It was a narrow site, leading down to the ocean, and the clients’ requirements were ambitious – they wanted a house built to entertain, from the outside in, without any encumbrance. “The house was basically set up to enjoy the water at the water’s edge, and everything we did within the house, in all the critical areas, was to [create] views,â€? LIKE TO START WITH A THEME: Do you want something traditional, glamorous, rustic, or

modern? That decision can lead to a colour scheme. White can be very elegant, especially when punctuated with silver or gold. For more drama, opt for black with pops of red.

TABLEWARE The key to a beautiful setting is in the layers. Start with a charger or service plate under the dinner plate. An investment piece yes, but one that can elevate the table décor. Glass, metal, porcelain, and wood are all great options. Next, add in the dinner plate, salad plate, and if you are serving a soup, a bowl. These pieces don’t all have to be from the same set. I like to mix and match, adding more visual appeal.


LINENS If you opt for a tablecloth, be sure you get the right size. You need to add between nine and 18 inches per side for the drop. White is classic, but patterns can be equally beautiful. A basic rule is if you have patterned dinnerware, stick to a plain tablecloth. Sometimes less is more. Placemats are another great option, and an opportunity to bring in some colour or pattern. Cloth napkins are a lovely, more formal touch. If you go this route you can use napkin rings or get creative: I like to use a simple wide ribbon with a sprig of rosemary. Add in a place card for a touch of formality.

CANDLES AND CENTREPIECES Now let’s talk about the showstoppers. FOOD AND WINE Whatever the menu, ensure you have great platters and bowls to present it in. Garnishes can go a long way: A simple sprinkling of parsley on mashed potatoes gives the dish a more elevated look. Fresh herbs, kale and harvest fruits also make for beautiful adornments. And we can’t forget the wine! I like to decant my red into a crystal decanter. For your white wine, consider adding a wine chiller – a standing piece adds a little drama. ROASTED BRUSSELS SPROUTS WITH CONCORD GRAPES AND PINE NUTS

6 oz

Brussels sprouts, halved

20 g

Concord grapes, pickled (see below)

20 g

canola oil

10 g

parsley leaves, whole

pine nuts, roasted

1g

sherry vinegar

Preheat the oven to 450° F. Heat a pan and place brussels sprouts face down, season with salt, then add a thin layer of oil. Once the sprouts turn light golden brown, place in oven. Cook until the stem is tender. You are trying to achieve a dark golden brown colour. Wilt parsley, strain excess oil and transfer to a stainless steel bowl. Add sherry vinegar and grapes to the bowl, toss to combine. Place on plate and garnish with pine nuts.

Place all ingredients into a pot and bring it up to a boil. Transfer pickling liquid into a heat-proof container and chill on ice immediately. Once cool, strain spices and aromatics. Cover concord grapes with cooled pickling liquid for minimum 12 hours before using.
