The lines on the old woodworker’s hands lead to his heart. For 25 years, Bill Chalmers has toiled in a Santa’s Workshop of sorts attached to his house high in the hills above Caulfeild. Blocks of wood are piled in the corner, waiting for Chalmers, a retired butcher, to turn them into special presents for extraordinary kids. The 200 wheeled wooden toys – mostly trucks and race cars, and the occasional whale – are each handcrafted with love and precise detail. In this age of electronics, Chalmers’s gifts are rare and made to last.

He will soon deliver the fruits of his labour to the North Shore Christmas Bureau, which provides food, toys and other presents for local, low-income families. “It’s a great feeling to wake up on Christmas morning and know that children across the (North Shore) are waking up to a present,” says Chalmers, who was particularly inspired to take on the role of toymaker after learning many single mothers couldn’t afford Christmas. Two hundred handmade toys times 25 years equals about 5,000 delighted children on Christmas morning – thanks *1 &"/54%., /2' "!, ("/.!*/-5% (./$*,4/2,"!0+ )$3#%' to each wooden toy is a package of candy, for an extra special treat. Of course, the toymaker has a little help from Mrs. Claus, a.k.a. Bill’s wife of 45 years, Margaret, who is by her husband’s side in the workshop. For Chalmers, this is more than a hobby – it’s a way for him to pay it forward. You see, the toymaker understands the feeling of emptiness at Christmas. As a child growing up in the repressive culture of 1930s Scotland, Chalmers faced much adversity. The young lad was six when his father was killed in a car accident, leaving his pregnant mother to raise ten children.

Times were tough, not only around the holidays, but every

On Christmas Day he would reach into his stocking only to pull out a shiny penny, an apple and an orange. At nine years of age, Chalmers started working to support the family. He took a job in a butcher shop, running errands, sweeping up and learning to be a meat cutter. Fast-forward to 2018 and Chalmers says he’s been very

blessed in his long life. Chalmers embodies the spirit of Christmas, as he turns his attention to another toy that will soon light up a child’s face. By all accounts, the 88-year-old altruist is showing no signs of slowing down, which is a good thing. Christmas morning wouldn’t be the same without Bill Chalmers.

Vegan Sticky Toffee Pudding 280 g chopped, pitted dates

250 g sugar

500 ml water

5 ml vanilla extract

2 earl grey tea bags

285 g flour

5 g baking soda

8 g baking powder

140 g vegan margarine

pinch kosher salt

1. Place the two portions of dates into two separate bowls, each with half (2.5 g) of the baking soda. 2. Bring water and tea bags up to a boil. Remove from heat, strain out tea bags and pour 400 ml of tea over each bowl of dates. Stir and let sit and cool. 3. Blitz the bowl of halved dates with the water in a blender until smooth.

Butter Tart "This is my grandmother's recipe." Makes 12 tarts non-sweetened prepared tart shells 1 egg

4. Cream butter and sugar then add the vanilla extract. Then add to date mixture.

1 cup brown/golden sugar

5. Mix dry ingredients into the wet mixture.

¼ tsp nutmeg

6. Pour mix into a 9x13 baking pan and bake at 320 degrees F for 20-25 minutes. Insert toothpick to check if done. 7. Cool then refrigerate, before removing from pan. Cut into desired shapes.

1. Mix egg and melted butter with an electric mixer until light and fluffy. 2. Fold in sugar, vanilla and nutmeg. 3. Add in raisins and nuts 4. Spoon into tart shells, filling

10 ml rum

250 ml coconut milk

5 ml vanilla extract

1 cup golden raisins, soaked in boiling water for 10 minutes (drained)

2/3 of the cup (mixture expands as it cooks, you do not want it overflowing). 5. Bake at 375 degrees F, 12-15 minutes. 6. Let cool 10-15 minutes, then enjoy!

Combine all ingredients and bring to a boil. Simmer, stirring well, for 5 minutes or so.

4 oz achiote paste

4 lb boneless pork shoulder, cut into 2 inch pieces

1 cup fresh lime juice

2 (28 inch-long) banana leaves

1 cup fresh orange juice

corn tortillas, warmed, for serving

roughly chopped cilantro, sliced radishes, pickled onions, and lime wedges, for serving

3 tbsp dried oregano, preferably Mexican

1. Combine achiote paste, lime and orange juices, *'$ .,5 +"7(%324 37) -#( 62(%376 "7 3 1!(7)(24 season with salt, purée until smooth. Strain marinade through a fine-mesh sieve into a bowl; add pork and combine. 2. Line a 6-quart Dutch oven with banana leaves, let the excess hang over side of the pot. 3. Add pork and its marinade; fold leaves over pork and place lid on pot; bring to a boil. 4. Reduce heat to medium-low; cook until pork is -(7)(24 316,- & *'& #6,20/ 5. Unwrap and transfer pork to a cutting board; shred into bite-size pieces and transfer to a bowl. Stir in 1 cup cooking liquid from the pot.

“I just do it because I love it, and I think it’s doing a lot of good for a lot of different people out there.”

It’s thanks to the efforts of approximately 75 volunteers, many of whom return each December, that Christmas dinner comes together for those in need. Side-by-side, the volunteers baste, mash, simmer and chop in the Neighbourhood House kitchen on Christmas Eve. The next morning they show up a little after 8 a.m. on ,:=8;9'2; *2& 9# !79 9:? /%23 9#7$:?; #% 97=5?& "8%%?= with all the trimmings for 200 guests.

“Without the volunteers and donors this day would not happen,” says North Shore Neighbourhood House executive director Lisa Hubbard. Brandy Hughes, a busy mom, logged the most volunteer hours last year. Her role was to greet clients as they checked in to the meticulously merchandised Christmas Bureau, a place where parents can pick out gifts for their kids.

1 ½ pound fresh sheep's milk ricotta cheese 1 cup sugar 1 cup grated bittersweet chocolate candied fruit, finely sliced icing sugar (confectioners' sugar)

2 cups flour, plus extra for dusting if needed 2 tbsp cocoa powder pinch salt 2 tbsp cold margarine ½ cup white wine ¼ cup water extra-virgin olive oil, for deep-frying

Special equipment: Cannoli molds (tubes for shaping shells during frying) TO MAKE THE CANNOLI SHELLS: 1. In large bowl, mix together the flour, cocoa powder, and salt and cut in the margarine until evenly blended. 2. Gradually work in the wine and water to form a compact dough.

3. Cover the dough with plastic wrap and let rest at room temperature for an hour. 4. On a lightly-floured surface, roll out the dough to 1/8-inch thickness. Cut out 5-inch-wide circles and cover. 5. Re-roll the scrap dough to form more circles. 6. In a deep-fat fryer or heavy-bottomed saucepan, heat the oil to 350 degrees F. 7. Wrap each circle onto a mold, sealing the two edges that overlap with a dab of water and by pressing together.

Stuffed turkey breast 50 g dried wild mushrooms 1 tbsp butter 1 French shallot, finely chopped 50 g pancetta, cubed 150 g button mushrooms, minced 2 sprigs fresh rosemary, one finely chopped 2 turkey breasts 4 large slices Swiss cheese 1. Preheat oven to 375 degrees F. 2. Following the package instructions, rehydrate the wild mushrooms. Lightly dry them with a paper towel and then chop. Set aside. 3. In a pan, melt the butter over medium heat and sautĂŠ the chopped French shallot and pancetta for about 3 minutes. 4. Add the button mushrooms, wild mushrooms and chopped rosemary. Continue to cook for 2 more minutes. Remove from heat and set aside. 5. Butterfly both turkey breasts (cut lengthwise, but not all the way through, so they open like a book). Cover each breast with plastic wrap, and pound with a meat tenderizer until uniformly flat. 6. Remove the plastic wrap, and cover the surface of each breast with slices of Swiss cheese. 7. Spread the pancetta and mushroom mixture evenly over the cheese. 8. Carefully roll each breast, making sure to keep the stuffing in. Wrap with kitchen twine to keep closed. 9. In an oven-safe pan, sear the rolls so all sides are browned. Cover and finish cooking in the oven for about 30 minutes, or until a meat thermometer shows an internal temperature of 160 degrees F. 10. Remove from the oven and let cool for 5 minutes. Serve on a bed of roasted potatoes and garnish with the remaining sprig of rosemary.

North Vancouver has a rich tradition of actors poking fun at themselves at Christmastime.

Pantomimes, usually performed during the Christmas season, come from a long British music hall tradition dating back more than a hundred years. Panto purists will tell you the plays contain a special formula: there is always a hero, a villain, a couple of sidekicks to the villain who are also evil, certain amounts of crossdressing and men playing traditional female roles and vice versa.

In the early 1970s North Vancouver Community Players *)-#%& )"%!, 1,*) .-0)/ $/, )"% 0%!#"+/(,"//& '"!2&,%0 at Hendry Hall. That rollicking show put the theatre company on the road to producing entertainment for the young and young-of-heart every Christmas since then.

Sometimes, the scripts are home-grown and sometimes they are adapted from well-known English pantomimes. Lots of singing, dancing, slapstick comedy – and even audience participation – is to be expected from these entertaining shows designed for the whole family. Cheering for the good guys and booing for the bad guys is a popular treat for the audience.

Holiday Traditions Marsh recalls a funny story from a past pantomime at Hendry Hall. “To illustrate how interactive these pantomimes are, one year it featured a dog,” explains Marsh. “As part of the props, some cookies were baked in the shape of dog biscuits. Suddenly a young boy from the audience, aged around three, walked onto the stage, picked up some of the ‘dog biscuits’ and proceeded to eat them – much to the surprise of the actors!” Another tradition is for Community Players to donate most of the proceeds (customarily $4,500) of the pantomime to charity, with an emphasis on young people. This year the recipient charity will be Wigs for Kids – a committee of volunteers that raises money to provide )*,+25-4++&( "*5/3-"/!. $!#, %2. children suffering hair loss due to cancer or other serious illnesses.

“When trying to decide what to do for a Christmas show, a bunch of Brits were reminiscing about what they did in England and all agreed that going to a traditional English pantomime had been heaps of fun all round,” explains Marsh, of Deep Cove Stage Society’s foray into pantomime theatre.

Perhaps more importantly, as a team the family has managed to take a string of colourful lights – OK, many, many strings – and create a conduit for giving. Preparation starts early, in September, at the family home situated at the top of Skyline Drive in North Vancouver. The parents, John Ribalkin and Aurore Viau, unbox the lights and start putting pieces of the festive puzzle back together. Then, in late October, the now-adult Ribalkin siblings move back home every weekend until almost every exterior square inch of the family homestead is wrapped in Christmas cheer – from eavesdrop to the sidewalk. More than 100,000 lights, intricate +8394%;7 -%" ";$#9-54#%7 8# 4%5# 56; making of the magical Christmas display, topped off with a glowing star shining down from a large spruce tree.

The Christmas before the Vancouver Olympics was when John was challenged by his daughters to “do better” with the decorations. Dad accepted the challenge, gleefully.

“I’m sort of a Christmas guy,” he says.

On Boxing Day 2009, John set out for 7#'; :;7541; +%"7) -%" ,;:#9; 6; 0%;( it had racked up $6,000 in Christmas decorations on sale. That kicked things off, he says.
