Worthing Food & Drink Festival 2014

Pavilion Theatre & Worthing Seafront WORTHING HELD ITS VERY FIRST FOOD AND DRINK FESTIVAL in 2012 and it is getting bigger and better year on year. The Worthing Town Centre Initiative, Proto Restaurant Group and Worthing Theatres will be bringing a true “Flavour of the seaside” to Worthing in 2014. Unlike many Food Festivals this is a free event with no tickets or booking required.

With stalls outside the Theatre on the promenade as well as inside the Theatre building there will be a huge choice of food and drink on offer to tempt any palette. The kitchen on the Pavilion stage will welcome top chefs who will be on hand to demonstrate culinary skills and offer some great cooking tips. There will also be wine tasting, competitions and much much more… (a timetable is available on Pages 18 and 19). On Sunday 24th August Celebrity Chef Rosemary Shrager will be appearing and offering her culinary expertise at the event. Rosemary is an English Chef best known for being an haute cuisine teacher on the reality television programme Ladette to Lady, and as a judge on Soapstar Superchef. She was also seen on the reality TV show 'I'm a Celebrity, Get Me Outta Here!'. Rosemary has a number of books available and her new one on baking (Rosemary's Cakes Bakes and Puddings) has just been launched. Rosemary will be on stage at 12pm and 2pm with a book signing at 3.15pm. Worthing has a great Food and Drink offer and this event helps to highlight some of the amazing businesses who are helping our Town to become a culinary centre of excellence. Worthing Town Centre has over 140 places to eat and drink with new businesses opening all the time ensuring something great for every taste and budget.

WORTHING HAS A STRONG HISTORY OF MARKETS with records of them dating back as far as 1810. Wednesday is Market Day when the market joins the retail shops in Montague Street; Worthing’s main shopping precinct. In the 1990’s the market was held in a Car Park on the outskirts of Town but declining footfall and reducing stall numbers meant the future of the market was uncertain. The Worthing Town Centre Initiative worked with the Council, town centre businesses and the market operator to move the market to the High Street and in 2002 it launched in its current location. The market has around 40 different stalls offering a diverse product offer from fruit and veg, meat, clothing, gifts, street food and much much more.

main course recipe ● ARTICHOKE STUFFED WITH MINTED LAMB

How to Make Artichoke Stuffed with Minted Lamb ● Minced lamb 300g ● Fresh artichokes ● ● ● ● ● ● ● ● ● ●

(1 per person, suggestion 4/5) 1 finely chopped onion 3 cloves of Garlic Chopped Mint Finely chopped Leak 2 Grated Carrots Artichoke hearts (1 large tin) Vegetable stock Salt and pepper Olive oil for cooking A little flour

Make a hole in fresh artichokes, by pushing open the soft heart in the middle. Mix together mince, chopped onion, half of the garlic, white part of leaks, artichoke hearts, salt and pepper. Stuff into fresh artichokes. Fry chopped onions, grated carrots, rest of the leak and garlic. Add to vegetable stock. Roll artichokes in flour, to cover thinly. Seal stuffed artichokes in a hot pan of olive oil, until golden colour. Put stuffed artichokes in a deep pan, pour over the stock until it covers the stuffed artichokes. Bring to boil, then simmer for 40-45 minutes, depending on size of artichokes. Remove from pan, then blend remaining stock to use as the gravy. Serve hot with a drizzle of the sauce.

A Bit About Artichokes The outer leaves of the Artichoke are only for decoration, and the soft flesh and mince should be eaten and enjoyed by you and your friends. By pulling each leaf out and sucking the white flesh from the bottom, is a typical way in the Mediterranean to eat all the goodness from the artichoke. Looks fantastic on the plate, yet simple to make. Will impress anyone... and also full of iron and very low on calories.

Jonathan Nulty VICE PUDDINGS WORTHING’S OWN SINGING BAKER AND CHEF, Jonathan Nulty (a.k.a. Jean de Rien), is the man behind Vice Puddings, the Not So Secret Supper Club and the upcoming Man-With-A-Pan private chef service. He has been cooking for over 25 years… and singing for even longer! He specialises in European bistro cuisine and original desserts. His first cookbook is due out at the end of the year.

Alberto Castro PROTO RESTAURANT GROUP ALBERTO WAS BORN IN SALAMAMCA, NEAR MADRID. His first introduction to the glorious world of food was at 14 years old, when he started working in the kitchens in Madrid. He moved to Malaga, South Spain before moving to Tenerife, to open his own restaurant - La Campania, (The Bell). After many years he travelled up to Northern Spain, La Corvna and then across the Channel to England where he worked in London as the head chef, in Bar Lorca. After taking time out to work with disabled children and horses he returned to the Kitchens at Littlehampton Fish Factory where he is Head Chef and a treasured member of the Proto Restaurant team.

Fisherman’s Friends WORTHING HAS A LONG MARITIME HISTORY predating its late 18th-century emergence as a fashionable holiday and residential town. Fishing was a major economic activity for centuries, and still retains a presence on Worthing's shingle shoreline. The formerly sandy beach has changed over time, partly because of sea defence work carried out to alleviate concerns over flooding. Fishing was important to Worthing's economy from the 16th century or earlier, when it was a modest village, until the early 20th century, but the numbers of boats and men employed were small. Early fishermen supplemented their income by working the land for part of the year as well, and some inhabitants who farmed for most of the year also fished occasionally. Fishing tended to run in families for many generations. As well as being sold locally, fish was being exported to towns in Sussex and Surrey by the late 18th century. The main catches were mackerel and herring, supplemented by various crustaceans. A large oyster bed was found in 1823, and it yielded 50 million oysters within the first year; but overfishing led to its exhaustion within a decade. Today there are still many families still making there living from fishing from the beach mostly catching. Mackerel, smooth hound, cuttle fish, sea bass, whole place, crabs and lobsters, skate and the odd dog fish. Local fishermen are a real asset to Worthing as inshore fishermen tend to fish on the same patch of sea, targeting different fish according to the seasons. They’re the stewards of our coastal waters, it’s in their interest to make sure local fish stocks are healthy and stay that way. Worthing fishermen use static gear which has very little impact on the seabed and is very selective. Unlike some industrial fishing methods, there’s very little waste. One great local catch is Brill, Scophthalmus rhombus, Brill are the smaller, rounder cousins of the well known turbot. They have slightly smaller flakes when cooked and a sweeter taste than their larger relatives. Another seafront favourite is the whelk, Buccinidae undatum. The humble whelk is an overlooked little snail, which is a real shame. Nearly all the whelks we catch here are sent to Korea, where they're considered a delicacy. If you've ever eaten fruits de mer in a French restaurant then you'll know exactly how delicious they can be. They're meatier than cockles and winkles and have a delicate flavour which is shown off best by cooking them simply. How to Make a 10 Minute Pizza! Making pizza with the kids is something that can be great fun and encourage them to cook. This is really is easy to make in just ten minutes. You need:

Pizza base ● 650 grams ‘00’ flour ● Shot of olive oil ● No salt

● 7 grams of quick yeast ● 2 shots of milk ● 1 pint water warm

Mix yeast and flour together, then add warm water, Olive oil and milk slowly to flour mix and stir hands or spoon depends who is cleaning up. Keep going until all mix is sticks and forms dough if its two sticky just sprinkle some more flour until it rolls off your fingers. Cover in bowl and leave to prove. Don’t let them peak.

Tomato sauce ● ● ● ● ● ●

1 large tin chopped pureed tomatoes 3 cloves garlic 1 onion chopped 7 leaves of fresh basil teaspoon of sugar 1 teaspoon Ground coriander seeds (optional)

Fry onions first with olive oil and then add everything else and cook till boiling. Make ball of dough about size of fist yours for adult or kids for theirs.

Pizza Topping Ideas Anchovy, artichoke, spinach and Sicilian salami or roast chicken and potatoes with a sprinkle of gravy.

Roll them out or just press them until they resemble a round shape add 2 table spoons of tomato sauce and then cheese grated ( mix of mozzarella and cheddar ) then add anything you like on top. Should make enough pizza for family of 5 and 1 extra for dad!

cocktail ● LYNCHBURG LEMONADE Let’s Make it!

How to Make a Lynchburg Lemonade A cocktail with style and history. THIS DRINK WAS CREATED AND GIVEN it’s name by Alabama restaurant and lounge owner Tony Mason in 1980. It was the subject of the 1987 court case Mason v. Jack Daniel Distillery. Mason alleged that a Jack Daniel's distillery sales representative visited his restaurant and somehow learned the recipe for the drink, which he contended was a trade secret. A year later, Jack Daniel's launched a national campaign to promote the drink. Mason subsequently filed suit in the Madison County Circuit Court, seeking over US $13 million in compensatory and punitive damages for misappropriating his recipe. The court ruled in Mason's favour but decided to award him no money. After the trial, the presiding judge offered to pay Mason one dollar out of his own pocket which Mason rejected. In Mason v. Jack Daniel Distillery, Mason appealed the decision to the Alabama Civil Appellate court, which found that Mason could be entitled to more than nominal compensatory damages and overturned the decision, ordering a new trial. To make a LYNCHBURG LEMONADE (use a highball glass):

● 1.5 Shots of Bourbon ● 1 shot triple sec ● 1 shot lemon juice Shake in cocktail maker with ice and strain into a highball glass half filled with ice and top up with real lemonade. Garnish with lemon.

Tip Run tall glass under tap and freeze before you pour your drink. You can also soak lime leaves in lemon for 24 hrs and add 1 to drink for an extra twist)

If you don’t fancy a short trip Worthing has its very own wine estate. It has just one a national ward and just after having a devastating crop last year in 2013. Highdown Vineyard nestles on the southern slopes of the South Downs between Littlehampton and Worthing. The vineyard was originally planted in 1985 with six varieties of grapes; three red – Rondo, Dornfelder and Pinot Noir, and three white – Bacchus, Schonberger and Reichensteiner. In 2005 and 2006 there were more plantings of Pinot Noir and an additional white variety – Chardonnay. The open site enjoys free draining chalk soil and gentle westerly breezes, which ensure a good airflow through the vineyard. The site also benefits from being in area with some of the lowest rainfall and highest sunshine in the country. In terms of English viticulture it is an excellent site. The vineyard leads onto the Downs so it is also the perfect place to start a walk. How to Make a Summer Classic Crema Catalana ● 1 pint of double cream ● 4 egg yolks ● 1 small whole egg ● 3 oz caster sugar ● 1 vanilla pod ● Spanish orange liquor

Pre-heat oven to 100º. Mix all ingredients together. Pour into single portion terracotta pots. Place in baking tray and add water in tray until the top of the pots. Put in oven for 1 hour and 5 minutes. Sprinkle with demerara sugar straight after coming out of the oven, then place under the grill for a few minutes or use a blow torch to give a caramelised glaze. Decorate with a slice of orange, fruit, blob of cream or mint... and enjoy!
