, deseeded and finely chopped

DIRECTIONS

 1 egg, lightly beaten  2 tbsp olive oil  2 garlic cloves, crushed  25g flat-leaf parsley, leaves roughly chopped  400g tenderstem broccoli, trimmed

1. Preheat the oven to 200C, gas mark 6. Prick the sweet potatoes then put on a baking tray and bake for 35-40 minutes, until softened but still firm in the middle. Reduce the oven to 180C, gas mark 4. 2. Roll out the pastry to about 28 x 38cm. Put on a floured baking sheet. Score a border 2cm in from the edge. Prick the middle of the pastry with a fork. Line the middle with baking parchment and baking beans. Brush a little beaten egg over the border. Put the pastry in the oven for 15 minutes, then remove the beans and paper and cook for a further 10 minutes. Meanwhile, peel the skins from the cooked sweet potatoes and cut the insides into ½ cm slices. 3. Turn the oven back up to 200C, gas mark 6. Gently flatten the middle of the pastry, if risen. Spread the crème fraîche over the middle then arrange the potato slices over it, slightly overlapping. Season, then crumble the stilton over and sprinkle with the walnuts, pumpkin seeds and chilli. Put the tart back in the oven and cook for 20-25 minutes, until golden. 4. Meanwhile, in a small bowl, mix together the olive oil, garlic, parsley and a pinch of salt. As soon as the tart comes out of the oven, brush with half this mixture then transfer to a wire rack to cool a little. Heat a frying pan until very hot. Add the broccoli and cook, in batches if needed, turning often, until tender and a charred – about 5 minutes. Toss in the remaining oil mixture and serve alongside the tart.

 2kg free-range chicken  20g fresh sage leaves  50g unsalted butter, softened  800g parsnips, peeled and cut into pieces  2 onions, quartered and pulled into petals  3 lemons, zest and juice of 2, 1 sliced

DIRECTIONS

 6 bay leaves  2 tbsp olive oil  10 garlic cloves, 4 crushed, 6 left whole and unpeeled  1 large hispi (pointed) cabbage, cut into 6 wedges  250g black pudding, sliced into large chunks (optional)  125ml white wine

1. Preheat the oven to 220C, gas mark 7. Trim the wing tips and any excess fat from the chicken and put in a roasting tray. If it is trussed, cut the strings. Open out the legs, pulling them away from the body a little. Finely chop ½ (half) the sage and mix it with the butter; season. Spread over the chicken. 2. Place the cubed parsnips and onion petals in a bowl with the bay leaves, remaining sage leaves, whole garlic cloves, lemon zest and juice. Trickle over the oil, season and mix together. Scatter around the chicken then put the tray in the centre of the oven and cook for 30 minutes. Baste the chicken, turn the vegetables, tossing through the lemon slices; reduce the oven to 180C, gas mark 4. Roast for 50-60 minutes, basting and turning the veg halfway through, until the juices run clear when the skin is pierced with a skewer. 3. Up-end the chicken and tip the juices into the roasting tray then lift onto a board to rest, covered loosely with foil. Toss the black pudding slices, if using, cabbage wedges and crushed garlic through the parsnips and onions with the wine and 200ml water; season. Return to the oven for 10-15 minutes, until the cabbage is tender. Carve the chicken and serve with the vegetables, black pudding and roasting juices drizzled over.

H

ow, or indeed when, does Christmas start for you? As the editor of a food magazine, publishing schedules dictate that insanity reigns. So we plan Christmas in the August. We gather in a room on the hottest day of the year and cast our minds to the season of chilly merriness. One year I decided that planning a Christmas issue in August was nuts, so I decreed that we should do it in January, while Christmas was fresh in our minds. This was not a popular move. My colleagues were Christmassed out. I was almost deposed. Yet it was an interesting experiment for straight after Christmas and we are happy to see the back of it. Decorations are down. Pine needles are hoovered. Christmas cards are stored and readied to be cut out and used as labels for next year (get me, all Kirstie Allsopped). The tree is on the bonfire, or on the street (sad, used and discarded, ready for the chop), children whinge as they are nagged to write their thank you letters (‘No you can’t just tweet at them/post a pic and say #thanksgranny’), the last of the turkey is chopped up and fed to the dog (at least someone’s happy) and you have concluded that next year you will ask your sweet, widowed neighbour rather than tiresome Aunt Deirdre and her entitled millennial daughter. But the months go by and as autumn approaches once again Christmas pops her eager little face over the horizon. The positive/mad side of your brain takes over and what was tedious back in January, now makes you tingle. There’s the moment one of you crawls on their belly through a path of wrapped presents, pine needles raining down on head and down the back of a shirt to get to the plug to switch on the lights. (I’m happy to do this, it’s closest I’ll ever get to being in a war). There are sprouts.

This year you’ll make a sprout Caesar salad, all crunchy and fresh and original. There’s the eager placing of the Christmas cards. Ten deep on the hall table with the celebrity friend, royal one and MP card placed at the front so it looks like all your friends have power, glamour and influence (just like you!).

There’s church. Midnight mass, with some of you and most of the young half cut from dinner and giggling. Or on Christmas Day: joyful kiddywinks clutching a present, teenagers in oversized coats flabbergasted at not getting 4G within the walls of a 14th century church, beloved carols and a benevolent and brief sermon. Back home and there’s the first glass of champagne before lunch. There’s lunch itself with perfectly crisp roast potatoes among the feast of meats and vegetables, rich gravy and bread sauce. Lashings of claret give way to cracker pulling and party hats.

There’s the Queen’s Speech, a bracing walk, telly, more presents and a supper of scrambled eggs and smoked salmon with a crisp white Burgundy. All this joy conjured in your brain. The actuality cast aside. Of course Aunt Deirdre will be invited, everyone’s actually very fond of her and she knows how to make proper bread sauce. In The Art of Travel, the brilliant Alain de Botton describes how our planning of a holiday is almost the best part. We imagine the sea lapping against the shore, the sun, the sheer bliss of it all. But we forget to place ourselves there with all our worries and tender relationships. We humans have the capacity to imagine our futures. It’s what separates us from apes. Our perpetual optimism enables us to plan parties and Christmas. We buy the ingredients, decorate the house and then ruin it all by actually being there. But I reckon it’s worth the risk. The myth and legend of Jesus is as tantalising as the idea of luscious turkey and crispy potatoes. I believe in Christmas. And if I didn’t then I’d have to assume that most of the world really had gone mad. And now that we are well and truly into the season of goodwill we can instead cast our minds to next summer. We can plan for a long, hot one. Because like a perfect Christmas they exist too don’t they?

The Velvet Touch Who can resist it? Everyone has heard of velvet but most do not know what it actually is. Velvet is not a fibre itself, but the structure of one, as it can be made from many materials (i.e. silk, cotton, wool). It is characterised by its woven pile; the raised loops and tufts of yarn it consists of. Velvet is thought to have been originally produced as early as 2000BC, in Egypt. The process is complicated and prior to the technological advances in machinery, velvet was vastly expensive. It was due to this that velvet became synonymous with nobility and wealth. Elizabeth I was a big fan of this luxurious material, in

which she was frequently adorned. But it is not only the European elite who have fallen for velvet. When Harun al-Rashid, the then ruler of Baghdad, died in 809 AD, it was said that 500 pieces of velvet were found amongst the treasures that he left behind. At OKA we have always loved velvet. Give Me Paint Not Plastic By Edward Bulmer

One of the country’s leading historians and interior designers spills the paint on the need for us to be avoiding plastic.

I

t’s about now that we start planning our Christmas decorating - in the Bulmer household this usually means a few coats of paint! A tumble of ivy, holly and mistletoe will hit the mantles just before Christmas Eve, but in the run up it is out with the dust sheets and on with the natural emulsion. At Edward Bulmer Natural Paints 2018 has been a year of extraordinary growth. We can hardly mix our natural paint quickly enough!

Thanks to David Attenborough and the Blue Planet team, we are all beginning to understand the damage our love affair with plastic is having on our oceans. Their unequivocal footage bought the plastic issue straight into our living rooms and we were left in no doubt that netting, bottles, bags and wet wipes (to name but a few) are clogging up our oceans and actually killing off sea creatures. What does this have to do with interior design and paint you may wonder? What I have learnt in over 30 years as an interior designer is that the materials we use to create the desired aesthetic have as much bearing on the ‘look’ we are creating as the design itself. So a wool fabric, leather hide or silk embroidery will look better and last much longer than a cheap, synthetic alternative. ‘Well I cannot afford silk’ I hear you shriek! I understand that cost will inform our choices but soon the cost of ‘cheap’ must be put on the commercial agenda, so we can clean up our oceans, protect their species and even save the planet. I work in historic buildings, so scholarly research, creativity and a ‘good eye’ are my stock in trade but I

also have a responsibility to protect these old buildings and make them safe to live in and visit. About 10 years ago I was approached by a new client to work on a project and they stipulated that I did not bring ANY chemicals into the house that might affect their children and to only use environmentally friendly materials. I was working with stone and marble, wood, brass, wool and leather and I knew where they all came from. Then I started to think about the paint…

What is paint made of I asked? I could not find the answer, paint was a ‘coverup’, in more ways than one! After much digging I found out that most modern paint, like all plastic, is made from the residue of crude oil refining. Bearing in mind my client’s criteria, paint made from petro-chemicals could not actually be eco-friendly and should by no means be called healthy. I turned my back on all plastic paints at this point. Thus began my campaign to develop a range of natural paints that performed as well as modern, plastic paints but were safe and heathy for people, buildings and the planet. From my first 25 historic colours produced in an oil bound distemper we have come a long way – one of consumer education, design inspiration and constant product innovation to arrive at our current range of 100 colours offered in the most breathable paints now on the market. Plastic has its place in the modern world – to make computers, solar panels or syringes, but why use it to smother the walls and woodwork of our homes? So, a festive cheer from us for a future when we adopt the appropriate use of plastic and then paint can become paint again, naturally!

Getting Home For Christmas Once upon a time Count Pugnacious saved Christmas, OKA’s Isabella Blyth Currie recounts how it happened...

C

ol. Al Parka and Our Lady of Billing had been on a really rather splendid holiday in the Caribbean. The weather had been beautiful and the two of them had had a really fantastic time but they needed to get home for Christmas. They were queuing up in the airport, behind a bright pink flamingo, when the Colonel started to cough. It wasn’t just a little cough it was rather a loud cough. If you’ve ever heard an alpaca cough, you will know just what I mean. Airport security came over and rather than being courteous and offering him a glass of water, they told him he was not allowed on the plane because they were concerned that he had Mad Alpaca Disease. “What tripe,” Our Lady of Billing said, “there is no such thing as Mad Alpaca Disease, he just has a cold.” Our Lady began to bark in a way that really was not very lady-like. Before long, both the alpaca and the dog had been dumped outside the airport by security. “What are we going to do?” Our Lady of Billing asked. “I don’t want dear Aunt Laah to have Christmas all alone with that dreadful Count Pugnacious. He will just spend the whole day name-dropping, poor Laah really won’t be able to cope.” “I’m more concerned about how we’re ever going to get home,” the Colonel said. “Maybe the Count will be able to help, he always claims to know everybody.” “I doubt it,” Billing said, but the Colonel had already taken out his mobile phone and was grumbling about how much the call was going to cost him, as he dialled the number. “Hello… hello?” Colonel said. “Is that

Pugnacious?... hmmm… we’re in a spot of bother… yes, we’re still in the Caribbean... yes, we’re fully aware that Christmas is tomorrow… do you know anyone who could help? Mmm… okay.” The Colonel put the phone back under his hat and looked despairing. Our Lady of Billing was starting to get really quite upset by the whole scenario, when two mice popped up behind the airport pillar and signalled for the duo to follow. The dog and the alpaca looked at each other but neither could think of a better option, so they followed. All four walked through the airport carpark and into the jungle, whereupon the Colonel started looking really rather anxious. Before long they came to a beach. “Excuse me,” the Colonel said, as one mouse gathered a snorkel and flippers and the other collected a rubber ring, “where are you going? We followed you all the way here, are you just going to leave us?” Both mice looked at each other and walked towards the alpaca and the dog. “Please forgive our rudeness,” the mouse with the snorkel said “we’re kind of on the run,” “What?” Our Lady of Billing said. “First, let us introduce ourselves,” the snorkel mouse said. “I am Rear Admiral Alexander Seymour but people call me Sandy. This here (he pointed at the other mouse) is F. Dhoff Esq, you can call him Freddie.” “And you’re on the run?” Our Lady of Billing asked. “Technically speaking, yes,” Sandy said.

“It wasn’t our fault,” the other mouse interjected. “There was just a slight incident on our gap year.” “Need we hear more?” Our Lady of Billing asked. “Why did you beckon us over? We’re really having a terrible day.” “Count Pugnacious told us,” Sandy said. “Of course it would be that dreadful Count who got us in all this mess,” Our Lady said, “we’re never going to get home for Christmas.” “It’s okay, aeroplanes aren’t the only way to travel,” Sandy said. “How else are we going to get back to England?” Our Lady asked. “Water, obviously,” Freddie said. “Water?” Col. Al Parka exclaimed in horror. “Have you ever seen an alpaca swim?” “No, but I’ve never seen a reindeer fly and I still know they can,” Freddie said. “Don’t worry, we’re not expecting you to swim back to England. We’ve got a dinghy ready and prepared.”

Freddie raised his eyes, put two fingers in his mouth and made a loud whistling noise. “Ahhh, please Freddie, what would your mother say?” Our Lady of Billing asked, holding onto her ears. “She’d be delighted, it took her two weeks to teach me…” But Freddie didn’t manage to complete his sentence because the water had started rippling and pulsating, the Colonel looked startled and retreated from the shore, Our Lady of Billing started whimpering. The ripples became wild and aggressive, suddenly two beautiful women’s heads emerged from the water. “Hello Freddie,” the blonde one said. “Good afternoon Lilly,” Freddie said, turning a fabulous shade of magenta. “May I introduce Miss Lilly Flipping and the Hon. Coral Splashmore,” Sandy said. “And how exactly are two teenage girls going to get us back to England?” Our Lady

asked the Colonel, through gritted teeth. “We’re mermaids,” Lilly said, flipping out of the water and revealing a beautiful sparkling tail. “We’re over double your age,” Coral said, “we just use great algae-sturiser... Right, are you all ready?” Sandy was dragging a large dinghy down the beach and Freddie ran off to help him. “Right, on you get,” Sandy said, panting. The dinghy was on the edge of the water and the Colonel tentatively stepped on, followed by Our Lady. A random pink flamingo tried to step on too, but no one knew who he was, so they shooed him away. Freddie swam towards Lilly, who was attaching the dinghy’s rope to her torso. Sandy splashed his way towards Coral, his flippers flying all over the place. “Be careful Sandy,” Coral said, laughing. “Are you sure you don’t want me to take the rope?” Sandy asked, looking at the one she’d already attached to her middrift. Coral laughed, “you know that mermaids are quicker and stronger than mice?” Sandy looked a bit put out, but Coral stroked his arm with her tail and he instantly perked up. “Are we going?” Our Lady of Billing asked. Instantly the dinghy started to move, the two mermaids steamed ahead and the mice only just managed to grab onto the rope. If you’ve never seen a mermaid swim, I’ve got to tell you – they are fast.

After a few hours on the Mermaid Express, the Colonel was slumped in a corner looking positively green...

The two mice were sitting on the edge of the boat, chatting away to their mermaid friends and Our Lady was standing on her tip paws, “is that it? Is that England?” “Yes,” Sandy said. “Thank goodness,” the Colonel said. As they pulled up on dry land the alpaca was the first off the boat, huffing and puffing. The dog followed, then the mice. “Please all stay with us for Christmas?” the Colonel asked. “We’d love to,” they said. The mermaids walked out of the water, yes they walked. Their flippers had turned to legs but that wasn’t the only part of them that had changed, they now looked their age, which must have been at least 110. Our Lady felt much better and not quite so desperate to run out and purchase algaesturiser. “Aunt Laah,” Our Lady shouted, as the Moose and the Pug walked along the sand towards them. “You made it,” Aunt Laah said, embracing her friend, “you managed to get home for Christmas.” And that was how it happened, that an alpaca, a Jack Russell, a Pug, a moose, two mice and two mermaids had Christmas together. And what a Christmas it was. Just as they were sitting down to a delicious roast, Our Lady of Billing spotted the pink flamingo out the window. She pointed him out to the Colonel, who got up, opened the door and let him in.

Everyone loves a Champagne cocktail at Christmas time – this is a Japanese twist on the French 75, a classic from the 1920s that’s traditionally made with gin, lemon, sugar and Champagne. The best table settings are those styled with an unexpected twist. Give simple china, like the Mithymna tableware range (from £44), a festive edge with a deep purple faux peony head decorating the soup bowls, or try a faux hydrangea head in Faded Green (from £21) for a softer colour scheme.

Weave Faux English Ivy Garland (£40) casually along a mantelpiece and dot with church pillar candles for a quick, stylish fireside display. A strategically placed mirror will reflect the candle light to give an added festive feel.
