Celebrating veterans day ★★★★ By Kathleen Reynolds Veterans Home nursing staff

Do you know a veteran? Their special day is coming up on November 11. At the end of their military service, many live contentedly at the Veterans Home of California, Yountville. These approximately 650 men and women heroes represent the dark days of World War II, the Korean and Vietnam wars, Desert Storm and Operation Iraqi Freedom, along with vets who served in times of peace. How will they celebrate their big day? “Our Veterans Day at the Home is really two weeks of activities,” says Joshua Kiser, Veterans Home Public Information Officer. “On November 3, our home members will enjoy a gourmet lunch prepared by local celebrity chefs for the 17th Annual Celebrity Chef’s Luncheon, hosted by the Yountville Chamber of Commerce. On November 7, members of the Memorial Squadron will perform a flyover of the Home. November 11, the Home will have a virtual ceremony, followed by activities during lunch and a stand-up comedian will provide entertainment in the afternoon.” Kiser says that Home members and staff continue to practice infection control protocols, 14

including wearing face coverings, physical distancing, increased hand washing, temperature checks, screening of staff and residents upon entry to their facility and continued use of protective equipment. “I think the overall mood is positive and everyone is thankful that the Home has remained a safe space for our home members during the pandemic,” says Kiser. “We are very appreciative of the hard work of our staff and the understanding and cooperation of our home members and their families.” Despite COVID restrictions, the Veterans Home administration and Allied Council strive to make living there as fun-filled and relaxed as possible. They do this while still providing residential care, intermediate care, skilled nursing and a “Memory Care Center” for residents with forms of dementia. “Our therapeutic activities department has provided an array of fun and safe activities throughout the COVID-19 pandemic. They have held many outdoor activities to celebrate holidays such as Cinco De Mayo and the Fourth of July. They also held/organized outdoor bingo, bocce ball and recently the Home’s bell choir, affectionately


called the Ding-A-Lings, began practicing again outdoors.” Recently the Veterans Home of California, Yountville received a 2021 Bronze American Health Care Association (AHCA)/ National Center for Assisted Living (NCAL) National Quality Award. The Home was recently voted one of America’s Best Nursing Homes in California by Newsweek Magazine for the third consecutive year. The Home’s annual operating budget is $47 million, half of which comes from the California general fund and the remainder by other sources such as federal reimbursements, member fees and citizens. The Veterans Home in Yountville was founded and purchased in 1882 on land that was part of Salvador Vallejo’s Napa Rancho. The land was purchased with funds from public donations. It was a farm and continued to operate as one while the administration building was being completed in 1883. Original operating funds came from state and federal sources until 1900 when the state of California purchased the 910 acres of land and its 55 buildings from the federal government. This past spring, the California Department of General Services unveiled plans to construct a $269 million, 240-bed skilled nursing and memory care center as part of a master campus plan announced in 2019. The project is being built

for the California Department of Veterans Affairs (CalVet). The new 300,000-square-foot, fivestory facility will provide long-term care to about 1,000 aged or disabled veterans, including support for residents with dementia, Alzheimer’s disease and traumatic brain injuries. The design will be like the Home’s current architectural style. The Veterans Home wasn’t immune to the construction chaos caused by the pandemic. “The skilled nursing facility project is making progress and the hope is that construction will start soon,” explains Kiser of the facility, originally planned to be completed by 2023. Approximately 80 to 100 new staff will be added for the new nursing facility, adding to the approximately 950 workers usually employed at the Home. Kiser says that the Home is currently actively recruiting new employees to join

the Yountville Veterans Home team and job postings are available at calvet.ca.gov/jobs. The rambling Mission-style buildings with their terra cotta roofs, high on the hills west of Yountville are popular to California’s veterans interested in retiring. This can add to the waiting time for acceptance to the Home. “The time it takes to be admitted to the Home is based on a number of factors including level of care needed, medical information and current living situation,” says Kiser. “Waiting list timelines can vary depending on the level of care needed.” To find out more about admission to the Home and the application process visit calvet.ca.gov/calvetprograms/veteran-homes or contact the Veterans Home of California, Yountville admission department at 707-944-4601.

IT’S BEEN A WILD RIDE, BUT CANDO’S GIVE!GUIDE STAYS IN THE SADDLE and will be accepted until midnight on December 31, 2021. Of course, it does take a community to create this kind of successful campaign:

2020 sometimes felt like riding bareback on a wild mustang, didn’t it? Now with the advent of vaccines, and advances in our understanding of COVID-19, a certain degree of normality has returned. But most of us are still adapting and adjusting to this wild ride that COVID-19 and the Delta variant have put us on. We’re not back in the stable yet. As we’ve all continued to adapt, so has the Give!Guide, CanDo’s unique year-end giving campaign that invites neighbors to help our community thrive by supporting local nonprofits. Last year, when the need for their services was greater than ever, we switched to an onlineonly format which allowed more nonprofits to participate. It turned out to be our best year ever: 1,314 supporters donated a total of $708,473 to 57 NPOs. This brings our total in 8 years to $3,374,341, for 125 nonprofits in the Napa Valley. Following this astonishing success, we’re again rising to meet the challenge in 2021: our 9th campaign will begin at 12:01 am on Giving Tuesday, November 30. It will run for one month, online-only: the website will go live at CanDoGiveGuide.org. Donations can begin at $10

- A steering committee of 8 energetic G!G volunteers puts the whole thing together; - Each year’s participating nonprofits work collaboratively, sharing ideas and strategies that have worked well in their fundraising efforts; - Generous business partners such as the Napa Valley Vintners, Napa Recycling and Waste Services, Del Sur Mortgage, Kamer Consulting Group, Corcoran Global Living and Wyman Property Management demonstrate their community commitment through sponsorship and other in-kind donations; - And you, the donors, who make all the difference with your generous tax-deductible year-end donations. 2021 is our first year without our lodestar Hilary Zunin and we’ve often wondered, “What would Hilary do?” We think she’d be proud of us as we navigate this twisty, unpredictable ride, with the help of our supportive Napa Valley communities and the tremendous nonprofits that help these communities in so many ways. Survival of a Hidden Gem with Old Fashioned Values By Carolynne Gamble

Owning a restaurant during the pandemic is not for the faint of heart. Perseverance and resilience are key ingredients. Meet Chef Bernardo Ayala, Co-owner of Napa Valley Bistro What are the greatest challenges faced this past year? “It was the unpredictability,” admitted Chef Bernardo. “We didn’t know if we were going to be open or closed. When we were open, we didn’t know what the rules would be. Things were continually changing, and it is difficult to maintain a rhythm with so many ups and downs.”

Consider that fine dining cuisine doesn’t work well for take-out only. The fast food restaurants and the take-outs were thriving of course, but white tablecloth restaurants like Napa Valley Bistro were struggling. “We had a whole crew working like a well-oiled machine, and then we had to close,” continued Chef Bernardo. “Everything broke down. All systems fell apart. Some employees changed careers and did not return, plus I was constantly worried about employees getting sick.” “I was not so worried about losing local customers because we have a very local, loyal clientele here. I was frustrated. Not with customers. Not with employees. Like 100% of the people around the world, I was

worried. But at the same time, I was grateful because we were still alive.” Parklets to the Rescue As it turns out, the outdoor parklet was the lifesaver, not only for the business, but also it saved jobs for the employees. The employees are like Chef Bernardo. They would rather come to work than stay home and draw unemployment. They all preferred to work, produce and be happy. “The parklet process was very complicated in the beginning,” reported Chef. There were many restrictions, but then a helpful Napa City employee guided him to develop a plan. He drew up a design and hired Francisco Ramirez Construction to build it. Craig Smith with Downtown Napa Association extended good advice as well. “Our parklet looks so good,” reported Manager Clay Brandl. “We partnered with Pizza Azzurro, and built adjacent to each other. It was cheaper to build one large parklet, rather than have separate designs.” Pan Seared Sea Scallops

Will the parklets remain? Customers love dining outside! There is tremendous local and tourist support, plus the restaurants love it. “We hope to keep it because time and money were invested, and customers say they want them to stay,” reported Chef Bernardo. The restaurant and hospitality industries are facing “short staff ” challenges. Many restaurant employees decided to change careers, and are not returning to work. “We are not suffering like others,” offered Chef. “We are okay. We have very loyal employees, and many have been with us for five years.” “Did you need to change the menu for outside seating?” I asked. They did adjust a little to be more practical, but not drastically. Commitment to Sustainability The restaurant opened in 2013 with a vision to focus on local wines, and serve fresh, sustainable, Napa Valley cuisine with Latino influence. The organic produce comes from small, local vendors: Lynne Rodgers Cherish Market Gardens and Cindy Skinner Gardens. The organic herbs come from Chef Bernardo’s own garden. Working with the Napa-Sonoma Small Business Development Center was crucial in those early days. Former Business Advisor Charlie Monahan helped with all the profit and loss projections, and current Business

Advisor, Carolynne Gamble helped the business learn social media. “The P&L’s were the nuts and bolts for opening the restaurant,” commented Chef Bernardo. “This was key.” Local Wine Focus The wine list is another reason for their success. All the wines are local, and many come from Latino producers. Napa Valley Bistro is a small family owned restaurant and thus they highlight small family owned wineries. Wines by the glass are rotated because there are so many choices, and this provides a platform for emerging vintners to showcase their wine. “We keep it fresh and fun for all the locals,” reported Manager, Clay Brandl.

“The wine list is just like the menu. We focus on local and sustainable. You can enjoy Tuscan style wine made in California. You will find a Burgundy style Pinot Noir made in California, with a more tannic, earthly style.” Wine News Napa Valley Bistro will soon roll out their own Napa Valley Cabernet house wine, produced by Bazan Cellars, with Chef Bernardo participating in the special blending process. Stay tuned! So the tourists are back. The restaurant has survived and is busy again. It’s back to where it all began – a laid-back bar and restaurant offering locally sourced, sustainable, and organic food from Napa Valley.

When you need to make a business decision, you turn to someone you trust. That’s the reasoning behind Business to Business (B2B), a group of professionals who meet monthly. “We started the group seven years ago,” says LPL Financial Advisor Mark Richmond, one of the founders of the group. “We meet once a month and talk about our professions, news in our sectors and anything upcoming of which we should be aware. Right now, we have nine members, but we can have as many as 12 or 14.” The setting is informal, at a conference table at Mark’s office. “We trust and feel comfortable referring business to each other. I love that we have a broad area of professionals represented. One

of our clients used seven of the members; an attorney to write a Living Trust, a realtor to do Deeds and Title work, and so on.” Mark says they are not as rigid as similar business groups. “Our strength is in being trusted advisors, not as a regimented group. There’s no rule that dictates we must refer X number of people to one another in a month or you must attend a certain number of meetings. Our dues are $250 a year. That money goes back into events we hold.” A recent event was their second annual “Backpacks & BBQ,” where each member sent invitations to their business mailing groups. The group hosted a barbeque and

participants were asked to donate a backpack for needy children to go back to school. They collected over $1000 in donations and received 142 backpacks. Volunteers filled the packs with school supplies which were then distributed to three schools and Expressions of Hope, a nonprofit that helps foster children and their families. Their members practice their professions within the confines of the Napa Valley and, although they meet in the City of Napa, they’ve had members in St. Helena and Calistoga. Homebridge Mortgage Professional Cheris Hallman explained why B2B is important to her. “We teach each other,” says Cheris. “We keep each other up


to date on the latest in each of our individual markets. We hold each other accountable and support each other. Our culture is focused on blessing others, including those in our group, versus “what can I get out of this.” During this (pandemic), somehow, we’ve all benefited, and our businesses have grown.” Lise Tarner, Vice President, Branch Manager at Bank of Marin adds, “It is important to me to have a trusted referral network of professionals at my disposal to provide to my clients, family and friends. I love when something new comes up in a certain industry to have a trusted source to turn to for more information.”

Hospitality, according to Oxford, “the friendly and generous reception and entertainment of guests, visitors, or foreigners” To many, Napa Valley is the epitome of Hospitality, Hospitality, with a capital H . . . luxurious Hospitality. It is no secret that the region produces fine wine. Our chefs prepare the most elegant, nourishing food. Valley hotels and resorts provide respite that any world traveller or local resident would enjoy. From the south end of the Napa Valley to

the north, Silverado Trail, west to Highway 29—the true secret is that it is the people who prepare the food, serve our guests and provide warm comfort that solidify the cherished memories that will endure in the minds of our guests. But we’ll get back to “the people” in a bit. The hospitality industry is by far the largest employer of all, not just here in the event-heavy, heart of Napa Valley, but globally. There are a multitude of disciplines within the industry. Consider the opportunities: line-cook to executive chef, housekeeper to director of sales,


“Life is short, practice compassion.”~ dinner service to dishwasher or sommelier—the expertise required to provide any of these services translate to marketable skills that may be put to good use in any profession, no matter the location. A solid overview of all these tasks and positions pave the way for a comprehensive understanding of the hospitality industry-at-large: lodging, restaurants, food and beverage, tourism and recreation. It is true, not all of these positions require higher education. On-thejob training will always be a way to get a start with some entry level positions, but it’s the hard way. Many of the disciplines do require a specific training certificate or a degree. A more direct and focused path to a successful career in the

Hospitality, Culinary, or Tourism Industry is readily available through a program designed to do just that and it is currently being offered at Napa Valley College (NVC). When it comes to hospitality in Napa Valley, excellence is the only standard. To ensure the creation of a work-force that is engaged, welltrained—and without question— prepared, to provide the highest quality service standards, NVC’s accredited Hospitality and Tourism Management Department is the first college program, in the world, to join forces with luxury hospitality specialists, Forbes Travel Guide. Together, they have constructed an online program: Introduction to Luxury Service and Luxury Service Standards, creating

powerful and effective training courses for students and hospitality employees. The partnership with Forbes Travel Guide was the brain-child of Napa Hospitality Industry Professionals (Napa HIP), and a group of lodging, restaurant, and winery employers in Napa County. The main goals of the group are to identify the demands of the industry, improve training, enhance soft job skills and jobspecific skills, increase awareness and exploration of hospitality careers among the youth, and promote HIP Member Program participation. A full-action plan is spelled out, describing how to accomplish these objectives, and identifying long term goals and community opportunities for progress.


Building community buy-in of local business members is essential. Businesses are encouraged to send their employees through the program, building the skills and experience that students will carry on with excellence and vision. Yountville Chamber of Commerce President and CEO, Whitney Diver McEvoy, acknowledged the combined efforts of Napa HIP and Napa Valley College in an NVC press release, “Napa HIP leaders have been diligently working together to enhance education opportunities for students and adults in Napa County. We are thrilled these new courses at Napa Valley College will help to grow our dynamic workforce.” The unique advantage of location fares well for everyone involved. The schools are in the heart of Napa Valley, the whole hospitality industry is the heartbeat of the Valley; the students, in turn, have access to some of the most talented mentors the industry has to offer. There is no way to calculate the value of the collective human resources on hand. When combining Forbes’s sixty years of luxury hospitality knowledge, and the previously existing, hospitality and culinary programs offered at the NVC and Upper Valley Campuses, the success of NVC students is easily at hand.

The Hospitality and Culinary programs at both campuses have long been turning out talented chefs and hospitality professionals. Remember, at the beginning, I said we’d get back to “the people”—well, here we go. NVC’s Hospitality, Culinary and Tourism Management Department is led by Program Coordinator, Elena Sirignano, a very humble professional. Elena wants to give credit where credit is due, shining a bright light on the team. But first, a little bit about her phenomenal experience. Elena’s long and colorful career in highend culinary spans over 25 years as a chef, sommelier, culinary instructor, beanto-bar chocolate maker, manager, and specialty foods entrepreneur on both the East Coast and in the Napa Valley. Chef Elena has been part of the Napa Valley restaurant scene since 1992, where she has worked with Thomas Keller as a member of the original French Laundry kitchen team and has been part of both front and back of the house operations at Bistro Don Giovanni, Pat Kuleto’s Martini House, Bouchon, and Bouchon Bakery. An experienced culinary instructor, Chef Elena has taught at Delaware Technical & Community College and the Culinary Institute of America Greystone and COPIA.

HCTM Teaching Staff William Namnath, graduate of Loyola Law School, Loyola Marymount University, specializes in hospitality law said, “The Hospitality Law class has two main focuses for our students to help with their journey as hospitality entrepreneurs and managers. First, we want to give our students a broad background on the United States legal system. Second, we want to give them familiarity with legal issues that are common for the hospitality industry. For example, we cover contract formation and breach, franchising, negligence, duties owed to hotel guests, food and alcohol liabilities, and labor law and workplace

harassment. There is a wide range of legal issues business owners and employees face within the hospitality industry. Our course is designed to give our students the opportunity to recognize potential legal issues so that they may seek professional advice when they face them in their business ventures.” The importance of which cannot be overstated. Jessica Penman, graduate of University College, London, and Director of Community Relations for Yountville Chamber of Commerce, is one of the driving forces when it comes to the partnership between local hospitality entities and the people at Forbes Travel Guide for the Luxury Training program. She engages with students, local businesses, and other hospitality based nonprofit industries, such as Napa Valley Vintners, and professional groups such as CANVAS, regarding marketing of the NVC programs. Derek Corsino, a graduate of The Culinary Institute of America in Hyde Park, New York, fills out the course subject matter with a full plate! Subjects focus on topics such as: Hospitality Cost Control, Principle of Hotel Administration, and Food and Beverage Management. The value of this educational training is immeasurable when it comes to

providing excellence in service and the importance of knowing how to meet the bottom line.

At the Upper Valley Campus of Napa Valley Cooking School, the Food and Wine Enthusiast program offers students and adults a wide variety of hands-on workshop training with local chefs. This fall, the program workshops include: Gluten-free and Vegan Dessert options, and another session called Seasonal Pies, with downtown Napa’s own Sweetie Pies Pastry Chef, Toni Chiapetta. Greg Miraglia tempts us with Southern Italian cuisine. Chef Roline Casper will whip up some fun Filipino and Southeast Asian dishes to liven up your next gathering. Don’t forget the wine tasting class, and your chance to master cocktail shaking, stirring and muddling, which will be offered by mixologist, Traci Dutton. Also bringing a bit of spice to the table, is Chef Pat Burke, professional BBQ champion and former chef to the Oakland Raiders football training camp. Since 2017 Chef Pat has been engaged with the Food and Wine Enthusiast Program. Keep an eye out for his future workshops. It’s beginning to look a lot like Christmas IN DOWNTOWN NAPA

Life is beginning to look a lot like normal. With that in mind, picking a theme for this year’s Napa Christmas Parade was easy – ”It’s Beginning to Look A Lot Like Christmas.” The holiday celebrations begin with the annual Christmas Tree Lighting in Veterans Park. On Wednesday, November 24 at 6 p.m., Mayor Scott Sedgley will lead the community in lighting the tree. Boy scouts will be on hand giving out free cookies, courtesy of Toni Chiapetta, owner of Sweetie Pies, who has been making and donating cookies for years.

Hot chocolate will be provided by Downtown Joes, as they have since the tree lighting in Veterans Park began. Entertainment will come from local children’s groups, who will dance and sing before the Mayor leads the countdown to light the tree. Napa’s Christmas Parade is Saturday, November 27 at 5 p.m. Three cash awards of $500 each will be given to the Kiwanian parade judges’ choices in three categories: Best Use of Lights, Best Theme-Oriented, and Best Use of Music. “A lot of Napa nonprofits have benefited from these awards over

Anyone can enter the parade, and it’s free. Whether you choose to build an elaborate float, simply march along with your group, or just watch, Napa’s Christmas parade is a hometown tradition that has grown over the years. The downtown parade begins on Second Street at School, heads east on Second to Brown, then north to Third, and finally west back to School Street. Judging takes place on Third Street in front of the courthouse, across from the Second Street garage. All groups are recognized and introduced at the stage. Old Saint Nick will set up shop in the lobby of Archer Hotel this year, as soon as he wraps up the parade, probably about 6:30 p.m. He’ll bring a staff of elves who will pass out candy canes, and the Archer will have plenty of hot chocolate on hand for everyone. All the little ones have to do is bring their wish list and tell Santa what they want. Santa will do his best to fill all those requests. Grand Marshals this year are Marco and Berenice Castaneda, co-owners of Don Perico Mexican Restaurant in Dwight Murray Plaza. Castaneda began his restaurant career as a busboy in a Mexican

restaurant in Bakersfield. He worked hard, paid attention to every aspect of the business, and opened Don Perico with his then-boss in 1994. A few years later, Castaneda bought his boss out, and has been sole owner since. Marco is a quiet, unassuming man, and was clearly humbled when the board of directors of the Downtown Napa Association asked him to be the parade Grand Marshal for the community, for which he feels an incredible sense of gratitude. “We love this community and appreciate all the loyal support we’ve had from the beginning.” Napans love the food at Don Perico, and have been dining with them at their Dwight Murray Plaza location since they moved there after the earthquake. Napa Printing, Design Studio & Mail Center has also supported the parade for years. John Dunbar, who purchased the company in 2000, is deeply invested
