Vegetables Basil Quinoa Risotto with Tofu & Kale For the risotto Red quinoa 100g White quinoa 100g Chopped Shallots 30g Vegetables stock 1ltr Salt to taste Pepper 30g Olive oil 20ml Preparation: Sweat the shallots in olive oil, add washed quinoa and toss it gently until it absorbs all the oils. Add the vegetable stock and cook the quinoa the same way you cooked the risotto. 94

For the vegetable Carrot 20g Broccoli 20g Zucchini 20g Shallots 20g Mushrooms 20g Asparagus 20g Thyme 1tsp Kale 1 tsp Preparation: To finish the risotto, blanch all the vegetables and mix with the risotto. Later, add Tofu cream and let it cook.

Season with salt and pepper, adding basil tablets to give enough colour and taste to the dish. For the basil tablet Fresh basil Preparation: Blanch basil leaves in boiling water and refresh in iced cold water. Puree them and pour into rubber mats and freeze

For Tofu cream Tofu 100g Olive Oil 25ml Salt to taste Pepper to taste Preparation: Simply add all the ingredients to the blender and blitz until desired for the cream. Assemble the risotto as shown in the image and add a few fried kale, sauté shimeji mushrooms and diced Tofu as a final touch.
